Here is the link to the layered Greek salad....tho I varied it a bit, and kept the different dressing I made on the side so in case any was leftover, it wouldn't be soggy and yukky, i.e., inedible.

One of my husband's favorite students of all time is named, oh let's call her C. She went on to Julliard and now lives in NYC eking out a living singing some gorgeous songs, and playing her cello. I guess she also has a gig as a graphic designer. The standard freelance life for a young woman still finding her way. Every few years, she stops in on her way to visit her parents in NH. She will have her instrument adjusted, get a fresh rehair, and hang with my husband. Generally, her Dad brings her after he picks her up at the bus station here in Boston.
She came on Friday with Dad, with the plan to return today to pick up her instrument. Via Facebook I learned that all three of them, i.e. Mom, were stopping by for this pick up. First I offered coffee, so we could catch up. But then discovered that they were driving all the way to NY, and [I am weak!] I offered a light lunch. Yea, I know. So at 8am, I was off to Whole Foods to buy a few provisions. First I made some lemon-ginger scones, and then a Spanish tortilla [eggs with potatoes and onions], fruit salad, smoked trout mousse, and because we have "hundreds", some sliced tomatoes. Oh it was wonderful. Her Mom is a good friend of mine, her Dad is terrific, and C is my husband's most favorite student of all time.
Was this a light meal? No. I don't think so. Did I whip it up in no time? No, I don't think so. I am I happy that I sliced out a few hours to see old friends whom I love dearly. Yes. Sometimes I have to remind myself to actually live the life that I am fighting to keep.
Meanwhile, the kids met with the Justice of the Peace, and hired her, and drove all the way to the Cape to have her first muslin dress fitting for her dress.
I have prepped the ribs.... 24 hrs of aging. 12 hours of salting, and now 12 hrs with their rub. We are going to smoke out the neighborhood tomorrow!

Carol- Grand Marias is lovely. One of my favorite vacations was at a cabin up the GunFlint Trail about 40 miles from Grand Marias. I was there in July and had flannel sheets on the bed and fire in the fireplace every morning. I could hear the owls and the loons, and the timber wolves at night. It was heaven.

Redheaded, I've had that question too. It used to be running was the answer, but that no longer seems to be the case.
I don't know what's for dinner. I've had one of those perfectly timed to ruin the long weekend colds (cue up the man cold video) that hit me Friday night. I'm just starting to feel like I don't have to force myself to "work through it" and it's Monday afternoon.
I hope I don't give it to Sharon or DD....

When I cook a pork roast, I freeze sections for later. Tonight was left over cold boiled shrimp for starters, wonderful sliced pork sandwiches on Hawaiian Sweet Rolls, and I'll have Tuscan melon for dessert. This is the best cantaloupe melon I've ever tasted. Happy holiday to everyone.
Edited to add the culinary details - pork roast was rubbed with sage & basted with apricot chipotle sauce.

There is a price to pay for the "I see it, I eat it" diet. Two pounds in three days. And now, miraculously, my appetite has just about disappeared. [no, I am not telling my doctors this since they consider change in appetite as a sign.] Tonight was our "rib fest". So Mr 02143 "made dinner." To prepare for this event, I aged the ribs. I then salted the ribs. Then I made the rub, and applied the rub. Then I turned the ribs, and rubbed some more. I spent three days fondling the ribs. I took them out of the fridge to come to temp, and then... and only then, Mr. 02143 took over and then received the accolades! Yes, this kills me. I also made some vinegar based cole slaw, a romaine lettuce salad, and a tortellini salad. Since my hands are getting worse, my daughter shredded the carrots, julienned the sun dried tomatoes, and shaved the cheese.
Tomorrow is the Great Sink Installation. Since we won't have water, we get to eat something that someone else has made.
Files have been installed, but still are missing two features. This puts me at least two days behind on my other projects. I would love to catch up! Hot as can be here. I expect that Lacey is swimming in bodies of water. Sounds pretty good tonight.

Susan - YOUR ribs sound divine. We all know who does the work. I've been really hungry for ribs lately and even cut out a "new" oven baked recipe for when it gets cool enough to turn on the oven. Sorry to hear about your hands. I know how frustrating that is.

Well, I have a new favorite food---I was at the Health Food store and they have this brand of fermented food in the fridge---Bubbies Sour Kraut and Bubbies Dill Pickles. It was not cheap at all. I came home and read up on it and it has the good stuff you get from some yogurt for your gut--- (Not the Bread and Butter pickles, but the ones I said) The Sour Kraut is just litely brined--the cabbage is still crispy. I think I could eat the whole jar, but I am holding myself to 1/4 to 1/2 cup per day.

Eric, hope you heal quickly....and are able to keep those germs to yourself as you hope. This afternoon I heard the guy next door yelling across the street to another neighbor that he STILL HAD HIS COLD (!!!) from yesterday! Couldn't help but think of the video.....;). I wonder how more vulnerable you are since you drive the kiddie germ petri dish?
Susan, first of all, I loved hearing about your wonderful visit with your old friends (the music student's family). What a way to spend your day! Would be great to be able to bottle such visits. Secondly, I totally get the "grilling attribution" annoyance factor. Yes, YOUR ribs sound so delectable. I knew where your post was going right after reading the first "I". Been there, felt that annoyance! But, mind you, with much less effort on my part compared to your "totally from scratch" style...but way more than my DH's effort for sure. I have mainly made piece with the situation (most days) by being thankful that he totally cleans up every day. Love that! Even tho my rheumatologist suggests that warm water dish washing would be helpful to my pained hands. Ha! I'm sorry that yours are such a continuing problem for you....I totally appreciate how painfully debilitating that pain feels.
Last night ate a combined dinner with neighbors at their house...grilled chicken and beef kebabs, garden fresh green beans, my leftover, added too, Greek salad, small pasta shells with roasted tomatoes and fresh basil, and a yummy local apple pie for dessert....really way beyond limits for me. So we walked a lot this AM! But only after meeting some other neighbors for coffee and a video viewing of the night scavenging of our local wildlife, which a neighbor records with a night camera, after leaving scraps on a rock near his garden. The main purpose of this activity is to attract foxes which will eat any chipmunks who would otherwise destroy his garden. It was pretty interesting to watch the various animals (opossum, skunk, foxes, and a mouse) compete for the food morsels.
Then we spent a glorious (SUMMERY!!!!!) day at the beach and on the lake, and finally got our swim in the middle of the lake from the boat in. Oh so beautiful! Might do the same tomorrow as the temps will stay high here. It felt good to be retired and not have to trek down the highway to MA like most of our neighbors...certainly all those with school kids. Tomorrow the beach and lake will be pretty quiet.
Dinner on the screened porch (which is sort of like a tree house so it is great for bird watching) this evening was balmy and beautiful. "We" grilled teriyaki chicken, made a fresh Greek salad, and had leftover shells with roasted tomatoes and basil.

Today was moving day. After two months in one spot, we travelled northeast to Grand Marais, MN, and are now set up in our new temporary home at the municipal rv park on Lake Superior. On the way we stopped at Betty's Pies just north of Two Harbors. This was a return visit. I had coconut (sp?) cream pie and dh had rhubarb strawberry with ice cream.
Tomorrow we go farther north to Thunder Bay to visit a bc.org friend I came to know in 2009 when we both were dx'ed and had bilateral mx and immediate reconstruction. The two of us and three other women had daily communication and helped one another get through a bad time.
I read all the posts and made mental responses. Forgive me for not putting the responses into words! I will say that it does my heart good to sense the happiness in Susan's posts. And, Lacey, I'm happy that you experienced some summer weather! And, Minus, it's so good to have you enjoying food again. And, Eric, hope you feel good again very soon.

Carole, love your pit stop for pie as you relocate! It is wonderful that you will again visit a bc.org friend who walked a difficult path with you. So much meaning in those special relationships!
Eric, hope you are getting back to feeling like yourself.
Today was warm and humid and threatening with showers for much of the day, so after my sweaty walk I did a lot of personal admin work and phone calls, then we went to the beach briefly at the end of the afternoon. We kept a few ducks company since all of the families in the neighborhood who populate the beach are long gone. It's a different place entirely without the families....both ways are nice. Tomorrow is supposed to be sunny (still quite warm, yay!) so the beach and probably the boat will be at the top of the activity list. We might have all seven miles of the lake to ourselves!
Ate on the balmy breezy porch again.....had grilled shrimp and scallops that I'd marinated in a teriyaki sauce, local corn that was good, if not great (my dad used to refer to this part of the growing season as producing "cow corn"), and a cuke salad with red onion, diced red pepper, black olives, grape tomatoes and pepperocini for an extra bite. DH picked up some "skinny cow" ice cream bars for dessert. Guess he's ready to jump back on the wagon, too. They were actually good....I didn't read the chemical content.

Bedo - sorry about the cold. How's the new job? Had to laugh about your "marching orders". At least they didn't specify the kind of flowers (yet). 20 brownies? Like one pan with 20 pieces or 20 pans? Do you get to choose your own additive? (haha) When is the wedding?
Speaking of our offspring thinking we're dumb - I've been told that maybe I could be left alone to take care of my DIL's perfectly healthy dog that they've had for four years for a couple of hours if they went to the movie, but looks like I'll have to pass a very intensive exam first. Still not allowed to walk the dog alone. Oh well. Probably a good thing they live across the country.
Excellent "organic egg sandwich" today at Ruggles Green. Open face sourdough bread, thin sliced "all natural" ham, cheddar & swiss cheese grilled w/two lightly fried local organic eggs on top. Popcorn for dinner tonight with a lovely Russian River Pinot Noir.

Bedo, the list sounds OK. I think she just wants you to enjoy the moment and not work yourself into a frenzy. As for the cold...colds suck. I'm 75% back to normal and best of all, it looks like Sharon and DD will avoid my cold.
Susan, the forgetting Sharon cooks too sometimes happens here. When I hear it, I'll say something like, "Sharon did most of the work on this." I don't know if it helps, but I try. Not related to cooking, but along the same line of thought, it bugs me when Sharon is called Mrs. Eric Lawson. It makes me feel like she lost her identity when we got married.
DD is back to normal. She swims, so it's not likely that she'll get another concussion. Her's was caused during a trash can race at a school assembly. Two kids put clean office desk sized trash cans over their head and run. They use the gym floor lines to guide themselves and the kids are all cheering. What annoys me the most about the whole thing was the large number of uninvolved people saying we should get a lawyer and sue the school....sigh.....

And isn't it amazing how incompetent we become (not!) after raising our children to be responsible adults! Obviously you would do some terrible and irreparable damage to that poor dog in a matter of a few hours! LOL! DS and DDIL obviously don't have enough on their plates yet to appreciate parental help....
I can recall leaving our young lively sons and our dogs with my dad (who had traveled for his job and had never been involved in our childcare) and his wife (who never had a child or a dog) for a day and evening while we attended a wedding not far from their CT home. When we returned, the kids were contentedly asleep, and the dogs were happy and groomed! I was so thankful to them for giving us that day, and in subsequent years continued to thank them profusely for helping us out at that chaotic time in out lives. Not sure I would be so happy to get two active boys and two matted schnauzers for a full day! When we had dogs and two kids (and no local family support), we were more than happy to share them with any willing relatives.
And how lucky we were that Dad and his wife were so intrepid! I bet things change with DS if his family situation expands. You will become so much smarter! 
Arrived home last night, and DH had a business dinner, so I put some of my roasted tomatoes on a piece of french bread, with mozzarella and parmesan, and called it a pizza night. Boy, those roasted tomatoes are so rich with flavor!
Having "packer envy" as I see my next door neighbor taking one carry-on sized suitcase to Italy today. Wish I could borrow her packing sense. I always take too much due to my indecisiveness.....and I hear it is uncharacteristically wet and cool there, which means my plan to bring just a few light cotton skirts is shot! Oh well, I have until the 16th to work this out. I am a bad traveler....took too much to every place I went this summer. On a happier note, we will take a cooking course one day in Lucca, and DH is participating too. Yay! Maybe he will come home able to cook some dinners for us! Our next door neighbors are taking cooking classes for the whole week they are in Umbria. Her DH (who also only grills) should be quite the competent cook when they get home.....the future will tell!

I made it! I made it through Friday!!!!!
This week I did a major installation, started a second one, prepared a client for their annual inventory, and did an Alpha install session. This was just three of my five active clients. Oh, and I resurrected a dead server. I am so pleased I made it.
Food was eaten though. I had to eat a few lunches in restaurants, which led to leftover lunches the next day. Dinners were simple. Tomatoes, of course, at every, single meal. I remember a seared tuna steak with fresh corn and steamed broccoli. The tuna turned into fish tacos the next night with a pico de gallo salsa and black beans. Today's half slice of pizza at a client office fought back, and I was mighty sick this afternoon, so I made scrambled eggs and English muffins for supper tonight. Nothing like eggs on a tender stomach.
Back to work tomorrow....... but I am taking an hour off tonight to slump.

Wow. It's quite quiet today/tonight.
DD went to her school's away football game. It was 65 miles each way to the game and she drove herself--getting home just before midnight. We were a bit nervous, but at the same time, we feel we have to let her find her wings. As agreed, she got home just before midnight....which was just about right for the game getting done at 10:30, getting a quick bite to eat.
This morning we got up at 4:00 to go kayaking on the Salt River. We saw lots of wild horses and a bald eagle.
Dinner tonight was chicken with a yogurt, chicken broth, tomato, garlic, onion, lime juice, cilantro sauce thickened a bit with some corn starch and cream......on a bed of brown rice. A salad and some bread made for a simple meal.
Going to get ice cream...

Eric - Good for you letting your DD find her wings & supporting her. I remember when I used to have that kind of energy. Not in bed yet at 1am and back up at 4am for a strenuous day. No longer. The kayak trip sounds wonderful.
I couldn't sleep last night and was reading when we lost power around 2am. So to report my latest culinary oddity - I decided a snack was in order and decided on garlic naan bread with Bailey's Carmel Irish Cream to drink. Assembled and eaten w/the aid of a flashlight. I read w/my flash for awhile but power didn't come back on until 6am.

Eric, Wing flying is the hard part isn't it? Appearing cool, calm, and collected on the outside, but worried for our children's safety on the inside. And yes, software.
Made some lamb burgers last night. Did a variation that included lots of fresh herbs from the garden and omitted the feta cheese in the middle. Our cherry tomato plant has been quite productive lately, so I made a Greekish salad with lots of cherry tomatoes, garden picked red onions thinly sliced and some romaine lettuce with a lemon vinaigrette. Mr 02143 hates cucumbers and olives, so I can't include them, but I topped with some nice Bulgarian feta cheese which gave us some of that brininess. Normally we would grill these outside but given the tornado watch, I chose to do them on the stove top with the new grill pan. Not a bad little pan, but like all grill pans, lots of work to clean up later. This is some fatty lamb, so having the grooves to drain off the fat was a very good thing. Neither of us felt the need for a carb last night so we skipped having either a bun or a tabouli salad.
Once the crazy weather went over us, the skies opened up and the temps and humidity dropped. Today is a gorgeous day with brilliant sunlight. How will I use this day? The same way I have used every day [almost] for the past three months... coding. I can't flag now. Must.Push.On.

Missing my family that is gone
Feeling grumpy as I finish my current job Oct 8 and start the new on Oct 10 with only the week end off. I did promise my interim job that I would stay to cover maternity leave even if it meant giving up permanent job at university. I'll work 8 month out of the year with summers off. I hope it doesn't drive me nuts
I made 12 black bean burgers yesterday and froze them and now am getting ready to leave the house and collect zucchini and squash. I want to make them with sautéed almonds and parmesan and cut them up like match sticks.
DD's wedding is in May. I explained that my sunflower and zinnia bouquets in mason jars which I give to everyone won't be ready in May. She said that I could use Hydrangeas. I don't have a hydrangea bush and I can't picture one in a mason jar.
Sorry for the grumpy post. I think that's what staying inside all day does to you.

Eric, hope the kayaking was great! It is fun (and sometimes a bit nerve-wracking) to see our kids spread their wings....and really worth it to support the process without being too helicopter-y! My mother was a worry wart who was fortunately (for us) a bit passive in asserting her wishes, otherwise we would all have been tied to her waist. So I took a very different posture with my sons, and reveled in their attempts at independence. Seems to have worked....I wonder if we would have felt/been different with a daughter's journey. Hope not.

Yesterday, as I was talking to a friend at a local group picnic about how delicious the pies (which were gone) were, she took a dorito chip and scooped up some of the pie filling left in the plate. Sweet and salty for sure!We had house guests yesterday, and after being away most of the summer, I had major clearing up to do to accommodate our eating in the dining room, and for them to sleep in the guest room. I spread out too much, especially with all my sewing stuff, which is currently gone from the dining room table.
So the guests (long time friends from our town who moved to Santa Monica last year to be near their adult son, an only child) came in the afternoon, and we watched the Pats' game while having a cheese, crackers, fruit and nuts platter along with small skewers of watermelon, feta chunks and basil. For dinner we had grilled chicken breasts which had been marinated over nite in a balsamic, garlic, rosemary blend; grilled veggies, same marinade; baby spinach salad with pear, cranberries, and walnuts with dijon vinaigrette; and local corn on the cob. They left this morning to attend a belated good-by luncheon at our friend's former lab at one of the Boston hospitals before heading back out west.
So today we are back on the exercise wagon, and will later head to the gym for aerobic work and stretching class.
Lots of grilled leftovers will be dinner tonight. Yay! I am pretty tired from guest prep.
Oh, our friends gave me some tips for efficient, one travel size suitcase packing (they never check their luggage when taking long trips)...who knows if I will ever be able to do it! DH always says I should just put a trailer hook on the house!

Been reading a book called Practical Paleo...... called the nutritionist and asked if she had seen it, she hadn't but I summarized it and she said it sounded like what she wanted me to do.....So I went to the grocery store, and if anybody who knew me had seen my stuff on the checkout lane, they would have died laughing and asked me who I was trying to kid....... Honestly, I spent 54.00 and there was no meat in the cart and 2 boxes of Mac & Cheese (my comfort food). and rest was produce, almond butter, almond milk, etc.
I am now staring at a lb package of black eyed peas thinking I will put them in the crockpot with onion, garlic, jalepeno (or maybe green chilies) and then add some kale the last 30 minutes. But, of course, I didn't buy an onion or a jalepeno at the store. I got a ton of root veggies that I am going to roast in olive oil and herbs. (fennel, carrots, parsnips, rutabaga, turnips).....OH and Got the really big container of Greek yogurt to use instead of milk in my smoothies....yeah right.....

Redheaded, have you been working with a nutritionist for a while? My derm doc has recommended the Paleo diet, (she follows it herself and recs it to everyone) but since I think I'm close enough to it for what I can tolerate (hubris, I guess!), I have stayed where I am....eating some naturally raised meats along with, fish, a lot of vegetables, few grains. and fruits. So did the nutritionist recommend that diet for a particular result....... e.g., chasing recurrence, weight loss, improving methylation, healthy skin, etc? Keep us posted on how it goes. The bean recipe sounded interesting! Of course I could never pass that off as "dinner" to my DH.

Came across an interesting recipe on Yummly for chicken cakes with sweet chili sauce...sort of like crab cakes with interesting spices in them. Plan to try making them for dinner.....

Hi everyone! Remember me?
SO sorry for dropping off the grid for as long as I have. It was a crazy busy summer now followed up with a busy start to a new school year. I watched another girl over the summer who honestly bugged the crap out of me- sorry! We had lots of camping trips and trips to the lake and were gone almost every weekend. It was very tiring and wonderful at the same time. We had so much fun. One food thing that blew my mind was on one camping trip another family and I took turns with dinner. When it was the other families turn they made Thanksgiving dinner! He brought a rotisserie and cooked the turkey which was amazing, and had stuffing baked potatoes, corn on the cob and squash. The next day we all had open faced turkey sandwiches for lunch. It was SO good. He will be doing it again for our final camping trip Columbus weekend.
Another fun thing we did this summer was to have a crazy Monday play date day. Three of my girlfriends would come over with their kids and we would have 4 Moms and 9 kids having a pool play date day. The moms had as much fun as the kids. Everyone would bring food to share and take turns feeding the kids lunch etc. By the end of the summer both of my boys learned how to do a flip into the pool. It is amazing how daring children can be and how fast they can learn!
So....now the school year is upon us and I have DS1 in first grade and DS2 in preschool. So ds1 is gone m-f 7:50-2:20 and ds2 is m, w, f 9-12. SO yes I drive in circles and enjoy small pockets of time to myself:) They are both playing soccer this year so we have soccer on average 4-5 times a week. Blah- makes dinner time tough. For the most part I skip practices and cook and only go to games- otherwise we would be living off of chicken nuggets! No thank you!
Kids are loving school and soccer and the band marches on....
I have been enjoying all the fresh veggies from my dad's garden and had chicken parm two night ago- soooo good. Last night was American Chop Suey. Tonight will be left overs of hot open faced chicken sandwiches from the left over chicken that I roasted a few days ago.
I hope everyone is doing well and I am READY to try to keep up with this thread again!

Laurie - Soooo great to hear from you. I don't do Facebook but someone (Lacey?) was kind enough to let us know you were OK. Sounds like a great summer and a good start to the school year. Funny - we think Moms have a lot of time once all kids are in school, but with the different schedules & the after school activities it just doesn't happen. Glad to have you back.
Yesterday I had a 6 month check w/the rad onc. This was on the other side of town so I ran a number of errands and stopped for a quick lunch before my appointment. I rarely do fast food & it's probably been 12-18 months since I've been to Mickey D's, but I was horrified at the prices. Quarter pounder meal/wfries & coke was $6.48. Good heavens. I complained about $10.00 for a sirloin burger at Beck's Prime but it was really good. McDonald's - not so much.

So I never did make the Thai chicken cakes today....definitely tomorrow since I bought the ingredients for making them.
Busy day with an ortho appt to have the pained shoulder checked before we leave stateside, then a trip to get new sneakers, which was a pain since the style I always get for good arch support was changed, so not comfy anymore....but I did settle on another pair. Then off to get a compression sleeve for my arm so I don't take any risks for lymphodema on the long flight. That is one bc condition I have so far avoided, and hope to keep it that way. Then off to the store to get some ingreds for the "chicken cakes", then home to pick up DH for a walk to our polling place since it was primary day....then we walked to another store to get the rest of the recipe ingredients....then took dH's car to our mechanic in the next town, then stopped at another store to see if they had any good looking corn to go with dinner....nada.
While in the store, it was nearing the dinner hour, and we ran into our next door neighbor who we have hardly seen all summer given our away schedules, as we chatted she mentioned they were having lamb burgers tonight, so DH and I (feeling starved at that point) decided to defer the chicken cakes until tomorrow, and go for the lamb burgers tonight.
I was dying to try Susan's version of embedding the feta in the lamb burger instead of adding it under the bun which is messy. Yes! Thanks Susan! So I added my rosemary powder, fresh minced garlic, some crumbled dried mint, black pepper and a bit of salt with a prize chunk of feta in the middle. OMG! These were good, especially with lettuce, fresh tomatoes, red onion and a bit of ketchup. We had asparagus and an arugula salad to complete the meal.
So, along the lines of the young love theme, on Friday DS2 and Chicago girl are coming here for dinner. Not sure what I will serve, except probably we'll grill, and one appetizer will be the watermelon, basil, feta skewers. They were a hit with our transplanted Cali friends.
Minus, your palette is not only back but in descriminating style. Yay for you!
