I use a pressure canner for meats and broths for all else a hot water bath or steamer. I saw the jam one too may try, I am making lots of jams and baked goods for rakers having a good time but busier than I thought!

hey all. hope everyone is enjoying the warmer weather. (at least here in the US)
I will take humid over snow any day.
That said, I am making this refreshing little non-alcoholic drink today.

Hey ya'all,
We had some hot days but the evenings cooled. I agree with Teka, sure beats the cold and ice.
I thought we had a lot in the garden but we've already eaten most of the salad mixings. Tomatoes are still coming in and the pumpkin patch is still growing. Potatoes and onions have a little bit more to go yet. Hot peppers need thinning. This year is experimental mostly.

Teka, we finished the green beans last week...hoping for more to grow on the plants but not expecting them to produce much more. We ate a tiny egg plant, sliced and fried in olive oil and white wine with dried tomatoes then chicken breast covered with mozzarella... also had a hand-full of strawberries...so sweet. Congrats on the string beans...yum.

Hi to all the lovely ladies on this great thread!
Been a while since my last post, I have been busy enjoying the Italian and Icelandic summer. We travelled a lot in Italy Milan-Parma-Rimini-Toscany-Garda-Milan in 14 days.
Travelling with 2 kids made us skip the big cities but we enjoyed the country side to the fullest. Of course we tasted a lot of great food and even better vines.

Thanks girls. The Italian cuisine is wonderful, my younger one had a simple taste though, lots of gelatos and pizza margaritas
Anyway, I wanted to share with you this tasty dish I had at a friends house last week. Going from Italian cuisine straight to Japanese :-)
Japanese chicken salad
4 chicken breasts, skinless, cut in strips and stir fried in oil. One bottle of Sweet hot chilli sauce added and cooked until chicken is readily cooked.
Sauce for salad:
½ cup oil
¼ cup balsamic vinegar
2 tbsp sugar or sweetener of choice
2 tbsp soy sauce
Cooked together for app. 1 minute, chilled and stirred occasionally so oil will be sufficiently combined to the mixture.
1 bag instant noodles – spices excluded.
1-2 tbsp Sesame seeds
Break the noodles to small pieces and dry roast them on pan until crisp. When they are almost done add the sesame seeds. Cool.
Salad of your choice
Cherry tomatoes
1 mango
1 small read onion
1/2 jar feta cheese
Finally combine all the ingredients in a bowl. First salad, tomatoes, mango and onion. Then the noodles/sesame, pour the balsam sauce over and finish with the chicken.

Hello everyone great pictures! The garden is going full guns, I am living on creamed cucumbers! I use some sour cream, some yogurt, a little red wine vinegar, dill leaves, shallots or sweet onions, a little maple syrup, mix well and ad pour over cucumbers, I add tomatoes when we eat but the cucumbers are good for a couple of days, we had Harvard beets, cook beets, drain add some butter, make a slurry of vinegar, corn starch, salt pepper, and sweetener, we use maple but you can use any sweetener, add to beets, heat until thickened.
We had our first sweet corn it is so good! I love the garden season! We have had lots of beans, they are slowing down, I canned 3 bean salad this year it is pretty good, a little sweet, next year I will cut back the sugar a bit. I made some blueberry mojito jam it is good, blueberries, lime zest and juice, sugar, and pectin!

Carollynn, this blueberry mojito jam sounds really good. Could you tell me the ratios of ingredients? The blueberrys are getting ready and I would like to try it :-)
