So...whats for dinner?

Great to hear from Bedo & Debbie!!! Also to know that Special is in the mend & Moon's wedding party was lovely. Looking forward to hearing about Laurie's camping. Happy holiday to everyone else.
Yes, it is me w/anemia - but supposedly not iron deficiency anemia. It's called "Anemia of Chronic Disease". Seems like the chemo or rads or both messed up my system. Don't know if the problem is in the kidney, bone marrow, or elsewhere - but my red blood cells are not standard or up to par. I refused the Aransep injections since they cause tumors in cancer patients (WTH) and serious problems w/heart attacks & strokes (more WTH). 3 weeks ago my hemoglobin went down to 8.3 (they do transfusions below 8). Last week it was up to 9.0. So I'm putting up w/feeling tired & playing a waiting game. And even tho the problem isn't iron, I'm eating steak 2 or 3 times a week. I've had more beef in the last 30 days than I've had in the last 10 years. If things continue to be sub-standard, I'll go to a hematologist but MO said not necessary yet. If anyone else is familiar w/this, please PM me.

Hi Vivian.
DD here cooks sometimes. She will be heading to college in a few years and I'm hoping she will have more cooking skills than I had when I started college. Shee does leave the kitchen kind of a mess, but even Sharon says I'm a bit picky about keeping the kitchen clean.
Back when Costco was called Price Club, they would carry 25 pound containers of M&Ms. I'm kind of glad they don't do that anymore! 😀
-
Eric I would be in deep you know what with 25# of M&M's. I keep my chocolate in the refrig. Makes it just one more step to get to it and sometimes that is just enough to break the "I gotta have it now" urge. My DD does not cook at all unless some pasta with sauce counts. Not that she couldn't but just won't. She has a nice slow cooker. Guess I need to get her a good slow cooker book. I picked up "Fix It and Forget It" at HP Books the other day. My kinda recipes for sure. I was an OK cook when we married. I'm still a casserole kinda gal - what we were all taught to make in home ec and what my mom/GM collected in recipes.
Bedo - so nice that you stepped back in. Sounds like a bounteous garden. 3 months in Rhode Island should take you back to Alaska time. Is that on your possible itinerary?
Yay, we've had rain though DFW airport had a "frog strangler" yesterday that we did not get. 1.76". Most daily rain since January 8, 2013. We should be in line for more and we need all we can get.
The chicken and dumplings turned out stupendous. The Annie's dumplings are frozen in sheets perforated into 1/3s. I tore them in 1/2 again. Used 2 c boiled chicken breast and 2 c leftover turkey, about 1 c leftover froz. turkey drippings, 1 container Swanson's chicken stock, some sweated green onion, carrot and celery. DH thought it was good and it was even better 2 days later. I froze 2 small servings and just finished that last bit today for lunch. I will def. make this again. I have several pkgs. Tyson breasts/thighs in freezer. Planning on making a casserole tonight that should be sausage but will be instead ground pork dressed up with seasonings. DH is working so no cookout stuff for us.
Moon - beautiful wedding pics and lovely day for it. Love the camo vest idea. Cute.
Lacey - sorry about your pesky groundhog. Does anyone ever attempt to trap/relocate them?
Vivian - good that your kids are picking up while you're recovering. Hope all is fine from your bilat. DIEPs.
Special - good that your recovery is going well too. Nine weeks will fly by.
Chabba - yay for the 4 year anniversary.
Debbie - sounds like some mighty traveling in your future.
-
Moon, so glad mother nature cooperated for your DD's lovely wedding. May and June are always a risk for new brides in our area. Thanks for sharing the beautiful pix!
Still in NH, where yesterday afternoon we did spend time at the beach since it was nice and warm. Dealt with one 20 minute wind driven, hearty shower, then stayed long enough to let the returning sun dry us out! Crazy weather here all weekend!
Today we walked a few miles up the road to a local farm stand, which was accepting sign ups for a CSA. Unfortunately deliveries will be on Wednesdays when we're often not here, so I opted out.
On our walk we saw a sign for a new "vineyard" up the road (not yet taken;), so we checked it out after getting our car. We learned that there are actually grapevines that can survive winter up here....from Minnesota, not surprisingly. So it really is a vineyard as well as winery. Too bad I hardly drink anymore.

Last night we had dinner at the local pizza and seafood place. I had "cod stuffed with shrimp/scallop stuffing". I asked the waitress about butter or milk products in ingredients and she came back to say that there was a little bit of butter in the stuffing, and if that was okay. I said fine. Well, lol, the whole plate was swimming in butter and the stuffing was just buttery crumbs with nary a shrimp or scallop. That said, the cod was very good as was the side of crisp broccoli and garden salad. The very good news is that for all the butter, I had absolutely no reaction....so clearly milk is not my enemy.:)
On our local travels today we picked up some fresh eggs...many different sizes and colors....and I plan to make veggie omelets for dinner with spinach salad....when I get up off the couch!
Have a good evening all!
-
luv - I wish it was going to be nine weeks, but it will be more like 16 - I could do it a bit sooner but I have to fly out of town on a trip at the 13 week point and with my track record I can't risk having surgery and then having complications that make me miss that trip, so I will have to wait until late Sept. or early Oct. We had frog strangler rain here too yesterday - even had hail!!
bedo - I have two recipes for the Andes cookies - the convoluted one from scratch, and the one from a cake mix - I opted for the cake mix version!
lacey - yay for butter! Lol! -
Sorry Special that's what I get for not reading closely. Remembered the "9" part only. Good idea to be safe with the new expander. Still I think with summer the time will go by fast.
Ooo - tell me about the Andes cookies. I have a pkg of the peppermint crunch leftover from Christmas. Have to make VBS teachers' lounge snacks in a couple of weeks. Sounds like a good plan. What flavor of cake mix?
-
luv - here is the recipe:
1 box Devil's Food Cake Mix
1 egg
1/3 c. vegetable oil
12 Andes Mints, cut in halfMix cake mix, egg and oil together. This makes a very stiff dough - I usually have to add a tablespoon of water, sometimes a bit more. You want it to just hold together. Line the cookie sheets with a silpat or parchment paper. Pre-heat oven to 350 F. I use a small-ish ice cream scoop so that I get evenly sized cookies but you don't have to. Roll them in a ball, about 1 1/2 inch in diameter, bake for 8-9 minutes and be careful not to overbake. Remove the cookie sheet from the oven and place half an Andes mint on each cookie and press down slightly. After about a minute swirl the melted candy over the top of the cookie. Remove from the cookie sheet and let cool completely - the chocolate will set. This recipe makes about 24 cookies. You could definitely vary the topping on the cookie - using regular chocolate chips, or butterscotch or peanut butter flavored chips, or a mixture. You could use chocolate chips, swirl them, then sprinkle something else on top. This is a good cookie to have kids help with because they can roll the balls of dough.

Some things I meant to comment on in my last post, when I should have been putting together dinner.....
Smart move, Special, to wait until you are back from your trip to head back to the OR. Hope it is a fun trip you have planned.
Meanwhile, ladies, what is "frog strangler" weather....just heavy rain? New expression to me...;)
Deb, that is so exciting to venture out in your new RV! Great way to visit your family members. I can just feel your excitement about heading to Georgia! What a kind and generous friend you have to make that offer. Could you let him know Bedo wants one too...maybe he has a surplus.

Minus, I am so sorry to learn that you have that chronic anemic condition. I hope they can work it out soon. I guess in the meantime, you can just keep enjoying steak...and I suspect you get great ones in TX! Or, would it make sense to have a consult with a hemo sooner rather than wait, feeling tired.
Vivian, hope your recuperation is a speedy one. How nice that your kids cook! Both DH and I are clean kitchen people, and my kids are too (what a surprise!) now that they live in their own homes.
I agree with Eric that cooking is an important skill to have when one ventures beyond the homestead! I am still chuckling at the idea of a 25 lb container if M+M's. That could start a serious health hazard in my house...if I could even carry it in!
We still have half a bag of those addictive new giant ones at home...have been trying to stay away from the famous snack drawer.
Eager to hear how Laurie's weekend trip went.
-
From the Urban Dictionary - Frog Strangler
noun, an exceedingly large rain storm, a torrential downpour, greater
than simply "raining cats and dogs," a rain event marked by even adept
amphibians drowningAlso know as turtle floater which I'd never heard and think is hilarious.
-
luv - turtle floater made me laugh!
lacey - the trip to California is for my 40th high school reunion. I have not really kept in touch with anyone from high school between reunions but have attended them all, and always had fun - I went from kindergarten to graduation with many of my classmates. This will be the first reunion since the last of my immediate family has passed away - so this time I will not be going to my parent's home to visit, and since my brother is gone as well, it will be weird to be back where I grew up, and not be visiting. So, a fun trip that has a bittersweet side too.
-
HI Bedo.. I'll add my "good to hear from you" to the chorus. Glad you back, if just for a little while.
Moon. :-) Nice pictures. And it certainly looks like the weather was perfect. The hunt is over... I
like that. DD is beautiful (hopefully that doesn't make me sound like a
dirty old man).SK, I'm keeping you in my thoughts for an uneventful recovery.
Debbie, the RV sounds like a lot of fun. I've never "RVed". One of these days.
Just like last year, I made aebleskivver for breakfast.
I'm
sitting here finishing off a cool (but not cold) ale. Dinner tonight
was chicken kabob, a fruit salad, a "regular" salad and corn on the
cob. In the oven (I leave the light on to keep it "warm"), a sourdough sponge is "working". As soon as I post
this, I'll add the extra 4 cups of flour and knead the bread. I
probably won't get to bake it tonight, so it'll go into the refrigerator
until tomorrow evening.Earlier today, I took mom to the veterans' cemetery to visit dad.

On the way home, the road topped a hill when it was almost sunset. I stopped in a parking area and we watched the sunset. I didn't tear up at the cemetery, but I did a bit as the sun set. Like for Susan, May 26 won't ever be a "normal" day.
-
That certainly will be a bittersweet experience, Special. I'm impressed that you have gone to your HS reunions. I have gone to my college ones, (South Bend, IN) but never to my HS ones, and now since I no longer have any familial connections to that area (South Jersey, outside Philly), I doubt I will ever go to one. You have a much better track record to keep up.
Enjoy your reunion!Luv, both of those rain expressions are hysterical!
-
Eric, thanks for sharing that wonderful pic of your hearty mom. A poignant day for sure....
-
Minus,
Silly MO, seems if you are having symptoms he can't fix, it's time to go. That Hgb seems mighty low.
Eric thank you for sharing your picture of your Mom
Luv, "frog strangler" ha ha ha! That's a good one. I don't know what I'll do in the Fall, maybe take a job here, or I'm thinking Arizona or Nevada. after I try to learn some Spanish. Now you've got me thinking about the days we used to take frog eggs or pollywogs from the river and watch them grow into frogs. Mom loved that. Not.
-
So good to see so many people popping in to say hi!
Moon- Your daughter looked beautiful! So glad the weather was great for her special day. I don't know if I said it before but I was laughing out loud at the cat pee story!
Eric- Great pic of your Mom. Memorial weekend can be a heartbreaking one as we remember all of those who have passed. Thanks for sharing.
Lacey- Sounds like you had a great weekend despite the weird weather! I love that you had to wood stove all prepped. I do that at this time of year too.
Debbie- Congrats on the camper!! You will have so much fun!
Love all the different foods everyone has been enjoying! Not to mention the knife sharpening. Maybe I should get my done? I have a hand sharpener and use Henckle....
Camping was great. We got there for 6 Thursday night and were back home for noon time Monday. I just LOVE everyone we camp with and that the weather does not dictate the amount of fun we have. As Lacey said it would rain then be nice then rain again. Saturday and Sunday was mostly sunny and warm we went swimming, hiking and a trip to fish hatchery. We did some fishing as well but the boys have no patience so we caught nothing. The kids all did a lot of bike riding while the parents did some partying!
There were five families in all- 13 adults and 11 kids, including my brother and his fiance. We all share food and create meals together. Friday night we kept it simple and had hamburgers and hot dogs with pasta salad. Saturday I made a big pan of stuffed shells and we ate with another family who brought the bread and salad to go with it. For breakfast time all of the men would bring all the food to one site along with all their griddles and make a huge buffet for everyone which is my favorite part! You name it they made it- eggs, bacon, hash, home fries, french toast, pancakes etc etc. Sunday I made an awesome caesar salad with shaved parm and we had grilled chicken and steak with it- again sharing with everyone.
There were so many funny moments that made me laugh so hard I cried. The second day there I go up and was cleaning up the camper- the boys were off on a bike ride and DH was cooking breakfast- I then unsuccessfully cleared the rain water off the awning from the night before. A TON of water poured down over my head and I was completely soaked! I started laughing so hard! I had to change all my clothes and shoes- everything. I walked over to where they were cooking breakfast and dh looks at me and asked what the hell happened? I told them and everyone was disappointed that they missed it. Me with sopping wet hair was funny enough.
Ok- I can't believe I have been left alone long enough to type this much! I need to go fold laundry and get dinner prepped. Tonight will be grilled chicken with fresh mozzarella cheese and tomato with salad.
-
I enjoyed reading the pages of posts and catching up. Moon, the wedding looked beautiful. I'm waiting for pictures of the jewelry you made. Lacey, your weekend in NH sounded really fun. As did Laurie's camping weekend. Eric, great picture of your mother visiting the cemetery. Bedo, great to have you pop in. I love the idea of the community garden. "Frog strangler" is a common expression here in Louisiana where we get some remarkable downpours.
SpecialK, I haven't attended any of my high school reunions and I could easily have done so. I went to a country school for grades one through nine. Then went to high school at a larger school. I have attended some get-togethers with my small class from the first school.
The weekend in Mobile was fun. I got to watch several of the young American women golfers whom I enjoy watching on televised golf tournaments. The food we ate wasn't memorable. The best meal out was at Carabba's. We don't have a local Carabba's.
Yesterday when we got home about 10:30 am, I tackled painting the new guest room/old office. Part of the job was removing a wallpaper border. I finished up the painting this morning and am now ready to put away the paint roller and brushes, etc.
Summer has arrived and the end of May is almost here. Where have these 5 months gone? It's getting close to time to head north for the summer.
-
I grew up in a Los Angeles suburb - very bedroom community, almost no industry other than retail for the residents. There were many schools built as the area was developed and young families bought those homes. That is why I went from kindergarten to HS with so many, but not because the schools were small - I had more than 1,000 in my HS graduating class - and there were high schools just a few miles away that had equally large classes. At the last HS reunion they took some photos by elementary schools groups - it was really fun!
It is also interesting from a cancer perspective because many of us are downwinders from the situation linked below. We moved there about 60 days after this happened. The cancers had already started at the 10 year reunion, and a significant number of my classmates have been affected over the years since. In my own family, 3 out of 4 of us - and my dad and brother were stage IV at diagnosis.
-
Wow, Special. That is chilling!
Off to mammo.....then, hopefully to the gym and not any "further tests". ;/
-
We've had frog stranglers throughout the day. Our rain gauge shows 3 1/2 in. Some areas got much more, up to a ft. of rain.
Dinner tonight is flank steak, which is in the refrigerator in a marinade that's a Rachael Ray recipe I really like. Sides will be lima beans and brown rice, both out of the freezer, and a salad. Ina Garten was making blue cheese dressing this afternoon on the food channel. That sounds really good! I'll look it up and decide.
Count down to martini time!
-
Not sure I'm eating tonight. Had a boatload of dental work done this morning and my mouth hurts. I have to time dental work half way between Prolia injections to minimize risk of ONJ, so I had three teeth worked on - on the same side, upper and lower - one of which had a crown that had to be cracked off. Have leftover meat sauce that I will turn into something for DH.
-
Special - I think DH needs to cook for you or at least get you elegant takeout. Sorry for the dental pains.
Carole - I saw our rain map today. We go barely an inch which is about what I thought. Am loving the cooler weather. Might have a better chance on Friday again.
I made the pork casserole which did make the advertized 8 servings. I froze 4 servings (2 each) and DH had last night and again tonight. I finally got all the dishes done yesterday and just don't want to dirty anymore right now. I think I will just have a big salad instead and he can have the leftovers.
I agree with the chilling stats of Calif. perspective. I lived in HI during the late 50s-early 60s when they were still doing nuclear testing in the Marshall Islands. Wonder if we got some drift off of that?
-
Special - sorry to hear about your mouth work. Dentists are so necessary but I'd rather have my arm cut off than sit in the dentist chair. I like my dentist personally but he knows I dread seeing him every single time. Hope the healing is quick w/o too much pain.
-
luv and minus - I will be fine in a couple of days, I'm sure I will eat tomorrow, but thanks for the good thoughts - it was just a lot of work all done at once! DH isn't even home from the gym yet so if I waited for him to cook we would be eating at midnight, lol! Can't eat takeout on this diet, so cooking it is! Have the leftover sauce, so easy peasy!
-
Special, wow! No rest for the procedure weary! I always feel like mouth pain has to be the worst (of course I have never suffered from headaches, which must also be terrible). Hope it heals up quickly, and you are able to enjoy a good meal.
This morning I had my yearly mammo, and while I am not one to anticipate and worry, I found myself agitated while waiting (place was unusually backed up today, so there was a very long wait....didn't need that as it broke through my denial!). I was much less concerned about feeling the pain of the "squish" than having a great pic for the radiologists. For the last side view one which I always recall being the most painful (and it was tolerable today), I said to the tech, "are you sure it was tight enough"....she chuckled and said...."...only a cancer patient would ask that!".
Well, that squish was obviously NOT tight enough, since I was called back for more pix by the chief radiologist. This time I had another tech and I gave her full license to cause as much pain as needed to get it right. She did, (and I didn't faint:) and when the radiologist called me in, he was able to show me the spot of concern, and how it was just scar tissue that disappeared with the extra pressure applied. Phew! NED! Now all I have to deal with is seeing my MO late next week, confessing my rogue meds status, and seeing if she is willing to help me figure out how to manage avoiding recurrence while maintaining a decent quality of life, OFF estrogen manipulating meds.
This week DH is out to dinner tonight, then out of town thru Saturday, so I am making "small bites" for myself. Tonight it was a chicken pattie (Trader's chicken pattie)sandwich on french bread with mashed avacado (for mayo) red onion, arugula, sliced red pepper, and sliced tomato. Tomorrow night it might be another variety of items on a similar sandwich.....while DH dines with his fellow board member at his manse in western Mass. DH suggested I come out with him...and I reminded him that I have yet to make good on using that man's kitchen to make a special meal...I would certainly not want to dine with him and his GF before I complete that effort. Besides, I always enjoy a little time to myself at home

Last night we had some serious rain, and DH and I have started calling such heavy deluges, frog stranglers! What is the expression for unseasonable cold?? Frog frosters!? We are having that now....brrrrrr.....46 degrees!
Laurie, loved your camping chronicle! Yes, that breakfast cook fest sounds so wonderful....great way to start your day...with the guys as short order cooks! Did your boys make it into the lake? We had one little six year old who stayed in the water for a very long time, even before the air temp warmed up. His mom was a tropper at the water's edge....mainly happy that he had mastered his fear of the water!
-
Lacey - just took some Advil, as now have mouth pain AND a headache, lol! I should probably just go to sleep, right? I'm sure tomorrow will be fine. Yay on the clear mammo! Gotta love that!
-
lacey, yea for NED.
Special heal up fast. Sorry about not being able to eat out. Guess you'll have to search for a restaurant that cooks some things you can have.
Dinner today was leftover brats and bean casserole.
Much love to all.
-
SpecialK, you have earned a long stretch of no procedures and hearty meals. No matter what, you never complain! I'm appreciative that you introduced me to almond milk. I really, really like it and have stopped drinking cow's milk. The NutriBullet turned out to be a great purchase. I'm enjoying my breakfast smoothies so much that I look forward to them.
Tonight's dinner was pan-seared small catfish fillets and a delicious tossed salad with spring mix, tomatoes, cucumber, small colored peppers, blue cheese and calamata olives. DH mixed up a good tartar sauce and we had home-made iced tea. For dessert I had a bowl of fresh pineapple cubes.
-
moon - it's funny - there is a cute place nearby that has brown rice "bowls" with chicken or steak, veggies, avocado, etc.. but if I eat there I just think that is what I make at home, lol! My DH gets home so late that we just eat at home - it's easier. There are no super restaurants that are close by - sadly, I have not found Tampa to be a place for artisanal or non-chain places to eat.
Mouth hurt a bit today, but really only when I smile, so had to try and be serious all day, lol! Had a headache all day, but went to a military retirement ceremony anyway. I'm finding every day I have to devote more thought than I want to what to wear to handle this half flat half implant chest. I did ok today though - genie bra with the mastectomy camisole puff thingy, a stretchy camisole and then a filmy blouson top. I'm always nervous in a situation where I will encounter numerous huggers (today!) but I'm working on deflecting into a side hug so there is less contact with the uneven chest.
Carole - yay for almond milk! I almost forgot - I just ordered a Ninja pro blender! I have a Cuisinart but its not very good, so I'm excited about the new one. I need to check and see when it is coming.
-
Hello all,
I have the NINJA. I think it is awesome. The three blades really chop everything. My latest discovery is the frozen fruit icecream.
Frozen fruit, 1/4 to 1/2 banana, a little half and half or heavy cream and the kids have fresh fruit ice cream(soft serve)...well not just the kids me too.
I make the big container of smoothie every morning, the kids have come to really enjoy.
Very easy to make creamed veggie soupes and bisques...too.
Smoothy time....nah ice cream...I let my daughter stay home today...my son is on his 7th grade field trip to Busch Gardens.
vivian
-
Just finished my dinner. I liked it. I made a honey chicken with honey (duh) soy sauce, ginger and garlic in a 425 degree oven..made brown rice. Am I bad? After taking out the chicken I put Graham crackers and Dove chocolates with a marshmallow in the turned off oven. Smores.... LOL
