So...whats for dinner?

Oh, Special, I really feel for you. Please don't be offended that I am trying very hard to avoid inhabiting that bubble....and I hope you can escape it!
I can see why you are willing to stick so closely to your diet, separate from the good weight results. The rainbarrel theory would suggest that you are doing a good job of keeping your body in better balance....so no barrel overflow (major symptoms).Hope everyone is weather safe tonight!
-
Bedo I'll miss you. Go enjoy life! And if you ever come to Wisconsin let me know..
Lacey I don't know how you managed the church reception. Those are hard to do. I know I could no longer provide half the treats! I am impressed. And I hope the allergies get better.
Laurie I am glad you're home settling back in. I love the food law.
Erik hope everyone is feeling better. It's bad to have it go through everybody at home.
Carole glad the nutritive works. Nice to heat.
Luv and Minus hope the storms missed you. We've had a lot of rain here but no really bad storms.
AuntNance, you really do a lot of baking. Do you always make more than one loaf and freeze them?
Specialk, are you still in the phase where you haven't added anything back in? When do you get to try them and more importantly are you noticing any difference.
If I missed anyone I am sorry. Much love to all.
-
lacey - never offended - I would like to stay out of the bubble, but it is proving challenging!
moon - the only thing I have added back in is eggs but I eat them sparingly, mostly because they are a naturally hormonal product since they are an ovum, which makes me a little nervous. I tried to add dairy back in right after the surgery in March because I was on an antibiotic and didn't want the GI distress, so I ate Greek yogurt - my skin broke out like I was a teenager. So, apparently dairy is sensitive for me. I will not be adding soy, gluten, and sugar back in, and I love almond butter so I see no need to add peanuts back in. I have only eaten organic sprouted corn tortillas and they were just ok, but not really any other corn or corn product other than a bit of organic corn starch. Don't really miss it, but I might when all the nice fresh corn is in the grocery store! One thing I can say is that even on Femara I do not have the joint pain that I had previously, but it took at least three months for it to dissipate.
-
specialk I am glad you are seeing results! At least getting results help you continue. I would have a hard time with dairy as I love cheese of any kind. It's also one of the few things I could eat during chemo when my taste buds went south. And the sharpest irish cheddar was my favorite! Just a couple of shards with the bit of crystallization was so good. Of course that meant the expensive stuff! LOL
Supper last night was a root beer pork chop I bought from my favorites store . Sendicks. Kinda like a TJ but local. I also bought a chicken kabob for tonight. When I'm home alone it makes sense to get one if those already made up and they cook up fast. Then I either put a small potato in the cast iron pan to cook with it or put it in the Foreman and cook some rice. Snap peas go with it popped in the microwave. Dinner in 10 minutes.
-
Moon, sounds like you've mastered the solo dinner routine. Tonight's selection sounds great! You are correct in thinking that the cheese elimination is the hardest thing, and maybe for me, the greek yogurt deletion.I used to love that (peppered with chia and walnuts) as my go to breakfast when I ran out of smoothies and was in a rush in the AM.
Sendicks sounds like a good shopping option for you.....so many stores, so little time........;)
-
Moon, sounds like you eat well without putting a lot of time and effort into preparation. Very smart! I, too, love cheese but don't eat as much as I would like. But I always have chunks of good grating cheese and blue cheese on hand. Right now I have some good cheddar and gruyere as well.
My partner and I won the member-member women's tournament! My prize was a $50 gift certificate to Fresh Market. I went straight there and spent $20 of the total. I bought a couple of bunches of organic kale and some organic beets. Plus some other items. Lacey, see how influential you are! I like cooked beets but will try adding raw beet to my smoothie. Here's my question. Do you peel the beet or blend up the peeling, too? I bought the red beets but may try the yellow ones next.
Another question: do you ever freeze your kale? The author of the Aztec Diet freezes his and adds handfuls to his smoothies.
Lunch today included delicious crunchy fried chicken. No dinner for me tonight. DH will have leftover pasta and a salad.
-
Congrats, Carole!
Interesting idea to freeze the kale that will be used in smoothies, (never tried that and have no idea about the Aztec diet...will google it) especially when you get a large bunch that will take a while to use up. I'm laughing to myself, tho, at how DH will respond to have more things stuffed in our freezer when we are supposed to be clearing it out!
. I do peel the beets....and have to say that people make a much bigger deal about stained hands than is necessary. Mine get the red stain off immediately upon washing.
I also just use red beets in my smoothies since the yellow and striped ones do not generate an appealing enough color for the final product. But if you are not concerned about that, try some variety.Tonight I made a pretty quick and really yummy dinner. I had picked up a fig balsamic glaze (as well as a raspberry balsamic, and chili pepper balsamic glaze) at my favorite junk store that sells a lot of speciality food products (lord knows where they get them, but they are cool!). So, I used the glaze with a tenderloin of turkey breast I picked up at TJs.
First dredged the two pieces of tenderloin lightly in flour, garlic powder and pepper, browned them in a caste iron skillet with some olive oil, shallots, and button mushrooms, added the glaze and made sure all was covered, then put the whole thing in the oven at 375 degrees for about twenty minutes to finish cooking. Meanwhile, made asparagus, and also a baby spinach salad with pear, mushrooms, red onion and a dijon vinaigrette. It was a great little fast meal! Rice pilaf would also go well with this.
-
Tonight is organic chicken sausage (fully cooked) sautéed with onion, then I poured tomatoes and green chilies in, and some leftover kidney beans, served over brown rice. Also romaine salad with honey mustard dressing.
carole - congrats and yay for your prize! I would be so excited!
-
We're all done with "the issues" from whatever was making the rounds. Several folks at work got it about the same time as I did...so it was not food poisoning as they did not eat where I did.
Dinner was a quick "heat some frozen turkey and 'nuke' some potatoes" so I could get out and work some more on DD's car before it got dark. The seat belt would not latch into the buckle. It's fixed now.
Laurie, I like that law....works for me... :-)
Lacey, my mom would make chicken with a very similar recipe and would serve the chicken on a bed of rice. Great minds think alike! :-) You will soon prefer doing your own shots. The now retired allergist I had would mix up the allergy stuff up for each patient and have the patient do their own shots. He and his wife (a NP) felt it led to better outcomes as the folks tended to stick (bad pun, sorry) with the program through to the end instead of quitting part way through because of the annoyance of coming to the office each week.
Special, I think you and Sharon sound about the same for pollen allergies. Sharon did allergy shots for 5 or so years and then ended up with nose surgery and it has helped a huge amount. Still, when things are really bad, like right now, she still feels "not so great"....like now. It makes it hard for her to sleep, so after a few days, she's REALLY tired.
Congrats Carole. That's a good way to spend the gift certificate....although I probably wouldn't buy kale. I'd probably buy stuff to bake something decadent!!!!!
Moon, hats off to your cooking for one. When it's just me, it's not "cooking and eating", rather it's heating stuff so it's safe to stick in my mouth so I can stop the rumbling stomach. To me, cooking something nice is more for the social interactions.
I'm sure I've missed a few things. My apologies. I do read things on my phone during breaks or when I'm waiting on a computer to finish something for me. And hopefully I don't lose the post (again). Windows 8 is still annoying me...but I guess it's getting somewhat less annoying that before
Eric
-
Just lost my long post! Grrrr!
Will check in later.
-
eric - I too did the allergy shots, starting in high school and continuing for about ten years. I married my military husband when I was 27 and started moving a lot and the problem with allergy shots is that they are location specific. So, I would build immunity to something and then move and that tree/weed/grass would not be at the new location, but a bunch of new things that I was not desensitized to were! I never stayed anywhere long enough to get in enough shots to build immunity, so I gave up and treated symptoms. As I have aged (ugh - hate that word!) I am less sensitive to pollen, so my allergy symptoms are easier to medicate, but I have developed new things that I am allergic too - mostly drugs, cosmetics and topical and oral antibiotics. The one thing I struggle with is allergic rhinitis related asthma. It has been bad for several months, can't seem to get it under control, so it may be time to be more aggressive with it. I am also allergic to mold, so living in FL is a challenge!

Eye of round roast in the oven, being cooked by Laurie's technique. Called dh about 5 pm and said I was running late. He looked up the recipe on the internet and took it from there. I was thinking we might eat out!
Side will be microwaved broccoli with cheese sauce and a salad.
Took my mother to the supermarket following her 1:30 hair apptment. She uses a powercart provided by the store. It takes forever because she doesn't get out a lot and gazes at all the products. When it came to checkout time, the bill was almost $150. She had to borrow a dollar from me! Most of the time, she gives me a list but I think it is good for her to get out into the world.
-
Those power carts are a blessing. No way I could go for groceries alone without them. DH brings stuff in and puts it away. His health is such he couldn't do the whole job himself so we divide the job, each according to our ability.
-
I must admit that thise carts are important. If it's a really bad day I wouldn't go to a store without them. Otherwise a get a big cart and lean on it hard. Carol I bet your Mom loved the day out.
Started my arthritis water exercise class. I actually had trouble doing one move with my hands. I couldn't hold the noodle. LOL its just weird the things that don't work anymore the same way! LOL but a nice gentle workout.
Saw a nice stuffing mix at the grocery stire. Apples cranberries nuts and bread. Heated it up with a frozen chicken breast. Supper. Pretty good.
-
Laurie, have you started painting yet? Isn't cutting made a lot easier with a really precise brush? I wish I had the confidence to paint....Carole, you must be enjoying your newly painted rooms.
Tonight for dinner, I think we'll head to a potluck and last Q and A with the new ministerial candidate at church...the vote is on Sunday. This young women has done an amazing job in a zillion meetings all week and I think has changed the worried minds of the very older folks who seemed sure that a person so young could not be up to the task.....before they met her!
I'll bring a baby spinach salad with mushrooms, walnuts and cranberries with a dijon vinaigrette.
-

Very stormy here - lightning and thunder are scaring the dog. Had to put his pajamas on. They calm him down - like a Thundershirt. Realize this is not a "purse dog", this is a pit bull.
Lacey - can I go with you and eat your salad? It sounds delish!
-
We had a dog that ran from window to window barking and trying to chase the thunder away. When it stopped he would run to the kitchen and stand in front of his treat jar as if to say I was so good, reward please!
-
chabba - that is so cute! This dog sticks to me like glue in the thunder, but barks when there are birthday candles and the happy birthday song - I think he is warning us about the fire! He does not bark when someone is at the door, only at birthday candles and squirrels.
-
I had shelties who barked at the mailman, the garbage man, the vacuum cleaner, the garbage can itself, rakes, the doorbell (even on tv), the hose, the broom, the wheelbarrow ,
-
auntie - Lol! Hilarious! Maybe not so much for you though....
-
Our last mini schnauzer would get frantic at thunder storms....such good dogs would make good weather aps...since they start their anxious behaviors well before we hear the thunder....and to think that we now pay for an ap to domthat when we are at the lake! When people added their condolences on my Facebook page after she died, one of DS2's buddies commented on how much he would miss her in her little thunder cape....brought sweet tears to my eyes. The little cape sort of worked for her....
Special, come on down!
Part of my purpose in making that salad is that I can enjoy it in the event that everything else at the potluck has cheese in/on it! Off we go......
-
Gypsy, our little yellow lab dog, barked where she could hear her echo.....she barked for quite awhile and was relieved when "the other dog" finally got tired too... :-)
Eric
-
Aw Eric, too cute!
-
Hysterical, Eric!

-
Healthy lunch. And delicious. Grilled salmon on spinach salad. Unhealthy dinner at my mother's house with a group of family members. Popeye's fried chicken and sides (beans and rice, mashed potatoes and gravy, coleslaw, biscuits). The coleslaw was pretty good. I skipped the mashed potatoes but did have a small helping of the beans and rice. And a biscuit.
-
Carole, when indulging in Popeyes, one MUST have a biscuit. It's a rule.
SK, they were such sweet and wonderful dogs, it was easy to put up with their vocalizations. I miss them everyday.
Not much interesting cooking going on here. The new refrigerator got delivered yesterday so the kitchen is in a state of flux while appliances get moved around and food transferred from one to another. In addition, we decided to turn the space the old refrigerator inhabited into a baking center for me. We found some base cabinets that fit the space and I'm now looking for a marble slab to use as a top. I'm excited at the thought of having a dedicated space for my baking endeavors. But all of this searching and decision making is exhausting.
Lacey, your salads always sound so delicious!
-
Nancy, you will love the marble, Be sure it is nice and thick (at least 3/4" so it holds the cold) I loved mine for making danish pastries and croissants. Also good for pie crust and candy making.
-
auntie - you might do well to look for a piece of scrap marble at a stone merchant and have it cut for the space. That can be an inexpensive way to go if you need a smaller piece.
-
Well Nance, maybe not much going on right now....but I can hardly wait for the posts once the baking center in set up. Wonderful!
The potluck was pretty good. Everyone was happy that there was a real variety of food...and it made for very colorful plates....lots of orange and green! Then the candidate fielded a zillion more questions. She is amazingly polished, warm and bright. Afterwards, DH ended up discussing mortgage strategies with her DH. He is doing the house hunting since she has a schedule to knock your socks off.....I feel for him/them. There is precious little on the market in our town right now, and the houses that are, get bids considerably beyond the asking price. Ask me how I feel about dragging my feet on clearing this place out! At least my thinking stages about doing that are getting more developed now....;)
News on DS2 front.....he is out in Chicago (again) and actually sent us a photo of self with gf at the Cub's game. I have a feeling we might be meeting this gal in the not so far future. Hope so!
Tomorrow driving to the South Shore for a friend's mom's memorial service and luncheon.
-
Nancy - your shelties' behavior sounds just like our rat terrier. Esp. funny when she barks at doorbells on TV. I don't know if our's even works. We use the side door and almost never have unexpected visitors. Your new baking center sounds marvelous. What kind of casserole pan do you make your bread in? I only have the basics - Pyrex or Corning Ware. Or disp. aluminum. More concerned about the size.
Finally got the stuffed shells made. I used a recipe from "Mueller's Pasta" very basic, cheese, ricotta, eggs, parsley no meat. Made a full 9 x 13 and an 8 x 8 that I baked/froze. Well worth the effort. Tonight is a Southern Living recipe I've only made 1-2x. Chicken Cobbler - I have 3 jars of roasted peppers to use up. My store is changing its stock out - not sure why. Tons of "gourmet" stuff on clearance but seems to be replacing with other equally gourmet. Not so many gourmet cooks out here - chicken fried steak/mashed potato land. If you've ever watched "The Pioneer Woman" cook it's just like my little town. SO - I have a giant pkg. of froz. breasts thawing to boil and freeze in a bit and save for the cobbler. I also found a roast buried so will crockpot it on Monday. That should get us through for a few days anyway.
Made the Central Market run too yest. while in town for well woman checkup. Only spent - tada - $33 there. Applaud my restraint. They did announce last week or so the official news of Whole Foods opening in the same area but not until 2016. Not sure of why so long. The new south toll road is "opening" mid month - opening in quotes because I just don't see how. They are working I think 24 hours/day (more unpopulated areas) and the weather has be very cooperative for that. This will be very near that new toll road but no reason given I don't think for the delay. Land is mostly vacant.
