I enjoy fennel but have read that it is high in phytoestrogens so have not eaten it since diagnosis.

I don't eat it often because it's expensive here.

HAHAHA Laurie...your "bug b-fast" reminded me of "back in the day" when we all had so many funny typos, which my brain is struggling to remember! But they were quite funny! Wasn't one a "herd of beer"?

Hearing about your DH's trip to FL reminds me of doing the same thing many years ago when my dad was failing...returning a week later after that awful roller coaster one goes through while participating in the end of life of a loved one in a hospital. Glad I was there for my stepmother, and relieved that the nursing care my dad received in FL. in his last days was so compassionate. I'll not comment on the docs. I was scheduled to give a lecture at a local library about Stress Management for Women as soon as I returned. Boy was I stressed! But youth is an amazing ally for getting through challenges! Holding your DH in my thoughts, Laurie. So, meals....your mac and cheese one night....salsa chicken another, and whatever else is favored by the boys and you!

Roasted Fennel looks so appealing to me, Debbie...but it's one of those pesky food allergies for me....I think it's related to celery.

What I am afraid of is DH's sister is jumping the gun on the time line. That he will stay a week + and she will still be ok. How do you leave your mother? What if you never see her again? This long distance thing is tricky. My heart breaks for everyone. No one knows what to do.

Hugs and prayers for everyone Laurie. It's hard at the end. My DH Mom rallied 2x and his sister came back from.Montana and had to go back and then come a couple of weeks later to be there later. It's hard for everyone.

Laurie - Sorry about your MIL. My nephew just arrived from HI since his grandmother was put in hospice. I don't think he'll able to come again when she dies so he gave it a lot of thought & planning. He decided it would be better to see her while she was still coherent & she wouldn't miss him once she was in a coma.
As for dinners w/the kids, we had such fun when my Dad was out of town. He was a 'meat & potatoes' every night guy. When he was gone we had mac & cheese, beenie weenies, waffles & bacon, ham hock & beans, popcorn & apples. Go for some fun stuff & things you know your DH isn't particularly fond of.

Laurie- Too funny and thanks for leaving it that way haha! Such a sad situation for your DH to be in when there are so many miles between him and his mom and not knowing if he should stay or leave. Prayers for you all.
Lacey- That was me and the herd of beer haha! We were all in the subject of deer and I said there were a herd of beer on my road lol! Good memory. I should go back and re read all of our funny mistakes we made it would make my day for sure. :-))
Specialk- Didn't know that fennel was a phytoestrgen, but I believe every thing in moderation is OK. It is also not something I would make all the time since DH does not care for it. ha!
Minus- Good idea make all the thing DH does not like, hehe! I would have a great meal if I did that. he does not like tomoatoes, avocadoes, fennel, corn, peas, Kale and the list goes on and all the things I love the most. sigh!

Didn't know about fennel and phytoestrogens, either. It's pricey here, too, since it's not a common veggie. The majority of people shopping in Walmart, for example, wouldn't know what it is. I've used it mostly as seasoning along with diced celery, onion, carrot and garlic. But I like it raw from just taking a piece and crunching on it. The baked dish sounds delicious.

Tonight we'll have home-made pizza using the other half of the pizza dough I made a couple of weeks ago and froze the unused portion.
This morning is my ww weigh in. I feel like I did well this week, dealing with a lunch out, a dinner out, and a barbecue without sabotaging myself. Not to mention dinner at my mother's house yesterday where my sister was in charge of the meal and heated up a family size Stouffer's lasagna and frozen cheese garlic bread. I took my own lunch! Nancy, you'll be amused to know I indulged in a rye old-fashioned last night, which I enjoyed a lot more than goey lasagna. Now if it had been home-made lasagna, I would have had a small helping.
Laurie, I really feel for your dh and his family. Losing a parent is never easy.
After ww, I must bite the bullet and tackle painting the living room.

Carole and Lacey, I so admire your diet resolve. Even though I cook a lot of different high calorie things, I eat only small amounts of it. My pleasure is in the preparation. In spite of exercising more and eating fewer carbs, I've gained a few pounds this winter. I need warmer weather (and less wind) so I can ride my bike on off gym days.
I wish I liked kale. Costco has some baby kale that I might try.

carole - I probably have too much time on my hands, lol! Also, I am a relentless researcher and googler. During conversations if someone poses a question, or we are hanging around trying to remember something, I almost always get up to find the answer. I probably should have been a detective.

SpecialK- Funny every one in my family says I should of been a detective too ha! After researching Phyt. last night I was so surprised at how many foods are part of that. I agree with Carole, you are a wealth of information.
Nancy-Have you tried baking the kale making kale chips? You can season them with just about anything you like, sometimes I just salt them but other times I will put chili powder, or cumin any seasoning you like. Make sure you take the leaves off the stem and tear them in kind of bite size pieces drizzle with EVOO and roast in a 375% for 10-20 minutes they can take the place of potato chips if you make them right.

And Nance....I admire your ability to eat small portions. We tend to be big eaters in this house....like the woman who is that new diet book writer.....Hungry Girl. She did an interesting piece on The Chew today showing how you can eat big portions of meals that are made in lower calorie ways. Of course I can hardly remember them.....one was cooking oatmeal with more water (and less oatmeal...adding a bit of pumpkin pulp), so the calories are lower. She also makes breadcrumbs out of Fiber One cereal (in her blender) and coats chicken tenders with that for baked chicken pieces. I guess the fiber fills one up? I have been getting much better about eating much less, which is obviously helpful with the weight loss. My Italian mother would be horrified!

Tonight I made an iron skillet chicken dish with boneless breasts, cut up asparagus, roasted red peppers, garlic, some fresh basil, topped with a spritz of balsamic and sprinkle of mozzarella. Put the whole thing in the oven to melt the cheese. It was good a d there is enough for another meal. Yay! Love the internet for recipes! We had it with farro and a quick cuke salad.
Debbie, wasn't another typo "crap cakes"? I still chuckle about those funny typos we all made.....
Laurie, hope all is going peacefully with DH....and that your menu planning is working out well!

I was down another 1 lb and 6 oz this morning. For a total of almost 10 lbs.
Tonight's pizza must have been good because we ate it all. I was hungry because today I was too busy to get in my snacks.
I love, love, love the new color. I got about 1/4 of the living room painted with two coats. There's quite a bit of hand painting with a small brush, cutting around door frames and cutting the line where the wall meets ceiling. My ceiling stays white. I had to empty a display case of its contents in order to move it away from the wall, so now all the glass panels and shelves in the case have been cleaned and the objects dusted. Tomorrow I hope to get a long wall painted, which will leave one more day of painting.

I found two frozen hamburgers and we have 2 leftover buns. Perfect unless they are beyond usable. Then I don't know what. Trying to finish a Bible study I attend on Tuesdays that I just cannot get into so not much cooking.

Yesterday I had a typo on another thread about the Reproduction forum. Instead of the reconstruction forum..... LOL oops.
Had leftovers today. Guess I'll have to cook tomorrow! LOL.
Specialk I don't care much about entertainment. I'd probably get movie trivia.
LMG, if I hadn't felt guilty enough to eat the leftovers that's what I would gave msde. I had 1 hamburger in the freezer and a roll left from the ham I bought last week. LOL

oooooh! Good news X 2. Well ok may not THAT good but unexpected refunds! One from my Sony e reader. A settlement check for that lawsuit about price fixing by the sellers of ebooks. I thought it would be like 10 cents. Pleasantly surprised it's over 50$. LOL. Guess that shows how many books I buy. Then the assistance device and clothing store must have gotten a bigger insurance payment than we thought because I got a refund from them. So it's not much but it again was unexpected! Just had to share the everyday kind of happy ! LOL. Maybe I'll go out for dinner! LOL

Blessings to all...you and your families are all in my prayers as you face life's difficult challenges.
Today is my oldest son's birthday and he turns 21. His requested menu is baby green salad with peppered ahi tuna to start, Churrasco (skirt) Steak with chimmichurri sauce (made with fresh parsley,garlic,onion,salt,pepper in olive oil). Sides are Repollo (shredded cabbage and carrots with vinegar dressing) and Steamed asparagus and bread drizzled with olive oil and garlic toasted in oven. Dessert is an Ice cream cake. We are eating late since my daughter has dance practice til 830.
Son # 2 turns 13 on the 3rd. So far requesting lobster tails grilled (spinach,parsley,butter sauce) and Enchilado de Camarones (shrimps in a tomato based sauce) served over rice. Dessert is a chocolate chip cookie cake.
Lots of chicken for the rest of the month....

moon - I got that e-book class action settlement thing too! Of course, just got my homeowner's insurance bill - much higher than last year. Talked to the company and they recommend a wind mitigation inspection to see if our roof qualifies and, if so, a large discount. Worth the $99 inspection fee - it would be a $1000 reduction. The downside to living in a place with hurricanes, crappy drivers, and no state income tax - huge insurance fees for home and car, and very high property taxes!

Dinner was good, everyone ate a lot and I just finished the last dish that I am going to do for the night, the rest tomorrow. Need to stay up a bit am too full.
Special K, my insurance went up close to 2000.00...... last year it did the same and I made changes to policy with deductible and benefits to lower it and I got it to a little over 200. from original amount. Now they did the same and I have no room to wiggle. I either deposit into escrow the amount over or the mtg goes up.

Moon - I only got back five dollars & change.
Special - RIGHT ON. We also have no income tax and VERY HIGH property & vehicle taxes. And hurricanes. I understand all houses on the water now have to have separate property insurance AND flood insurance AND wind insurance. Sure glad I'm inland a ways. State insurance board - at least it Texas - is worthless as far as I can tell.
Popcorn for dinner last night. I thought of Bedo. Tonight was Lobster Bisque from Costco. Sure not from the East Coast, but not too bad.

Special, don't get many hurricanes here in the midwest.... LOL but we do get tornadoes. And wind shear. As a matter of fact we had one years ago that ripped our siding off one side of our house. Took our neighbors roof off. And downed so many trees they offered mulch free for 4 years.... LOL
Tonite for supper I made boneless ribs from Sendiks and put them in the cast iron pan. Threw leftover kidney beans in leftover rice with spices. And there was supper.

The unfortunate thing about living in FL is that half the risk for damage to homes is in this state. It is not a question of if, it's a question of when. The state legislators have kept somewhat of a lid on rates but there is a state sponsored insurance company that is funded with surcharges on both homeowners and auto policies. So I am not only paying for my stuff I'm paying for everyone else too. It is ridiculous.
