Carole, you crack me up! Shades of that movie, "Something to Talk About!"
Tonight was a really excellent stir fry with flank steak, onion, garlic (10 cloves!), baby bok choy and hot peppers. I served it with udon noodles instead of rice. It was supposed to have leeks but I had a bunch of baby bok choy that needed to be used. Anyway, it didn't suffer from lack of leeks. DH even requested a repeat.
Supposed to be 70s tomorrow. I have leftover flank steak so may make some spedini for the grill.

Nancy - I was watching a rerun of Mr. Selfridge on PBS last night. Lady of the house was served spatchcocked quail. I though AHA I know what that is thanks to you.

Oh my all your food sounds so yummy. I ate a roast beef sandwich for supper but lunch was the star of my day. My Livestrong program had our graduation today.so we were treated to lunch by many of the past grads. we had Pasta fagioli, veggie lasagne, salads, veggie tray, fruit platter, turkey sandwiches and desserts. One of which was " better than Sex " cake. Been quite a while so I'll have to think about that for a while ! LOL. But it was real good! LOL of course we still have 2 more Livestrong days to make up, because they were canceled 2x when the temp was 20 below. But 2 of the class members were going on trips and had not planned on the longer time and so would not be there.my DH did spring for 3 months more however so I'll continue to go 3x a week. I'll have to sign up for a class because if I don't it's too easy to have an excuse not to go. LOL

SpecialK, the coconut milk is higher in pts than 1 percent milk but the almond milk is lower than milk. I use ice water in my smoothies for the liquid and add Greek yogurt for creaminess (plain, nonfat) and chia seeds for protein. Frozen berries for delicious taste. I avoid the protein powder because I think it comes from soy, which I was told to avoid.
I tried adding kale and didn't like the taste. My stomach didn't like digesting the kale. Sorry, Lacey! I can eat the blanched and sautéed kale but the raw gave me terrible gas. The same woman who eats all kinds of dry beans!. Go figure.

carole - I don't eat dairy or soy - so don't use soy or whey based protein powder either, I use vegan protein powder which is pea and rice protein. I can't handle the kale or spinach in it either. I use the vegan protein powder, almond or coconut milk, chia seeds, and a cup of frozen organic berries.

The dogs started barking at 2am. They didn't quiet down like normal so I got up and saw the neighbor's (we have adjoining back yards) house burning. I called the fire department and they were already on the way.
They (husband, wife and 3 kids) and their 2 dogs are all safe and uninjured. The fire appears to have started in their garage...possibly at their motorcycle.
They are staying at their next door neighbor's house. I and many others in the neighborhood have been up with them to help however we can...
The house across the street from this burned house suffered a fire 2 weeks ago. I was worried about an arsonist or some housing defect starting to cause problems, but the two fires appear to be unrelated...possibly a vehicle fire this time and a cooking fire at the first house.

I am glad everyone is ok. That's scary. Our neighbors house had a fire when we were kids. Scary. Sounds like a good neighborhood! Stay safe and just in case practice your fire drill.

Tonight we're having hamburger steaks, roasted asparagus, and roasted butternut squash. The now-seven-year-old will also have pasta.

Yike Eric! Scary stuff! Glad everyone is ok, but what a trauma. My DH, in his former life (marriage) had a house gutted by fire. Fortunately, they were gone on a trip, but what a shock to return to!
Luv, I love Mr. Selfridge (though he is a bit of a cad). It's a decent enough replacement for Downton Abbey. Spatchcocking just sounds like a British term, though I don't know if it is.
Debbie, ha! I've done that so many times it's ridiculous. I've taken to copying long posts before submitting for that very reason. Saves some aggravation lol.
Tonight is rolled flank steak stuffed with bread crumbs, parmesan, onions, garlic and peppers, braised in a tomato wine sauce. We'll have asparagus parmesan orzo as a side. I kind of winged this flank steak dish, so we'll see how it turns out.
It's been very cloudy here for a couple of days. Really affects my mood but at least the temperatures are warming up, though still below normal. I'm missing hearing the spring peepers. They should be in full song by now but we haven't heard one. Either too cold or too dry, or maybe both. Tomorrow, we'll dig up the potato bed and get those planted this week. At least I'll feel like I've done my part to hurry spring.

Spring sprung in NE Texas with a bang today. Lots of severe T storms. We got only bit of thunder and few drops.
Not sure what we're having tonight. Today has been dog day - dog bath, wash dog crate, clean around dog crate. Maybe that saved Stouffers dinner tonight. Maybe stuffed baked potatoes. Maybe spaghetti. DH coming home early so don't need to decide quite yet.
Monica - I realized I never answered your question about the sweet tea marinade. It's from McCormicks - one of those tear open pkgs. Grill Mates Smokin' Sweet Tea. It was pretty good maybe a little peppery for my taste.
Paula - hamburgers here tomorrow night. DD visiting and want something easy so I can spend more time with her (26 year old). I think she wants her dad to do her taxes.
Eric - what a scary situation about fires
Funny about the word spatchcocked. Sounded perfectly at home in the episode to me but a bit of reading might be Irish. Close enough for TV. Still haven't done one. Need to try. Break out of my cooking ruts.

Last night ended up soup and bit of leftover enchiladas. Tonight the Stouffers in the freezer won out - chicken lasagna which was pretty good. Two servings left over for DD to take with her. We both had salad with it - major accomplishment for DH; he usually passes on it. Pleasant amount of food.
I used to eat eggs with ketchup years ago. Who knew we would be trendy then?

Both of my kids ate their scrambled eggs with ketchup, but neither DH or I do - not sure where they got that!
Eric - wow on the fires! So scary! We had a house fire when I was little - probably six. Just damaged the kitchen, the fire department put it out but man it was a mess!
DH had leftover cabbage rolls and herbed mashed potatoes for dinner. I made a salad with romaine, pinto beans, salsa, Beanitos chips and some guacamole. Today was the dog's birthday so I gave him a tiny piece of DH's leftover b-day cake and a dog sundae with a candle. We sang and he barked!
Auntie - I used to make a rolled flank steak in wine recipe. The steak was spread with herbed garlic cheese (like Rondele) and spinach. Then it was rolled and seared. Added the wine and covered and cooked until done and wine sauce reduced. Haven't made it In ages!

Eric, yikes! What a scary event....glad all concerned are safe. But two fires in the same neighborhood!? I'm sure you are outfitting your home with extinguishers and evacuation plans.
Last night we had big bowls of cabbage soup, and DH had a hamburger while I had some lite brie on rosemary crackers. I also made a sauté of broccoli rabe, garlic, onions, and red pepper since I couldn't resist the fresh looking broccoli rabe bunches at the produce store. We have some leftover.....wonder about making an omelet with it.

Hahaha, Moon....I thought it would be interesting and tasty.....apparently DH did not concur......so much so that he was willing to go to the store in the pouring rain to buy shrimp for tonight. I'll just boil and chill it and have it with (totally nutritionless) iceburg lettuce that was on sale. We might also have aparagus since DH can never resist buying that when it's available. He even cooks that on the grill ( in better weather;)...self taught! LOL
Better get upstairs and start the shrimp. Just finished a workout w/o taking any Celebrex (like a daily vitamin for me!).... Testing to see how I fare w/o it since next week I have to avoid taking it for two days before some extensive allergy testing. Already feel creaky!

Keeping the California folks in mind. Two good friends of ours moved to LA four months ago (their only child, a son now lives there) and have had two earthquakes so far. Yikes!
Speaking of eruptions, my pyrex bowl says nothing about microwave....just "not for top of range or broiler". Think it would be safe for the dry microwave method? I am explosion averse.

Nancy, I'm impressed that you're winging it with a rolled flank steak dish. I like flank steak but have never cooked or eaten it with that preparation. You must slice it very thin?
My niece's three children eat ketchup on everything. I wonder if they even know what their food tastes like other than tasting like ketchup. I'm not a ketchup fan. Dh puts it on pot roast, meatloaf and French fries.
The Hungry Girl potato salad made with cauliflower is quite good. It has a lot of flavors, including part of a packet of ranch dressing mix. I used some of my fresh dill and chives from my patio herb garden. I took a bowl of the salad to a barbecue this afternoon so I would have a healthy side dish. I also took crudités and hummus, which was largely passed over. So I have a bag of broccoli, cauliflower, celery and sliced colored peppers all ready for snacking. Dh likes the veggies, too, so they won't go to waste.
The dessert offerings were really tempting but I contented myself with a delicious oatmeal cookie. Someone brought home-made rice pudding. I haven't seen that in ages.

Carole, I pounded the flank steak, stuffed it, rolled and tied it. I braised it with a large can of San Marzano tomatoes and some red wine for several hours in a 300 degree oven. It was very tender. Since it was a small piece to begin with, I just split it between the two of us.
Not much of a ketchup fan either. Now chili sauce, that's a different matter.

DH likes me to make crumbs of dry croutons, mix them with minced onion, garlic, rosemary, thyme, a little broth and an egg. I pound the flank steak, spread with with the stuffing, roll and tie then sear and braise it in broth with a bit of red wine. Serve with mashed potatoes and a sauce made from the cooking liquid. yum

Chabba- I think I drooled a bit reading your post.
Everyone seems to be cooking up a storm and being very healthy. I need to jump on the band wagon. Spring is coming and I need to lose some weight.
We had a great time up north with lots of different friends. We cooked in every night/day except to get pizza our last night. Between the pool, hot tubs and skiing the kids slept great. Nice bug breakfasts to wake up to and everyone shared in the cooking and cleaning so it was not just all me.
Towards the end of our stay we started to get word that DH's Mom was taking a turn for the worse. She is now on oxygen. can not walk much and morphine every two hours so she can breathe. She now has 4 large tumors in her lungs. DH flew to Florida this morning with no return ticket. He needs to feel things out and do what he thinks is best. So sad.
Boys and I are on our own for the week- at least a week. Tonight I am making a quick meat sauce with spaghetti, a little salad and that is it. I need to come up with a menu for us for the week so we still have family dinners and not lag because DH is not here.

On a serious not though, I am so sorry to hear your MIL has taken a turn for the worse. My prayers for comfort for her in the days ahead. Prayers for your whole family. (((hugs))))
Tonights dinner will be Pork chops with roasted cauliflower and baked fennel. I made the fennel last night and just loved it baked. I don't care for fennel raw don't like the licorice taste but when it is baked it does not taste like licorice. After cleaning and slicing the fennel I put in a baking dish with 1/4 cup each of white wine and chicken stock, salt and pepper, 3 tbl of butter wrap in foil and bake 45 minutes in a 350 oven, meanwhile, make topping with bread crumbs, parmesan cheese, parsley, minced garlic, and melted butter. After 45 minutes turn oven to 400 take out of oven and top with breading return to oven without the foil and bake another 30 minutes, It is now my new fav thing to eat.

I've never had roasted fennel. I've heard the taste of raw fennel described as licorice-y, but that roasted, it's much milder. I am not a fan of licorice, so I've always been too chicken to try it.
Tonight the grownups had veggie-beef stir fry and brown rice, and my son had leftover hamburger steak with brown rice and lima beans. I am at a loss for this week, and I need to go to the grocery store.
