Auntienance, that sounds wonderful. I have never had the traditional St. Patrick's Day food (and am too lazy to make it!), but that sounds delicious, especially the dessert!
We're having leftovers--it's fend-for-yourself night (though I guess I'll help fend for the six-year-old). I have cooked at least four days in a row!

Happy Saint Patricks day to every one. I'm going to be cooking a brisket today after brineing for 5 days never have brined it before so I will see if it makes a difference or not.
Has any one heard from Laurie? She hasn't been on face book either.

Popcorn alternative - I pop my corn in a paper lunch bag. Cover the bottom of the bag - single layer of corn kernals. Fold the top down - two small folds. Put in microwave. Push "popcorn" button - or approx 3.5 minutes. Stop earlier if popping stops. Don't add anything else in the bag. I'm sure Carole's bowl method is the same. Once it's done you can add butter, salt, garlic or anything else you like.

Happy St Patrick's Day to all.
Decided to cook again.....had been in a major anti cooking funk. So tonight it is center cut pork chops cooked on the stove top in a garlic and pinot reduction, Congri which is rice cooked with red kidney beans and boiled plantain just as it turns yellow and is somewhat sweet. Salad is baby mixed greens,water cress and green tomatoes.....and of course the Pinot Noir that I opened for the sauce (am on antib's so can only have a taste, that is after the taste I already had). Dessert is a surprise going out to a new frozen yogurt place and I have free coupons for the kids.
It's nice to have kids saying, it smeels good and when is dinner. They even set the table already.

The pyrex glass bowl I use is 2.5 qts. Yesterday I measured 1/4 cup kernals but you can pop less. The bowl has to be large enough to hold the popped corn.

I have a turkey meatloaf in the oven. I consulted two recipes and took some ingredients from both. I added to the bowl 1 lb. of lean ground turkey, sautéed ground mushrooms (at least a lb of raw button mushrooms), large clove of garlic, 1/4 cup egg beaters, 8 green onions finely chopped, 1 T. Dijon mustard, 1 T. Worcestershire sauce, 2 T. chili sauce, 2 tsp fresh thyme, 2 slices wheat bread processed to bread crumbs, s & p. I think that's all of the ingredients. No copyright infraction.
Our side will be leftover baked sweet potatoes, peeled, split in half and browned in a bit of butter and grapeseed oil.
I lost 1.8 lbs this week. Hoping that by next week I'll be down to goal weight and won't have to pay!

Tonight having artichokes, roasted chunks of sweet potato with olive oil, S&P, and cinnamon, and roasted chicken breast on the bone. Everyone's meals sound delish!

Carole, that sounds like a good meatloaf recipe. I can totally relate to your motivation to get down to goal weight to avoid that pesky weekly fee! Good luck? Do you find that the AI you take contributes to weight gain? My MO wants me to try an AI to see if I might have fewer side effects than I keep having with Tamoxifen. I will be less than thrilled to encounter weight struggles after managing it so rigorously this year.

Tonight, despite it being a corned beef/cabbage day, we had a Mexican style dinner.....pulled salsa chicken and beans over melted cheese on chips, topped with shredded lettuce, green onions, tomatoes, and slices of avacado. Had a side of brussells sprouts.

Lacey, I gained about 10 pounds with letrozole, but I doubt it's much worse in that regard than tamoxifen. And Carole is proof that you can lose weight in spite of it. I haven't tried to get rid of it as hard as she has. You're so diligent, I doubt you'll have any trouble.

Debbie- Maybe I missed it but I never saw you comment on how you and Chuck are doing? I saw you talking with everyone but was wondering how you are?
So I have been MIA due to a funk, sickness and weather. Yucky weather , off schedules, and then I got the flu Sat night and did not move for 48 hours. It was HORRIBLE! But I am back to moving around today and finally ate some food. Not much but some. Dinner tonight is steak on the grill, salad and baked potato. I hope it sits well:)
We leave this Saturday to spend a week in the mountains skiing and swimming. We have friends and family visiting all week as it is a three bedroom. We have them coming and going at two day intervals. I am looking forward to getting away from the house and the regular routine. I need to come up with my menu for the week.
Hope everyone is well. I am sad I missed out on corned beef and cabbage for St Patricks day. I will have to do it next week.

Going way over my daily allotment of points with home-made pizza tonight. My side of the pizza will be plain. Slices of fresh tomato, castelvetrano olives, ricotta salata cheese and gruyere cheese. Dh's side will have tomato sauce, sautéed onion, red pepper and mushroom, Italian sausage and gruyere cheese. I may put some mushroom slices on mine as well. Oh, and I'll sprinkle some cracked red pepper on my half. I've been hungering for pizza.
My 5 years on arimidix is up in Sept. I'm hoping weight control will be easier.

Laurie, so good to hear from you....and I hope you have a wonderful ski getaway! I am always impressed with your ability to plan meals when your family travels. Do take it slow, however, so you can reclaim your energy after being so sick!
Nance, I just learned on our local news that Tamoxifen is running out....and that next month Tamox takers will have to switch to another (un named) drug. So I may not be returning to Tamox after my few weeks of hiatus, whether the AI agrees with me or not! My oncotype score was 4, so a part of me may just to decide to take my chances if the AI makes me as brainless as Tamox has......
On to more important stuff....making fresh cod with salsa tonight....tired after a day of errands, so not anything but cuke salad for a side....and maybe a slice of cranberry/ginger bread from the loaf I impulsively bought at Whole Foods today. ;/

Dinner was Ribeye steak. Was going to add frozen Brussels sprouts but they'd been in the freezer too long and weren't tasty. So now I can add 'lemon minis' for dessert. What? Not the same food group? Oh my!!! As we've discussed before, cooking for one can be a challenge.

laurie - glad to see you, and smart plan on the non-skiing, lol! I am hanging in on the surgical front - went to see the PS today, have two one inch open areas of skin and we are now going to try xeroform dressing and antibiotics. Hope it works. My dissolvable stitches dissolved early - so need some healing and probably a re-stitch. Trying to eat protein!
lacey - I am on letrozole and have lost 16 lbs. since Jan 1st, so it can be done - but will say calorie control and exercise did not help me, this new diet did.

The pizza was DELICIOUS!!! I need to learn how to post links. I used Mary Ann Esposito's recipe for Wheat Pizza Crust. You can find it on the Ciao Italia website. But I modified the recipe and used all white wheat flour instead of part whole wheat and part white wheat. You don't have to let the dough rise. Instead use the pizza crust yeast. The recipe is super easy and delicious.
I do have a pizza stone and my oven heats to 500 degrees. It takes only 10 min. to cook the pizza. The other half of the dough is in the refrigerator. I may freeze it for later use.
Last night's turkey meatloaf was very good. I recommend that recipe. I actually liked the turkey better than ground beef meatloaf. It came as a big surprise to me when I first started cooking ground turkey that it tastes good. With WW, I have to use the lean turkey. The regular ground turkey isn't much better than beef.

Carol I'm glad you enjoyed the pizza. I like the turkey too but you have to be extremely careful with handling it. It's a bit more touchy than ground beef. It goes bad way quicker.
SpecialK I so hope those holes close quickly! If they do n t hurt would salt water help? I know it helps my skin when I get a weepy rash that is open sores. But i scab over night when I use it. And because I don't want to use abx unless I have too, I use it anytime I have skin issues. But it does sting....
Minus I am so there with you, cooking for 1 is not easy. Today I re purposed my leftover taco salad into burritos for supper. I pack the meat separately so I can heat it up. Added a can of beans and voila! LOL
Lacey, Did you like the cod with salsa? It is one of my favorites.
I heard there was a shortage of tamox. There is always some med that they can't seem to make.

Laurie- So glad you checked in, I was getting worried (we all were) Sounds like just what you need is a nice get away. I used to love to ski. the last few years I went though I just sat in the bar and drank hot totties and pretended I was there to ski. LOL! Chuck now has Diabetes, I'm about the same but still going to my rehab. They put me on some new breathing meds and they seem to open my lungs more, the oxygen levels are not better but the breathing is easier at least. :-))
Ditto on everthing Monica said lol! I agree with Lacey you are getting good! haha!
Joyce- Thinking about you and wondering how your mom is? Hugs!!
Monica- I would not recommend the brineing, I don't think it made a difference.Normally my CB only takes about 3 hours to cook but after 4 hours it was still tough, I bought a big pot (dutch oven) to cook the corn beef and veggies in, and it overlapped the stove top which I think is why it took so long. We didn't end up eating until late and it was not very tender, so probably will not do that again!

Lacey, could you give some details on cooking the cod and salsa? Did you put salsa on the cod before cooking?

Carole, I rarely time my cooking exactly, so can't say how long the fish cooked, but here goes...... I rubbed about a teaspoon of olive oil on the bottom of the corningwear dish, added the cod to which I added some fresh garlic and paprika. Baked it at 375 uncovered for probably 15 20 minutes (depends on size...I had a 12 oz, thick piece). Then took it out and poured off any liquid that formed. I also poured off some liquid from the salsa (I happened to use a brand that is not so much "creamy"), then covered the fish with it and some shredded cheese, and baked it for another 15 or so minutes until the cheese was nicely melted. Can you see why I am not a good baker?! I hardly ever follow recipes the way they are written....and that doesn't work for baking.
Off to the gym.....tho my back is acting up....oh dear.

Had a nice lunch today following golf. Our club chef has designed some new items on the menu that are under 600 calories and meet other criteria for low fat and sodium. I tried one of them, salmon served on a spinach salad with a garden veggie sauce and topped with--can't think of the term! But the unnamed was chopped tomato and raw onion. The salmon was a generous portion and was good. The veggie sauce was yellow and delicious. I inquired about the color and was told it was made with yellow tomatoes. I don't eat raw onions so scraped them off.
My dinner will be a leftover slice of last night's pizza and a tossed salad. DH will probably have leftover turkey meatloaf and a salad.

Not sure what dinner will be tonight - DH is getting a haircut at the moment, and will be home shortly. I am thinking he will want something hearty because he will be having oral surgery tomorrow! Milkshakes and mashed potatoes are in his future!
