    lacey - it was yummy!  I had not used it before, but my friend really wanted to have something with pork that was handheld - no forks.  I did modify it from the original recipe to make it thicker, basically by cooking it longer than instructed.  Other than the peach preserves it is made from stuff I usually have on hand too.  I think you could also do it with apricot or raspberry preserves too, or even orange marmalade.

    Carole - lol about your comment about history finding out animal fat is good for us. That's a line from Sleeper a Woody Allen movie. Love his movies, not sure about his morals.

    Debbie - I forgot to answer your question about the Kodiak mix. It says on the front whole wheat, whole oats and honey. Not sure "whole wheat" because ingred. list says "whole grain". I thought that did not nec. mean "whole wheat". Maybe that's why my DH liked them - not completely whole wheat.

    I think we will have some of those indiv. frozen chicken breasts. Not sure how I will make them. Prob. some kind of sauce. That and some frozen vegies. I worked on one shelf of refrig. freezer - looks respectable. Need to continue with remainder. I think the bottom bin basically needs discarding. I baked some old yeast rolls well out of date but baked up OK. The goaties thought they were yummy.

    Special - your sauce sounds good. I have a 3 fruit marmalade in refrig. I think I will try something similar.

    Lacey - I vaguely remember your homemade ricotta. Would you share the recipe again. I sure don't think I've seen ricotta in a block. I might have trouble using it all up. I think you can freeze it at least the soft ricotta - says it may separate some but just stir liq. back in.

    Special - I see your update now. I think I know what dinner will be now. Thanks.

    I'm trying to stay out of the grocery store until at least Friday. No worries about running out of food but BooHoo I will run out of onions. I have the 3/4 left from yest and some of that froz. chopped onion stuff.

    Major blizzard here!  Everything outside of my window and the world around me has been closed or cancelled.  No work today, so simmering a pot of spaghetti sauce and meatballs for dinner.  Hope DH has enough sense to get home before he is stuck there for the night.

    Special,  I am now searching my cabinets for the bourbon...hmmm  that is something I don't think we have in our liquor cabinet.  I did just find some rum and flavored vodkas, though, that I have immediately packed for our next trip south.  This place looks like a bomb hit, with all my cleaning out and packing.  I NEED your organizational skills!

    I cooked a rotisserie chicken on Monday (would have been so much better on the grill) and last night was chicken salad sand. with macaroni salad....wishful summer thinking!

    The sauce sounds delicious.  I saved it in my documents.  There's always lots of bourbon in this house!  I'll make it when I'm not trying to drop lbs. 

    I made the lentil soup using the basic ingredients in the recipe that Nance referenced.  It smells really good and tastes good, although I just sampled it for seasoning.  I didn't add the two cans of tomatoes but rather used a container of oven roasted romas from the freezer.  The nice thing about these lentils is that they retain some shape even after they become tender.  I used about four different containers, different shapes and sizes, of chicken broth out of the freezer.

    Carole, let us know how it turns out so I'll know if I want to make it or not lol!

    Half of the Costco chicken has turned into chicken enchiladas along wIth some previously cooked and frozen pinto beans. I may have to indulge in some chicken noodle soup instead because my stomach is a little jumpy tonight, but dh will enjoy the enchiladas.

    Please keep my dad in your prayers...he was walking into work (UW Hospital) this morning and had a mini stroke. Luckily, someone was walking behind him and was able to catch him as he went down. He is 6'4 230 lbs so the catcher had to be strong! He had another mini stroke after they let him leave the ED and go back up to his office. He has passed all his neuro exams and they think they can manage it with Plavix. He seemed to be himself when I left the hospital at 7pm. He was joking about the guy who caught him who is a colorectal surgeon. My dad was saying he was lucky that he only caught him and that he didn't try to give him a rectal exam! He should be able to go home tomorrow. Thank God I didn't poison him with my buffalo lasagna! I had talked to him last night and was eating that for dinner. 

    Keeping everyone who has loved ones with health concerns in my thoughts and prayers, too.   Gina

    debbie - sorry your DH is dealing with more.

    I'm laying around not doing much of anything. Saw PS yesterday and have some skin splits on the left side - must continue with abx, hibiclens. Silvadene. And must remain quiet until healed. Did make slow cooker steel cuts oats with apple, vanilla, cinnamon today, eight servings.

    Tonight I made a small marinated boneless turkey breast, roasted asparagus with olive oil and lemon, and a spinach salad. DH is not home for dinner for the next three nights, and I totally forgot about that, (thank you, tamoxifen!) so bought lots of groceries today. Guess I'll eat like a solo queen! ;)

    Friday a friend is stopping over for lunch and I want to make a salad I saw on Pinterest quite a while ago......baby kale, pomegranite seeds crumbled feta, walnuts and I forget the dressing. I may even make a loaf of Irish Soda Bread.

    Lacey - a raspberry vinaigrette would be yummy on your salad - or poppy seed. I went to a BS appt with my friend who is TN this afternoon so when I got home the kitchen smelled like apple pie!

    Lacey - thanks for the ricotta recipe. I like it only makes 2 cups - just enough to use up. I wonder if Carole's ricotta salata just has more of the liquid pressed out of it.

    Just plain cooked chicken breasts in olive oil. Squash soup and a bit of stuffing.  Then off to jewelery class.

    Monica- The chili recipe sounds good, almost like Lauries mexi chicken that is baked with beans and cheese,salsa and chicken. Which is also yummy! I will try yours as a chili next time. Thanks for the prayers they are always welcomed.

    Nancy- Your sausage and lental soup sounds good, I checked out the recipe and have all the ingredients will have to make it some time in the next few days.

    Carole-I will have to go to our local store and see if they carry the firm ricotta salata, I love ricotta so im intrigued by this and want to see what I can do with it.

    Specialk- That sauce sounds devine. I love those sweet hawaiian rolls in fact I made a sandwich I just love with them the other day, You cute rolls in 1/2 and put bottoms in a lightly greased sheet pan, I put ham and swiss cheese or Jack on top sprinkle with poppy seeds and place top part of the roll on- meanwhile in a bowl combine 1/2 cup of melted butter-1 1/2  tablesp, of dijon  mustard 2 t dried minced onion,and 1 1/2 teas of worcestershire sauce pour over tops, cover with foil and bake in a 350% oven for 15-20 minutes. cut into to squares if using for a party. YUMM! And Thanks for the well wishes.

    Lacey-Glad your stepmother is doing well. Better you were glad to be back in your own kitchen.

    Luvmygoats- We went shopping at Safeway tonight and I found the kodiac pancakes I read the ingredients it does not show any white flour so I bought it, can't wait to try it. I will have to make my self not pour the beloved maple surup over it, instead I will make some kind of fresh fruit compote to put on there. (May be sneak a little surup for me though) ha!

    Carrie- Your my kind of girl I love the flavored vodkas, can't drink many but so good. the last one I had was a orange cello liquor and orange whipped vodka with a splash of sierra mist, rim glass with sugar and lemon. Oh my gosh so good. You could use anything besides sierra mist, My friend happen to have that. Hope your getting your place organized.

    Gina- OH so sorry your dad is not feeling well. But glad he has his sense of humor which is a good sign? You will all be in my prayers for healing. ((hugs))

    Joyce- How is your mom? Been thinking about you and every one else dealing with health issues. Hugs to all.

    Chabba- haven't seen you in a while. HI! Waving!

    Today I brined a corned beef and will let it sit in the fridge for 5 days. turning once each day. Never made it that way before but saw it on Racheal Ray so thought I would try it, bummer I have to wait that long to cook it though. One thing it called for was a half pd of salt sure seems like a lot even for the brineing so only put in about 1/4 cup I hope that is enough for the brineing part of it?? 

    Being good for my DH but man I would love some chocolate right about now!! hehe!

    Debbie - So glad to see you.  I went into a kind of funk a couple of weeks ago and missed your recent post  - or posts?  Anyway I missed so many pages I didn't go back to even try to catch up.    I was sorry to see the posts by others here concerning your DH.I haven't had a chance to go backk and try to find out what is the matter. I have been sending my prayers his way..

    In spite of the storm..my mom drank her stuff  yesterday and got to the care center today for her colonoscopy/endoscopy.  I think my Dad had something to do with it, trying to get to the bottom of things. This storm has us all paralyzed...my DH even got the snowplow stuck.  I am guessing we are 14 in of snow all in one day!

    Special  I thought you were supposed to be resting?  lol  sending healing vibes your way.

    Debbie  Last time we were in NC, I didn't feel like wine(the acid upsets my stomach) and didn't want the calories or trips to the bathroom from beer, so was wishing we had some sort of liquor.  this time I will be prepared, I like it with cranberry juice and sometimes add a soda(like the sierra mist) for some fizz.  Hmmmm other twin from triplet group? did that make sense? haha   We seem to be missing a few people from here, susan, Seaside, Kay

    No cooking today, the struggle will be to get to work and back. All I see on the road are snowplows.

    OK who's got a great simple recipe for meatballs? I have a 1# pkg of 80/20 ground beef so it's not too lean. DH is not nec. a meat in his spaghetti guy - not required. But I have been buying somebody's turkey meatballs when mkt. clearances them. Might as well try myself. Have the usual kitchen staples - eggs, seasonings, no fresh parsley but do have dried. Packaged dried breadcrumbs. All suggestions welcome. Skillet or oven?

    The marmalade sauce was excellent on the chicken breasts. I made plain rice and a small box of micro. Tuscan vegies. All gone except the rice which I will snack on some and recycle tomorrow night. I used to cook like that - make a side one night and a meat the next night and cycle them back/forth.

    Right - missing Seaside, Susan, Bedo, Kay.

    Welcome Fiaranch. What is your cooking style? We are all over the map. I cook mostly southern with a venture into non-authentic stir fry and sideline into Mexican (who doesn't in Texas). Though love Hawaiian food too. At the moment being extremely good and having a bowl of Pinhead oatmeal with raisins/cinnamon.

    Lacey - I need to get out too. Dr's orders to walk. Does chasing goats count?

    luv - try this if you like:

    Mix an egg with a splash of milk, salt and pepper to taste, 1/2 t. of garlic powder or a couple of minced cloves of garlic, some finely minced onion if you have it.  Add in about 1/4 c. of the breadcrumbs and some grated parmesan if you have it.  Let the breadcrumbs absorb the wet ingredients completely so it is the texture of cooked oatmeal.  Add in the beef and mix with a fork to keep it light.  I use a smallish ice cream scoop to form the meatballs so they are evenly sized and bake them on a lined sheet pan in the oven at 400 F for 15-20 minutes, or until there is no pink inside.

    Sounds good. Have all of that. What do you mean by "lined" sheet pan? Lined with foil? I think somewhere I have a good sized melon baller if not I'll just estimate. Would you guess 2 TBS or is that too big?

    luv - you can line with foil, but spray it with non-stick spray if you do, or a light coating of oil so the meatballs don't stick.  I usually line with parchment - also makes cleanup easier!  Size of meatball is up to you - 2 rounded T. sounds like a good size, especially in sauce for pasta.  Bigger ones are good for meatball subs.

    I use that nonstick foil. Just don't tell me there's something bad in it Lol. I also have parchment and that new pan lining paper which I was not so impressed with. I bought a Misto to put olive oil in and it is still in the box. I'm so bad. But I did finally did get the glassware oddities off the hearth bricks and into the little cabinet I bought. Thanks so much for your help.

    How is your resting going on? Hoping this is not a setback for your "renovations".

    Nance - sorry to hear your tummy is still on the fritz.  SpecialK - you'd better be taking it easy or we'll all nag.  Thanks to you both for the baked meatball recipes.  Luv - of course chasing goats counts as walking.

    Made a Costco run after rads this morning & I treated myself to a batch of their already peeled cold boiled shrimp for lunch.  Yummy.  Dinner will be their Lobster Bisque which I haven't tried before.   Playing dominoes tomorrow so I picked up some Lemon MiniBites to serve.  Everyone loves those.  I just don't feel comfortable cooking for others yet. My taste buds are so screwed up who knows what horrible thing I might serve.

    Chabba- Sorry you are in a funk! It is so
    hard to get out of that once your in it. Sending lots of hugs to you. DH
    has just been told he has Diabetes and possibly prostate cancer we are
    still waiting on finding out about the prostate. And yet he takes such
    good care of me. He is my rock. But we will get through this, we always
    do thanks for asking. Hope you are getting sun shine there in washington
    like we are here in Oregon.

    Carrie- Ha! yes, that did sound
    quite weird didn't it? Seaside, lacey and me all share the same
    birthdays so Im not sure how I should of phrased that, hehe! Glad your
    mom got the nasty part over with, I hear the preps are the hardest part.
    I hope they don't find anything concerning keeping you and your mom in
    my prayers.

    Luv- Ina garten has a good meat ball she does that is
    really good. but she also uses some pork in it, I never have so optional
    on that. the recipe has breadcrumbs, parsley garlic ,salt and pepper, a pinch
    of nutmeg,lots of parmesan cheese, chopped onion,a couple of eggs and 3/4 cup of warm
    water, lightly toss with fork and then form into 2 inch meatballs. she
    sautes them in equal parts evoo and veg oil about a depth of 1/4 inch.
    Brown them for about 10 minutes. You could also do these in a 400 degree
    oven for about 10-15  minutes if you wanted.

    Oh Debbie - I read about the diabetes but not the prostate.  Waiting is horrible.  When will you know.
