Carole - happy birthday. Of course I love fish & chips, but I'm avoiding fried foods. Here's a recipe for Steamed Cod that I cut out from our newspaper today. Might meet w/your WW plan.
2 lemons; 1 medium zucchini - sliced; 1 medium summer squash - sliced; 20 cherry tomatoes; 4 Tblsp margarine or butter; 1 bunch fresh basil leaves; 4 boneless, skinless cod fillets (5 oz each)
From 1 lemon, squeeze 4 tsp juice. Slice remaining lemon.
On work surface, place 4 (12" square) pieces alum foil. Divide zucchini, squash, cod fillets, cherry tomatoes & lemon slices among the foil pieces. Top each with 1 tblsp butter, 1 tblsp lemon juice, 4 to 5 basil leaves and 1/4 tsp salt.
Crimp foil edges tightly to seal packets & transfer to jelly-roll pan. Bake 20 minutes or until fish is cooked through. Serve on brown rice.

special thinking of you as you sleep on the table. Sending prayers for an easy recovery.
Thank you everyone for thinking of my mom. Phase 1 yesterday, met with specialist that may scope her to look at pancreas (cant have mri due to pacemaker) today is a gastric emptying study, next week will be colonoscopy and endoscopy to look around for causes. Did not hear any results of blood work identifying cancer markers. long slow process but at least she seemed in pretty good spirits, we talked a lot about what she will plant in her table top garden on her deck.
So, after leaving the house at 7a.m. for her apt,(hr drive each way) back at noon dropped car off for oil change, then to work till 9..... we had no choice but to do subs for dinner. All of your "hot" meals sound so good.
Minus I have cooked fish that way on the grill too...yum! I add capers, too, cause I like the combo of capers and lemon.
Tonight my hubby owes me a dinner out, as I am doing all this running around with the vehicle to get a hitch and wiring done! Him and his bright ideas!

Best wishes to all the March brides and birthday girl! March seems a good time for personal celebrations since there are fewer competing national/family holidays so you don't often get pre-empted.

Carole, I usually just bake cod with a bit of garlic (either fresh minced or powder), paprika, basil, pepper and any other spice that appeals....and serve it with lemon over a combo of sautéed spinach/onions/mushrooms. A sprinkle of bread crumbs and parmesan during baking is good too. That's one of my favorite low-cal nutritious meals. Carrots or winter squash goes well with this too. Minus that recipe sounds tasty, tho I prefer baked fish to steamed. Another easy tasty idea for cod is to just bake it in salsa and top with some cheese towards the end of baking. I love cod.

You are right, Carole, I have not deprived myself much at all ( except not much pizza in recent months, but I've rarely missed it...have a feeling we'll be seeing some this weekend while visiting grands). I also indulge in chocolate "as needed".
Wouldn't want to be cranky, afterall! I think that keeping to my daily exercise regimen has been the key to maintaining steady weight loss over this whole year. Hope I can shed these last ten lbs. My knees are thanking me!Moon, glad to know that you are taking such good care of your magnesium level!

I finally managed to put on two pounds in the last 10 days & need to gain at least 20 more. I was always a snacker - not bad snacks, just eating all day - like a handful of nuts when I went through the kitchen or a cookie or two. I think that habit is gone. And bread was my favorite. It will be a year next month since I started chemo tx and food still doesn't taste right. I sure miss cashew nuts & bread & rice & pasta. And I love reading your posts - since everything still tastes good in my brain.
Thinking about Debbie & Bedo. Hope you are both OK.

Wonderful 60 degree day today. Grilling a ham steak and pineapple with a side of asparagus. Sounds "springy" to me. Tomorrow it's out to a local steakhouse with friends.Although I love their steaks, I love their fried chicken better with a grilled whole sweet potato.
I think I will make some hot cross buns this weekend and some rye bread. Haven't baked anything in a week.

Well. 21 months PFC and needed ANOTHER mag IV. Sigh. Worse yet my kidney function isn't as good as it could be. So they gave me extra fluids along with the mag. At least the Slo Mag isn't any WORSE than the mag oxicide. But it is so much better on gastro issues that I won't go back to the oxcide. As for the kidney issues it's wait and see. They have no clue what the problem is. Dang I should have had the WHO LE piece of that choc cake!!!! LOL

Moon: Sorry to hear about the additional Mag needed. Hope it's an easy IV. Please keep us updated about the kidney issues. How frustrating that they don't know what's causing the problem.

The mag is easy. I just sit there:) LOL. And mag through iv is easier on my gastro than the pills. It's just that it hangs on so long. Oh well. As for my kidneys my mind goes to my diabetes and kidney problems. But my numbers have been pretty good with a. A1c of 6.9. But.... LOL oh well. DH is home for the weekend so off for brunch! Much love.

I am doing ok - did not have a good night but its not like I have anything critical to do today. Just had a shower from the waist down, sponge bath from the waist up - feel so much better! I cooked like a wild woman on Thurs night so there is much for everyone to eat - meatloaf, roast chicken, sour cream and dill potato salad, bean salad. Kept me busy and less likely to obsess about the surgery, and I don't have to worry about what everyone is eating!
DD is fishing - hope she is doing well - she could use the prize money!

SpecialK I hope you are doing well and that your DD gets a prize. But if not you'll have fish! LOL Nothing is better for me than fresh caught salmon on the grill with butter and lemon. Yum. Or I suppose lake or brown trout isn't bad either. But i could do without smelt! LOL. And remember to give yourself permission yo relax. You NEED that time!

Oh. Brunch was breakfast for me. Biscuits and gravy with eggs. Yum. One of the things that got me thru chemo! My DH would go and get them and bring them to me when he was home on the weekends. I could taste them so that was nice. Nice that they still taste good too! LOL

moon - love, love, love biscuits and gravy! The tourney DD is fishing is catch and release, so no fish for dinner! She pretty much only fishes that way. Modern technology reigns in tournaments these days - they are issues a numbered poker chip and a tape measure. They land the fish, lay it on the ruler and put the poker chip next to the fish. They take a picture with a cell phone and throw the fish back. The results are tabulated ( this is a slam tournament - redfish, snook, sea trout) from the photos. Prizes for individual fish and for the slam.

SpecialK, glad your surgery is over and you're doing ok. Let us know how your daughter fares in the tournament. Sounds like fun to me. I love fishing. DH does not.
I went out to lunch with four golf friends yesterday and had a delicious meal. Black drum (fish) served with rice and sautéed green beans. The meal came with a small Caesar salad and I do mean small! But it was good and all I needed. I wish I could cook fish to taste as delicious as that drum yesterday. It had a lemon butter sauce with a few capers. It had a dark crust so I know it was cooked on a hot grill.
DH and I are going out to dinner tonight at a restaurant I really like on the riverfront in Madisonville. It's located in a pretty old house and is elegant. I'll probably order fish again.
Today I went to Sam's and spent $250. You can spend SO much money saving money!

Thank you all for the anniversary wishes. We had a nice dinner at Ruth's Chris...great food, great service and at the end of our meal, our waiter brought us a complimentary creme brulee to share and a card that said my dad had called and paid for our dinner! It was such a nice surprise and so thoughtful of him! I know he feels badly that I'm back in treatment. He took me to the hospital infusion center on the Saturdays after chemo and on the way home we always went to McDonald's for a chocolate shake. I'm lucky to have him! He is 76 years old and still works every day at the hospital where I am being treated. He has been there for 30 years and keeps my doctors in line. My surgeon told me she was scared of him! He is a also cancer survivor (lung) of 3 years.
SK - I'm glad you're doing OK after your surgery. It's very cool that your daughter fishes in tournaments!

To combat the long & brutal WI winter doldrums, our office is having a chili cook-off and free throw contest this week! I'm making buffalo chili. My husband bought 10 lbs of ground buffalo~~~ummm...there are only 2 of us! Luckily, it is in 1 lb packages so I've been substituting it for ground beef in everything. I'm making 3 buffalo lasagnas tonight, one for my house, one for my dad and one for the freezer.

SK, glad DD enjoyed what sounded like a really fun fishing tournament.
In NJ visiting DS2 and family....the grandkids are so cute and beyond active!! The live-in grandparents are away until tomorrow, so we are getting to spend OUR time with the kids. Took them for a long walk ( trying to keep true to my exercise regimen) in the neighborhood which is full of massive hills.......DGD, who is an eighteen month old force to be reckoned with, decided after a half mile that she wanted to get out of the stroller and WALK!!! She is such a peanut with so much energy she walked, ran and panted all the way down and then up the last hill before we finally made it home. Her 3 year old brother cleverly let me push him all the way.
We were supposed to go out for dinner but were all tired, so ordered Thai. Not the best Thai food, but I was starved, so it did the trick!
Carole, eager to hear how your dinner out was. Sounds like an elegant spot!

Lacey, my birthday dinner turned out NOT to be the quiet elegant occasion I'd envisioned. The restaurant was so noisy that we had to lean forward and talk loud to carry on conversation. There was a large table next to us, 8 to 10 people, who were having a great time. I think they were from two large power yachts tied up on the riverfront. There were two other large groups, too. The food was good. I had a Blue Cheese salad that was delicious and a fish special, grouper, served on sautéed spinach and with lump crabmeat on the grouper. The four of us shared a bread pudding dessert.
I would go back to the restaurant for lunch but not for dinner.
I'm thumbing through my stacks of Cooking Light magazines and removing pages with recipes I might like to try. I have a box of plastic sleeves and a new looseleaf binder. I used to print out the recipes from the CL website but this should be less work.

carole - that is what I do - with tabs for categories for entree, salad, etc. I also have recipes in it that I typed out and pasted onto cardstock. The whole family knows that if the house is on fire it has to be grabbed and saved, lol!
DD is on her way back to the Keys - miss her already but she had a fun time while she was here.

Carole, I love grouper and that one sounds amazing! I get very irritated at loud groups in restaurants. I know I should be more tolerant but it just seems so rude to me.

I don't like a place to be tomb quiet...because I like to talk while I'm eating. But I hate it when I have to shout to be heard.
I also have a notebook for recipes. Right now it's a 1 inch binder that is about half full..
We had my mom over for dinner...pork roast (store had boneless pork shoulder roast for $0.99 per pound...got 2 and put 1 in the freezer), green beans, sourdough rolls and a huge light green salad (mom takes Warfarin, so no spinach or other dark greens)... I thought of a banana split for dessert....Sharon thanked me for thinking and not making...:-).

Moon..my mom had to take magnesium for awhile...she hated it...

Sorry to hear that you got to be seated ext to the loud party. When we go out for an "important dinner", we often book thru Open Table and request a table where quiet conversation will be possible. So far it has worked pretty nicely. Big groups having lots of drinks just tend to forget there are others nearby. Glad your food was good.
We attended a one year olds' birthday party today. It was an amazingly funny and delightful time...ten adults, six adorable children, a sick birthday boy who nonetheless plowed thru the event impressively, from watching all the other kids racing around outside, to literally (!) attacking an entire half of his BD cake and doing whatever he wanted with it (lots of icing finger painting), to being scooped up and bathed right after....and then on to bed! Then the rest of the kids (age three and under) rode scooters and two wheeler trainer bikes down their hilly driveway and amazingly learned to watch and wait for each other to avoid any crashes. The weather was tolerable (clear and high 30's) and we all had a ball. I appreciate that DDIL and DS2 invited us to be with their close friends for this event. And for me it was especially meaningful since as a very young child, I lived in the town in which their friends now live. Sweet day for a grandparent.
We had planned to go out for dinner but by the time the kids got to bed we were all bushed....ordered pizza, I made a spinach salad, and we called it a night. Good thing I don't have a scale here....
We are really enjoying ourselves....leaving Tuesday AM. I'll be sharing your sentiment then, SpecialK.

Today I had an salsa omelet for breakfast. Then after DH left for a couple of weeks ate the leftovers from Friday. LOL He'll not make it home for a couple of weeks. It's refueling time (outage time) at the plant. 12 hours days 6 days a week. He's dreading it. He's feeling old. LOL. But he had done over 59 of them do he knows how bad it can get. I used to pack up the kids and go visit his folks and or mine for a couple of weeks when the kids were little. It was easier than being ignored. Because he would come exhausted. Eat and sleep and go back. So Intellectually I knew that's all he could do but emotionally it was hard. Without being there he could eat and sleep without trying to make other people happy. So his own apt is a blessing. Otherwise I'd have to get out of Dodge! LOL.

HI everyone! I have been missing you all, tried to read most of post but I was about 20 pages back sorry if I miss anything important and forget someone.
I don't think Joyce would mind me saying that on FB she mentioned her mom had fallen down a flight of stairs and she has a broken neck and other life sustaining injuries, I have not heard anything since then. Joyce, I hope your mom is going to pull through this, Your mom and you are in my prayers. Sending lots of love and hugs your way!
Carrie- Prayers for your mom as well.
Laurie- Sorry that your MIL is not doing well, it must be so hard that you can't all be there for her. Times like that I would want all the love and support I could get. Prayers for your family.

Monica- Hope you start feeling better soon. My DH was just told he has Diabetes his glucose was 400 so they called in a prescription for him. I guess now I will have to change our eating habits. I might need some advice from you sometime.

We went to dinner tonight because of a friends BD ( I hope we were not noisey) ha! DH and I shared a salmon stuffed with crab and shrimp with a hollandaise sauce it was so good and was wishing I had ordered my own so I had more. It has been so rainy and windy here, can't wait for summer!

Debbie, so nice to hear from you and your responses are impressive lol! I do most of my posting on my phone which is challenging enough (damn you auto correct!) but nearly impossible to go back to see previous posts in order to comment. And no way I can remember, like Susan said, my brain is like a sieve sometimes.
You all are way better than I. I have hundreds of torn out pages and recipe clippings that I have collected for years as well as years worth of Cooks Illustrated, Cuisine and Cooks Country with sticky notes on the pages of recipes I use often. I've tried organizing them in different color accordion files but I can't even get them all in. All of these are stored in a large wicker chest. In the event of fire, it will be toast. In addition I have hundreds in a cookbook program on my computer. That one is backed up on a thumb drive at least. It's a disease with me.
Last night was barbecued ribs, baked beans and avocado salad. So summery. I'm not sure about tonight. It's supposed to be 70 degrees today, so maybe something on the grill again.

, and I envy those of you with categorized binders.....now that I'm retired one would think I could get it in shape, but organization is not turning out to be one of my strong suits these days! I'll bet I have some wonderful recipes in that marass! Joyce, I hope things are looking better for your mom. (((Hugs))).
DDIL said she'll pick up fish for dinner, so I will probably make my favorite sautéed spinach/mushroom/onion bed for it and we'll be back to some healthier eating.
Thought of you and your world, Laurie, as DGD (18 mos) awoke last night with a slight fever after hanging out with the sick birthday boy yesterday. Just can't avoid these little kid germs and their yet fragile immune systems! She seems to be recovering well this morning, and now can't be slowed down! I admire my DDIL's mother who keeps up with this little one while DDIL works.
