    Congrats Carole and Lacey way to go!. Lacey I know what you mean about time but no ability for creativity. Sigh...

    Eric congrats on your 25Th. That's a milestone. You need to give her a stone to. Can be small but 25th is definitely a STONE anniversary. 3 diamond or all the way around... LOL

    Carole stay in and enjoy Mardi Gras vicariously! LOL

    Minus I am glad you made it safely both ways. Are you almost done with rads? 

    SpecialK that sounds interesting. But a no fat danish doesn't sound all that good! LOL

    Way to go, Lacey!  The admirable thing about your weight loss is you're doing it on your own with healthy eating.  I know you'll enjoy visiting your grandkids and seeing your son and DIL, too.  Isn't she a great cook? 

    Minus, glad you made your trip to and from treatment safely.  Sure wish you'd been able to buy that steak! 

    We've had our fireplace going all day, running up our natural gas bill.  It has added cheer to this dreary day.

    Dinner is a repeat of last night, chili and salad.  No dressing except a flavorful vinegar on my salad because I'm using up points on a rye old-fashioned!  DH is making the drinks now.  Must get myself to the gym tomorrow morning.  It was closed today because of Mardi Gras, which is a bona fide holiday around here.

    moon - the healthier King Cake has soy free buttery spread and full-fat coconut milk, so it does have some fat, just not from animals!

    Special - by all means, do post the recipe in honor or Mardi Gras.  

    Moon - just hit the 1/2 way mark at rads so I have not quite 3 more weeks.

    Carole - I'll get that steak tomorrow.  Tonight I ended up w/a baked potato and a bunch of fresh strawberries dipped in sour cream and then brown sugar.  Not the most healthy meal, but...  

    Bedo - my weird dinner makes me think of you since you & I both eat odd meals.  How's it going up there?  Are you still really tired?

    Made a jambalya with chorizo yesterday.  Best I could come up with to get in the Mardi Gras spirit, and it was easy to make ahead and have ready when I got home late from work.  Wish I was with you Carole...warmer, and watching the cool parades.

    Minus  so glad your safe....ice is soooo much worse than snow for driving. When we get ice like that, I drive with two wheels on  the shoulder to get a grip in the gravel....lol but of course these are country roads.

    Feeling like an egg salad sandwich...maybe that's whats for dinner tonight.

    Carrie, the weather was wretched yesterday, cold (high 30's) and wet.  I watched parades from the comfort of my living room with the fireplace lit.  How is your mom?  We're all concerned for her. 

    I'm off to the gym, which was closed for Mardi Gras yesterday!  Otherwise I would have gone.  DH and I are talking about going to the movies this afternoon and seeing Monument Men.  I saw Philomena on Mon. with a friend.  It's a heart-wrenching story but a very good movie. 

    No golf again this week with all the rain keeping our golf courses in sloppy condition.  I'm severely golf deprived!

    Missing all of you who aren't checking in.

    Carrie, fried egg on rye toast is my favorite "home alone" treat! Second favorite is a BLTE.

    DH and I are off to a casino overnight as a delayed anniversary outing. We'll have cocktails at our favorite martini bar (my fave is the Key West key lime) and dinner at one of our favorite Italian restaurants. After that, well we'll see how long my funds last lol! It's just nice to get out after the nasty weather confining us, although we did go to the gym yesterday. Had to work off those pancakes!

    Today is my 26th wedding anniversary! We are going out for dinner to Ruth's Chris and I'm so looking forward to a nice meal! I plan to have the chopped salad and petite filet. I'm trying to cut back on carbs, too, but I know the bread basket will be calling. Tonight's dinner will certainly be an upgrade to the cereal and banana I had last night.

    Happy Anniversary to Eric & Sharon, too!

    It seems the bad weather is all around~~~we had another 6" of snow this morning. It made for a slippery trip to rads and then onto work this morning. I still managed to get the the coffee shop for an iced coffee. It is my treat to myself during rads. You would think that on these super cold mornings, we were -15 earlier this week, I'd have a hot drink! At least, my icecubes don't melt!

    Even though I don't post much, I love reading about everyones food!  All my best to all you good cooks~~~ GIna

    Carrie- any news on your Mom?  How is she feeling, when are the tests being done?

    For the first time in two weeks I got to be ALONE.  It was wonderful.  I worked a few hours this morning, came back had lunch and laid on the couch by the fire and read a good book and took a little nap before picking kids up.  It was lovely.  Dinner tonight is roast chicken.  I love having the left overs to make other things and it was on sale.  

    My MIL had scans done and it shows a lot of progression.  Things are not looking good.  Dh is looking for plane tickets to head back down to Florida.  I haven't gotten all of the details as my SIL has been working a bunch and she doesn't want to talk in front of MIL.  The whole thing is just a strange situation.  Still very hush hush.

    I am excited for DS2, he has first official play date of his own.  He has always been the tag along to DS1 and his friends.  Friday we will meet his best friend for a play date- she is a girl and they are just about the cutest things ever!

    Happy Anniversary, Gina!  What a treat to dine at Ruth's Chris's.  Her first restaurant was in New Orleans.  She bought a restaurant named Chris's whatever, maybe steakhouse.  This restaurant established a good reputation for excellent steaks and good side dishes.  She branched out within the greater New Orleans area and opened other restaurants calling them the same name.  I love the creamed spinach side, which is decadent like the other sides. I don't think you can get a better steak. 

    Laurie, sorry to hear the bad news about your MIL.  And glad that you had some ME time for a change.  Everybody needs that now and then. 

    I made a delicious chicken salad today, using poached chicken breasts  I cooked yesterday.  In addition to the cubed chicken, other ingredients were diced celery, grated carrot, purple grapes and golden raisins.  The dressing was Hellman's light mayo, plain nonfat Greek yogurt and a generous amt of curry powder.  I made a big bowl so it should last a few days for lunches.  Plus I got a couple of containers of chicken broth for the freezer. 

    Nancy, I hope you get lucky at the casino!  If not, the martini is worth the trip!

    gina - happy anniversary!  Love Ruth's Chris - went to a military retirement dinner there not long ago.  Yummy!

    carole - I like to make curried chicken salad with those same ingredients, although I hadn't thought of splitting the dressing with Greek yogurt - great idea! - then I put chopped cashews on top.  It is also good in a pita pocket or on croissants.  I'm thinking the croissants are not WW approved though...  I used to serve the mini ones with that filling for parties I catered.

    laurie - yay for alone time!

    All - I will be running about tomorrow, then having surgery on Fri. morning so may be out of commission for a bit.  I am having new dermal matrix (allograft slings) put in - mine from BMX are failing.  An outpatient procedure but I have no idea how I will feel afterward.  If I am right back on here then things are good.  If not, I'm probably sleeping, lol!

    Laurie, I'm sorry that you are all having to deal with your MIL's serious illness like "the elephant in the room". So sad for everyone.

    Carole, thanks for the history on Ruth's Chris's. Never been to one but always wondered about the origin of that name. Would you say it is better than Morton's?

    Last night's turkey breast turned out to be the best I've ever had....so juicy! Tonight we made sandwiches with it on ciabatta rolls and an avocado spread. I skipped the roll and supplemented with some leftover cabbage soup which is really tasty with a splash of balsamic vinegar in it. Trying to stay true to my eating plan. I learned from my trainer today that since I started working out there last May, I've lost 25 lbs....which is 5 more than the 25 I lost from Jan to Jan, so thirty total over 13 months....but who's counting! LOL!   Me! Aside from some joint issues and the ongoing tamoxifen side effects, this has been the healthiest winter I've experienced in years....I guess exercise really is good for you! ;)

    Special K - here is to an easy surgery tomorrow.

    Need to cook something for dinner but no motivation, zilch. Maybe try the pancakes/bacon route. Today is our 38th wedding anniversary and DH is working.

    Happy anniversary, Luv!  Hope you and your dh will be celebrating when he isn't working. 

    Lacey, I believe there's a Morton's in downtown NO, but I have not eaten at a Morton's.  I would guess that the high end steak restaurants all buy the best steaks and know how to cook them.  We don't buy the best but I enjoy our steaks here at home.  I seldom order a steak at a restaurant. 

    I had a yen for tomato soup today and made a pot of it that tasted good and was super simple.  One can of diced tomatoes, 14 oz, 2 cups chicken broth.  Onion and garlic power, s & p.  Simmer fifteen minutes.  Add 1/2 cup half & half.  Blend with immersion blender or regular blender.  I had a cup with a helping of left-over chicken salad.  

    Tonight we had a broccoli and cheese mac n cheese dish.  I cooked a lb of lean ground turkey and added to it, also some wedges of Laughing Cow cheese spread to make it cheesier.  The pasta was wheat rotini.  We both enjoyed it with a salad.

    Saturday is my birthday.  Tomorrow I'm going to lunch with my Friday golf group.  It's too wet for golf so we'll just meet for lunch and celebrate my birthday.  Saturday night dh and I are going out to dinner.  So I won't be expecting any weight loss when I weigh in on Mon. morning.

    Lacey, the great thing about your weight loss is that you enjoy your food and don't seem to feel deprived in any way.

    And good recipes for cooking cod?  Our Fresh Market will be selling cod at a good price on Fridays during Lent.

    Supper tonite with a friend. Went to the Pasta shop. I got Mannicotii and sausage. yum. Of course have leftovers.... LOL.  But it was so good. Haven't been to an Italian restaurant in a long time. Do I have to admit we shared a flour less chocolate cake? Dark chocolate? You know it's high in magnesium and my blood test for mag is tomorrow so I did it for my health.....LOL
