Sorry for everyone's inclement weather - I went to the art festival today - it was a beautiful day! Don't hate me because it won't be long until we are into hideous sticky humidity, so bad that I can't even go outside!

Dinner tonight was a skillet dish with chicken, baby bella mushrooms and fresh spinach. I cut a chicken breast and two boneless thighs into strips. The sauce was chicken broth thickened with zanthum gum. I added some marsala wine but it didn't provide much flavor. DH splashed some soy sauce on his serving. Our side was steamed yellow squash.

Carole, I wonder if some balsamic vinegar at the end would have rendered more flavor for that healthy sounding skillet dish.....that's if you like balsamic.
Tonight we had baked cod along with a sautéed mix of kale
, spinach, red peppers onion and garlic. Also made a greek style salad. It was a tasty, healthy low cal meal as I struggle to lose these last ten pounds...plateau city! Enjoying watching The Oscars......especially since DH and I went on a movie binge this past month and saw almost every one that is up for major awards. Never did that before.....retirement offers all sorts of new options....like weekday afternoon movies!

Chicken night here too. Leftover chicken made into enchiladas with Spanish rice for a side. This was my DDIL's recipe and really good.
It's already -2 here heading to 5 below. Fortunately we didn't get as much snow as predicted. Hoping to hang on until wednesday when temps are supposed to start rising. About time!

Tonight was a minestrone with brown rice pasta and kidney beans, a bunch of veggies and tomatoes. Made a salad with celery, ambrosia apple, walnuts and a honey/lemon/Dijon vinaigrette.

tonite I ate steel cut oatmeal. Just felt like it. It's 0 here right now. Didn't feel like a casserole which would have been my other choice or my leftover breakfast. Hawaii omelet and Craisens nut pancakes.

Subway sandwiches tonight.....
This morning I was at MIL's house, the afternoon I was at mom's house and the evening was spent with DD getting spray paint for a school project. One needs to be 18 to buy spray paint.
It has been raining and the dogs have tracked in lots of dirt, so I vacuumed the floors while Sharon was at an American Nuclear Society meeting..and not realizing I had swept the house already, she swept it again....It needed it the second time too.
So a Subway takeout was about all there was time for......

Eric, a Subway is a treat for me! My favorite is the tuna on wheat, untoasted, with all the veggies except onions and oil and vinegar.
SpecialK, interesting you should suggest vinegar. I thought about the same thing as I was finishing up my dinner. Some balsamic would probably have "brightened" up the flavor of the dish. LOL! All the chefs on Cooking Channel brighten their dishes when they add citrus or vinegar.
Tonight's dinner is TBD, to be decided. Possibly a meatloaf from Cooking Light that lightens it with finely minced mushrooms. We've finished up the gigantic turkey veggie pasta soup that was handy for easy quick lunches. I'm trying to think of another soup to make that wouldn't be to heavy on WW points.

Everyone is eating so healthy and it all sounds good. Although I don't know what some of the ingredients are? We need to start eating healthier and get away from the winter foods.
DS1 got sent home from school vomiting today. Round three of the stomach flu in this house for the winter. You can tell the boys have been at home with me and not day care. The poor kids are catching everything.
Tonight is Bulogi- the pork medalions in sauce with pineapple and white rice.

Eating from the freezer tonight, spaghetti and meatballs and a salad. The sauce and meatballs are the frozen parts. In honor of Mardis Gras tomorrow, it's pancakes for breakfast and
jambalaya for dinner. -
3 bean casserole tonite. I could have added more different beans but 3 cans makes enough for me to eat all week!. Today is kidney beans, baby limas, and baked. Add a bit of brown sugar. And if you like heat I added Siracha cause its easy. Heat or nuke till bubbly. Serve over baked potato. Or rice. Or salad. Or taco chips. Tastes better than it sounds and Full of fiber. Also magnesium and potassium. Alright. I admit i added 2 slices of fried bacon on top. ( on my serving)So now you know why I need it. LOL but it makes enough for a loooooong time.

moon - one of my fave recipes from when my kids were little is a similar sounding casserole called Calico Beans. Three kinds of beans (your choice) combined with crumbled cooked bacon (a lot of it!), 1 lb. of cooked ground beef, and a sauce of 1 c. ketchup, 2 T of vinegar, prepared mustard, 1 c. of brown sugar (yikes!), and a diced onion. You can crock pot it, or bake in the oven until bubbly. Super delish!
Tonight is shrimp and veggies over angel hair brown rice pasta, and a green salad.

Umm yum bacon. Tonight is leftovers. 2 BBQ chicken thighs, 1 piece of pizza (maybe I'll eat that shortly) and 3 hamburgers though they're just from last night. DH was home last week so even though I was gone Thur night to DD's I cooked more.
Nancy - glad you dodged the major snow bullet. We had ice again though worst was east of Dallas. It was snowing lightly this am with a clear sky. Weatherlady said it can do that. Plus we had lake effect snow in some suburbs. No lake near here to make it. It was beautiful and sparkly.
Laurie - Sounds like no so much fun at your house. Hoping you and DH, DS skip the bug.
Carole - I did that last week. Delegated DH to make ribs, turned out good and I didn't have to.
Though meatloaf does sound good.Eric - how is your MIL doing these days?
Special - those beans sound delish. Always looking for ground beef dishes. Seems grocery always has pkgs on meat clearance. Stuff them into freezer. Had a hospice boss who would bring in chili beans on really cold nasty days.
Carrie - thinking about you and your mother. (((HUGS))) from here and prayers for her health.

SpecialK that is a similar dish. Mine has just been simplified. I do sometimes add ground beef. When the kids were home it was always over baked potatos. That way if they didn't want to eat it they had a baked potato. I don't like mustard much so use only a tiny bit and I never miss it in this. But i do like the added heat of Siracha. And put over salad it's kinda like a taco salad.
LMG leftover night is hard, you have to decide what is really good.

DH's chili is delicious. He cooked dry pinto beans for the beans component. The meat was cubed beef that was in the freezer. Onions, garlic, and bell pepper were the "aromatics." More food channel lingo. LOL! A big bowl of leftovers will not go to waste.
Went to the movies today and saw Philomena. It's a very good movie.
Good weigh-in at WW. Down 4 lbs for the week.
The weather forecast is not great for Mardi Gras tomorrow. Possibility of sleet.

Happy Mardi Gras to all! The weather is crappy, but the people are out on the parade routes in New Orleans and in the French Quarter. The forecast is for rain and sleet all day and the temperatures in the 30's. I have no plans to go out! The local NO tv stations will be showing the parades today.

Good weight karma prevails on our site....just lost two more lbs. and reached a new older adult low for me.....so I am very relieved to have gotten off my plateau! I am tempted to try on my 40 year old wedding dress.....but it is preserved in a box!
WHY!!!??? Should I offer it to a museum? LOLMaking a turkey breast for dinner, with salad and butternut squash....and a green veggie of some sort.
Just returned from teaching a first grade child safety lesson. Boy, I get so nostalgic for working with those elementary kids....so much fun! I keep feeling like I have to figure out something of value to do in the schools. I ran into a staff member today who I knew from my old system who said how much she enjoys using my old "bubble space" lesson (I wrote a lesson then a book....still unpublished
) to help the younger kids deal with personal space issues. If I could escape this darn tamoxifen cognitive fog, I could work on getting it published. It seems so ironic that now that I have the time to do it, I don't enjoy clear thinking or organizational skills. Drat!! Feeling like I missed my opportunity......:(Laurie, hope the stomach bug would just clear out of your house once and for all! We are planning to go to NJ to visit our grandkids at the end of this week. The baby (!) is supposed to start toddler school this week. I'm keeping my fingers crossed that she doesn't pick up whatever germs are lurking in her new little classroom after being exclusively at home for her first year and a half. Really looking forward to seeing them!

Eric - a load of anniversary cheer from frozen Houston. What are you doing to celebrate?
Ice, sleet, finally got up to 32 degrees at noon. The trees are loaded and branches crashing down from the weight of the ice. Houston drivers have no idea what 'ice on bridges' means & are whipping back & forth between lanes at 75mph. The drive to radiation was definitely white knuckle & 40 long minutes each way. Now it's settled down to a heavy rain at my house.
I was planning to stop & buy a T-Bone steak for dinner but no way w/this weather. Looks like I'll pull a salmon fillet out of the freezer & add creamed spinach (Stouffer's). But first some Lipton Noodle Soup made with 1/2 milk for lunch.
Carole - looking forward to more stories about Mardi Gras. Can't remember when you're going to the private party.
