    mods - good to see you!  The picture of the soup is beautiful and the veggies would certainly be healthy!  The miso (I think you can get soy-free) and tofu would give me pause though - being ER+  The noodles and egg would be a problem for me personally following my current food plan, but I could substitute and/or eliminate some ingredients and enjoy it!  Thanks!

    I think I mentioned that the hotel in Cairns, AUS, had a big tureen of miso broth on the breakfast buffee with dishes of condiments to add, one of them seaweed.  I sampled the broth and wasn't smitten by the taste.

    Special, what do you eat for breakfast?  No gluten eliminates breads and pastas, except for the gluten-free versions.  I, too, find that when I wean myself off sugar, I don't miss it or crave sweets.  But all it takes is one piece of pie or slice of cake or handful of cookies and the sugar desire is back.  That's one reason I always dread Nov. and Dec. with all the sugary goodies.  So far I have not bought a king cake this year or had a piece of it.  And Mardi Gras is next Tues!  Maybe I'll squeak by.  Of course, it's Easter season already in the stores and Elmer's Heavenly Hash chocolate eggs and Gold Brick eggs are available EVERYWHERE.  Plus they're available in dark chocolate.  I can resist milk chocolate.  Elmer's is a local candy maker and those two products mentioned are in every kid's Easter basket.

    Dinner tonight will be pork cutlets, okra and tomatoes cooked with fresh garlic and pepper flakes, and salad.

    Carrie, I'm so sorry to hear about your mom's health issues.  I can empathize with your distress.

    Carrie, hugs. I hope it's not as serious as it sounds. 

    Laurie I have to say this thread is a winner. I used it during chemo at first just for a different viewpoint. Kitchen table talk is wonderful with friends like all of you.

    carberry - sorry your mom is not doing well - it is so hard to feel helpless.

    carole - I have a shake for breakfast - 1c. of frozen organic blueberries and strawberries, 1 c. of unsweetened almond or coconut milk, 1 scoop of vegan protein powder (pea and rice protein) and a T. of chia seeds, blended in the blender.  You can also have steel cut oatmeal with low glycemic fruit.  I am going to make some tonight in the slow cooker with apples and cinnamon, with walnuts on top.  If you add eggs back in you can eat those, and there are some non-GMO gluten free breads and brown rice tortillas.  Exciting news!!!  I drove by the future Trader Joe's downtown and they had a banner recruiting workers, so they must be opening soon!  Yay!

    Nothing but doctor visits this week -- retina specialist today, mo and pcp earlier in the week. The good news from all of them is that everything is ok! I was somewhat worried about the bone density because of all the issues I've been having but although there was a slight decrease, it was still normal. Whew! Good for another six months.

    Anyway, because my eyes are still dilated, and will be until I go to bed :( , tonight is a super simple supper of omelets and a biscuit.

    Yay for your new Trader's,  Special! They have wonderful cherry juice which I now add to my smoothies. My allergy problems have resulted in my needing to limit many of the "go to" fruits I used to put in the blender along with my greens....even apple and pear! Drat!

    I also wondered about the Miso soup for estrogen positive folks.  And speaking of gluten free (tho I am happy to be glutenfull !), I had an email today from Chris Kimball of Cook's Illustrated marketing a new book about baking with gluten-free flour He insists that their kitchen has come up with new ways to make the baked goods taste like baked goods! Sounded interesting.....but I do not need another cookbook (or at least until a family member needs to be gluten free;)

    Just finally got my Penzeys catalog with the chocolate cake recipe in it. Lord, I love that magazine! We have a store not too far from here which I must check out...tho I coud be in there all day!

    Carrie, I'm keeping you in my thoughts as you navigate your mom's heath concerns.  So sorry for you and her. ((((Carrie))))

    lacey - I may have to check that book out as I would like to bake but am a bit intimidated by the myriad of gluten free flours available - I am not familiar with texture, etc., so not sure where to start!

    Carrie I hope your Mom is well now.

    How do you call in sick when you're just flat out exhausted?

    I think I need to do that tomorrow but don't know what to say?

    "I need a day off?"  "I don't feel like myself and need at least 16 hours sleep and need to sleep until 3 tomorow?" 

     I never call in sick.

    I made "a ton" of spaghetti tonight for the coming days...

    Bedo......."I'm so exhausted that I can't think.  I would be a safety hazard at work. I won't be in....."  ???????  

    I've done that every now and again and they were OK with it.  The boss giving a day off is better than them worrying about having to fill out accident/injury paperwork.

    Carrie, I hope the doctors can quickly give some relief to your mom. 

    Nancy...I remember giving some paramedics some excitement over exactly that.  I had my eyes dilated for an exam...and then, an hour later I was working on the computers in a fire truck.... "No.  I haven't been to a doctor today.  Why?"  《evil grin》 It took lots of squinting to see the letters on the screen....

    Have been enjoying the strawberries from FL.  They are big, beautiful and delicious.  And dh and I are snacking on yellow cherry tomatoes from Sam's. 

    Tonight's dinner is pan-seared catfish filets, oven fries and a salad.

    Spent the day in Columbia, MO today visiting family. Went to my favorite Asian did market and picked up fresh ingredients for pho, including Thai basil. Also checked out a new store that's like a smaller version of whole foods. They had lots of organic produce and meats as well as bulk foods. I've never seen so many different dried fruits including lemons, limes and tangerines.  They also had bulk honey and vinegar and an awesome liquor department. Lacey, you would have loved the kale, they had a few different varieties that were beautiful. Prices were much better than whole foods and they had some fantastic sale items. I bought several huge colored peppers for 48¢ each and a dole gold pineapple for 84¢. It was a good day.

    Since we were gone all day, I put a brisket in the slow cooker which we had with potatoes and red and gold beets.  Leftovers will be used for sandwiches for lunch tomorrow.

    More snow and single digit temps this weekend. SIGH, I'm so weary of this . . .

    Nance, the new store sounds terrific.  You did get some great bargains.  I love beets.  The son of one of my cousins makes pho from scratch.  I had a bowl of it a few years back and it was really tasty.  It seems to be very popular with Americans.  The soup is eaten for  breakfast by Vietnamese, so I was told by some Vietnamese people who work in a nail salon.  Their native diet is quite healthy.  They eat a lot of fish, but never fried. 

    Last night's pan-seared catfish was delicious.  The oven fries were good, too, but could use some improvement.  I'm not quite sure how to improve them.  To make them crunchy would require some kind of breading which would add to cals and carbs.  This recipe called for cutting the potatoes into wedges, tossing them with olive oil and s & p and cooking in a hot oven, 450.

    Tonight's dinner is grilled loin lamb chops and mashed potatoes made with more cauliflower than potato and left-over okra and tomato dish. 

    I record the Hungry Girl cooking shows on the Food Channel.  This morning I watched one that had some good ideas for making comfort foods with lowers cals and carbs.  She uses ingredients I would never think about buying.  I'm afraid to say more for offending anyone about copyright.  I must say I don't see anything wrong with repeating recipes that are on tv.

    Have a great day!  I'm enjoying the sound of a workman cleaning our front walkway and back patio, stamped concrete.  This means I don't have to do the cleaning myself!!!!  He's also going to re-seal the concrete.  Nance, hate to tell you how lovely it is today, sunny with highs supposed to be in the 60's.  Now if only the rain would stop for a couple of weeks so the golf courses could dry out.

    Nance, I think I'd be smitten with that store, kale or not! Tho I do love to see the different varieties offered at a few places..but not most stores.  For all of my kale obsession, I have yet to try to make kale chips. And even my DS2 eats them.  Somehow if a chip doesn't have potato or corn in it, I just can't see it being a chip!

    Carole, I never even heard of Hungry Girl....must look for it! It may seem odd, but I never even look at the Food Channel...my daily fix is usually The Chew. I think I'm afraid I would never leave the TV if I started watching a food channel! ;)

    It is freezing cold here....with forecast for more snow on Monday. Fortunately, DH  has not been too bothered by all the snow blowing required this winter, since he is feeling good and strong on our fitness plan. 

    This morning I needed to be up and out early to teach my child safety workshop at a local elementary school. Seems whenever it is my turn, it's the near record coldest morning temp! My next one is right after the snow. Makes me really happy that I don't have to be up and out daily this winter! But I really do miss working with the kids....and realize that after every workshop I do.

    Off to try to find a pair of boots on sale...we'll be wearing boots here for a long time yet!

    Red potatoes sliced thinly and sprayed lightly with olive oil, seem to "crisp up" nicely when baked at a high heat.  I'll sometimes put some garlic powder on them about five minutes into the baking time....so the garlic flavor doesn't take on a toasted flavor.

    I don't have any baking times....what usually happens is that I put them in the oven, clean the counters, and take them out when I'm almost done....or when they 'smell done'....whichever comes first.  :-)

    I wish I had a chef that would cook for me.  It's not fun cooking for 1 person.

    deborye I'm with you on that!  Sometimes I go out just to be around other people. LOL.

     The Chew is my favorite show right now. They really Seem to like each other. Daphne had her baby girl on Wed. So Dr Oz and Robin are Grandparents. LOL

    It's up to 18 degrees gere. Gonna get colder though. Ah well.

    Yeah no fun to cook for one.  Invite some friends over, cook up a storm, and have leftovers for the whole week.

    This cold is really getting to us. DH works partially outside in the mill and is totally frozen by the end of the day.  Wanted to stay in last night and when I came downstairs from taking a shower at 8 pm he was under a blanket on the couch and out like a light! I followed suit by 9....been a rough week.

    Making vegetable soup today, got some zucchini to go in it, and someone told me to use v8 juice as a base. Will give it a try.

    Eric Love the sound of those potatoes. Every time I crank my oven above 350, though, I have to deal with the smoke detector going off.  the good news is, I did a test in my NC house,(burned the bagels under the broiler, because we forgot to take a toaster) and no smoke detector issues!! Now maybe I can get a good crispy pizza.  Oh and I can burn things all I want!

    I have my experimental pho going and boy does the house smell amazing. It's experimental because the broth is made in the slow cooker, which I have never tried. Pho uses a lot of aromatic spices which really permeate. Can't wait, it's the ultimate comfort food.

    They're now calling for 7 to 10 inches of snow and sleet for us. The promise of pho for dinner is the only thing keeping me from going off the deep end! 

    Today is my 34th wedding anniversary. We got 6 inches of snow that day too. Must be a sign.

    Ditto on the low motivation for individual cooking....                                                                                About the most I can imagine doing would be to make a nice pot of soup and eating it the rest of the week.....as an alternative to oatmeal! ;). The good thing is the opportunity for weight loss! DH was out for dinner with the search committee last night so I heated up some cabbage soup I'd made on Thursday. A bit of Trader's light brie on crackers on the side, and dinner was done!  I may do the same thing tonight as they are taking the candidate out for dinner again. This month he has two more of these candidating weekends, so I'll be doing solo dinners four more times....unless the local temps become more civilized and I'll meet up with friends for a restaurant meal.

    Carrie, I feel for you and DH after your exhausting week. I hope you can spend some time replenishing your energy (and DH's body temp!) this weekend. You guys have a lot on your plates. Sending hugs and WARM wishes your way.

    Happy anniversary, Nance!  I can almost smell that pho here.  ALMOST because I don't really know what it smells like! 

    It's nice here today.  I have a couple of doors open to admit some fresh air.  This morning I walked 45 min. in the neighborhood wearing shorts and tee shirt.  Later I spent an hour outside hosing off some planters that grew impressive algae during the winter.  To my amazement, the herbs I planted in Dec. have not all perished during the freezes.  The rosemary, as always, is flourishing and the mint.  But I also have healthy oregano, thyme and chives.  The basil did not survive but it seems to be the only victim of the cold.  I fear that my three little citrus trees planted last spring have bit the dust.  They have no leaves.  I may replant.  It would be so nice to pick Meyer lemons and oranges off my own trees. 

    Cooking for one definitely would not be a lot of fun.  But I did cook for myself quite a bit during the years when dh worked an offshore schedule, 14 days away and 14 days home.  When I went out to lunch during his away time, I could indulge and just skip dinner.  That was nice.  Now I always have to factor in eating a night meal. 

    Tonight's meal will be catered food, not too healthy, on the parade route of Endymion in downtown New Orleans.  A neighbor works for a company with an office building on the parade route and the company invites all the employees and their guests to a Mardi Gras picnic.  Endymion is one of the big Mardi Gras parades.  This year all the floats will be lighted.  Last year the food was hamburgers and hot dogs and the usual sides of baked beans and cole slaw.  Dessert was a delicious bread pudding that one of the men made.  Beverages are colas and beer.  I tracked my WW points in advance and will have to delve into my earned activity points.

    Carole, that sounds like a wonderful way to watch Endymion. What fun!

    The pho spices are coriander seed, fennel seed, star anise, cloves, cinnamon and cardamom, all toasted. None are overpowering in the soup but are very fragrant cooking.

    Thanks for the anniversary wishes. It's been a fun ride!

    Nance. Congrats on your anniversary! That's impressive! . Pho is wonderful. I think chai has a bit of that smell too. 

    Carole enjoy the Mardi Gras parade and food. And I am so jealous with the Meyer lemons outside your door. The only thing growing around here are the icicles!

    Lacy weekends are when my DH is usually home and because we are so busy I cook only about half the time he's here. LOL. But when I do its stew chili or soup and I pack up half for him to take. 

    Carrie I hope your DH warms up enough to make it another week. It's not getting better around here either. Snow is falling slowly and so is the temp. Just 10 degrees here. 

    O. And Eric? Don't say ANY THING about yours.........LOL
