    It's actually one of two. They got oiled and salted overnight and that's pretty much it. You could butter herb it before cooking I suppose, but it's pretty awesome as it is. Roasted at 450for about 90 minutes.

    Nance, you trumped the food porn display! I'm trying to remember if you taught us how to spatchcock a bird last year. Such an onomatopoetic word! Have a wonderful family meal!

    Monica, wish I could send you the rest of our turkey white meat....DH is having some serious gum work done as I type, and kept reminding me that he won't be able to eat solid food for several days. I'll be firing up the Vitamix for double smoothies now.....

    Thanks guys!  "Food porn" reminds me of Michelle's trip to Paris, and the pics she posted!

    susan - love, love, love the turkey plates!  In DH's family they have all placed dibs on certain things belonging to the parents - with the parents encouragement.  For years DH's younger bro has had dibs on the turkey plates - DH is bummed because he adores them.  I really should get some, he talks about it every year, lol!  I love my kitchen too, but I only have a small wall oven in this house, almost every other house we have lived in had double ovens.  It makes the planning very important, but I have cooked party food for 75 in this kitchen! It has awesome counter space.  DH bought this house by himself, although I directed him to it after seeing it on the internet.  He was looking at another one that had double ovens, double 6-burner Viking stoves and two Sub-Zeros!!!  Unfortunately it had no pool and backed up to the country club parking lot and garbage area, so that was not happening.   We only had 4 this year but I have had as many as 17 for T-Day in this house.  The layout is great for socializing as the area behind (the direction the photo was taken from) is all glass that slides back and opens to the pool.

    I love the idea of cutting up the pecan bars and doing a parfait - brilliant luvmygoats!  The cake does have to be refrigerated.  The filling (frosting?) is pumpkin, spices, confectioner's sugar and cream cheese,  that is whipped until fluffy and then combined with whipped cream.  If it is not cold enough it breaks down, and unrefrigerated cream cheese makes me nervous.

    auntie - don't you hate it when kitchen stuff goes awry?  Especially when you know you are a good cook!  One year after Thanksgiving I was making stock out of the carcass.  I lost control of the stock pot and ended up with deep 2nd degree burns over 25% of me and at the emergency room!  I continue to be astounded that this happened - and I make everyone get out of the way when draining large quantities of pasta, or anything involving boiling liquid!  I don't make turkey soup anymore either!  But I love to eat it if someone else makes it!

    It all looks yummy. Birds and pies look great. Nancy I see nothing wrong with the pies. Did you get those birds in one oven or do you have a double? Or did you do the rotate top/bottom shelf?


    I have the greatest desire to bake something which is pretty pointless for 2 people one of which is eating today/tomorrow at work. Yest. they had Chick-Fil-A sandwiches and then BBQ (I assume lunch/dinner).


    I keep passing by the English muffin rings - unopened. I might have to investigate that. See how strong my arms are for kneading.

    Ah, pretty is as pretty does, Nance, and I'll bet those desserts DO very well on the taste buds!


    So DH just came home and begged for a smoothie. ;) I think I'll be making some butternut squash soup for him....but meanwhile, he just reminded me that the party we are going to tonight needs me to bring food or dessert. It's a casual belated Red Sox celebration party, which I might have been happy to skip (I don't personally known the guy having it) except that it is in a high rise apt building overlooking the harbor, and we almost lived there many, many years ago, so I have my own agenda. :)


    But....what to make....quickly! Hmmmmmm.

    Brownies and ice cream. Or alternately someone's bakery on the way for said brownies. Oh and take your own tin/knife to cut them up and put them in. Sneaky aren't I?

    I did do this last year and have to rotate the birds top and bottom. Boy did they get done fast!

    Luv, I have cooked a chicken this way but I can't remember what temp I used, sorry!

    Hahahahaha...what a good idea....meanwhile, I found all the ingredients for choc chip walnut cookies so went with that since they don't require any utensils. They are now off to the oven. I have never seen a platter of choc chip cookies not be cleared off, so this should work. But for sure I will keep your idea in mind for the future! Thanks Luv!

    OMG! The food porn is wonderful!!! The turkeys look great. Nance the desserts looked scrumptious! I am Laughing at the green beans/turkey swap! Special the spread was amazing. And ask me about the time DH spilled coffee and had to go to ER. It was a very SENSITIVE spot.....luvmygoats, loved your suggestion. I brought sundae supplies once for dessert. It worked. They ate it but I couldn't take the leftovers home lol they kinda melted!


    Much live and laughter to all. I hope we get more food porn soon. LOL

    The pies look fine to me too...Seeing all of them makes me want to go out and bake some pies. That's the one thing I didn't do this year as my mother in law brought over a pie and Sharon bought some pies from her school's culinary club pie sale.


    The porn turkey got me laughing..and then it went into "got oiled....." -:)


    I had one bad seal on the 20 turkey broth jars..


    And, my brother is in town today/tonight/tomorrow to visit mom and the rest of us... He flew in from China last night and will be leaving tomorrow afternoon for 3 or 4 days of meetings in Las Vegas...and then it's back to China.

    Monica, the same thing happened to my dh! 1st and 2nd degree burns in places scalding beverages should never go . . .

    A word of advice, when someone hands you a cup of coffee out of the McDonald's drive thru window, don't grab it by the lid. Trust  me on this.

    Nancy, what is the weight of the two turkeys you cooked? I don't even particularly like turkey and those two are so gorgeous I might have to cook one. You said 450 degrees for about 90 min.


    Special, that was a LOT of food for 4 people!


    Everyone posting sounded so happy with the dinners and the holiday gatherings. We had 31 people at dh's sister's house in Decatur, IL. There were 3 turkeys, one deep fried, one cooked on the grill and the 3rd cooked in a roaster. There was traditional bread dressing, oyster dressing, mashed potatoes, sweet potato casserole with marshmallow topping, green bean casserole (favorite of some of the grandkids), roasted vegetable medley, creamed spinach, green salad, and cranberry relish.


    Desserts: berry pie, pumpkin pie, apple pie, chocolate cream pie, cocoanut cream pie, pecan pie, brownies made with reese's cups and some other selections, too. Big bowl of whipped cream.


    I had a tiny helping of the dinner offerings except the green bean casserole and my dinner plate was full. I felt stuffed. For dessert I had a sliver of the chocolate pie, sliver of the cocoanut cream, and a bit of the pecan pie with a spoonful of the whipped cream over all.


    It was fun seeing dh's nieces and nephews and their children as well as other family members.

    Carole that sounds s like a lot of fun. AuntieN, good advice. Also don't pick up an overheated coffeepot when the handle is melting.

    All that lovely food, you all should be considered artists. Love those honeysuckle turkeys, big breasts indeed, LOL.


    I'll have to say, this holiday and the next will be challenging with my emotions. My DD and SIL came over the house today (they are heading back to Bermuda early in the morning) and we had a little ceremony in my garden. Spread some ashes of my DH around the rose bush his best friend bought for me in honor of my Jack.

    Susan, just doing OK! thinking time will get better but it doesn't does it? Funny thing at the store today though, I went to get me some hard cider ( Just love that stuff) and when I picked up the can, it slipped out of my hand and dropped somehow opened and sprayed all over, got a few people too, then I stepped back stepped on some lady's foot, she screamed I turned around and my purse hit the wine bottles and knocked two of them over, One broke!! So there was hard cidar, wine all over the floor, and several people drenched, and one almost broken toe! Me being an emotional wreck just about cried, just stood there and laughed hysterically, almost too much I think,I went into the UGLY cry, I might of had a little melt down right then and there. Needless to say I walked out of the store empty handed and embarrassed. ha ha! First time I went out of the house by myself in awhile, I think I will become a recluse again. Just have to laugh about it now!


    I have pretty turkey platter that was my moms, it is an antique I am afraid to use it but I will try to post a picture of it if I can.

    I don't know whether I should laugh or cry! Either that store was too full, or the aisles were too narrow if a bag could down two bottles of wine! Sort of like beverage bowling! We could start a new trend. The platter is just lovely, and if you were me, I would be using it. I have decided that I am worth the nice things in my house. [If I say that often enough, I might actually use the fancy glasses that sit on a shelf.]


    I know that my plates are antique as well, but, have no idea if there is a pattern name. My grandmother had two sets of the turkey plates, and my mother gave one away. She chides herself about this each year that I have more people then plates. My mother didn't love these plates; they were from my father's family.


    Another day; another bottle of wine!

    Carole, your feast sounds fantastic, a pie extravaganza!

    The birds are 14 and 13 pounds, which are about the maximum that will fit on a half sheet pan with a rack.  The most important thing about this method of cooking is to put a layer of veggies under the rack, otherwise your kitchen will be filled with smoke. Don't forget, they were dry brined overnight.

    Susan, I agree about using the "good stuff". Yesterday, I put out the crystal wine glasses that I never use after dh accidentally broke one, even though I was one short.  I have decided that life is too short not to use the good stuff.

    Oh Debbie, those are the moments you just need to walk away....and laugh!


    The kids and I made a pumpkin pie (mostly for DH cause its his favorite) and we all worked together, had fun and were so proud of how it came out we just sat back and admired it...my daughter even took pics and sent to her dad to tantalize him. Wellll when we got home from the art and winery event we all put our jammies on and settled in for nice piece of that pie and when I took a bite, quickly realized that we had forgotten the sugar! That pie went outside for the birds and bunnies and we promptly went down the street and bought some pies. Geesh!


    Nance those birds look like they are talking to one another as if to say "how did we end up here?" ha ha


    Both kids going home today.....sad face :(

    Wow, Debbie, you poor dear. What a store trauma! Good thing no one had their cell phone out or you might be getting a zillion hits on Utube for best "physical comedy". Two weeks ago at our grocery store, the manager knocked a two liter diet coke bottle from a display and it erupted with a wild spray for a full minute as it careened down the aisle in which I was shopping. It didn't miss a thing! Maybe DH can make the hard cider trip for you today.;) I hope you are having a calmer day.


    (((Hugs))) to all who are sending off loved ones today. I can still picture my mother standing in her driveway waving to us through her tears, everytime we'd leave to return here.


    Last night we attended a party in an apartment that had the most gorgeous city views. Really fun to see!


    Because there was a sports theme set up by the guy who initiated the gathering, I decided to have a little prize tucked under my tray of choc chip cookies. I took some of the clay DS2 brought me from the Red Sox infield (he scooped it up the night they won the WS) and put it into a tiny plastic envelope with a note about its significance. I thought it would be fun for the person who took the last cookie to find and keep the little piece of local sports history. Well, this very efficient man was there helping the hostess with set up, food (euphemism) flow and clean up, and when he saw two cookies left on the platter, he moved them to another plate. I told him there was something left that he could have from my platter, and he found the clay packet. I told him what it was and he was so excited to be able to bring it home to his twelve year old son who is a crazed Sox fan along with this man, himself. So my little plan of Sox championship clay sharing worked out well.


    There is absolutely not a thing interesting to report on last night's food. Totally chips, dips and some cheeses. Most of the folks who were there are serious sailors, so I figure they keep things simple in the food department. I would never be a good sailor!

    More rye bread is in production as we speak. Again, the bread rose so fast I didn't have time to make lunch before it was time to shape! I cut off 4 little chunks to make onion rolls, and the rest was shaped into batards and placed into Brotforms. Will see how that works!


    Dinner will be more turkey sandwiches and some mayo-less cole slaw.
