    T-Day Prep Update


    The stuffing bread was waiting for me this morning. I sliced a sliver and toasted so I could determine if it was any good. Underseasoned for a stuffing bread, but very delicious! I will make another loaf for our turkey sandwiches. I will increase the amount of both sage and salt next year, but I think I have found a good formula for this purpose.

    Then I moved to the rye bread. I have never had a rye bread rise so fast, or so much. In fact, it is soooooo tall I might have to cut it down to use as cocktail bread! Haven't tasted it yet, but it smells wonderful.

    And finally, the dreaded pumpkin roll. All five of my 1/4 cup measures are missing. [Yea, look at YOU kid.] So I weighed the flour which i suspect was not a good thing. It took a long time to bake, and the thickness of the cake seemed really thin. The parchment pulled off easily. Towel roll up went well, and then it cooled. And sadly, this is where things began to go awry. The cake was so moist that the towel absorbed a lot of moisture, which meant that the non-sugared side of the tea towel stuck to the darn cake. One section became rather lace-like. We decided to forge ahead, and spread the filling. Rolling it back up was not so bad except for the lace area. I wrapped it in plastic and stuck it in the fridge. We just pulled it out to taste to determine if it is guest-worthy. The cake is delicious. The filling was way too sweet. The lace section can be seen when you cut the roll. We are going to try again tonight. Changes will be, we will actually use a jelly roll pan which is slightly smaller than the size called for. We will dust both sides of the cake with sugar and substitute parchment paper for the tea towel. We will reduce the amount of sugar in the filling by half. Here is our failure. It will head to the freezer as a quick dessert for anyone in the house who craves something very sweet.

    Soooooo glad to hear that you are out of the hospital but sorry to hear that you still have some mending to do! This respiratory thing that's going around is crazy bad. I had things nowhere near as bad as you but 3 weeks out, I'm still coughing! I hope now that you're home, your recovery is swift and complete!

    Susan, you are having quite an experimental day! I think the roll looks sooo tempting and I'm not even a pumpkin crazed person. I am also not so much into sweet things of late...am noticing that in the past week or so, I am not even interested in cookies or candy. I think my last cookie was at Michelle's memorial.


    Today on The Chew, which I love to watch while on the treadmill, Michael Symon made a boned whole turkey roll up. Boy, did it look good! I was a bit squeamish about rolling up the skin, since I would not enjoy fatty skin amid my deliciously flavored turkey meat.


    So I made the last (hopefully) trip to the store, got the turkey (in parts!), and assorted other things. Came home and made cole slaw ( tribute to my mother who always served cole slaw with turkey dinner...always seemed odd given her Italian heritage, but we all enjoy it). Had hamburgers for dinner, made cocktail sauce for tomorrow's shrimp, and the turkey stuffing which will be en casserole given no total turkey. I want to make some part whole wheat rolls for dinner, but that is probably better left for the AM.


    I also have to check to see if I can make the Kelly Ripa brussells sprouts dish tonight ...or a least parts of it. I have no dessert making to do since DS2 is bringing an apple pie from his firm's work fundraiser, and I picked up a pumpkin pie yesterday. I do not like pumpkin pie at all, so if the apple pie is not from a good restaurant, I won't even be interested in dessert....a good thing. I was amused to see how many more folks than usual were at our fitness center today...working out like crazy.....it has to be the Thanksgiving effect. On Friday it should be mobbed!


    The big task tonight is to convert the dining room to the dinner space. Boy would I love to leave all my sewing there, and eat in our perfectly fine kitchen, but I guess Thanksgiving tradition and pride is in my way. ;)

    Susan- I agree with Nanc, You are my Idol as well, and I thought the pumpkin roll looked good to me, I made one years ago and it certainly did not come out looking as nice as yours. Did you post the rye bread recipe? I would love to have it, not now of course because you are all so busy but maybe in the next few days when you get a chance?


    Seaside- Ditto on sending it to my house too lol!


    Lacey- Friday at the Fitness center should be slow since every one will be at the Malls going crazy. (not me) You couldn't pay me to go shopping on Black Friday. I found the coleslaw intriguing since your mom was of Italian heritage, so had to look it up. Guess what, Many regions made this dish with there own ingredients, like Sweden, Germany, Dutch, and of course American, but it says that the Italian's loved this dish and usually put ham in it and called it "Insalata Capricciosa" (Capricious Salad) and there ya have it, but you may of already knew this. I learn something new through all of you.

DH is going to take me to the Casino, I will just park my butt on a machine with my oxygen and maybe cook the free Turkey we got for spending 150.00 at Safeway this week-end.

    Pumpkin Roll No 2 is still cooling. So far, it seems more successful. We have reduced the sugar in the filling and it much better! I bet I don't have time tomorrow to take pictures. You will just have to imagine it as being perfect. :-)


    Lacey, you may have the perfect dinner menu. Need some gravy? I made 6 cups. [And I did promise I wouldn't overdo!] I don't actually eat dessert. I just enable others, sometimes.

    wow it all sounds so good. I hope everyone has a great Thanksgiving! Except for those Canadians who already had theirs! LOL


    I spent most of the day going through paperwork. I should have done it yesterday but I just couldnt. So today it was. My DH is home to nite so he will do the floors tomorrow when he wakes up and I am still sleeping. This is the first year I don't need to put the Turkey In BEFORE 8 In The am. Yay! LOL we will be eating late so the hunters can have a full day. So din at 6:30. Much love to all.

    Debbie: So glad you're home & on the mend. I too will not be cooking since all cooking smells have been a problem now that I'm doing chemo again.


    Laurie: Sorry to see cold weather in Florida. Hope the kiddos are over the 'bug' and the rest of you didn't catch it. Looking forward to hearing about your trip.


    Thanks everyone for posting all the cooking & family activities. It sounds great in my brain & it's fun to live vicariously. I'll be going out to McCormick & Schmicks with my ex-husband and his wife.

    Happy Thanksgiving  all.

    After 17 years of being responsible for T-day dinner at our Senior Center I FINALLY THREW IN THE TOWEL. This year my DH is taking me to the best restaurant in town.  I intend to order prime rib!

    I have been up for a while now. Actually remembered to take the pizza stone out of the oven before setting it to temp. I think it was seaside who included me in "those that are having a first holiday" after loosing someone. You know, I have been so busy being worried about others that I had forgotten to take a moment to mourn my own losses.


    The last year has had so much loss. My Dad, my Mother In Law, my thyroid, Pat, Michelle, and so many other women from the Stage IV thread. But the first five on that list are real for me. Generally, I just do what is needed be it cleaning out a house to sell, arranging a funeral, and I do forget that it is important to mark these events, these passages, in some meaningful way.


    Thanks for reminding me that I need to be patient with my mother today. This is her first Thanksgiving in 55 years without my father. Yesterday the last pieces of his estate were settled and I can only imagine how sad she must be. All of my sisters and I found seeing his signature on the will heartbreaking. I need to remember this. If that is how we feel just seeing his signature, my mother must feel it in multiples as she signed all the papers to transfer his life into hers.


    I hope each of you have a special day in whatever way makes you happy. For me thanksgiving is about family, friends, food, the coming together of strangers and those we know best to celebrate the things that make the world a good place leaving the dividers, like religion, for a different day.

    My sentiments, too, Nancy. I roasted the sweet potatoes last night, ready to make casserole and put in oven. Made the 24 hour fruit salad last night with a cooked custard/whipped cream - the real stuff - dressing. Now to shower and get off around 10 (8:15 now). Pick up DD and head to DB's house. Everyone stay safe and warm and enjoy lovely times with family and friends.


    Susan and Debbie - you both have had more than your share of losses this year. I do hope the coming New Year is better to/for you and that you take time for yourselves today for some quiet time.


    Chabba - way to go. You deserve your prime rib.

    Quick note: Nancy, you are a rockstar!!!! Had a piece of toast this morning using the rye bread, It is absolutely fabulous! I made a few modifications [very minor] and will let you know what they were after the crowd has polished off the food!

    Here is Nick & Rebekah, they ran the 5K Turkey Trot in Ayer, MA. It was very cold this morning but being a true New Englander I didn't mind. We had a wonderful day today together, went to Plimoth Plantation for a Thanksgiving Buffet. I am stuffed.

    First year in three I did the Thanksgiving dinner. Pulled it off. But it was hard. Got the kitchen cleaned up and myself cleaned up before my kids got here so all was good. Turkey turned out good. Dressing or stuffing was pretty good they liked it. I cut the wings off the turkey before cooking the turkey. Then I browned them and put them over the bread stuffing bits. Added butter and applesauce and broth. Then popped it in with the turkey. It was done after about an hour but tasted real good. I checked the temp on the wings before I tasted it. Then I cooled it off and just popped it back in half hour while turkey rested. Tasted pretty much like it had been cooked in the bird. But now I'm tired. Kids cleaned up after. Hope your all had a good time. Much love.

    It's after 3AM Can't sleep so here I am. The buffet at the casino was backed up for a 3 hour wait so we ate at another restaurant there with no waiting, dinner was not so great but at least quite. Casino was packed and I feel like I smoked a cartoon of ciggerettes. YUK! I will be cooking my free turkey this weekend and hopefully the rye bread and fruit salad from Luvmygoats if you see this and post it.

    Happy late Thanksgiving to all! My brother did an awesome job with all of the cooking and it was great to see and talk with all of the family I don't get to see that often. nothing unusual to report...he did put sausage in the stuffing and I have decided that I don't like sausage in my stuffing.


    I, too, am thankful for all of "my other family" here on BCO that I know is here for me every day no matter what .


    Tomorrow I will cook a turkey just for us with all the trimmings, because I just need the leftovers.


    The kids and some friends and me and DH will attend an art show tonight followed by a band at the local winery. Hope to find some unique gifts at the art show. I am really going to do my part in shopping local this year and support our independent businesses.

    It was a good day. This year, I made "sheets" of smoked salmon, piped the herbed cheese in a long line, and then rolled them together. T-Day morning, I then cut them into 1 1/2" lengths and put them on the platter so people could see the roll. I then cut off the "head" of half of the rye bread, and trimmed the side crusts. This left me with a 4x4 inch square. Thinly sliced and then cut in two. Last task was to slice cucumbers on the mandolin. The rye and cucumber then alternated on the round platter. It was very pretty. As I mentioned yesterday, this rye bread was terrific. It tasted of rye [which isn't easy in a bread that can rise] without being too winey. The texture was tight enough to slice thinly but not dense. This is a great example of, yes, making the bread was worth the extra work. The only modification I made to Nancy's formula was I reduced the sugar and yeast from 2 teaspoons down to 1. The bread still rose a bit too quickly, so I might reduce the yeast in the sponge next time. The thing is, the bread didn't taste like yeast, so the fast rise was not a problem at all. My mother took pictures, which she will send to me when she gets around to it. But I did get one glamour shot of the bread after I cut into it for the first slice.

    Isn't she a beauty? Now, I am going to go slice the head portion that I lopped off and toast it for breakfast. Maybe a bit of my special Meyer Lemon marmalade would go well with this?

    Susan, good modifications there. I'll make the note on my recipe. I had already decided to reduce the yeast in the sponge. I haven't made it in a while, and seeing your beautiful loaf, means I'm going to have to. There's nothing I like better than a piece of rye toast.

    Like Carrie, I'll be cooking turkeys tomorrow for a small group of six. Yesterday was a large group of 26 at SIL's. TONS of food. Even just eating a spoonful of everything made us uncomfortably stuffed. It was 8:30 last night before we could even think about food again, so we had leftover roast beef sandwiches and Greek yogurt for dinner.

    I'll be cooking most of the day so tonight will probably be a takeout pizza. Hope everyone had a lovely day yesterday!

    Debbie - Here is the link to the fruit salad. I made the dressing just as it said and used the 48 small marshmallows. I put in whatever fruit sounded good - halved black grapes, fresh blueberries - handful, canned pineapple, splurged on can or Royal Anne cherries, maraschino cherries, mandarin oranges. I've seen the recipe with well drained fruit cocktail too. It turned out the perfect amt. for 6 of us with leftovers. I did put a wee bit of sugar in the finished product mainly because I couldn't find the powdered sugar to sweeten the whipped cream. That prob. explains why I could not get a good whip on the cream but it was good enough and melted into the marshmallows.

    I found that I have a bunch of "Tastebook" recipes saved.


    I've also seen the recipe with variations of Cool Whip/the cooked egg dressing or CoolWhip/sour cream (which I bet could be plain yogurt as well). Lots of variations so maybe you don't have to shop for anything.

    The rye bread looks heavenly Nancy and Susan. DH loves pumpernickel but does not eat it fast enough b4 it goes bad.


    We went to DB and stuffed. Did not get home until 8 and all I had then was some peppermint hot chocolate. Did bring some leftover turkey/dressing home and DD took a bit also.


    I think she seriously will look for job in Pac NW next year. She took DB's email to send him a resume. He has plently of contacts up there; not sure what exactly his comp. does but business consulting of some kind. She has 4 years now with logistics for Fortune 500 company and degree in logistics. Not paying her what she's worth and I think she just wants to go somewhere while she's still young (26).


    DH off to work at noon. No cooking around here today and prob. not much this weekend as his company will be feeding them all 3 days.
