Random Thoughts:
you can make your own Mexican chorizo with very little effort. The Spanish stuff? Not so much. http://honestcooking.com/authentic-homemade-mexican-chorizo/ I love making my own sausage. I can change the proportions to suit our tastes. I often substitute fresh herbs, peppers, and spices for the dried ones, etc. I can also control the quality of the meat so I know that it isn't made with bits and bobs, but with pork shoulder [or whatever.]
No question. This thread included far more recipes early on. It is one of the reasons that I didn't participate to be honest. Quite a few of those recipes were copywrite protected. Yea. I am a nerd to care about that stuff, but I do. To make up for my nerdiness, I try to post links when they are available, but retyping recipes from a cookbook isn't my thing. When the recipes stopped being posted as frequently is when I felt comfortable joining in.
Today is cold and damp. I hope that Michelle is comfortable. Perhaps there is a fire crackling to keep her warm and she is covered with a down duvet.

Nancy - I attempted TJs but after being almost run into twice in the parking lot I carefully backed out thinking God was telling me something. He was - to hightail it to Central Market which I promptly did. I will try the TJs tortillas next time but earlier in the day when the teeny lot is not so crowded.
DH ate the 1/2 sandwich I had left from the deli so no cooking last night. Have to make the turkey burgers and might get it done sooner rather than later.
Susan - the polenta sounds wonderful. I copied it off. You can send the drinks right over they look so yummy. -
Carole, I'm impressed with anybody who can do 30 minutes on an elliptical. That's a workout!

Me too! I can handle about 10 minutes, then do something else and come back and do another 10 - I can't do 30 straight. My orthopedic doc really prefers the elliptical rather than running - for the problem knee. -
Susan, the cocktails are too pretty to drink! You sounded really good in your post as though you've been enjoying life.
On the subject of copyright and recipes, I have a number of self-published cookbooks put together by churches and other organizations. The majority of the recipes probably originated in various cookbooks and magazines and newspapers. The New Orleans newspaper, The Times Picayune, had a food column and printed recipes over the years. When Hurricane Katrina destroyed a lot of people's homes and possessions, the newspaper received thousands of requests for favorite recipes they'd lost. The newspaper had its food column staff do research to find the requested recipes and a wonderful cookbook called Cooking Up a Storm was published.
Dinner tonight will be an eggplant casserole out of the freezer and a salad. -
I've just started using an Adaptive Motion Trainer (AMT), similar to an elliptical but more fun I think (if you can call exercise fun that is). I'm only up to 12 minutes on it and then I do 25 minutes on a recumbent bike but my goal is to get to 20 minutes on each. Intended to do circuit training today too but got a terrible charlie horse in my stomach so couldn't lift any weights at all without starting it up again. Too weird. Oh well, I'm still doing more than I was doing 2 months ago, but it did set me back a day on my goal to look like Wonder Woman.
Tonight is a Thai dish, Pork and Drunken Noodles. I'm using some of the huge vase of Thai basil that I rescued before the frost. This is my third drunken something recipe. What's up with that? -

I haven't talked much here about my tests and treatments because I couldn't be sure what and how much was related to bc and what could be due to my "advancing age" of 71. My side efects have been more or less managable, balance issues, joint pain, fatigue and weight loss primarily.
Tamoxifen is a strange drug in that the side effects are so different for different women. Somehow it seems that if you are overwight when you start you are apt to gain and if you are underweight you will loose more. When I got my Dx I was trying to gain 15 to 20 lbs. In three years on Tamoxifen I have lost 50. At 5'9" I weigh 106 fully dressed as of my MO appointment last Friday. He is a new Dr for me since my previous one is on maternity leave. He has taken me off Tami and has put me on another hormone inhibitor, Megestrol Acetate, that is also such an effective appitite stimulator that it is used to treat anorexia. Got to admit I have been spending more time in the refrigerator the last couple of days. It has been less than a week and already seeing improvement in energy too.

The one called "Submarine Cuisine" has the recipes adjusted to feed a family instead of a ship's complement but is not an official government publication....in case it matters, do be aware that some of the names and descriptions of the recipes...probably shouldn't be read to young kids.... :-) Me...I was laughing...Mom and dad used the very same descriptions....

My Dad has been craving the wet burritos he used to have at a restaurant he went to years ago called Dos Amigo's. It was just a local place in my home town and they went out of business a few years back. Well my quest was to duplicate the sauce and since we all know what chemo does it was impossible for me to taste correctly so what I did was search the internet for a wet burrito recipe and found one I liked and made the sauce according to how they said and I would take a little spoon into his room and he would taste it and tell me what to add. After doing this 6 or 7 times we got it right and I made Wet burritos for my whole family including my brother, my SIL and y 2 nephews. I also made Spanish rice and cornbread. That sure was a lot of fun! Cooking can be rather exhausting though....more fun when I don't do it everyday! Happy cooking everyone...love to hear all your stories. -

Last evening, DH and I had dinner with an elderly colleague of his at the man's independent living facility in our town. I recall my DS1 waiting tables there when it first opened many years ago. So I got a kick out of chatting with the local high schoolers who served our meal. The food was good restaurant quality, and the atmosphere delightful (not sure what I expected). I had delicious lamb ribs with saffron rice and assorted vegetables, an artichoke salad with frisee and other small greens, and a flourless chocolate cake for dessert. I might just decide to move directly there and bypass the "downsize to a small house" step....and that might just happen if we keep procrastinating with getting this place market ready!
I enjoyed hearing about several of your exercise regimens. I am deliriously happy that, today, for the first time in many months both of my knees and my shoulder are almost 100 percent better from their painful tendonitis. I may even drop the PT sessions after next week.
Keeping my fingers crossed! Doing thirty squats with no pain was a satisfying accomplishment today. This is even more exciting for me than the Sox win last night!
Hope everyone has a fun (and safe) Halloween....am hoping that the rain holds off here so that we aren't left with lots of the candy I bought. -

Well, you can be sure the kids don't care! And my DH already has every light in and out of the house on and is eagerly awaiting the first of the goblins. He is too funny about Hlliween! -
Tonight, I am making chili for our dinner. This is NOT Texas chili. This is chili that when we lived in Texas, we would pull down the blinds so that none of our friends or neighbors could see that we put beans in with the meat. I actually prefer the chunk meat variety, but this chili is what Mr. 02143 loves. So that is what I make since he is the one who actually craves chili. I was going to make some cornbread as a side until I actually looked at the recipes. Too much butter. Too much white flour. Instead, I will make a bit of rice. Anything to cut the richness of so much meat.
My lights are turned off. I always hope that if I ignore Halloween it will go away. Our neighborhood is not filled with cute little children, but hulking middle schoolers that maraude around town looking for hand-outs. When we first moved here, trick-or-treating was from 5-7 and it was fun. But now, all the kids go to the fire stations and library, or the festival last weekend.

Wanted to share this recipie I had last night - very yummy, quick and easy !Tuna Noodle Casserole
6 oz no- yolk noodles (Ronz oni Healthy Harvest, or brown rice pasta for gluten free)
1 tbsp butter
1 medium onion, minced fine
3 tbsp flour (gluten free use rice flour)
1 3/4 cups fat free chicken broth
1 cup 1% milk
1 oz sherry (optional)
10 oz sliced baby bella mushrooms
1 cup froz en petite peas (thawed)
2 (5 oz ) cans tuna in water, drained (I used 2 tuna steaks (smallish)
4 oz 50% reduced fat sharp cheddar (I used Tex Mex)
butter flavored cooking spray
2 tbsp parmesan cheese
2 tbsp whole wheat seasoned breadcrumbsDirections:
Cook noodles in salted water until al dente, or slightly undercooked by 2 minutes. Set aside. Melt the butter in a large deep skillet. Add onions and cook on medium heat until soft, about 5 minutes. Add the flour and a pinch of salt and stir well, cooking an additional 2- 3 minutes on medium- low heat. Preheat oven to 375°. Lightly spray 9 x 12 casserole with butter flavored cooking spray. Slowly whisk in the chicken broth until well combined, increasing heat to medium and whisking well for 30 seconds, then add the milk and bring to a boil. When boiling, add sherry, mushrooms and petite peas, adjust salt and pepper to taste and simmer on medium, mixing occasionally until it thickens (about 7 to 9 minutes). Add drained tuna, stirring another minute. Remove from heat and add 1 cup reduced fat sharp cheddar and mix well until it melts. Add the noodles to the sauce and mix well until evenly coated. Pour into casserole and top with parmesan cheese and breadcrumbs. Spray a little more cooking spray and top and bake for about 25 minutes. Place under the broiler a few minutes to get the crumbs crisp (careful not to burn).

I've spatchcocked, dry brined and am now roasting a giant chicken. Along with some cornbread dressing, cranberry sauce and baby peas, we'll call it dinner.
We had one trick or treater so far. I really hope we get more so I'm not stuck with all this chocolate!

Happy Halloween to all! Mixed feelings about it here! Used to love it when my kids were little! Our neighborhood was new and all the families had young kids. Halloween was a big social event as we all crossed paths on our route. Lots of chit chat and general catching up as the kids collected their treats. Some homes even had treats of the liquid variety for the grown-ups! Point was we all knew each other and it was a bit like a block party!
Things have changed here over time. The kids have grown up and moved on. We still get the little ones early in the evening, which I love! But we also get the roving bands of teens later in the night which I'm not crazy about. Most are fine but there are enough who are just so obnoxious and rude that you just want to smack them!
The last few years we've turned the lights on/off early to avoid the crazy teens. This year, for the very first time in our 26 years together, did not turn the porch light on and went out to dinner instead. Not sure yet how I feel about that!
Dinner was Thai food at a restaurant we'd been meaning to try! Really good and totally not crowded since it's Halloween! -
As for chili, I like the beans in it although the Texans would definitely disagree!
Lived for 5 years in Minnesota and, while not the state I would say screams chili, they sold in the grocery stores a 'coarse ground' ground beef. It was coarser than typical ground beef but finer than diced/shredded beef.
Loved it for chili but have not seen it in the stores here. I have a grinder so can do my own just have to get motivated to do it. -
Seaside, one of the grocers here offers a coarse ground beef they label "chili grind". I've never bought it however.
Sometimes I put beans in chili, sometimes I don't. Sometimes I use a lot, sometimes just a few. If I do use beans they are either strictly black beans or a mixture of 3 or 4 different kinds. Beans or not, we always like it spicy.

We actually bought flap steak. I trimmed it up, rubbed it with some homemade chili powder and salt before grinding with the "big" die. Today I used small red beans, dried, soaked, and then cooked in the pressure cooker. It wasn't a bad chili. Husband and the "boy" loved it! For me, chili is a dish of love. Love for my husband, not me. :-)
Usually, I grind three or four different cuts of beef and make the chili, meatballs, etc, but my hands are too painful to consider all of that, so flap steak had to do. To be honest, it was a great choice. Very beefy and earthy.

Susan, lol - "sixty" was supposed to be "spicy", which I have edited, yet again. For some reason, I'm suddenly having problems posting with my cell phone. It will change words when I hit the submit button even though the word I want has been typed. I have edited that post 3 times trying to get the word spicy to stick even though it's what was originally typed. It seems to be happening to me routinely, which is why you'll see that my posts have often been edited. This just started recently and it is maddening. -
Happy Halloween! I dont mind the middle schoolers because if they are busy trick or treating they arent causing any other trouble! And all 4 of my kids were around 6 foot tall by the time they were 11! At 5'4" I am really the short one! LOL..
I made up a casserole of 4 beans with ground beef to try to raise my mag level. After 3 days of eating it over a plain baked potato, i couldnt face it again. So I went out to eat with my neighbor. She had turkey I had scalopped potatos with ham. I of course had leftovers. I mean she did too. LOL. But its a Greek restaurant and its home made and the portions are huge.
Susan it has to be love to cook something you dont love. Nance I used to serve the beans separate from the chili cause my kids wouldnt eat them back then. They love them now.
Seaside I miss MN. Except for the snow. And the cold. And the lutefisk. Uff da! LOL. Of course WI is pretty much the same! (minus the lutefisk - but add Fish Fry Friday)
We had about 125 kids on Saturday for T &T . Actually gave out almost all the candy. Except for the KitKat bars. Funny how they never got put in the bowl........
And, Hello Tazzy! Glad to hear from you. That looks like a better recipe for tuna casserole than the one I have. Ill have to try it!

Morning everyone: Haven't been here in a while....moving is such fun:( but it's all done now and I can admire my handiwork...lol!

Haven't done much cooking lately...eating out a lot...so nothing to contribute. I am planning an early Thanksgiving dinner for my BF's kids at our new beach house. I'll do this just before I return to Florida for Thanksgiving with my family. BF will join me after the traditional football game between USC and Clemson (a tradition that he watch with his DS).
Time to get ready...taking BF to hospital to have his pacemaker changed out due to low battery. He should be as good as new tomorrow...lol!

Going to a Bills game this weekend. Will do chicken tenders in wing sauce in crock pot for travel and bring buns with blue cheese crumbles for "chicken wing" sandwiches. there will be lots of tailgate food. 2 day event with everyone camping. Oh boy!!! -

We loved where we were in MN (Rochester) but those winters... OMG were they cold! I thought I knew cold from living in the NE my whole life but MN took cold to a whole new level! Funny though, the summer temps were way hotter than we typically get in NY!

Eric, that cookbook was pretty interesting. It should be named "How to Cook." it certainly covered all the bases. Some of the recipes sounded pretty good. The Scalloped Macaroni with Tomato and Bacon caught my eye. If I could only figure out the scale for 2 people ;-)
