So...whats for dinner?

I love all those cooking competition shows! I just finished Top Master Chef but I fell asleep before it ended. Thank God for On Demand! -
Moon. Don't forget that it probably took the TV shows' producers a very long time to find the kids featured on that show.
The kitchen is VERY clean....it's the "as clean as the day one moves in" clean.
I got side tracked, so I didn't get done until about 1:30am.
After adding air to my MIL's car tires, I decided that since I had the air hose out and compressor filled up, I'd check the tires on the other cars.....everything was fine except for the tires on the 1964 Jeep (doesn't get driven much in the summer), so I took the wheels/tires down to have new tires installed, then I had to unplug a toilet at mom's house, fix a water leak and "do" more driving lessons for DD.
DD cooked last night. Chicken, rice, beans and a salad...nice..especially since the counters were filled up with stuff from the cabinets. DD makes me smile (most of the time)... :-) -
Eric sounds like you had a busy weekend. Getting the kids out driving is a scary and proud time. Much easier when they are driving. Also more scary in a way, but that is what has t o be done- gotta let them grow up. LOL
dinner will be leftovers. Chicken breasts I cooked the other day. Will probably find something to go with them. Much love to all. Debbie and Michelle have been on my mind lately. -
I "shopped" the freezer tonight and found brisket! All cooked and in sauce! For sides I made a buttermilk cole slaw, steamed green beans [local ones are still marvelous in October!], corn, and sliced tomatoes from our garden. We have enough of this brisket to have sandwiches for lunch tomorrow so another meal is dealt with.
Always concerning when we don't get a Michelle-Update. Think of her often.
*susan* -
Susan, I'm thinking that Michelle and co. were busy at their relative's wedding this weekend....unless my timing is off from what her DH posted on Facebook. Hopefully she went and was able to enjoy it a lot!
Had an emergency eye doc visit this afternoon to check out the prominent (and annoying!) light flashes that persisted all throughout the musical on Friday night, then again Sat. Well, it's a relief to know that my retina is fine.....just being jostled by the vitreous pulling away from it. Nothing that serious. Now I can live with it. Embarrassingly, I realized when the ophthalmologist was explaining what was happening in my eye, that this has happened once before, some years ago and I had totally forgotten. It does pass after the "pulling away" process is complete. Just aging eyes.......
So after the doc, which took an inordinately long time, I ran to the store and created a meal in my mind with chicken breasts and thighs, mushrooms, etc. etc. Got home to learn that I'd forgotten that DH had a church meeting in half an hour, so I put all my foodstuffs in the refridge, he made himself a tuna melt, and I made myself an avocado, tomato lettuce and kalamata olive sandwich. Dinner done!
It is really cool and rainy today....had forgotten all about when we might turn the heat on...and we try to hold off as long as we can....but brrrrrr is the house chilly! I think I'll do some exercise and warm up! -
Lacey- Glad your eyes are ok! And yum on your last minute dinner!
Susan- Nice freezer find! Sounds delish!
Welcome lovewins!
So- things have been super busy here as usual. Got the kids through croup and FINALLY both me and DS2 felt good today. Ds1 was the lucky one and had 5 days of steroids so he has been back in action. Thursday was DS1's birthday, he turned 6. We had family over to celebrate Thursday night and just had simple food, veggies, hamburgers and orzo salad. Yesterday was his big party at an indoor play center with 23 kids! Everyone had a great time and it was very cute to watch them all play together. I had a girl I know make the cake since we all know I am a cook and not a baker:D It came out great!
Today the Patriots were on and we had some friends and thier kids over to watch the game. We had LOTS of unhealthy food. I made sweedish meatballs and we had mozzarella sticks, potato skins, wings and jalapeneo poppers. Hello heartburn?!
I too hope Michelle is able to enjoy the wedding. Hoping for an update from Joyce when she gets a minute.
Hugs to everyone. -
Lacey, I had that very same issue with my eyes.
Susan, I envy your brisket. I don't know why, but they're a little pricey here. They only go on sale around the holidays so I try to stock up, but haven't had one for a while. I miss my side of beef.
I have a Costco trip planned next week. Who knows what treasures I'll find.
It was a brrrrr 54 rainy and chilly degrees here today. We didn't turn on the heat either, but I wanted to. When I came down to start dinner, DH had the fireplace on, the wimp. -
LOL everybody. My heats been on since we took out the AC in early Sept. 54 degrees outside and wet is cold enough for me. Today we had pizza for dinner. A CHSMO. Or otherwise known as a Milwaukee special. Yep. Cheese, sausage, mushrooms, onions. Yum. Better was the Packer win. And best of all, the smores dessert pizza. LOL not exactly healthy but the first pizza I had for 3 months. DH had his 2 brothers over so thank goodness no leftovers. Darn. That smores pizza was GOOD! LOL
Much love. -
Our Yellow Lab just demonstrated a new trick...opening the refrigerator door.
Fortunately I have some of those "cinch straps" used to secure loads on trucks.. I can at least strap the door dosed while I figure out a better arrangement.... -
Good dog lol! -
Eric, before we got a new fridge we couldnt keep the door completely closed. My DH added a cabinet magnetic closure to the door by the foot board so he could screw it in unobtrusively. It might work. It took just a bit more effort for us but with two contact points for the door it might work for you. Smart dog you've got there. Or maybe a latch you could use your foot to open. Good luck. -
Eric We had a lab that would open the door to the outside, tried to teach her to close it, but that never happened and we were constantly finding the door wide open....so frustrating. Maybe teach the dog to cook? or at least fetch you a beer!
Had corn on the cob last night with a beef filet and tossed salad with tomatoes and cucumbers that I dressed with a red wine vinegar dsg this may be the last of the corn for the season.
Laurie Love football food! -
Not too aesthetically pleasing but don't they make refrigerator locks or straps to keep toddlers out of it? My DD did not do that so no real experience.
Leftover city last night and the remains of the hamburger soup tonight. Might make some cornbread to go with it.
Hoping Michelle was able to attend the wedding and prayers for her and family. -
Eric, just read your post aloud to dh and he got a good laugh! What a smart dog! My youngest brother had a black lab that chewed the siding off his house. Maybe he was mad that he wasn't inside and couldn't open the refrigerator!
Lacey, I've had the floater problem for years. The flashing lights would have sent me straight to an ER. That's a real danger sign for detached retina. So glad your checkup soothed your worries.
Susan, we would all like to share your freezer! Your refrigerator. Your pantry with the canned sauce.
Laurie, glad you and your sons are feeling good again.
Moon, that smores pizza sounds wickedly delicious! Would you believe I had never eaten smores until about 5 yrs. ago. Guess I had a deprived childhood.
Lacey, I might have enjoyed the dinner sandwich more than the planned dinner!
My chicken and sausage gumbo was very good. I did something a little different. Browned the chicken thighs with skin in small amt. of grape seed oil and olive oil. I knew I would be refrigerating the gumbo and could skim the fat off. Usually I put the skinned chicken and all the ingredients into a pot and simmer. Thought the browning would add flavor and it did. I take a short-cut on the dry brown roux because I now can buy the roux powder in a jar instead of making it myself. I stopped making roux with butter or oil many years ago.
The pasta making was a success, much to my surprise. I expected to feel like Lucy in the chocolate factory. I made the Light Wheat recipe in the Kitchen Aid instruction booklet. About a 2 to 1 ratio of wheat and white flours. I ended up with 8 long and very thin strips which I cut crossways into shorter strips before running them through the fettucini cutter. It was way too much pasta for one meal. DH made a very good sauce with crumbled Italian sausage and diced fire-roasted tomatoes out of a can, diced onion and garlic. We cooked the pasta about 3 min., drained it and dumped it into the sauce. Delicious! Fresh grated parm-reg on the top.
I "nested" the strips of fettucini and that didn't work out the best. The bottom of the nest got a little "stick-togethery." So I kept fluffing them until the pasta dried and then put it into a large bowl and into the freezer.
Martha Stewart used a wooden laundry rack, the kind that many of us took away to college. It folds up flat for storage.
The Kitchen Aid attachments are excellent products.
It's COOL here this morning!!!! We turned off the A/C and opened the windows yesterday afternoon. Fall has arrived! -
carol I never had smores until a few years ago either. Turns out I don't teally like em. They're too sweet for me -
My DD is a big s'mores fan and of course, I loved them as a Girl Scout many, many moons ago! After experimenting I figured out how to make them in the microwave - DD was beyond excited. Plus the marshmallow puffs up like crazy so it is pretty dramatic! DS is a fireman and says that if you mix a fire and a girl together it is only matter of time before she will excitedly exclaim "let's make s'mores!" which he finds hilarious. When I eat them they taste like childhood! -
Eric, you gave me some motivation to give my kitchen stove an "extreme" cleaning. It gleams and looks so clean I hate to mess it up!
Dinner tonight was a good tossed salad with avocado and blue cheese. Warmed over artichoke casserole and leftover home-made fetuccini with marinara sauce. Everything tasted great.
DH announced that he plans to buy chicken breasts and make chicken salad tomorrow. Go for it! -
Carole, I would be interested in the artichoke casserole recipe if you haven't posted it already.
Tonight was red pepper garlic chicken sausage pasta. It's a very pretty dish with red, yellow and orange peppers. I also added some roasted tomatoes, since I roasted two trays today that I picked yesterday. I have a chuck roast thawing, so tomorrow will be beef bourgignon or a more pedestrian pot roast with vegetables. -
So the dinner items I put in the fridge last night were chicken thighs, breasts, and chicken sausage. I googled some recipes and ended up making Clinton Kelly's chicken sausage stew. It was pretty good. I found and used a can of crushed Jersey tomatoes that we bought from a farm stand there in June. Wish I'd gotten more than two cans. We had the "stew" over some brown rice "spaghetti" along with a garden salad. Definitely a fall style meal even tho it ended up being a warmish humid day here.
DH and I took a nice long walk to Trader's (good way to prevent impulse buys...ya gotta carry them home a couple of miles!). I am thrilled that my PT exercises seem to be helping my knees a lot...so long walks feel good now.
But boy going to both PT and the trainer is a lot. I have accumulated an entire "bible's" worth of homework exercises (seriously, 40!). So I am asking both of them to prioritize what they expect me to be doing daily in addition to my walk. Good thing I retired!! Would never have had time for all this healthy behavior!
Eric, wish I could also get motivated to spit shine my stove.....maybe when the weather is really cooler.
Mañana.....;)
Hoping to get an update from Joyce soon....... -
Hi everyone. Joyce sent me a PM with an update on Michelle. She is struggling with Michelle's decline and has asked me to update everyone. Michelle did go to the wedding but is unable to walk or care for herself at all at this point. She speaks very little and spends a great deal of her time sleeping. Rick of course is being wonderful and taking great care of her and her family is there for her. It seems things are declining quickly for her.
I am so sorry to have to share this news. Yet, I know we all think of Michelle every day and care for her so much. We worry for her and her family and friends. I am so thankful to Joyce for keeping us updated. Things are tough and I know all of our hearts are breaking.
Hugs to all of you. -
(((Michelle))) -
Thanks Laurie...and Joyce, who I know is suffering as much as Michelle's family.
This is such sad news to think of our strong, intelligent, generous and energetic friend declining. She has been so strong and inspirational for so many...this is just too heartbreaking.
(((((MICHELLE, RICK, FAMILY, and of course, JOYCE))))) -
Laurie (and Joyce),
Thank you for the update although I know we are all beyond sad that the news isn't better. Michelle has always been such a ball of energy and such an eloquent writer, with her posts here on BCO as well as on her blog, so the fact that she is speaking very little is especially heartbreaking.
Prayers for Michelle, her family and friends, and for all of us here who have come to 'know' her and love her here! -
Hugs to Michelle and her family. Hugs to her friends IRL as well as those of us here. Praying for an easy time of it for them and Michelle. May they make the most of every moment with her. Much love and sorrow. -
Sending hugs, love and prayers to Michelle and her family. Thank you Joyce for keeping us informed, so hard to see a friend go through this.
Late night, just wanted a simple sandwich before bed, but turned a grilled ham and cheese into a Rueben. Today will prep ahead and do some eggplant parm so dinner will be all ready when I get home from work. -
I came here for dinner inspiration. LOL We had an all organic omelet last night (no cheese), and plain sweet potato. That was an easy fix to stick with the theme of uncomplicated Monday. The trick to shopping at Coscto for us, is we go only for the items we need. We have become really good at this. I can go for their 4 lb. bag of broccoli and walk out with only the 4 lb. bag of broccoli. The hard part for me is walking past the churros at the snack bar on the way out. I love those and can't have them, but still have to look over at them on the way out. LOL -
inspired - I can go in and get out with just the broccoli too - my problem is when broccoli and jewelry are in the same store, lol! I have this issue with Target too - I come out with underwear, apples, a CD, a garden hose and picture frame. -
Unfortunately (or maybe fortunately) I live 60 miles from the nearest Costco, so I have to maximize my shopping opportunities. -
I must go to Costco at least once a week. It is very close and serves as one of my grocery stores. My standard Costco items are: parmesan and romano cheese, feta cheese, smoked salmon, red meat chunks nothing ground, wild caught fish, frozen green beans, lemons, limes, frozen green beans, fresh haricot vert if they don't look old, lettuce if I know we have folks coming to eat with us, seltzer water, cashews, ziplock bags, sugar, flour but only if I know I can use up 25lbs quickly, coffee filters, printer paper, dishwashing and laundry soaps, advil, and of course, all of my RX's. Needless to say, I don't buy these things all at once!
I am very saddened by Michelle's decline. It just never gets easier.... I hope she has no pain. So glad that she has her family surrounding her [and Joyce is family.]
*susan* -
Thinking of Michelle also - looking back on our lunch together, actually just looked at our picture. So hard to process that she can't rally back.
