Oh, I'm so very sorry for the painful loss of your brother, Chabba. I hope you are able to enjoy your birthday dinner despite this concurrent sad family event.
Laurie, your weekend menu sounds wonderful. Your cooking energy always amazes me!
Back in NH and not thrilled with the weather (cool and spitting)nor the forecast (thunderstorms feature in it), since Sat nite we have our Labor Day beach potluck dinner and party. DH serves as the party DJ ....and I am really hoping for clear skies since the party is at the beach! He loves this gig!
Tonight we grilled a sirloin steak and a potpourri of vegetables. Still using up some delicious tomatoes so made a caprese salad over some delightful red leaf lettuce I picked up today. My basil plants here are so much better than the paltry ones at home, that it was great to return to them......
It's lovely for DS1 to go to school with his best friend....that is often a strategy I encouraged parents to employ to assure their children's comfort. HaHaHaHa...Laurie the bus driver! Sweet! No more late weekday nights for you!

Visited my dad today for his 87th birthday (actually on Saturday). Took him to lunch and made him a key lime pie (one of his faves) instead of cake for his birthday. It was a good day.
Because of a large lunch, dinner was just grilled cheese on rye and the last of the new potatoes made into a potato salad. I have half of the potato bed left to dig, but it will have to wait till the weather gets cooler. It was 100 here today.
I think tomorrow it's going to be baby back ribs with huli huli sauce. I'll repeat the pressure cooker/grill method. Definitely no ovens on here for the next few days. -

Marple, that's a great idea to try different seasonings! I like them because they have protein. No, they're not hard all the way through so you won't get kernels. It takes me a bit longer than 45 min because I have a bad habit of never preheating, and I have a 'baby' stove.
I'm too embarrassed to say what I had for dinner besides chickpeas, but I love reading what everyone else is making.
Susan, my very favorite soup in the world is Southwestern corn chowder from the Moosewood low fat cookbook. It's made with sweet potatoes, and although you can make it with frozen corn, it is so delicious with fresh corn.
It's time to make lasagnas and dump all the remaining garden vegetables into them and freeze them.
6 more weeks and I'm headed off to the tundra with polar bears and northern lights. I might be going further north than Nome this time. That's OK, I've been to Barrow, which is the northernmost settlement on the continent. Will definately be making lots of soups and stews, lots of split pea soup.

Moon, I work up there sometimes. I want to be more in control of my schedule now, and right now I'm am not ready to commit to another full time job which will end only if I quit or get laid off. The pay is good and I like the Arctic for short periods. I'll be there for 3-4 months.

My friend met with her BC team yesterday. As I'm sure you all remember, it was more than a bit overwhelming. She has IDC. Tumor is less than 2 cm, ER/PR+, HER2-, grade 1. She won't know the stage until after they do the SNB. I spent quite a bit of time on the phone with her last night. I think it helped ease her mind some. I told her that as far as BC is concerned, what she's been told so far is relatively good news. As a near 20 year survivor, I've talked to so many woman just starting out on this journey. Something I'm always willing to do. It's just so much harder when you know and love the person going through it.

Hauntie, you're a good friend. Several friends (long term survivors like yourself) reached out to me when I was diagnosed and I was ever so grateful. I have tried to do the same.
Tonight will be shish-ka-bob with ribeye, chicken thighs and garlic sausage, along with some of the never ending vegetables from the garden. Tomorrow are the baby backs.
Picked 10 cukes yesterday so may try some refrigerator pickles. But first I have to make room in the refrigerator! -
Gardengumby, the 30 min. in the 450 degree oven is to brown the beef ribs. I don't have a conventional oven in our camper but the microwave oven is also a convection oven so I preheated it to 450 and cooked the ribs for 30 min. I finished them in the crock pot and they were very tasty. The crockpot is not an acceptable substitute for an oven but it's handy when we're doing our rv summers. I do like the crockpot for cooking beans to freeze in portions for use in recipes.
Drawing a blank about dinner tonight. We're playing golf at 3:30. Maybe we'll have Mexican at the Mexican restaurant in Park Rapids. We've never tried it but have heard good things about it.
The good news is that the weather has turned nice again. The door and windows are open and the a/c is off.

I have the camper all packed up and ready to go. I am going to pick up DS1 from school shortly and then we just have to wait for DH to get out of work and we will be on our way! I hope everyone has a great weekend.
Also, in case anyone missed it people are trying to do a card shower for Michelle. I sent my card out, if anyone wants her address pm me or TifJ for the address.

I hope everyone has a nice long weekend, and enjoys their plans. DH will be taking it easy - he has struggled a bit with working Wed to today - a bit painful. DD is not feeling great, but does not seem to have descended into full-fledged illness since taking the Z-pak. She has her dive test today to the bottom of the dolphin pool - not sure how that will go but it has been put off and has to be done. I am glad she has the next two days off to rest a bit. Compounding her long hours (they ran out of otter food and she had to add 3 more hours to her 10-hour day to go to the zoo and get some) is a break-up with her boyfriend of two years. I am not unhappy about this because I never liked him, and honestly I don't think she is all that surprised either as he finally showed his true colors - y'all can guess how... but it is just added angst, and she is mad that she stayed with him as long as she did. As more experienced adults DH and I knew this day would come, but some lessons have to be learned the hard way, right?

Breaking up is no fun, even if it's for the better.
How did her dive go?
I've been vacuuming, which gives me the time to think about dinner.
For awhile I thought I was going to have to rent a snow blower to deal with the dog hair. The dogs are *S*H*E*D*D*I*N*G.

eric - I think she was pleasantly surprised that the dive went perfectly. The only thing she did not achieve 100% on was her underwater swim. None of the interns (I think there are 8 or 9) did any better than she did though - 2 lengths of the pool without a breath is tough. Plus, she was doing this after her shift, on the last day of her 5 day in a row week - she put in 55 hours at that point, so she was a little tired! In some ways, I think she is relieved to be done with the BF - that relationship was stressful under the best of circumstances, as he is a Navy SEAL. Unfortunately, she has some things of his that need to be given to his mom, and there is some drama surrounding that - she just has not had time (or frankly, cared) and she is receiving some pressure. She also sold a boat and there are some issues with paperwork, because it is being titled in a different state that originally, so she is also dealing with pressure from the buyer. She is learning a bit about life as a "grown-up" right now!

Last night was a simple pasta, zucchini and cheese dish that I just threw together. Tonight will be a tandoori chicken. It is marinating now. Will serve with some dal and rice. I could add another dish, but the humidity today is stealing my energy.
The bushel of corn has been processed! This year's bushel was 70 ears of corn. 10 of those went into the chowder, the rest are in the freezer. The three flats of tomatoes and 20 onions are now roasted tomato sauce. Well, the last of the roasted sauce is still in the oven but should be done within the hour. These are the two things I like to do before Fall is firmly here. I promised my husband that I would not add anything more to this list.

It does sound like your DD has had an accelerated course in adulthood. Lots to deal with. So nice that the two of you have a good relationship. It really does help our kids navigate these life-changing events to know they have us to rely on for support and advice.

susan - I am tired reading about your list of delish foods to be processed! Yes, the DD is having a lot at once, and I have to continuously remind myself that she is an adult (sort of, lol!) but does not necessarily have life experience in every category and sometimes does not know what to do. She is always seeking advice from both my DH and I, which I like, because she is open to what we have to say. She does not always follow that advice, but she is learning along the way. The biggest disconnect was with this boyfriend because we absolutely could not see what she saw in him - nobody could except her - it was baffling. I think it was a combination of a long-distance relationship that allowed her a degree of freedom to live her daily life without feeling constricted, and a deep-seated need to "fix" things (or people) because that is her nature. In any event, I hope it is done, done, done! I can't see how she could wish to continue the relationship and have any self-respect - so I am hoping for the best!

LOL @ Susan and Eric. I would freeze some corn when we had cobs in summer. We always had enough for Thanksgivimg and Christmas. Once my DS1 said that corn was always the best. He didn't know that was my "special stash"! LOL

Also getting a chuckle,about the corn comments. So a question....do you cut it from the cob before any cooking, then cook it from the freezer when you want it?
So, for me this weekend, crowd cooking....Our beach association potluck and party was scheduled for this afternoon/evening. I decided to do a casserole of penne and sausage with onions and peppers since, in years past, that is the sort of thing that "sells".
So last night I cooked up the sausages and veggies and was horrified at the end of the process to taste a bit and learn how unbelievably salty the sausages (and then everything else! ) was. Yuk! So today I made a very unsalty tomato sauce, and turned the whole dish into farfalle lasagna with the help of a ricotta/cottage chs blend.
Anyway, fast forward to the dinner ......weather looking threatening all day, but I baked a huge casserole (and two smaller ones....really tried to stretch that saltiness out!) and got ready to head to the beach dinner.
DH is the yearly DJ for this event, and he had already brought his equipment (computers, speakers, amplifier, and mixer)to the beach and situated them under umbrellas and plastic bags just in case the Dark Sky app was accurate.
Ha! It was, but our group was intrepid and worked around the raindrops, basically getting drenched, to enjoy the food until it became monsoon like, with accompanying thunder and lightening.
Funny, usually any time there is any thunder heard in the distance at our beach, people race up the hill towards home like frantic ants. Tonight, the draw of the long tables of food (albeit some with puddles on their covers)resulted in so much denial that it took many rumbles and finally a very loud crack to convince the crowd to head for safety.
Poor DH had to pack up his music stuff in the monsoon, which continued for a few hours. Oh well, next Labor Day weekend is another opportunity.....
I was glad that very little of my casserole was left to bring home! But I have two more to give away since we really do not eat salty high fat pasta dishes anymore. The salt factor was mitigated somewhat, tho.

Lacey, I enjoyed your description of the potluck on the beach. I felt like I was there!
Susan, I, too, wondered if you cut the corn off the cobs. I bought half a dozen ears of corn yesterday and plan to cut the kernals off the cob. The sweet corn is IN in this part of MN. There are pickup trucks everywhere selling the fresh-picked corn.
Yesterday DH and I biked for the last time this summer on the Heartland Trail. We parked the truck at Nevis and discovered the little town was having its Uff Da! festival with food vendors. So we had lunch there after the ride. I had a pulled pork on bun and the pork was delicious. I bought a cookbook called Sharing Our Best that has some unusual recipes in it. It has a recipe for potato dumplings that caught my eye when I was riffling through it.
Last night we had a wonderful ribeye cooked on the grill, corn on the cob, and caprese salad.
Today I'm cooking a pork roast and potato salad for the potluck at 6 pm. Last year there was fried fish, but I haven't heard any mention of fish this year.

I usually cook it on the cob for more flavor. Then my DH made me a board with a large nail in the middle. The board goes over a big bowl in my sink. The cob goes on the nail. A corn cutter goes over the cob, the corn drops into the bowl without too much mess. COOKED CORN IS STICKY! LOL

After my MIL was moved to an Alzheimer's unit, my husband insisted that I take some things from her kitchen. We had just done a bunch of corn with a knife, so he really wanted me to take the corn tool. MIL hadn't used this in years and years. Us? we use it regularly. Found a picture of this old-fashioned too on the web. For Christmas, my mother gave me an OXO tool. I haven't used it, but my sister says it is great.
To process, we do 4 ears using the "tool" to one done by knife with cleanup by the tool. I then bake this concoction with almost nothing added. Just a bit of butter and a pinch of salt.

I made a "corn stripper" from a hack saw blade. It works great as long as I keep it sharp.
I've made corn whiskey and canned corn, but never did try freezing it...not enough freezer space..

Special, my DD had a BF like that. I think you are probably spot on regarding the long distance.
I bought fresh corn to make soup, but I'm tired of the air conditoner, so I'm going with the fan, and it's really too hot to cook.
My useless cats don't help at all. They just hang around and watch

Lacey- I agree your description of the night put me right there! I was right there with you with the rain and making the best of it. I was actually standing under the awning cooking DS2 a grilled ham and cheese in the middle of the thunder storm. Dh asks me 1/2 way through why I am not cooking it in a pan in the camper.....ummmmm. Cause I am dumb?
We had a great weekend. We never even got to the corned beef and cabbage dinner I will make it tomorrow. We did so much group eating with one other family we hardly ate dinner! The husbands had a "rib off" to see who made the m best ribs. My DH won
I also made an eggplant appetizer where you slice the eggplant, drizzle with virgin oil, top with a slice of fresh tomato and diced basil than top with fresh mozz cheese and pop on the grill for maybe 10 minutes on a piece of foil. All sorts of good food, summer sausage, guacamole yummy breakfasts of french toast, breakfast sandwiches with Canadian bacon, home fries etc. The last night there we had the baked stuffed haddock which came out great. It was great sharing the cooking and food with friends. I love it. We also had steak and cheese suns and pulled pork!So tonight we are tired of course and going easy on dinner. Cheese burgers with all the fixings- sauteed muchrooms and onions, pickles, lettuce and tomato. Yum! Early to bed tonight as DS2 starts school tomorrow and the neighbor kids will be here around 7. We will be off and running!!!

Special K- The best thing I ever did was admit I knew nothing and listen to my mothers advice. Life got a whole lot easier. Your DD will do great with you as her mom.

bedo - the DD is a very independent girl, so the long distance made it easy to have a boyfriend but still be able to go out on the boat and fish, hang out with her girlfriends, do whatever, without feeling so tied down. She was always loyal though - can't say the same for him...
laurie - wow! What fun you had! Reading about your son's upcoming school takes me back to mine too - he is 25 now. He had an allergic reaction yesterday (apparently to pineapple - my DD said good thing he isn't Spongebob!) and had to go to the ER (he works there, lol!) but it was hard because he is so far away, it made me feel like he was a little boy that needed mom - he didn't, but I did! I just saw something on my computer homepage over the weekend - it is video of a mom dancing right after she put her kids on the bus for the first day of school - it is pretty funny, apparently it is a tradition, she does it every year and records it.

I am so happy. both of my boys officially LOVE school. DS2 did great today for his first day and said he loved it- can't wait to go back. DS1 loves his school too and has asked to have a school lunch tomorrow. He also announced he has 2 new best friends. I am so proud of both of them!
I am pooped!!!! I felt like I spent the entire day in my car running around! But the house is picked up, corned beef dinner is in the crock pot ready to go for dinner tonight and I don't have much left to do other than baths and bedtime etc. I am going to try to go to bed early tonight and read.
