    Tuna casserole was the very first meal I cooked all by myself.  :)  No noodles, it had biscuits on top.  Now, I can't eat noodles or biscuits, but the idea of tuna casserole still sounds good.

    Dinner tonight is roasted eggplant with Michelle's sauce.  Tomorrow is DS1 first day of kindergarten!!!  I think we are both a bit nervous.

    Helped my brother and his friend make 15 pounds of boudin sausage for a Cajun festival they're going to this weekend. I tasted it both steamed and fried in a patty. Not a real fan of it. However, it was a great lesson in sausage making. He used his kitchen aid mixer with the grinder/sausage stuffing attachments. While visiting him, I bought a used kitchenaid mixer for $80. Think I'll look on ebay for used grinder/ sausage attachments and try my hand at homemade italian sausage. I have very fond memories of my Nana making Italian sausage. No Kitchenaid for her. We turned the crank on the meat grinder and she stuffed it into the casing by hand, using a funnel. Best sausage ever.

    Laurie. When driving the bus on the first day of school....in the morning the kindergartners would be as worried as the parents and there would be such a huge sense of relief in the afternoon when everyone realized they would get back together.



    On the 2nd day there was a bit less worry and by the third day they (kids too) were "old hands" at it. And, I could sense the feeling of accomplishment by the kids.

    I wish I could duplicate the taste of Stouffers tuna noodle casserole. I could live on it. I do like chicken tetrazzini too. Oh waiting for cool weather cooking.

    The leftover pork stir fry turned out excellent. Had a subtle ginger flavor from the pork sauce. Cut up celery, red onion, yellow onion, carrots, orange bell pepper, sugar snap peas whole with a little low sodium soy sauce and a Lundberg brown rice. Enough for leftovers tonight but should have made more rice.

    Laurie - your DS will have a blast at kindy. You are such a good mom and I know have spent oodles of time with him. Give him a hug for me.

    Good to hear Michelle is doing ok, just not posting much.

    My DH was home to go with me to Ps appt. So he will grill chicken for supper. Maybe ill mix up a salad.

    Glad to hear about Michelle, and I am sure she is just as busy as ever...sounds like there is still tons going on in her life as always.

    I love tuna noodle casserole and so does my DH  We usually only have it in the winter though.

    Laurie  Although you will miss dear son #1 You are going to love the time with DS#2.   My daughter had such a "strong"  personality, demanding a lot of my time..I loved being home alone with just my son for a few hours each day.

    Bought some local corn on the cob, maybe do a grilled snadwich with it for dinner.

    Tuna Noodle Casserole? To me, tuna noodles casserole tastes like my mother abandoning her family's culinary edge. All through my childhood, she would create these wonderful meals using that week's NYTimes Craig Claiborne recipe. Sunday nights were a nod to our New England heritage with homemade baked beans with hot dogs. And then, when I was about 8, she became politically active [civil rights and all that.] She ran for councils. We volunteered for candidates. I wore sandwich boards and worked at bake sales. Slowly, but surely, our culinary world shrank until we too were eating casseroles made from magazine articles. Blech!

    No more cherries jubilee. No more ratatouille. No more crafted salads. [We boycotted lettuce from CA for years to support the farm workers.] So very sad. I may still be damaged from this turn of fate.

    Tonight we went out to a fancy, new spot here in Union Square. Not a great value, but the food was delicious.

    I don't believe I had a casserole in my entire childhood and certainly not tuna (although we did have fried canned salmon). Fish and chicken were always fried, except chicken would occasionally be barbecued. I rarely had salad and if I did, it was a wedge of iceberg with a slice of tomato. My father was a meat and potatoes guy and that's the kind of cook my mom was. Lunches were almost always cold cuts and although I ate peanut butter in others' homes, we never had it in our house. My paternal grandparents, where I spent a good portion of my childhood, were southern and that's the kind of food we had. My grandfather had a huge garden and lots of that ended up canned (and/or cooked to death.) We had ice cream, often home cranked, every night when I was there. I didn't learn to cook until I was in my late 20's. I love tuna but the only tuna casserole I like is made by weight watchers.

    OK Susan, you must share the spot in Union Sq. And how nice to learn the origins of your culinary interest and expertise! Tho sad for you that your mom needed to "pare down" in the kitchen while she tended to the needs of the larger world. ;)



    Hauntie, what a lovely memory of the intergenerational family sausage making!



    Laurie, you and DS1 will do great! He has opportunities to be away from you, so that will not be new. He is a curious guy so he will be attracted to a stimulating classroom. You both know that your love for each other is strong....and that you will be there for each other at the end of each day's session. I am confident that all will go well. Congratulations on this developmental milestone! :) An exciting big step for each kindergarten family!



    I had the privilege to be the soc wkr/ counselor for the town's early childhood center for many years, and got to see that once even the most worried PARENT left (really important to leave and not linger....and tell him where you will next see each other so he can carry a visual)after drop off, every student engaged with their class and teacher and left any family drama at the door. Kids are so resilient! Enjoy the pride, my dear! And go out for coffee or to the playground with some other mothers with the younger sibs.



    Eric, our whole family will always remember my boys' elementary school bus driver, "Bill". He was a dear, and started the boys' days off well for so many years. I can just picture you doing the same......Oh, what the start of the school year stirs up.....



    "For darn sures" of grilled chicken tonight, with the addition of a huge salad and some locally made lamejun (sp?) which we enjoyed.



    If I ever get on my computer, I will post the photos from last Sat's dinner, and my "still life" of ingredients that go into my smoothies. Sadly, the poor computer is jammed with ignored emails which I have to delete so it can function.

If you would like to send her a word of encouragement or that you are thinking of her, please PM me and I will give you her address. It is her current address, but I understand she is moving. I know the Post office will forward them if necessary. We thought maybe we could brighten her day a bit!

    So much interesting conversation!  First, tuna noodle casseroles.  DH loves them and I like them, too.  Problem is that tuna casserole is so easy to eat that you want to eat a lot of it.  More chew is good for portion control! 

    Susan, I loved your bit of family background featuring your mom.  She sounds like an interesting, admirable person.  My middle sister, who is passionate about her "causes," came to mind.  I've always felt guilty because I'm so passive in my causes.  I rarely even summon the energy to e-mail, write or telephone my senators and representatives. 

    Gardengumby, the grass-fed beef ribeye had a good flavor and wasn't all that tough.  It cut very easily in the raw state.  All the ingredients for the fajitas were good except the corn tortillas.  The selection of hispanic foods is huge in LA where we have a large hispanic population but not so in MN.

    Laurie, you have WAY too much fun and social life!  Your sons will realize one day how lucky they are to grow up in their neighborhood and town with parents who have lots of friends and enjoy family life.  Good luck to mother and son as DS#1 starts kindergarten.

    Lacey, you may always miss your professional involvement because you were so fully engaged in your work.  The children were fortunate to have you in their school system.  I can relate to missing the association with colleagues.

    Eric, I had one bus driver for grades 1-9.  He was a stern man and tolerated no mishavior on his bus.  But every year at the end of school, he drove his route and picked up all the kids for a party at his house.  I remember that we had home-made ice cream in addition to other food.  His name was Mr. Thomas.  I don't remember whether Thomas was his first or last name.  In the south children don't address adults by their first names but often put Mr. or Mrs. in front of the first name. 

    Nancy, I know what you mean by overcooked veggies in southern households!  My mother aways cooked green beans until they had no chew left in them!  And they were well-seasoned with bacon grease, too.  She peeled yellow squash, chopped them and "smothered" them down.  I had never tasted broccoli or cauliflower until I went to college and was introduced to these unfamiliar veggies in the cafeteria.

    Dinner tonight will be chicken breasts and corn on the cob and a salad.  Either a caprese salad (fresh basil at the farmer's mkt today) or grated carrot (keep buying more carrots because they're so pretty!) and fresh pineapple salad.  Haven't decided how to cook the chicken.

    Off topic--is anybody else watching the US Open Tennis?  Venus's tennis dress is unlike any tennis dress I've ever seen!

    Tonight is the naughty meatloaf, mashed potatoes and steamed broccoli.  Last night was blue cheese burgers, baked potato salad and fresh corn on the cob.  Shaping up to be a meat and potatoes week, lol!  DH had endovenous laser on one leg on Mon, so I was the nurse again.  He has way more nurse points than I do after all my surgery, so I am taking good care of him.  He is not a very good patient though...  he is using too much creativity in regards to his post-op instructions so I keep lecturing him!

    Off topic - Need some good thoughts and positive vibes for a dear friend. The results of her needle biopsy were positive. She's had to wait a week and a half for an appointment with the BC team. Her appointment is tomorrow. All she knows right now is she has BC and she's terrified. I've been trying to prepare her for what to expect. I pray the news is good and she's able to get through this with minimal treatment.



    I had a new gustatory experience for dinner tonight - curried goat. A friend, who is Bengali, has been introducing me to Indian cuisine. It's a cuisine I had never tried, but one I'm finding I like. The goat was delicious. Much more tender than lamb. I'm still getting used to the spiciness, but it's growing on me.

    Carole, your writer is showing through with all of your thoughtful comments. :) And you helped me figure out why I always ate too much tuna casserole, such soft chew...many years ago! I think I stopped making it when my kids were little and did not eat such mushy things, so I cooked more discreet foods that they could identify...and we also liked. So much for seventies' casseroles.



    Special, I hope your nurse gig with DH is easier and faster than with DD. Is she enjoying her internship? Looks like it!



    Hauntie, so nice to see your more frequent posts. Goat....hmmmmm....never tried it. Would be willing. But don't tell Bedo! ;)

    Tonight I was trying to clear out some perishable home food since we head to the lake in the morning. So we had caprese salad over a bed of romaine along with BLT's that included garlicky avocado spread instead of mayo. OMG! Yummmmmmm!

    lacey - DH's procedure was easier and he went back to work today for 1/2 day, then for post-op and a dentist appointment.  He is just so bad about following directions - I keep having to be insistent, then he ends up realizing what I am telling him is correct.  He has been so healthy he just has no experience.  We had a lengthy compression garment conversation tonight ( I have had this surgery, plus have lymphedema - I know what I am talking about, lol!) - he took a shower (first time he was allowed to - he has been doing sponge bath since Mon. a.m.) and didn't want to put the compression thigh-high stocking back on to wear until bedtime.  I pointed out that it might be ok to do that two weeks from now, but he just had this procedure on Mon.!  He is supposed to wear it from morning until bedtime - the instructions don't say anything about being creative after a shower, argghhh!  DD is doing ok - started not feeling well yesterday, I had a Z-Pak that we got from the primary care for the trip to Europe, so I put her on that - she is a bit better today, but she left the house this morning at 5:00 a.m., didn't get home until 9:30 p.m., she is working long hours, so I am a bit nervous.  She has to do fish prep tomorrow (kind of like cooking for dolphins!)starting at 6:00 a.m., so she has to sleep fast!

    DH is taking me out for dinner tonight to celebrate my birthday.  Only one place in town that really does a good job with fish so that is probably where we will go.  I don't do fish at home since he doesn't care for it.

    Special, i know what you mean about men with "no experience" with recovery compliance. My DH was always like that until he had a heart event about seven years ago. He is much more compliant these days.....

    Hope your DH heals quickly....and that DD feels better.

    Happy birthday, Chabba! Had to write your name numerous times because my Kindle Fire kept changing it.



    Today it decided to recognize the laundromat's WiFi. Our last laundry event here in Park Rapids. Tues. We'll travel north to Grand Marais where I'll get together with a bc friend I met here on bc.org in 2009 when we were undergoing bmx w/immediate recon. She lives in Thunder Bay.



    (This darned kindle keeps changing my spelling!)



    At the camper the slow cooker is on duty cooking beef short ribs. There was ONE recipe for beef ribs in my slow cooker recipe book and I'm loosely following it. 30 min. at 450 degrees in oven with sauce of bbcue sauce, preserves, and soy sauce mixture. I used rhubarb jam. Then hours on low in cooker.

    Carole, do you brown the ribs before putting in the crock pot?  I've got a couple recipes for short ribs - one of 'em I've made a gazillion times, the other I've yet to try.  :)  Maybe this weekend, who knows.  :)

    SpecialK - I totally understand about your husband.  My hubby had hernia surgery in his early 40's.  3 DAYS after the surgery he was out digging post holes and couldn't understand why he was tired.

    Special K- I hope your DD and DH feel better.

    Thank you all for your kind words for DS starting school.  He did great!  The one who was the most nervous was my DH, which was kind of funny.  He is very happy that I am bringing my neighbors son to school each morning now that the first day is over.  It's his best friend.  My neighbor drops her kids off here a little after 7 and we leave by 7:45 for me to be the bus driver in the mini van!!  Kind of funny.

    I am getting ready for our next camping adventure this weekend.  We leave late day tomorrow through Monday.  We have about the weirdest menu ever!  Dh and I sat down last night to plan food.  I did a pulled pork in the crock pot today to bring with us.  We are having baked stuffed haddock one night and we will have corned beef dinner another in the crock pot....so random!!  But what the hey?

    Tonight is chicken cor don bleu with scalloped potatoes and zucchini.  I need to clean up from the cooking I have done so I can do some more.  We made muffins this afternoon too.  It will be all be worth it when I get to relax this weekend and watch the boys run with thier friends.

    Happy Birthday Chabba!

    For all you chickpea lovers, if you're not purists, here's a recipe for spicy chickpea "popcorn"

    Rinse and pat or shake off extra water from a 15 oz can of chickpeas. On a rimmed baking sheet toss with 1 Tbsp olive oil and1/2 tsp crushed red pepper flakes.  Bake at 400 degrees F until golden brown and crisp, about 40-45 minutes.

    OMG bedo, the chick pea popcorn sounds really great.  And one could play around with the 'seasoning'.  I'm wondering, are they hard right through.  I promised my dentist years ago I wouldn't eat any more popcorn as I kept chewing on the hard bits and broke a few molars.

    Thank you all for the Birthday wishes.  So far it has been a good day.  Enjoyed cooking lunch as the Senior Center and then sat down and enjoyed eating with a couple of friends.  Husband plans to take me out to dinner later.

    At the  moment though I'm in tears.  A year ago right now my Brother called to wish me Happy Birthday.  We both knew we were also saying a last good bye.  He died at 11 am on the 30th.  I HATE CANCER!!!! His was a particularly nasty and aggressive one that took 2 months from first sign to date of death.

    Happy Birthday Chabba! Hope dinner was wonderful and a special occassion.

    Today we bought a bushel of corn. Let's just say this is a lot of corn! For dinner I made, corn chowder with chicken stock. Delicious. We have begun to process the rest of the corn to freeze for baked corn for Thanksgiving and the rest of the winter. Also bought three flats of tomatoes and we will start our annual roasted tomato sauce fest tomorrow. Sometime in the cracks, I will get some actual billable hours.
