Lacey enjoy the lake and the food with a night out!  I laughed at the Jimmy Fallon comment- there are a lot of worse lakes to be named after for sure!

Tonight my brother is coming to watch the boys.  DH and I are headed to a work party with friends for the evening at a brewery in Portsmouth.  So no need for me to cook tonight!  Tomorrow we are headed back to our friends place on the lake to spend the day/night.  This summer is so quickly coming to an end :(

Debbie - so sorry about the loss of your dad - it is never easy, sending you strength.

gardengumby - I am trying to stay away from wheat/gluten also but couldn't resist the other day!  I know a number of people who are egg/bacon averse, you are not alone!

laurie - enjoy your party and spending some time with your DH kidless!  What a nice brother to watch your kids!

Debbie:  My thoughts & prayers are with you on your Father's passing and in the months to come.  I'm so glad you could be with him.  Holding you close.

Laurie:  Thanks for posting for the 'facebook deprived'.

Moon:  The third times the charm.  Hope the recovery is easy.

I love breakfast food any time.  Or cold chinese food or cold pizza for breakfast.  Or leftover steak at midnight.  Can you tell - my brain is hungry but my body still says yuck.  I'm so tired of buying things & then throwing them away after 3 bites.  But I can't stop tormenting myself reading all the posts as I munch on my bananas & applesauce.  Thanks to all for your posts.

Moon, I hope everything goes well with this third attempt.

Thanks for the update on Debbie.  I can empathize with her emotions because I was with my father when he died in 1995.  He is still very much missed in our family.

A campground neighbor--the same man who invited us to the fish fry--brought us a pizza from his home town.  It was delicious and a little different from most pizzas.  The crust was very thin and flat, no upturned edges.  The top looked like solid light-colored cheese with little balls of Italian sausage.  I cooked the pizza at 400 degrees until the crust was crusty.  With the first bite or two I discovered that one of the ingredients was pepperoni but it was underneath the cheese.

Today was laundry day.  The laundromat wasn't crowded and we enjoyed chatting with a woman who has a cabin on one of the many lakes in this area.

I'm looking forward to my prime rib dinner tonight!

Which reminds me to ask Bedo.  How do young teenagers happen to become vegetarians?  I don't think I've ever had a friend or acquaintance who was vegetarian.  And now it seems to be quite common.  There are even lots of vegans.

I enjoy vegetarian meals, like veggie omelets and salads and pizzas but I also enjoy meals that include beef, pork, chicken, lamb, fish, and seafood.

Debbie, I hope that your Father's passing was peaceful.  My thoughts are with you. Take care of yourself. I am thinking of you.

My daughter said the pickled beans tasted like sour Warheads Candy. I wouldn't know, I never tasted them.

Goats,I'm going to inspire you.  Take some ground beef and make a hamburger.  You can put some Lipton dry onion soup mix in it or put hamburger in sauce over pasta. Or, you can fry a pork chop in a frying pan and put paprika on it to make it look pretty.  That's what my husbands got in addition to what I made for myself and they never complained.  They liked it! Waiiitaminute, they say the way to a man's heart is through his stomach, maybe that 's why...... Nah.

Auntie Pate Brisee?= cow liver? =braised liver?= cow liver like goose liver pate? Ahhh, the benefits of 8 years of public school French. My teachers would be so proud.

For lunch my daughter made me bagels with cream cheese and ginger ale. She just moved into a barn apt. A girl after my own heart. Am I a good Mother? Bad Mother? Have I ruined her? She knows I love her though.

Now I'm looking for a recipe for Gazpacho that I can make chunky with tomato juice.

I might break down and buy some fresh scrod at the outdoor Farmer's Market tomorrow. I've been doing that on rare occassion the last few years. It would be good with real green beans and crusty bread.

Carol, I forgot to answer how teenagers become vegetarian.  First, your Mom must be the World's Worst Cook. You could tell the day of the week by dinner.

Monday =Minute Steaks.  Grrrrrrrr! Take those things in your teeth whip it around and pull until a peice comes off.

Tueday = Liver and Onions. You could look at the liver and tell what it was.

    Wednesday= American Chop Suey. WT?

Thurday = Chop Suey out of a can.

And on and on. Each day we prayed for something good but it only got worse.  One day we relieved Mom of her cooking responsibilities by announcing we were vegetarians. (My brother and I really wanted to be) We were all happy. She worked too hard anyway.  We stir fried to our heart's content. (tomatoes, onions and peppers over rice)  Canned spaghetti sauce over pasta. We got better and when the Moosewood Cookbook came out I thought I'd died and gone to Heaven. But I never learned to bake, only stove top and crock pot for the most part. My sister stopped being vegetarian later, my brother still is. Mom made us Ratatouille, bless her heart, which I hated but ate with gusto as a "special treat" when I came home from college until she died when I was 25. My Dad died when I was 5 and there were no other adult relatives so we "made up" life.

So I can't cook well.  It could be worse.  I could be an inside trader or something.

    Sorry about the two novellas

Debbie - I'm so sorry to hear about your dad passing. I hope you were able to be there with him and he was peaceful. Thinking of you.

Moon - no surgery is minor. LOL. Hoping for good things for lefty this time. Rest. Is someone there to fetch things for you?

Bedo - don't stop. I love your novellas. Pate brisee is a shortcut pastry dough (thank you Wikipedia). I knew it was a dough of some kind. Think fried pie dough which is what I think Auntie Nancie was making with her "hand pies" or maybe baked instead.

I did get inspired and made the meatloaf with yes - onion soup mix. I bought one of those Wilton meatloaf pans and I love it. It makes enough (yee gads 2# ground beef) for dinner plus leftovers plus some to freeze. My kind of meal. Will probably make some brussel spouts for DH. He tolerates meatloaf OK but loves brussel sprouts. Good combo. I think no energy for mac and cheese. I also made ginger green tea. Simmered some sliced ginger and put it in iced green tea. Very good. I buy vegetarian cookbooks at Half Price books on their clearance aisle but don't think I could do it and think DH would rebel. He's not a salad guy but will eat his vegies. Tall/slim with excellent cholesterol. Can you hear my jealousy through the computer?

Bedo, LMAO! Yes, it is pie or pastry dough. These particular hand pies are baked and quite a bit better than the fried ones I made a while ago.

    A Poem for My Father♥

I will never say goodbye to you my Father

because I know this is not the end for us to see each other.
You will only be going to a place where there’s no pain nor suffering.
I am happy for you, for you will be with God.
For now we need to go in separate ways.
I remember how your arms hold me and give me strength.
You were always there to listen, love, and defend me in everything.
You were my very best friend.
In my triumphs you were always proud.
I’m very grateful and proud to call you my dad.
Here deep inside my heart you’ll always be.
I would give up everything I have just to hug you one more time.
I remember the last time I held your hand and how you looked at me in the eyes.
If only I could turn back the time I would have never let you go.
I felt the world stop and my heart stop beating when they told me you were gone…….
How I wish I was only dreaming.
Just like the rain; tears fell down from my eyes, I couldn’t speak for awhile.
    Thank you Dad….
For always understanding, listening, caring, and loving me your whole life.
The greatest gift God gave me was YOU…….. my Dad…
It’s difficult to let you go but I must…
I must return the gift God gave me…
    Till then;
    See you in Heaven

Debbie, you are in my prayers.

Bedo, all four of my kids were vegitarian for a bit. In 7th grade a teacher offered at least a B grade to anyone who tried it for at least two weeks. LOL. My two sons lasted the two weeks. My girls for months. The funny thing is one of my sons did not like meat anyway, and the other wouldn't eat veggies.... LOL. I think he survived on mac and cheese....oh, and my DH is actually home with me til Sunday

Deb-That poem was beautiful, I could of wrote those words myself. Thank you so much.

Debbie  Hope that your Dad is now at peace...so hard for sure. Prayers for you and your family.

Bedo  I love your novellas also....you always make me laugh.  My mom was not the best cook either, everything was very simple and I dont ever remember her owning any spices.  She loved chicken but only did the shake-n-bake thing.(at least 3 times a week)  Now she cant eat chicken( for some reason it makes her sick)  she had her gallbladder out this week and my brother tells me she wrote on the forms under "allergies"  that she was allergic to chicken!  LOL  Karma?

Have not cooked anything this week that is worth noting. Last night was cheese and crackers with my wine out in the middle of the lake with lots of good friends....lots of laughs....as we are all having our challenges right now....not sure whats up....but when it rains it pours....thank goodness for our group therapy sessions on the weekends!

Supper tonight: green beans, cabbage, spuds, turnip, all from our garden.  Also we had stuffed green peppers.  (Peppers from a friend's garden.)  I adore this time of year to cook because of the garden.  Now is when I think I could go vegan or at least, vegetarian.  Cheers.

Lots of cooking here in the past two days. Last night I did a Chinese meal. Started with some dumplings, then moved to spicy garlic eggplant and spicy pork with broccoli with some jasmine rice. That became today's lunch since there was SO very much.

Tonight's dinner was started early this afternoon. With a mandoline I made thin slices of eggplant, onions and zucchini, rubbed with garlic infused olive oil and roasted them. Also roasted a head of garlic. As a tray of zucchini came out of the oven, I put in 5 tomatoes and another onion in quarters. Also made a goat cheese, basil, spinach, and thyme puree. And then I began to assemble the terrine. A layer of zucchini, roasted red peppers [from a jar], eggplant, onions, then the cheese mixture, and then repeat. It then went back to the fridge with a brick on top. The tomatoes and onions weren't browning, so I turned on the broiler. That did the trick. Onions, tomatoes, basil, and the whole head of roasted garlic went into the food processor for a few pulses. To serve, I put about 1/4 cup of the sauce on a plate, two slices of the terrine, and then topped with a touch parmesan. Wow was that good. Rest of the meal was a green salad, steamed corn, fresh sliced tomatoes with fresh mozarella, and a grilled lamb chop. What will we do when the vegetables go away?

OMG, Susan!! That was a veritable feast!!! Who knew you would even need lamb chops given that delightful sounding terrine. Can you be my personal cooking instructor?! :)

On a far lower scale, tonight we had teriyaki marinated turkey breast cutlets (from a local Mass farm, which we previously loved and then had a hard time finding in the grocery store again!). Well, I found them this week and froze them to bring to the lake, and my tamoxifen brain left the frozen mass on the kitchen counter Thursday night as we unpacked, then retired. I noticed the package in the fridge in the AM and later learned that DH disovered it on the counter (yikes!) as he headed out to golf, putting it (thankfully!) in the fridge.

Okay, that was yesterday ( he assured me the poultry on the counter was still cold....as was the house!). So today I bit the bullet, ( after doing the sniff test) marinated them and we grilled them up with assorted veggies (yes, a bountiful time of year, Marple!). I was nervous for my stomach. DH swam in the Hackensack River as a youth, so we think he can tolerate all sorts of bacteria. The turkey breasts were fine. Also made a cuke, red onion and grape tomato salad with cilantro.

Laurie, my big news is that we ate at Giuseppe's last evening before the show. That Italian restaurant has huge portions of tasty food, and with your pizza recommendation we ordered (with our friends) a small veggie (named the "gourmet primavera") pizza, which was delightful! Not a Brooklyn or North End of Boston pizza, but wonderful in its own right. Thanks! We will return there.....:)

Tonight was one of those experimental "use what I had" dinners.  Except for the dried spices, the amounts I used were what I had.

I cut up a pound of chicken into small cubes, rolled it around in whatever spices suited my fancy--a small amount of red pepper, a bit of paprika, some salt, garlic powder and dried basil.

I cooked that until it was nearly done, then I added 2 chopped bell peppers, 3 scallions and chipped mushrooms and cooked it another 3 or 4 minutes...  Then I added cream (probably 2 cups) and a half cup of shredded mozarella cheese and heated it until the cheese had melted.

This all went on a pile of pasta.

It wasn't bad.  I think I need to experiment with the spices a bit more...but it was a good start.

And, in another 10-15 minutes, the sourdough bread will be heading into the oven.

Debbie- Thinking of you and sending hugs.

The weekend was another wonderful weekend at the lake.  Lobsters, steamers, home made mac n cheese, chili chicken with avocado, cucumber salsa.  Everything was great and very relaxing.  We are all tired today.  Got back and dealt with laundry and the house etc.  Brought the kids bike riding.  It is time for everyone to clean up and eat something.  I think I will feed the boys whatever they want first.  DH and I might have some tortallini's and garlic bread after- or maybe saute some veggies from the garden and have a wrap.  We need to get back into a routine!  But it is so much fun just winging it sometimes!

    School starts in 2 weeks.....

Ha ha Laurie...wish it was full time.  That is why we are searching for a place in NC so that it can be full time.  Seems like we just get the boat in and get settled and its time to put it away.

We hooked up with fellow boaters this weekend, tied all our boats together and got the grill going and everyone just added whatever they had on their boats. We had sushi (from our vegetarian friend)  grilled shrimp, homemade salsas, grilled corn, roasted potatos and chicken....all out on the lake..passing foods from boat to boat.  My girlfriend brought a loaf of italian bread, thinking that was all she had in her house to contribute...but little did she know we buttered it and grilled it and it was delicous! Boat grills are so small we had to eat in courses and it seemed like we ate all day long....what a great day.

Susan that thingy you made with the veges sounds super delicous!

    Debbie,

I am very sorry about your Dad's passing but glad that you were able to be there. As I struggle with what to say I realise that words at this time are woefully inadequate! Just know that you are in my thoughts and prayers. You have truly been through more than a person should have to go through... Thinking of you and sending strength your way... Hugs my friend!

    Deborye,

That was a beautiful poem that you posted! I must admit it was so beautiful that it made me cry... Was it written by you? If so, you are very talented!

    Susan,

I saw on the Stage iV thread that your friend Frapp has passed away. I know how hard it is to lose a sister from these boards that we've come to 'know' from here. I can't imagine the pain that those on these boards that have formed relationships in real life feel. So sorry for your loss. You are in my thoughts and prayers!
