Did one of you tell me that you had success freezing grated zucchini or have I imagined that conversation?

Nancy- My Dad shreds zucchini with the food processor and freezes it. He then uses it in the winter or whenever to make zucchini bread.

We freeze grated zuke too.
Supper was pork chops in the skillet. Tiny potatos, onion and carrots after the chops came out. When veg was done. Put chops back in empty pan and glazed with a raspberry/ rhubarb jelly from farmers market. It was really good. Watermelon for desert. -
Yesterday I made 3 loaves of zucchini bread and a dozen zucchini orange muffins and still only used 2 largish zukes. I'm going to grate and freeze the rest that I have on hand today.
DSIL and DBIL are coming for a few days next week so I'm trying to make and freeze some things ahead. Today is English muffins. I have a bunch of doc appts in the city next week so I have to cook when I can. Two of my appts are my 6 month mamm and MO :-( To make it more stressful, my old MO quit and I'm seeing a new one. -
DH is taking me out for lunch today to celebrate our 47th anniversary. We're going to my favorite place for fish.

Was all set to make a broccoli/brown rice casserole for dinner last night. Then discovered I didn't have curry powder. No acceptable substitute came to mind so I grated some gouda cheese. The other ingredients beside the broccoli and rice are mayo and sour cream so the dish was a little bland but I still enjoyed it with breaded and panfried chicken filets and a salad of cherry tomatoes and cucumber with vinaigrette dressing. DH sprinkled Louisiana hot sauce on his casserole.
Not sure what is for dinner tonight. Lots of veggie choices in the refrigerator.

Dinner last night turned into a festival of carbs, but boy was it good. Dinner planning began around a box of blueberries. My husband wanted blueberry muffins. A trip to the farmer's market secured some tomatoes and corn, plus spring onions and a stop at the chicken store meant chicken. The tomatoes turned into a caprese salad. The spring onions were marinated with some zucchini. Chicken was dry-brined for the grill. Chicken went to the grill. Zucchini and onions were grilled with it for the last ten minutes. not too bad yet. Two carbs is about two more than usual, but this was turning into a lovely Southern dinner. But then the kids decided that they wanted a dessert of lemon curd cake with fresh fruit and whipped cream. Oh well.... we do what we can to create balanced meals.
Leftover chicken became chicken salad for lunch. Dinner will be a salad, steamed green beans, the leftover zucchini-squash tossed in olive oil-vinegar, a sliced tomato, and a cauliflower gratin. I mean, we MUST eat veggies while they are still growing nearby after all.

Everyone's dinner sounds so wonderful.
For dinner I had 6 slices of american cheese stacked on top of each other and Gatorade. I should never have bought that cheese. I need to go to Cheeseheads Anonymous. And then lime and stawberry popscicles.
I think for lunch I'll have watermelon sprinkled with salt. I think that's a New Enland thing. Salt goes on apples and watermelon.

Going to make MORE refriderator pickles, thank you Susan! My daughter kept sticking her fingers right in the last jar and said "I can't stop eating these!" I guess she should go to pickleheads anonymous. This time I'm making them with cute little mini cucumbers!

Still have goats on the brain but I can't take them to AK. I will get them when I retire. I've been researching them. Goats, no unwethered males with horns!
Skipped my mammo and my MO appt today. I didn't feel well. I'm getting mad and stressed that I got another bill for $2000 from 2011 from a collection agency that both the hospital and I have explained 1,000 times that I don't owe. . I must be insane. I will definately reschedule.

Dinner tonight is fresh eggplant from my Dad's garden which I am doing an eggplant parm as we have only been roasting lately- I am indulging
Wish I had garlic bread to go with it! I was debating on a last nimute camping trip for the upcoming weekend, but it is not meant to be as they are booked solid. A weekend home will be nice too.

Bedo: My grandpa from the Rocky Mountains put salt on watermellon and sugar on tomatoes. Go figure. Sorry to hear about the collection agency error. Be sure to send your complaint in writing every time to preserve your rights.

bedo - I am originally (and in my heart) west coast and I do the salt on watermelon and apples too!
All of the discussion about gardens reminds me that my DD and I discussed doing a small raised garden behind our house after seeing all the ones in Austria and Germany on our trip!
No dinner tonight, but I did participate in a survey on cancer care facilities locally for an hour this afternoon and made $100 - I have never made $100 an hour in my life!!!

Tonight was a new recipe from Food and Wine, Macaroni and Ground Beef Casserole. In addition to the elbow mac and beef, the ingredients included crushed tomatoes, onions, peppers chicken stock, heavy cream, sharp cheddar, scallions and cumin. The cumin made it nicely fragrant and very good. I'll definitely make it again.

Asparagus and Chicken for suppa, I love those ziplock steamer bags, 2 1/2 mins for for a full bag of Asparagus.
It's has been over 2 months since my DH passed, I think I'm beginning to adjust, no melt downs driving home from work and while I am at home. I tear up now and again but I keep myself busy. My job keeps my mind off things and at home I do a lot of yard work. I want to update the bathroom and the spare room, which was my DH's music room/recording studio. Thanks to my DD friends who own a music store and are in a band, took almost everything to put on ebay, craigs list and on consignment.
Aug 31st I will be flying to visit my DD & SIL for a week in Bermuda and for Christmas off to the UK, my DD & SIL are going to see his parents and DD does not want me to spend Christmas alone. I hate that long flight but she will be flying to the UK with me, my SIL's parents live a little over an hour north of London.
Sorry I haven't been here in a while, I play Candy Crush on FB, it's addicting, LOL.

Off topic. I have alot of time on my hands and am thinking of trying Ancestry.com. Has anyone tried it? My Gramma, Grampa and Mom grew up dirt poor in Kentucky with an outhouse and a house on stilts. A "chicken farm" Haha. about 8 chickens. Ie Grampa was a whittler and a moonshiner. Mom usually only had one dress but married well and we grew up in Westchester County. Gramma told us all kinds of things like "Chickens fly and sit in trees" "There is little red bugs down south called chiggers that make you itch" "We're part Cherokee" "Your great great something was the famous Dr. Ephraim McDowell who was the father of abdominal surgery" We used to look at each other and giggle and think..sure... Gramma, little red bugs,our family was famousbut we were very polite about it. Turned out I found out it was all true. Now I want to find out about that Cherokee business.
Does anyone think it works? I might have to bring you some Cherokee recipes!

Bedo, I did Ancestry on and off for a year and a half. It is fun and addictive! If you do it, you might want to start using the "forms" that can be found somewhere on the site to keep track of the sources of your information (e.g., census data vs. related family members info).

Happy anniversary, Chabba. The talk about lobster has definitely stirred up envy. Bedo, people who do the family tree research do seem to become addicted. Your pickles sound good.
I watched more cooking shows on a pbs station this morning. On Cook's Country one dish was French Silk pie, probably my favorite pie. They re-did an old Betty Crocker winning recipe from the 1950's. Also a lemon icebox pie.
Last night's throw-together veggie and pasta dish turned out good. 1/2 lb. store-made breakfast sausage, yellow squash, zucchini, onion and garlic powder, s&p all sauteed in a skillet with a little EVOO. Then cooked rotini and a little pasta water and grated romano pecarino. The veggies were tender but not over-cooked. Side salad of fresh greens and the rest of the cherry tomatoes and nicoise olives for me and sliced onion for dh.
Now there's leftover veggie and pasta and leftover brown rice and broccoli casserole in the refrigerator.
Deb, I'm so glad you're gradually adjusting to your loss and have those trips to look forward to.

Got my hair cut this morning and the salon is a ways from my house but right next to the Whole Foods - had a coupon for a free rotisserie chicken if you spent $50 - of course that was no problem! So, tonight is something involving a rotisserie chicken. I am thinking salad of some kind - 96 degrees and excessively humid!

School started today for DD.
Monday, Sharon was already at school and DD decided to make some lunch... I got a call asking about how to 'do' brown rice. I explained that and 45 minutes later she sent me a picture of what she had done.
Brown rice, chicken in the dutch oven, black beans, onions, corn, cheese and salsa.
Her goal was to duplicate the burrito filling as done at a local Mexican restaurant.
It turned out great and best of all, she made enough for all of us.

I am glad you have some trips planned. I know it must be very difficult for you. Hugs.Bedo- I say go for it for the ancestry chart. I have been tempted to do it as well so if you do try it let us know what you think. My Memere always told me stories when we were young about different people. She always "bragged" that she was part Indian and so she tanned great. I never thought of it much until my second son was born and I swear he looks part Native American! Using 50 proof SPF he is browner than brown. We call him Ten Bears in the summer!
So I think I am nuts. I booked a camping trip for this weekend. DH has to work so he will get us up to the campground tomorrow evening, help me set up and then leave me with the boys. (gulp) Friday for lunch time a friend of mine that we usually camp with will come and join us for the day/night and stay with us in our camper. They need to leave pretty early Saturday and I will again be on my own until Saturday night. My neighbor is talking of maybe going to the same campground so maybe I will luck out. I figured it is better than just sitting around the house feeling like I should clean or do yard work.
The other reason why I am nuts it is hot out and at the request of my children I am making meatloaf and mashed potatoes for dinner. I just shut the windows and cranked the a/c so maybe we can enjoy eating a hot dinner.
Michelle and Debbie I am thinking of both of you and hope every day is a little better than yesterday.

Tonight's dinner is Spaghetti and Meatballs. The weather here has been so gray and cold and very un-summer like! Not loving this in August at ALL!
For those of you that watch Downton Abbey ( I am almost done with Season 3), someone told me about this hilarious parody called Downton Sixbey. I just watched a couple of the 10 minute or so skits and they are super well done! Had me laughing out loud!

Laurie- I was thinking the same thing, meat loaf! And I don't have an AC but only suppose to be around 57 today thinking about doing a stove top stuffing with it. Enjoy your camping trip. How is your MIL?

Bedo- I often think about doing the ancestory.com I have some info on my family, I have a crazy general or something in the family way back, called mad, mad, mad Anthony wayne. I would like to know more so maybe will do it some time.
Carole- I also do the same thing, I copy/paste first because Ive lost my long emails plenty of times.
Seaside- I watched a little DTA at my dads last year and after only a couple episodes I was hooked, problem was it was towards the end, I will have to go rent the series at the video store so I can watch from the beginning. It is usually not my kind of show I would watch but loved it.
Minus- Chuck is doing much better thanks for asking. He can walk with out his cane some of the times so his PT is working and having the tumor removed helped a lot.
From what the Home nurse is saying is my dad probably only has a couple more weeks to a month, She said, don't hold me to it but this was her opinion. He is on high doses of morphine and other pain meds, she said without those his pain would be unbareable, he also has brain mets. She said the family should try gathering this week. Sometimes he seems to know us other times he is confused so needless to say I want to talk to him everyday. We now are making weekly trips there. Last week I just sat by his bed and held his hand that was very comforting to me.
