So...whats for dinner?

Checked out both farmers' markets in Park Rapids this morning and bought a loaf of home-made multigrain bread, assorted cookies and mini rhubarb pie from the same lady. Also bought a dozen fresh eggs, small bag of new potatoes, fresh yellow snap beans, and two beautiful cucumbers.
We're sharing a MN "heat wave" here in north MN but relief is on the way for the weekend.
Dinner tonight will be chicken legs out of the freezer. DH is hopeful that we'll eventually make space in the freezer for ice cream.
Welcome back, Special K! Your trip sounds wonderful. Returning to a broken a/c is not wonderful.
I made a crock pot apple concoction recently that was easy and good with pork chops. Peeled, cored, and sliced three apples. Put them in the crock pot with some golden and dark raisins, a little water, and some splenda brown sugar and let them cook a few hours on low until they were tender. My rv crock pot is small.
-
Carol- Your farmers market finds sound wonderful. Enjoy your dinner tonight- also love the apple pork in the crock pot idea. I need to come up with more summer crock pot recipes.
Tonight I am going to make roasted stuffed eggplant. I have a craving and went grocery shopping today. It is SO HOT out all this week. I have stayed in most of the day today, I was going to mow the lawn but it is too hot to be outside unless you are in the pool. Kids spent the day at my in laws and I got some work done and some cleaning. I am debating going for a dip in the pool before they get home or sitting in the a/c.

Hi ladies,
My mom (Michelle/LuvRVing) is happy to be home. She's eating much better then she was during her hospital stay. They've decided to up her Decadron to 12mg which, if you know my mother, is not making her happy. She is walking a little better and has a little more energy at times, but her blood pressure has remained oddly elevated and she seems to spike a small fever at least once throughout the day or night. She also has moments of confusion.
She is in really good hands. My step-father is taking excellent care of her, and her sister has been visiting and helping out as well. Unfortunately I'm home with the kids, as my husband is in California this week and I have a cold. Please keep her in your thoughts and send her strength. It's been a tough week and we could all use a turn for the better.
-
Michelle, glad you are home. Get stronger dear lady, we are praying for you. Much love.
-
Love you Michelle! Sending you big kisses! XXXXX
-
Praying for you Michelle- so glad you are being well taken care of. (((((hugs))))))
-
Sending you strength Michelle and my absolutely best wishes! Please get better soon!
Went to an international market today in the city. What fun! I needed to replace some of my Asian staples and ended up doing that and more. I found baby bok choy, Chinese broccoli, fresh Thai bird chilis, German sausages, sliced and cooked gyro meat, fresh feta, red and green lentils and more stuff I can't remember. Oh what fun I'm gonna have! -
Michelle, I am so glad that you have someone like Rick caring for you during this time.Sending you caring thoughts and hopes for your energy to rebound, and blood pressure issue to remit. I am heading to the lake late tomorrow or Friday AM, and am happy to drop off a summer meal on the way (maybe not home cooked since my kitchen is about 85 degrees right now, but have some good local take away options.
Please let me know....or even a grocery shopping trip is something I can do for you guys.
Today I beat the heat by spending time at the orthopod's office having my shoulder eval'd, then did a bit of retail therapy at TJMAXX which I seem to be unable to avoid turning into after my doc appts. I never used to be a shopper. Then I bit the bullet and went to the opticians and bought new glasses which I have been avoiding for about two years. I do hate all the fru fru in gold that most glasses come with on their corners now, but found two pair (the best deal) that I could live with for another bunch of years.
Tonight I marinated some very delicious tender turkey breast cutlets that DH grilled (I am so appreciative that he is willing to stand in our hot (!) west facing backyard to grill on these hot evenings). I bought the meat at our local grocery store which was grown at a local farm....grass fed and nurtured nicely by the way it cut and tasted! Today I stopped by a local farm on the way home from my other shopping adventures and got green leaf lettuce, summer squash, and corn (obviously not home grown yet here!) and they all contributed to a very lovely dinner. I will be getting that turkey breast again soon! Yum!! -
Thank you for the update on Michelle Lovingmymom! So happy she is home.
Michelle, my heart and my Prayers remain with you.
-
Another update!!! Thank you so much lovingMyMom.
Tonight, I let someone else cook for me. Wednesday Jumbo Fish night at the Courthouse. Fresh fish, right off the boat. TOnight they put FIVE pieces of fish on my plate. I ate one while Mr. 02143 managed four. What a deal for $7.00.
Kid brought home an unclaimed CSA box from her job. Six ears of corn, fresh mozzarella, tons of greens that I don't recognize, two tomatoes, and a head of lettuce. Oh and a tiny bulb of fennel. I was planning to go to the farm tomorrow, but looks like I can delay that for at least another day.

Michelle,
So glad you are home and back under the loving care of Rick and your family! The hospitals do the best they can but there really is no place like home! Rest well and do what is necessary to regain strength to get past this set back! Thinking of you and sending healing thoughts your way!
Lovinmymom,
Thanks again for the update! Your Mom is, as I'm sure you know, a very special lady... And, I get the feeling you are very much like her! Don't feel bad sbout being with your kids. I am certain that's exactly where your Mom would want you to be! -
Yikes, Susan...fresh fish, yummmmm, and quite the deal.
The surprise CSA package sounds greet, too. -
Michelle - so glad to hear you are back home. Rest up and get stronger. Much love and prayers.
-

So glad you are home in your own comfy house Michelle. Hope your family is serving you lots of bowls of ice cream, while you relax in your chair looking out on the lake.
Last night was a bowl of ice cream for me...the heat just makes me not want anything to eat. Hubby did a tuna sandwhich.
Lacey so envious of your tjmaxx run. it has been on my list for awhile, but way outta my way. I try not to make the trip unless I have other things to do in that area.
Just found out they found a tumor on my Dad's lung while viewing his stomach during a colonoscopy. Gets a biopsy next Tues. My poor mom just gets so discouraged with all of their health issues....just when we think they are all healthy, something else pops up. Mom having her own issues with not being able to eat, nausea, vomiting, and lost a lot of weight. My sis has been a gem in helping them with all of their appts. since I am now working full time.
Stay cool everyone! Drink your water.
-
Michelle - so glad that you are home - I am so hoping that these current issues can be resolved quickly. So glad that your loving family is there with you. Know I am thinking of you all!
-
Carrie, I'm so sorry about your parents health issues. Believe me, I know how hard that is, as do many of us here. Hope they can be resolved.
-
Carrie I am so sorry your parents are struggling. I hope the tests come back with some good news. It is so difficult to watch someone you love struggle.
We are dealing with our own issues in the health front. Dh's mother was just given 6-12 months to live by her Dr for stage IV uterine cancer. She is not talking about it and does not want to seek treatment so we are all pretending it is not happening. This weekend there is a big family reunion for his side of the family on the Cape. I am not going and Dh is bringing the boys- I will stay home alone. His family spoils my Dh rotten as the youngest of five kids and I honestly believe they enjoy having them to themselves. So I have decided to let them have him and the boys- me and my planning and OCD will stay home and relax. They are all spur of the moment people who sleep on floors and pile in together. I am not. Seems strange to stay home but it is for the best.
-
Just to clarify- we are pretending it is not happening because my MIL is and will not speak of it. If you try to discuss it with her she will leave the room if not the entire property. After being so open with my mother when she was told she had little time life I find this very difficult and I am so sad for my husband. Everyone is trying to make the best of things....
-
Aw Laurie, I'm so sorry. I hope she comes around so people can at least say their goodbyes. Sad on so many levels.
-
Michelle: Hope you are resting & eating. You are in our prayers.
Debbie6122: How is everything out there in the West? I often think of you and your DH and your Dad and send prayers your way too.
-
Wow, seems like everyone is having problems. Adding you all to my prayers. My DH parents were pretty good about preparing for the end. DFIL even cleaned out the basement. There was stuff to go through, but not the dumpster of stuff we had to go through for my dad!
-
Carrie, I am also sorry to learn of your parents' health struggles, and can certainly understand how your mother feels discouraged when confronted with one condition after another between them. Thank goodness your sister is there to help with the appts. Has your job gotten any less stressful? I hope you can get to TJMAXX soon for a little retail therapy.

Laurie, wow, that is a really tough situation with your MIL. I also feel badly for your DH...but maybe in time she will soften so that her family can support her in her last months. Families are so very interesting, eh?! Oy!
If you get enough compulsing in at home, and feel like a ride, we're at Newfound for the weekend. Would love to have you visit. If you are game, I can PM you where we are....
Speaking of compulsing, I was extremely happy to find our lake house exactly the way we left it two weeks ago. DS2 said that we'd never even notice that he had his ten friends and three toddlers visit here over last weekend, and he was right! I so appreciate their thoughtfulness.
Well, I'd better get some shut eye since a walk will only be possible tomorrow in the early morning...and it's nearly that now!
Caring thoughts to you, Michelle. -
Last night I made another Grace Young recipe in the wok, Chicken with Red Peppers and Pineapple. DH loves pineapple more than life itself. I was tempted to add a couple of the Thai chilis, but decided to fix it "straight" the first time. It was very very good, but the heat would have been good too. I was extremely pleased with how the new wok continues to perform. Everything cooks exactly the way it should and NO sticking! My patina is developing wonderfully and I can't help but admire it. Susan, I decided that would be an excellent epitaph, "Her Patina Would Make You Swoon."
I'm having two lady friends for lunch today and am fixing something fairly sensible, another Salad Nicoise (still have those potatoes and haricots verts) and sliced local peaches. I did make some sour cherry handpies for dessert, but only a few
Dinner tonight will be baby back ribs, corn on the cob and a yellow squash casserole.Tomorrow is my birthday and I'm planning a complete carb fest -- fried chicken, corn on the cob, biscuits, green beans and white and chocolate cupcakes for dessert. Monday we're going out to dinner to a tepanyaki (sp?) grill with another friend whose birthday is a couple of days after mine. Always a good time. If you don't hear from me for a few days it's because I'm in a carbohydrate coma. I have enough insulin to cover the carbs, but sadly, not the calories

I'm sorry so many of us are going through some difficult times. Here's a ((((((GROUP HUG)))))))!
-
Happy happy birthday, Nance. It sounds like you are planning a wonderful time (and marvelous food). Enjoy!
-
Made spaghetti last night and hot dogs the night b4. Just not into cooking much. But I have made "wet walnuts" for an ice cream social tomorrow after our Mexican food group goes out. Yummy spiced with bourbon and cinnamon. Hope it sets up to some thickness; think it will as it cools. For some reason my grocery was clearancing English walnuts;they are divine. Might have to go back to town to see if there are more. I think Texans don't know what they are. Pecans even here are outta sight. Blue Bell has a new ice cream - coconut fudge which is not chocolate based but vanilla with tons of coconut.
Happy Birthday Nancy. I had not heard of Teppanyaki but found it is Japanese griddle. With my DH's work schedule we just never go out except maybe every other month with the group.
My grocery usually gets local canteloupes since there is a huge farm oh about 12 miles up the road. I've bought roadside from them. But Noooo not yet. I wonder if our coolish, late freeze spring got them too like most of the peaches.
Susan - love your fish bargain. Yum.
Carrie - hope your dad's biopsy turns out to be nothing of consequence. Prayers from here.
Laurie - sorry to hear about your MIL. Hopefully she will let the family "in" when the time is right.
Thinking of Michelle and hoping to hear good news.
-
wet walnuts... with bourbon. Sounds wonderful. Could you provide the recipe, maybe? Thanks!!!
-
Last night was grilled burgers on English muffins [too hot to make rolls], steamed corn and a salad with lots of lettuce and bits of other vegetables. Today it is already 98 degrees with no cooling in sight. Dinner will be made on the grill.... grilled lamb chops, grilled corn, grilled zucchini with some French bread, blue cheese and a bottle of Cote du Rhone. Have no idea why husband picked up the last three items on his way home from meeting with his surgeon. Must mean he is happy about something.
If he hadn't bought those items, we might be headed someplace with air-conditioning for mediocre food. But we will prevail! and hope this weather breaks soon.

Gardengumby - this is the link to the ice cream cake with walnut topping. The walnut recipe is about 1/4 way down with the instructions further down. It was easy. I did toast the nuts for 10 minutes at 350 degrees. Recipe calls for whiskey but bourbon did well. I thought I had some spiced rum and was going to use that but DH must have used it up. Oh - I did add just a dash of ground cinnamon. Seems to be setting up nicely. I may try a cook-off and make a 2nd kind just for fun. This was pretty good only calling for light corn syrup & sugar for sweetening. I read many that had maple syrup which I have but am stingy with it. I let it cool just a little b4 adding the bourbon. These come in a jar in the ice cream aisle but I've never tried them.
Susan - I can't imagine enduring those temps without AC.
