    MinusTwo - Your dinner sounds pretty good and something like I would eat. Love Kozy Shack. I like their flan too. Slides down so easy.

    UMM - Mac 'n cheese. Nancy, I'll have to look for Big Martha's recipe.

    Finishing the last of the crockpot Thai pork stew. Will have to cook tomorrow and it's supposed to be 95. Got to 98 today. Don't know what we will have. Betting on more of frozen chicken breasts. I need to get disciplined and cook in the mornings.

    Yep, that's the one! It makes a huge amount so I either fix a half recipe or freeze half. Unless of course, I'm feeding others, then there's never anything left lol.



    Btw, trader joe's frozen mac and cheese is pretty darn good. And so is Costco's store made fresh. It also freezes well.

    I agree- will have to llok up the Martha Stuart recipe.  I have a few different versions of mac n cheese that I do.  I still always prefer cheese and rice!

    My back is a little better today.  I can do a little more, no more than 15 minutes at a time or so.  I worked this morning and ran some errands, picked up the house and had lunch than had to lay down.  But that is more than I could do yesterday so I will take it!  Taking advantage of the cool rainy temps and having home made chicken pot pie tonight.  I am hoping I am feeling strong enough to do the grocery shopping tomorrow.  The boys have been great with me struggling with my back issues and have been helpful and patient with everything.  So thankful to them.

    Martha's recipe is pretty standard mac and cheese except for the gruyere.  And maybe the amt. of cheese.  The recipe dh used from America's Test Kitchen is similar. 

    Laurie, cheese and rice sounds good.  So does your home-made chicken pot pie.  I have never made a chicken pot pie. 

    We're having leftover squash/pork sausage casserole and salad.  AND probably... a slice of carrot cake! 

    I have a beef roast I need to cook.  I looked up Laurie's and Michelle's hot oven recipe and plan to try it.  The roast is eye of round.  I also have packages of blanched broccoli in the freezer that I need to use up so I'll be making another broccoli/rice casserole.

    The best Mac n cheese I have ate was at Dave's Barbeque in Portland, Oregon we eat there almost every time we go to Porland which is all the time. It is made with Jalapeno's and I think it is creamed corn because the kernals are pretty small. But it is delicious!

    Here's what I made for dinner tonight, it was pretty good!

    Sweet and Sour Citrus Chicken

    ngredients:

    Sauce
    2/3 cup orange juice
    Juice and grated rind of 1 lime (about 2 tablespoons juice)
    2 tablespoons rice vinegar
    2 tablespoons brown sugar (I used Splenda brown sugar substitute)
    3 tablespoons soy sauce
    5 cloves garlic, minced
    2 teaspoons fresh ginger, minced or grated
    Stir-Fry
    1 pound boneless skinless chicken breasts, cut into 1″ chunks
    Salt and pepper to taste
    3 tablespoons corn starch
    1 1/2 cups broccoli florets (fresh or frozen; if frozen, pull them out when you begin cooking) (I steamed my veggies, then added to pan and sauted them a little bit more)
    1 1/2 cups green beans (fresh or frozen; pull these out of the freezer with the broccoli)
    1 red, orange, or yellow bell pepper, seeded and sliced
    1 small or medium red onion, halved and cut into 1/4″ slices
    Instructions:
    In a large skillet, whisk together the sauce ingredients. Bring to a boil over medium-high heat and cook for 5 minutes. Remove from heat and pour into a heat-safe bowl. Rinse out the skillet and wipe it dry.
    Season the chicken with salt and pepper, then sprinkle with corn starch and rub the corn starch into the chicken.
    Add about 1 tablespoon oil to the skillet and heat over medium-high heat. Swirl the pan to coat it. Add the seasoned chicken and stir-fry for 4-5 minutes or until the chicken is cooked through. Add the onions and other veggies and stir-fry until the beans and broccoli are tender-crisp. Add the sauce, a few tablespoons at a time, allowing the sauce to bubble up after each addition. Serve immediately over hot rice. (I used brown rice)

    As usual, pulling it together for children, and then I am eating toast.  I promise to do better tonight.  I will make a sauce, then eat later with rice pasta and veg tossed in.  XX

    Later DH and I will be heading to the Seaport area to meet DS2 (designated family celebration guy!;) at Rosa Mexicano for my birthday dinner. Then home to watch the Bruins face the Blackhawks, since I am suddenly a hockey fan. ;)



    Jalapeño in mac and cheese??? Now that peaks my interest! ;)



    Last night I attended a retirement party of a school friend. It was at a Chinese restaurant.

    I have not eaten such dishes in a very long time. Off to the treadmill!

    Lacey I love your stories about the wildlife. LOL. We have crows and squirrels and are constantly trying to keep them out of the garden. I have two little dogs I adopted from the shelter- one is blind so cant really help with the garden (but is great at comforting me after chemo and surgeries) but the other one is trained to the command "go get 'em" and gleefully erupts from the doggie door to chase away squirrels and birds.

    But I do not think he would take on a woodchuck! Never seen one of those thank goodness. Good luck with that fellow.



    Speaking of the garden, last night we had fresh tomatos and basil from it, with some mozarella slices and a drizzle of olive oil and balsamic vinegar- delish!

    Mmmmmmmm.  All this talk of mac and cheese makes me want some... very soon!

    Debbie so glad to see you posting recipes!  You make some really good stuff and your ideas were missed while you were gone!

    Well now... those cupcakes came out waaaayyyy smaller than I thought they would!  They're downright skimpy!   Maybe this will be better....lol!

    The eye of round beef roast is in the oven and is filling the kitchen with appetizing aromas.  This is my first time to try this recipe.  28 min. (4 lbs at 7 min per lb) at 475.  Then 2 1/2 hrs. in oven without opening oven door.  The side veggie will probably be green beans sauted in EVOO and spinkled with Italian cheese.

    Hope the birthday girls all have great birthdays!

    Shopping all day in 90 degrees (hello summer!) with the last stop scheduled to be Costco. Pulled into the parking lot and found about a dozen cars. My friend and I looked at each other and said "this is weird", when a guy getting into his car yelled to us that the power was out in the store. So, no rotisserie chicken for dinner. I think we will go to the local Mexican joint because I am too tired and too hot to cook. A frozen Margarita sounds mighty good to me!

    Carol- I hope your roast turns out perfect- I love it that way.  Perfect every time.

    We had a busy day running errands and getting stuff done this morning.  This afternoon the neighborhood kids ran wild riding bikes and playing soccer and street hockey.  Easy dinner tonight of cheese burgers.  I feel like we have had them too much.  But I took them out a couple nights ago and we had pizza instead with all of this back stuff so we need to eat them.  I am going to wait and hit the grocery store Friday and do a play date tomorrow instead.  The boys have been great while I have been laying low, they deserve it.

    Laurie, the roast did turn out perfect.  It's amazing.  That's easiest recipe possible.  The oven does all the work.  I do have a big chunk of leftover roast.

    Had to laugh on your 'well, that's weird' moment as we had one similar many years ago when we went on vacation to Myrtle Beach.



    The beaches there can be crowded and there are lots of attractions and water parks. We joked about why the heck would someone come here to vacation at the beach to go to a water park when you have the world's biggest natural one right outside your door?



    Sooooo... toward the end of our week we headed down to the beach just as we had everyday before and there were very few people... So we're thinking wow, this is weird, why is it so empty? Turns out there was a shark sighting! They had helicopters with search lights going up and down the beach for an hour or so and then gave the all clear!



    Needless to say we spent that day on the beach but not in the water. And the following day (our last day there) at the water park...lol!

    Thanks for all the birthday wishes, ladies!

    At Rosa Mexicano, we had their great guacamole, a caesar salad, and marinated shrimp on brown rice. I had this same dish last August and the surrounding red sauce was more of a fresh tomato sauce as I recall, which I preferred to what I had tonight. We were too full for dessert, but the waitress brought me a scoop of ice cream with a candle in it. Perfect!



    Seaside, that is exactly the size cupcake I should allow past my lips! And the size of champagne! ;). And no fears here...we will be looking for the fins at the Nat'l Seashore beach this summer, where they just spotted a great white. Always exciting....when we see the seals we know the sharks are not far. No body surfing on those days.....;)



    I am actually still up waiting for the Bruins to deliver my post birthday win. Konking out....how must they feel??!! This is painful!



    Carole,I must try that beef roast method. I'd forgotten about L and M sharing it some time ago....so now I will write it down.

    Chemo went well but I have to go back on Friday for a transfusion.  That is actually a good thing because I should have extra energy for the duration of the trip.  We are leaving Monday morning.

    Michelle, glad the treatment went well.  Forgive my faulty memory.  Where are you going on this trip?

    Dinner will be leftover roast beef in some guise and a repeat of the brown rice/broccoli casserole I cooked a couple of weeks ago.  Haven't decided what kind of cheese to grate for the dish.  Maybe gruyere or maybe pecorino.  Also have a chunk of smoked gouda.  Cannot resist the big chunks of cheese at Sam's.

    Salad will be sliced tomatoes and fresh basil.

    Carole - we are driving to Kansas City to visit our friends.  Not looking forward to that drive but DH loes road trips so he wins...lol

    I have the transfusion tomorrow morning which should give me an energy boost.  Tonight's dinner is Popeye's Chicken with mashed potatoes and cole slaw.

    Interesting that my blood sugar seems to be OK with this less than healthy diet.  Fasting reading was 106 and it was 96 when they did my labs before chemo.  I managed to not lose any weight nor gain any.  Crazy!

    Michelle- Have fun on your road trip and it seems you have great reults all around.  Enjoy the energy boost from the transfusion.

    Carol- I always buy a large roast when I cook it that way so we can make pepper steaks subs as left overs.  I love it just as much as the roast dinner.

    DH is working late tonight with bike week and beer sales.  I am pooped from a very long play date today so we are ordering pizza....again.  I have agreed to let the boys have a sleep over in DS1 room and they are very excited.

    Bobo- brought your kid to work?  Yikes is right!  Hope all went well!
