Instead of enchiladas we are having tacos, build your own. Chicken, thick-sliced onion and green pepper in one skillet. Black beans and rotelle tomatoes. Guacomole. Sour Cream. Salsa.
It was HOT today out on the golf course. I got soaking wet with my own perspiration.

Carole, what an intense and sad appointment.Poor woman...probably never thought at an advanced age that she would have to worry about recurrence.
I had forgotten about the blood pressure and cholesterol issues with AIs. I am so leaning towards sticking with the devil that I know....since sleep is the major issue with tamox and me, maybe I'll try the melatonin again. But then there is the cognitive stuff (lost thoughts in middle of sentences...poor memory!), and increased allergies, tho I bet that will happen with any of these estrogen antagonists. Maybe I can live with feeling like a puffy eyed ditz for three and a half more years...I am obviously not a risk taker.....
maybe time to make a pro and con list. Sorry to obsess so much about this...and I appreciate your input, ladies.
Laurie I hope you can get relief from that back problem. I'm amazed at all you pulled off today give your level of pain. Wonder woman!
Today I passed up my morning smoothie and met a friend for early lunch at a local restaurant. I went for my old favorite, a BLT, and it was good.
Tonight we had marinated grilled shrimp ( made a marinade with olive oil, tomato paste, red wine vinegar, cayenne, minced garlic and a little hot sauce) and grilled veggies with another packed full salad and a very small portion of cappellini with oil and garlic. The shrimp was delicious! But then we like spicy.
The Bruins are keeping us at the edge of our seats tonight! I cannot believe I am turning into a hockey fan! -

Tomorrow morning, the air conditioner estimator guy will be over to see what it will cost to install a new unit on the roof of mom's house.

I make popcorn in a brown paper bag. After it's popped I sprinkle it with extra virgin olive oil and then add either Himalayan salt or gray Celtic sea salt.
FWIW - extra virgin olive oil may inhibit Her2 breast cancer cellular activity

LeeA if that is true than I am more than covered. Extra virgin oil is my staple, I dont really mess with different oils unless I am baking (which I dont do too much anymore) Do the different salts taste different?
Oh Laurie...you must have done too much somewheres along the line. Rest, ice and ibuprofen (if you can take it) Or...a glass or two of wine works well too!

MinusTwo - yes, they are plumerias - one of my all time favorite flowers!! Wish I lived where I could grow them.
Regarding the popcorn in a brown paper bag. I used to do that, but was told (by someone - cannot remember who - so maybe it's just crazy) that the regular brown bags should not be used because of the chemicals in the making of them. So I stopped. I think I'll research the Internet and see if I can find anything.....

Well....Super Woman has left the building. I stayed up until the end of the first OT for the Bruins last night. I think the wine dulled the pain. Woke up this morning much much worse. I was in so much pain I cancelled our play date and had my in laws come get the boys. It was awful, made me sick to my stomach and had the shakes from the adrenalin. Took some meds and slept for over 4 hours. I have spent most of the day in bed. I am better than this morning but still not good. Dumb. DH has to work late so I am on my own. Cheeseburgers are about all I am going to manage for tonight. Thank goodness I have some pre pattied ones that I froze.

Dinner tonight is Hunter's Stew. This is an old recipe of my mom's - don't know why it is for hunters but whatever! The weather is crazy here - tropical storm and some tornado warnings. The meat is a pot roast cut (shoulder), cut in large chucks and seared with a lot of onion and garlic added after the meat has seared. Add tomatoes, tomato paste, parsley, rosemary, a lot of chili powder, a tablespoon of flour and some salt. Cook for a couple of hours (I am using the crockpot, but you can do it in the oven or stovetop too) and then add big pieces of carrot. Cook some short type of pasta, today is gluten-free corkscrew type, but you can use macaroni, penne, ziti or rotini. When the meat is tender and the carrots are cooked through, stir in the cooked pasta. Top with coarsely grated or shaved Parmesan. It is yummy and I am also doing a green salad and some crusty bread.

OMG. With SpecialK on this thread, it's like I will get a Ph.D. in cooking. How is the storm treating you, SK? I have been soaked head to toe all day, in meetings.
DLLP is making dinner -- I am teaching. I think it is going to be homemade fried rice. And I will have coconut ice cream for dessert. Laurie, superwoman -- thinking of you! It's terrible not to feel well (in any way) when you have charge of little ones.

Lacey -- I have been told that my rare kind of BC does not respond to chemo. I am not sure I will ever be offered tamox. Sure wish I could cut my risk of recurrence. Even though I drink green smoothie for breakfast, do yoga, etc., I have been... yearning?... for something to cut risk ever since this year's surgery. Third time in the same breast. Just waiting for the other shoe to drop.
That being said, now there is talk of women doing tamox for ten years! How will they do it? I've been thinking a lot about all of this lately. XXX

Dinner tonight will be warmed-up stuffed peppers and fresh green beans, little purple ones that turn green when cooked. I plan to steam them with a little chicken broth until they're tender crisp and the chicken broth is evaporated. Just before serving I'll add a little olive oil and saute, then sprinkle on grated asiago cheese. My favorite green bean recipe. I also have cucumbers and yellow cherry tomatoes. And...avocado! For a salad.
Yesterday I picked up a friend's CSA veggies. She is out of town and asked if I would like to use the veggies. I said yes. The veggies inclluded the purple green beans, yellow cherry tomatoes and small cukes. Also some nice-sized green tomatoes. I've been looking up recipes that don't involve frying the tomatoes. Would welcome any recipes from our group.

For a month after my surgery our neighbors all signed up on MealTrain.com and we had dinner delivered 4-5 nights a week. It was soooo nice. On the evenings that it wasn't delivered we had plenty of left overs.
Now for chem my husbands coworkers all pooled a ton of $ and one of the gals who works for him calls a restaurant of our choice, places an order of what we would like for either delivery or pick-up.
We are so very fortunate.
My Mom and I made a couple chicken dinners this week and felt out of sorts in the kitchen.
An easy one for the crockpot is salsa chicken:
4-5 chicken breasts in the bottom of pot; cover with 1 cup of salsa; 1 Tbl spoon taco seasoning; 1 can of cream of whatever you like soup (we did mushroom), undiluted; cook on low 6 hours; shred the chicken; stir in 1/2-1 cup sour cream; we added some black beans (rinsed and drained) too. We served it over rice and had some green onions as garnish and shredded cheese. Yummo.

My burgers and fries are almost done- besides a banana it will be the only thing I have eaten today. I have had 2 glasses of wine and surprise my back is feeling better. Maybe I should just stay drunk? lol- kidding!
mcgis- Welcome! You are very lucky to have such great friends! I also was firtunate and a meal calander was started for me- we had dinners brought to us for 32 days in a row! The original calendar was for 2 weeks but people kept signing up for days. I felt so loved. Also, thanks for the recipe! We are a great group of people here! Welcome to the group of us.

carole - I just did a quick google search for oven fried green tomatoes - got a bunch - kind of like oven fried chicken. Here is a link. The bread is great with the stew because it is very tomato-ey so you can get the dregs with your bread!
bobo - not too bad on the storm - a LOT of rain and some windy periods. During Tropical Storm Debby we had a tornado in our neighborhood - took out a bunch of trees (we are on the preserve) and a bunch of the neighbors lost their pool cages (its a Florida thing for those not familiar) in their entirety! A few had to have their roofs replaced. That is the part of these storms that always scares me, epecially in light of the recent events in OK. My DH's normal route home is closed due to flooding so who knows when he will make it home. I did the stew in the crockpot but was a little worried about losing power. I have a gas stove so I figured I could finish it stovetop if needed.
mcgis - you are very fortunate to have such nice neighbors and DH co-workers! That is so great and your chicken dish sounds delish!

The request for green tomato recipes reminded me of the pies Mom used to make from them. I googled and found a whole page full of 4 and 5 star rated recipes including ones from Paula Dean, "Betty Crocker" and Martha Stewart. Mom called hers a mock apple pie and we preferred the tomato version.

Lots of good sounding stuff on here tonight. I got a huge bag of produce from my truck farmer friend - lots of lettuces, spinach broccoli and radishes, which is about all we have here yet. So tonight is chicken sausage with garlic and peppers, some Dreamfields pasta and sauteed spinach with garlic and olive oil. Did I say I love garlic? Good thing it's just the two of us here tonight! -

Every surface in the kitchen has been vacuumed and washed. The inside of the cubboards are now spotless. All traces of "stickiness" is now gone. All the items in the cupboards have been put back in a logical place. Limited cooking utensils compared to my home, but she was a simple, county cook at heart. Cast iron isn't all that special, but there is a heavy metal, square pan that is brilliant! Found a 1951 Sunmaster Mixmaster, with all attachments, that works. It might have to come home with me though I never make cakes.
We are just about done with what we are being allowed to do, so will probably head home sooner than planned. Us Yankees just move at a different pace than folks here. No one can believe that it only took 2 days to check everything off the list.

No plane involved. We have a one-way car rental! Lots of portraits that need to make the trip north, and the sewing machine. Starting to think a little vacation in Ashville on the way home would be a nice, if expensive, distraction. That is where we honeymooned years ago and we could just not figure out a way to afford to make it our permanent home.

Susan - Hope you rented a Crown Victoria or something with an enormous trunk. We did much the same when my father passed. He had many things he esp. wanted my husband to have as they shared the same hobby. So we rented a Crown Vic and the trunk was loaded. We went to St. Louis to his house and then on to Paducah to SIL so we needed something to conceal everything. Safe travels back.
Laurie - Hope your back is on the improving side. Pain that bad, I feel for you so much. Thank goodness for in-laws close by.
Dinner tonight is pork roast in the crockpot - dubbed Thai style, more like Asian with teriyaki. Need to find more stuff in crockpot or just give up eating dinner. Supposed to be 100 this weekend. Seems way too early. I used to be disciplined and cooked earlier in the day. Last night we had "Kara-Age" chicken. It's a Kikkoman coating and I fried chicken strips. Know why I don't fry stuff since I had to degrease the stove. They were quite good. I do have to roast more peppers bought on clearance b4 it gets too hot.
