    Seaside - just put corn kernels in the bottom of a paper lunch sack & fold over twice.  No fastener needed & you're right - no oil.  Of course if you put in too much you'll have pop-snow.  My microwave has a 'popcorn' button, but in my old one I used to do approx 3 min on high.  Stop the micro when the popping stops.  Dress w/melted butter - or carmel - or not if you want to be really healthy.

    I use the brown paper bag trick also and it comes out great every time...no chemicals like the store bought microwave stuff.

    Used the cooler temps here to have some shells and sauce, very quick after working till 9 and knew husband would eat anything that has sauce on it.

    Laurie  margueritas by the pool?...mmmmm my kind of relaxing, even more fun watching all the kids swimming and having a good time.

    Not a big cookie fan unless they are soft and gooey, but got some pepperidge farm ones that have chocolate centers, for a friend that likes to have chocolate after his meals, and now I find I am kinda hooked on them (but not enough that they speak to me from the cupboard) My potato chips do that.

    Deb, my sincere condolences.  I cannot (do not want to) imagine losing my life partner. 

    Dinner last night was grilled lamb chops marinated in some olive oil and chopped fresh rosemary and black pepper.  They were delicious.   Sides were dh's requested carrot salad--grated carrot, fresh pineapple, golden raisins, mayo, s & p.  Also steamed yellow squash, grown locally and sold at Walmart.  

    We always mix up a tartar sauce.  Never buy the jarred.  It's easy and tastes good.  For those those like raw onion, some grated onion can be included with the good mayo, horseradish, dill pickle relish, lemon juice and a pinch of cayenne.  I leave out the onion even though dh would love it. 

    Mayo is one of my "most favorite" foods.  I can lick it off my finger.  My favorite is Hellman's Light.  Of course the very best is home-made but calories and refrigerator life are a problem.  All it takes is a mention of aioli to get my attention when I'm scanning a lunch menu!

    Tonight's dinner will probably be stuffed peppers.  I have red, yellow, orange and green in the refrigerator.

    Today's dr. apptments are in the vicinity of Fresh Market, which has chicken breasts and store-ground chuck on sale on Tuesdays.  So I will probably make a stop there.  After I check out Talbots.  Yesterday I checked out Steinmart's with some success.  If "success" equates pulling out the credit card!

    The only problem with popping corn with no oil is that the salt won't stay on. Guess that's where the butter comes in ;-)

    Taco Tuesday -- fish tacos tonight with an avocado salad.  I also splurged on a watermelon yesterday so that will be dessert.

    Nancy- My husband would kill for me to make fish tacos.  One night I will have to bite the bullit and make them.

    Tonight is steak on the grill, corn on the cob and baked potatoes.  Michelle will I ever eat a baked potato again with out thinking of you?  I just finished mowing the front yard.  It is beautiful out this afternoon.  Low 70's no humidity and a nice breeze.  DS 1 has a cold and so do I.  We all stayed up too late last night watching the Bruins game- but it was worth it.

    Nancy, I pop corn in microwave in the brown paper bag now. I have a refillable mister where I put in olive oil, pump it, and it comes out in a spray. While pop corn is hot, I spray with olive oil mist and salt sticks pretty well. Started doing it this way when I heard regular microwave pop corn isn't so great and that olive oil is great nutritionally. I think a Pam spray might work too.

    Nancy, your fish tacos sound good to me.  So does your steak on the grill, Laurie. 

    We're having rainbow stuffed peppers and a fresh veggie salad.  The stuffing tasted good.  I know because I sampled it several times!  Ground pork, onion, garlic, diced canned tomatoes, black beans, brown rice, fresh herbs, grated Chichuaha cheese.

    My medical apptments went well.  The ultrasound of underarms and chest was good.  I discussed not taking arimidex the 5th year and, not surprisingly, was advised to bite the bullet another year.  Especially since I tolerate the drug better than a lot of women do.  I went and had bloodwork this afternoon for tumor markers. 

    Tomorrow is golf!

    Did a sweet and sour sauce with smoked chicken sausage, peppers and onions, and pineapple over ramen noodles.  I am liking all this advice on how to pop corn in the microwave in the brown paper bag!  I make fish tacos a couple of times a month - DH likes them and they are fast.  I never know when he is coming home from work, and half the time he goes to the gym after that, it makes dinner planning a challenge, so fish tacos are a go-to fave! 

    carole - yay on the good med appts! And yay for golf!

    Minus (and everyone)... Thanks for the info on the brown bag microwave popcorn! I have 'real' popcorn on my grocery list! Can't wait to try it! I learn something new here all the time!

    Tortilla crusted chili lime tilapia fish tacos



    Preheat oven to 375ºF.



    1 whole Jalapeno, Seeded And Deveined

    ¾ cups Cilantro

    ½ teaspoons Chili Powder

    ¼ teaspoons Cumin

    1 teaspoon Seasoning Salt

    18 whole Tortilla Chips

    1 whole Large Egg, Beaten

    2 whole Tilapia Fillets, cut into strips



    In a food processor mix the jalapeno, cilantro, chili powder, cumin and salt. Add the tortilla chips and mix until it comes out to be small chunks. Remove the mixture and place on a plate.



    Add the egg and lime juice to a small dish and dredge each tilapia strip into the egg wash and coat each side. Place the tilapia in the chip mixture and pat the crumbs to the mixture to adhere to each side.



    Spray a foil lined baking sheet with non stick spray. Place tilapia strips onto baking sheet and cook 10-12 minutes or until fish is flaky turning over after 5 minutes.



    This can be fairly spicy so adjust the jalapeno to your taste.



    Serve with tortillas, extra lime and spicy slaw.

    Good meals a plenty on this thread!



    Last night I made a chicken pasta broccoli rabe dish that was interesting and tasty. However, I will definitely skip the thighs and use cut up breasts next time since the thighs had a lot of "liposuction" to be done before cooking them.



    Tonight we had lamejun (I buy them at a local Middle Eastern market), baba ganoush, and a huge salad, which included some jarred hot cherry peppers (Trader's item) that added some real zip to it.

    I tried to pick up plain popcorn at Trader's today, but they needed to restock. :(

    Everyone must be trying the paper bag trick! :)



    Carole, glad your appts went well. Isn't the duration factor of these hormonal therapies interesting? But your having just one more year sounds great to me, especially if you are relatively SE free.



    I see my MO on Friday and I know she is going to bring up my trying an AI to see if I can get rid of the ongoing sleep issues, cognitive effects, and intensely increased allergies I have from Tamoxifen. I had an appt with my surgeon today and she suggested that my reactions to the drug may well indicate that I am metabolizing it effectively...a nice thought, but jeeze! I am frankly a bit fearful of trying anything new, especially since I have sort of made peace with the SE's that are now a part of me, and that no longer include extremely painful hands since I started working with my trainer (apparently the increased blood flow has really helped all of my joints) And my hair is no longer falling out. So, am basically afraid to upset this fragile little apple cart! I'm also doing well with my weight loss, so I hate to disrupt that. Do AI's tend to make weight loss more difficult? Oh dear...what to do....what to do...



    By the way, Carole, those grilled lamb chops sounded amazing!

    The temporary repair that I made to my mom's air conditioner....that I had hoped would make it a week until a new unit could be installed....didn't last...



    The parts cost to fix the old unit would be about 3/4 the cost of a new unit and the parts would take awhile to get.



    She's over at my house until a new unit can be installed.

    Weather was cooler today so I got inspired to make meatloaf, mashed for DH and roasted fingerling potatoes and zucchini Parmesan crisps recipe courtesy of Pinterest) for me. Also made baked fried chicken tenders and chicken in a store-bought cooking sauce for future meals.

    Eric - our rental house (2700 sq ft and 2 stories) had both a/c compressors die within 24 hours of each other.  Nothing $6000 didn't fix  Cry  That was about the last thing that hadn't been done - the original compressors were 19 years old.  Good thing are tenants are staying another 3 years!

    Yesterday was a good food day for me, hope it continues.  It seems my tummy likes corn on the cob, and I was able to eat half a bagel and a banana for breakfast.  Dinner last night was a tiny sirloin at Texas Roadhouse, another consistently reliable food, along with a baked sweet potato.   I have chemo at 8:30 so I've eaten a light breakfast.  I hope my blood levels have recovered so I don't need a transfusion.  I think it's time for tumor markers, too.  Sure would be nice if they continue the downward trend.

    Lacey, weight control is definitely a challenge when taking arimidex.  Other health issues for me (and others) are cholesterol and bp.  The only reason for the 5 yr. period is that the studies done were 5 yr. studies.  My oncotype score was great--9.  With no hormone treatment my recurrence rate is 7 per cent.  With 5 yrs of AI drug it's half that number. 

    When the NP came into the exam room yesterday she apologized for keeping me waiting.  She was visibly upset and explained that she'd taken extra time with the previous patient.  Previously she'd been dx'ed with an aggressive bc and opted for lumpectomy and rads against the urging of Dr. Lagarde to have mx.  Now she was back with recurrence in same breast and stage 4.  I'm pretty sure the patient was an older lady I saw in the waiting room who was accompanied by two men.

    I felt good about my radical decision to have bmx for a small tumor.  It was also not a good environment in the exam room for suggesting I stop taking arimidex a year early!

    Tonight's dinner will probably include guacamole (sp?).  I already had a couple of avocados just getting ready to eat and dh came home with a net bag of them from Sam's.  He doesn't know about buying them hard and they're all ready to eat now.  I'm thinking I will make chicken enchiladas tonight.  It's an easy quick prep and a new dish for me that I learned on this thread!

    Nance  Thank you,  I think I have almost everything needed to do those (except the jalapeno) I think even DH will enjoy with that coating on.

    Lacey  It took my sister three tries with different AI to get one she could tolerate. They all gave her intense headaches that put her right down in bed and she was intent on giving up and taking her chances without any med, but the doctors were insistent and found one that doesnt give her the headaches, but the joint pain is there. I agree that we just have to adjust and tolerate some of these less extreme side side effects, and its scary to think of what a new drug may bring on.

    Michelle  sounds like you are getting some good foods in there. praying for good marker levels!

    Eric with those temps I am seeing on the map, its good that you have your mom with you. I am taking care of my friends mom this weekend that is 99. She has not had a vacation in years due to taking care of her mom, and is doing a weekend getaway with her daughter to a theme park.  She lives just down the road and is pretty independent, just needs me to check to see that she remembers to eat and take her pills.

    I lost weight when I started letrozole. I've gained some back, but that's not the drug's fault :) Right now I think I'll be glad when my 5 years is up but I don't know how I'll feel when it actually gets here. No security blanket. It's especially worrisome for me because I took evista for 15 years after menopause and got cancer anyway. Different drugs, I know, but still.



    Lacey, lol on the lipo! 2nd, I bought some zucchini just to try that recipe. How did it turn out? Carole, avocado fest! Wahoo!



    Don't know what dinner tonight is but I'm pretty sure it will involve corn on the cob. The watermelon I bought was a waste of money. It was the most beautiful red ripe looking color when I cut it open and had absolutely no taste. How do they do that??

    Miss Nancy, queen of the kitchen, the zucchini came out great! Definitely a keeper recipe. I love zucchini, cheese and crunch, great combo! Very quick and uncomplicated putting it together. I wouldn't suggest it for a hot day, only if you have the oven going already. Can't remember if the recipe states, but I always foil-line pans, use a bit of cooking spray so little if no clean-up. 

    Looking forward to today's baked fried chicken. Sampled it last night, yum. Add some veggies and a salad - easy. Thinking of enchiladas later this week, thanks for the idea!

    Hi everyone.  Carol- That is so sad for that poor lady.

    I have a pinched nerve in my back and have been miserable since last night.  I sucked it up and brought the kids to the park for the morning and met friends.  By the time we got home after lunch time I was sick to my stomach from the pain.  My dear SIL came and got them for two hours so I could ice my back and lay down.  It is a little better now but still from from good. i go Friday afternoon for a massage to try to fix the issue. I have managed to get most of my chores done despite it.  Dinner is balsamic chicken and salad.  Super easy and DH can do it for the most part.  The Bruins are on tonight and I want to watch the game!  So I am having a glass of wine and trying that instead of a muscle relaxer.  If I make it till 10 I will be happy.

    I've been working in the yard, something I just didn't have the ambition to do.  Rototilled my garden, planted tomatoes and basil.  Bought and planted some flowers, cleaned his dresser draws and will start organizing mine. I have room nowCry  One day at a time.

    I am at the anger stage of greif I think, asking and yelling at him, why didn't he let us help him.  I attended my 2nd Al-anon meeting, DD and I had some crying for us.
