    Dinner tonite is slow cooker beans with ham, corn bread and salad. Too hot to cook, temps feel over 90 degrees (but still went walking with DD around 10 this morning in the heat), still hot dry winds. Nothing on TV today but reports about fires in Los Angeles. And they're talking about rain in a couple days, hope it does hurry and rain to help put out the fires.

    Michelle, just such good, good news! Big grin at ya for ya :)



    Rather cool but beautiful day here today... quite a contrast to the weather farther west....took a nice long walk after DH and I had lunch at a Greek restaurant (a delicious greek salad with pita), and on my walk had a serendipity!

    I headed up town grumbling about having to pick up my new statin prescription, which my PCP said I at least have to try.....and as I passed this cute business which teaches kids to sew, I decided to stop to ask if they still only teach kids. Well, they now do teach adults...only individually project based, but at least I can hopefully renew my old, and learn some new skills. Yippee!



    Decided to avoid the food store and instead made a soup for dinner with ingredients on hand. I made up a "powerhouse soup" including kale, parsnips, carrots and my new favorite crunchy soup addition, barley. It was really yum! Oh, and there were bits of bacon in the soup, too. DH also made himself a chicken sandwich (jumped right up!;) with leftover thighs. I had brie in the fridge so had some cheese and crackers with my soup.



    Tonight at bedtime I will start my statin...per the pharms advice. Please ....no SEs! Is that common to take it at night? I have yet to read the insert.

    Nance,

    One not related to breast cancer.  May require me to take time off for an unrelated illness and to be on disability for a bit because of sides and on meds for a few to several months. Not really wanting to discuss here, because it is not BC, just so you know if I am gone for a bit, or weird(er) than usual, ha. Not to worry. BFF and DD are nurses. We'll see how it goes, thanks for asking.

    Bedo... Hoping recovery is easy and pain-free. Barley is my new grain too.



    Lacey... I take my statins at night too.



    Anybody recommend a juicer? Mine burned out the other day.

    Lacey - I don't think it matters when you take your statin.  DH was on them for a while until the joint pain became a problem.  His levels have stayed nice and low without it - could be the bike-riding he was doing last summer.

    Lacey - Statins are most often taken at night because that's when the body is busy making cholesterol.

    Bedo - Best wishes for a treatment that is kind to you but takes care of the problem quickly.

    Needed comfort food though not high cuisine. Had Bisquick chicken pot pie. Not too bad and used up some freezer stuff.

    Deb - Continuing to hold you and your daughter in prayer.

    Michelle - absolutely amazing.  I vote that the ice cream is a catalyst.  Doesn't a Mudslide have icecream? I used to like Amaretto Freezes.

    Deb - so sorry for your problems.  Hope you get the POA. We'll be thinking of you.

    Hi everyone else I've missed.  Hair gone/wig on-sleep cap at night.  Finally off the BRAT diet and had a can of smoked oysters for dinner last night.  Good protein.

    Bedo, you know how I feel about you, since we are part of a set of triplets.

    Laurie, am so sorry your tired!  I remember that well.  Mine are seven and eight now.  Yikes!  I remember those no-nap days.

    Michele -- Yay!  You must always have ice cream.  And mudslides!

    2nd -- you've got to get a Vitamix!  They are incredibly expensive.   Go to qvc and you can pay in installments.  It makes ice cream!  And if you put brocc potatoes milk and cheese in, leave it for six minutes, it makes hot soup!

    Nibbana, many thanks for excellent recipes.  I can't wait for tomato season.

    Deb  Thinking of you.  Just remember that just because he had this unfortunate addiction to deal with doesnt mean he loved you and your daughter any less.  Remember the good and know that he loved you!

    The weather experts are saying that due to our unseasonably warmer weather with no frost (or rain) in the next few weeks, to go ahead and get the gardens going. I am heading out to get some plants.

    Last night was boring salad again, DH had late lunch and didnt eat dinner.  met up with summer friends from PA that came up to check on their boat getting into the water. Actually ate outside..a little chilly but doable.

    Made a big batch of marinated chicken breast to have on hand for impromtu meals. Too hard to plan meals when we are outside so much, having the chicken ready gives me some easy options on the run.

    Deb:  So sorry you're having to go through all this right now...sending prayers your way.

    Since I'm back in Florida alone for the week I'm using the time constructively to detox my body from all the forbidden foods I've eaten over the last four months while in SC..lol!  I feel better already...at least my stomach does.  I'm sticking with my green smoothies, lots of salad and veggies, and avoiding meat altogether.  I had lentil soup for lunch and eggplant for dinner.

    The Vitamix blender is something that was well worth the high cost that I paid for it.  It will blend solid veggies into a smoothie with little or no effort.  I like it much better than my juicer and it is easier to clean.  Also makes blended soups and even heats them...yummy!

    Hope everyone has a great weekend...it is sunny and hot here today...yea!!

    I'm not sure what is for dinner tonight.  At 6pm, I'll be at the prom....with Sharon..we're chaperones.

    The waffle iron and the aebelskiver pan are cooling in the oven after coat one of the seasoning.  They are in perfect condition, so they should work very well.  I don't have a pinterest login...I guess I'll have to get one to look for aebelskiver recipes.

    The flooding danger seems to have lessened to the point where it's most likely I'll be home.  This is good news for me as well as the folks up north.

    Dinner tonight is ground beef, sweet potato, and onion casserole. 

    A good guacamole is a jiff to make. Smash up avocadoes, add onion, a little tomato, cilantro, and a splash of lime.

    Tonight we went to a friends to celebrate Cinco.  She mad an amazing guacamole the same as Nibbana described and everyone brought different appetizers and drinks to have.  We had a blast!  The food and drinks were wonderful, the conversation with other adults was great and the children played like mad!  Everyone is now asleep but me.  I think DH over did it a bit :)  He is playing in a golf tournament tomorrow and the kids and I are headed to a play date in the morning.  I think DH might regret how much fun he had tonight.  I was good....am sipping a Margarita now that the house is quiet.

    Hope everyone is well and thinking of all of you going through painful times ((((hugs))))

    Boy, this thread sure reflects the change of season with Laurie and co outside for hours,

    Michelle getting beach drinks planned and Carrie and DH heading for the boat!



    It was such a pretty day....I started it at Volante Farms attending a session on container planting. Then enjoyed roaming their greenhouses, taking in all the gorgeous color. I only bought a couple of hardened plants, plus some kale and arugula six packs since we do expect a few more nights in the 30's. It felt good to finally start planting at least a few things today. Carrie, I'm impressed with your warmer forecast.



    After buying plants I headed to the produce and grocery section and enjoyed some vendor samples of products that Volantes sells. It got me thinking about wanting to create and sell a product. I sure love making things, but would need to come up with an interesting marketable idea...and I'm not sure I'd want to deal with all the regs related to selling a food product. Maybe I can make something that doesn't need refrigeration, get stale, or cause allergic reactions,......like little kid aprons. Oh well this urge will probably fade.....;)



    I bought more parsnips today since I wanted to make more soup with them....this time with sweet potato. I divided the amount at the end and added quinoa to half, and barley to the rest. I absolutely love that little barley crunch in soups! I think tomorrow we might have to grill some meat for dinner...DH has to be getting tired of my recent soup obsession, even tho he happily slurps them down.



    Eric, glad you (and the involved citizens) might be spared this time! Maybe you would show us pix of those renewed pots and pans?!



    Getting very late....better get upstairs take that statin, and try to get some shuteye.

    That is strange that you have been thinking of Apple lately because I have, too! Last year after Apple talked about her planting a bunch of Knockout Roses, I happened to come across them in Home Depot and they were buy 1 get 1 free. So I got 2.



    I procrastinated in planting them and they became infested with sawfly larva. They stripped every single leaf off 1 plant and over half the other. I figured the one was a goner so threw it away and planted the other hoping for the best. The sawflys finished that one off, too but it was late in the season so I figured I'd pull it out this Spring.



    Well, lo and behold it is leafing out beautifully this year (kind makes me sad that I tossed the other one) I will stay on top of any signs of the critters returning this year. Knockouts tend to not be fussy and very disease and pest resistant so I think it'll be fine and I know I will think of Apple when it blooms!

    6 hrs out on the lake and I have a slight sunburn to my forehead....at this rate we will all be tan by Memorial Day.

    I think of Apple too...keep looking for a post here from her. Those roses will be a great way to remember her, she had so many talents.

    Had blackened mahi mahi for dinner.  this restaurant usually does it great, have had it here before, but last night it was overdone and dry. They were extremely busy, so maybe the chef was overwhelmed.  The nice weather has brought everyone out of their homes.

    Eric  How was the prom? Did all the kids behave?

    Lacey  what did you learn about container gardening?  Anything we dont already know? New Ideas?

    It sounds like we were all thinking of Apple. Last Tuesday I pulled up and listened to the Youtube videos of her playing the piano.



    It was a very mellow prom. I had to clear my throat once near one couple who thought they were alone by the outside fountain. That was it. Good kids...at least at the prom. :-)



    I got three seasoning coats on the waffle iron. That should be enough. I'll have to try it later this morning to see how it works. Amazingly enough, it's the only waffle iron I have.

    The stage IV gals have done a nice 5 questions for Apple. It seems that she has been on lots of minds recently. Miss her.



    Tonight is green chili chicken burritos, some yellow rice and guac. Last nights meatballs were greatly improved by finishing in the arrabiatta sauce, so I was pleased with the result. At DDIL's request, I made a small amount of angel hair in a parmesan cream sauce too. All good. However, the lemon pie did not set up AGAIN. I need to make it on a non rainy day (if we ever have one. 3 more inches yesterday!) One more try before it's removed from my repertoire. This is the way with me, those things I love best, I can't make e.g., cake, fried chicken, lemon pie.

    I'm another one who's been thinking of Apple.  Since I'm back in active treatment, I've been searching different threads and come across a number of her old posts.  What a wonderful lady. 

    Nance - Guess I should be embarassed to admit this to the great cooks on this thread.  I'm the laziest cook around and I know this is a cop-out, but I've always (since 1968) made my lemon meringue pie with original Jello pudding/pie filling and never had a failure. 100% home made would certainly be better, but I do make a good crumble crust & at least I get my lemon pie fix.

    I've never tried lemon pie.  I don't think the rain/humidity would be an issue out here in Arizona...unless too little is not good either. 

    I went looking for the Apple thread in the stage 4 group...Nice...But I'd rather have her healthy and answering the questions now....I'm sure you know what I mean.

    The waffle iron worked and was completely stick free.  Like I expected, it didn't work right on the electric stove, so I put it on a Coleman gasoline powered camp stove and that worked just fine.  The first two waffles were dog treats, but once the "iron" was warmed up, it worked perfectly.   Now that I know that, the dogs won't be so lucky next time!

    I checked around on the web, and it looks like this waffle iron was made before World War 1.  DD was quite amused that something so old could work so well.  Of course, to a 15 year old, a TV more than a few inches thick is old.  :-)

    I'll write some, get called away, write some, etc. so sometimes I miss a post.

    I don't think it's cheating to use pre-made pudding for cooking. :-)  Sometimes I'll try stuff "the hard way" just to see if I can do it and to see if there is a taste difference.  If there isn't a huge taste difference....I'll happily cheat....

    I'm not opposed to it either. That's the only way I can make layer cake, I'm so bad at it (make my own frosting though.) But this particular pie recipe is the best I ever had, so I wanted to be able to make it.

    Making tortilla soup today; a new recipe for me. My cookbook of the month group is cooking from Rick Bayless' Mexican Everyday which is his simpler recipe book. I have roasted the tomatoes and chilis and made the tortillas chips from some aging tortillas that have been living in the fridge.

    Will serve with some avocado. Mr. 02143 will eat a snack around 9pm.  :-)

    Nancy, how do you make your burritos?  DH usually orders a giant burrito in a Mexican restaurant.  I'm wondering what's the difference between burritos and enchiladas.  Does a burrito require a white flour tortilla? 

    Made a This and That soup that outgrew the first pot.  Started out with leftover home-cooked black beans, a can of Mexican Rotel tomatoes (lime and cilantro), chopped carrot and celery.  Added a ziploc bag of frozen chicken broth.  Added a frozen container of home-cooked cannelini beans, more chicken broth and chopped cabbage.  Cooked that a while and dumped in leftover brown rice.  By now it was a large pot.  Actually not bad but "different" with the lime taste and a bit peppy with the Rotel chilis. 

    One of my brothers brought a large box filled with veggies to my mother's house today.  Freebies from a farmer friend.  Cucumbers, zucchini and yellow squash.  Everybody took what they could use and then I made deliveries to my mother's neighbors and to one of my neighbors. 

    So tomorrow's dinner will feature a dish with zucchini or yellow squash.

    I can't decide if what I ate would be considered gross or awesome.  An avacado, tomato, onion, cheese, lettuce and salsa taco.  The kids had beef in theirs but I was not feeling it.  Let me tell ya mine was awesome and my DH thought I was nuts.  What's new :)  

    I am 2 weeks into my eating transformation.  I am not making sides from boxes.  I have cut down on cheese, bread, chocolate (sucks) and sprite.  I had only drank 1 sprite a day before but now I am trying to cut it out.  I am trying to eat more fish (so expensive though), chicken and less beef.  My DH is a chef....yeah great right but he's never home for dinner though - he's home 2 nights a week.  He doesn't support to no beef part.  When he is home he has been very supportive of the eating changes - brown rice, wheat pasta, EVOO vs butter, oven cooked vs fried.   

    I am finding that when I plan my meals out I do a much better job at not getting overwhelmed and sticking to the plan.
