    It must be such a blast to be in and around New Oleans at this time of year!! Congrats on an excellent weigh-in this morning!!



    My sister does Weight Watchers and has had really good results. She told me of a website/blog called skinnytaste.com. It has a lot of great sounding recipes organized by point value as well as the more traditional beef, poultry, dessert type categories. Each recipe lists the nutrition values as well as WW points and WW points plus values!

    When I made Mele's chicken pastina soup today, I added the parmesan heel, (thanks, Nance for giving me that idea in one of your posts)and it did give a nice flavor. DH raved....

    For dinner tonight, Cheerios.

    I'm on a budget and squid is cheap.  I don't want to hear any ewwwyyys.

    Make couscous, polenta, pasta, rice right before cooking squid

    Put 2 1/2 Tbsp oil in skillet and add 1 1/2 pounds squid cut into peices after patting it as dry as you can. Add 3 Tbs butter, 2 Tbs parsley, 1 Tbs basil, ( both fresh) and however many red pepper flakes you want and 3 garlic cloves chopped up. Cook till done, 3-4 minutes and add salt pepper and lemon juice if you like.  Add to couscous.  (Mix a little oil into couscous or whatever to keep it moist.)

    So then eat it and don't complain.

    Dinner tonite was just a quick stir fry with a bit if brown rice. I really like the single serving one. I eat half of it for a meal, and the rest for a leftover meal. It works.

    Hope everyone is dug out. A lot if our snow melted today, it was warm. 34 degrees. tomorrow they even promise the UFO will show! LOL. You know, that bright shiny thing up in the sky we don't recognize! LOL

    Aloha!!!  Just a quick post to let you know we are having a wonderful time.  The one little kink is that it's been cool for here.  Today it may have gotten up to the low 70s, there were several showers followed by sun - we had 3 rainbows.  I am working on being "Hawaii sun-kissed" and not sun-fried!  Rick is playing golf tomorrow so I'll be at the beach/pool for about 5 1/2 hours.  I hope the weather shapes up a little.  I didn't bring very many long-sleeve tops...might need a shopping trip to boost the wardrobe. 

    Food is an iffy thing - ate well yesterday until we went to dinner at my niece's house.  The food tasted great but my stomach was being persnickety.  Ate a good breakfast and lunch (at a food truck, no less).  It's now almost 6 and we're going to a restaurant but I may be eating a bowl of soup.  Oh well, such is life...LOL

    quick pop in- I echo all of you Debbie we miss you.

    Tonight was Bulogi- sliced pork medallions sauteed and then made a gravy/sauce out of chicken stock, pineapple and some soy sauce, thicken with a roux.  Served it over white rice.  I thought the boys would complaine but they loved it!!  Can't figure them out?

    At least everyone was happy.  Not a bite leftover.  This is one my moms random recipes that I make :)

    Laurie, that sounds delish! I will have to try that. Michelle, you have relatives in Hawaii? Boy am I in the wrong family. LOL. Hope it warms up for you.



    Had Dover sole last night frozen from Whole Foods, just sautéed it with some canola oil and a little spices. It was good, but not very filling. I had Cheerios after Bedo :)



    Bedo call it calamari, and no one will say eww! I actually like calamari, sounds good to me.

    Yesterday I did Pepin's poached chicken with vegetables. Unlike Pepin, I do not serve the just cooked chicken on a platter. Instead, I rip the meat off the bones, throw the bones back into the stock and cook for another couple of hours. At the end, I have about 9 cups of stock and a chicken's worth of meat.

    Last night, I made some corn tortillas,grilled up some of the chicken with onions, and made enchilladas. Served with some red beans I had made earlier this week and some avocado with pico de gallo. I went with a salsa verde last night because that is actually my most favorite. I used a Fontera grill jarred sauce, watered down with some of the chicken stock.

    Don't really know what we will eat today, but I suspect there will be at least one bowl of soup.

    Now that I have a few minutes, I think.......



    Today, last night and today...I'm in Las Vegas, helping track down problems with the cellular phone system. I did this last Wednesday through Friday as well. I've been away from home much too much.



    Sharon (or her mom) hasn't heard anything yet about her uncle's memorial....but I would like to thank everyone for their wishes and thoughts. They were most appreciated by Sharon.



    I did manage to cook this weekend...both the rice dish and a pork dish (also, the cheap muffin pans worked perfectly). So at least maybe Sharon won't be having to divert herself from lesson plans and grading papers to feed herself and a hungry teenaged girl... :-)



    ..can't wait to get home.....even if it is really late......

    Susan- Now I want an enchilada!!  Sounds delish!

    I am getting excited to make my sons special snack for his Valentines party at school.  As we all know I am a horrible baker so I am going to do chocolate covered pretzels with sugar sprinkles on top.  I got white and milk chocolate and this huge container of all different colored/sized sprinkles.  I am hoping it is as easy as I think it's going to be.....

    Laurie, sounds like a hit! And for safety it sure beats the red candy apples I made for DS2's class once and burnt a hole through my finger skin with the candy syrup!



    Susan, I can just imagine how much fun it must be to catch the aromas coming from your kitchen, given that you make everything from scratch. I'm not even a big enchilada fan, but yours sound so amazing!!

    Michele - which island are you on?  I was talking to my son yesterday (who lives on Oahu) and he said their weather has been not good, but my MIL (who winters at Kona) said theirs has been fine.  So where are you?

    Susan you read my mind....I am making chicken enchiladas as well...using store bought rotiisserie chicken, corn tortilla, black bean dip and green chilis. also black beans and rice.  I am having a hard time keeping my hands off the chicken though and have already devoured one of his legs.

    Eric  Hope you get home soon to see your family...Vegas not a bad gig though right?

    Laurie  those pretzels look so festive and probably fun for the kids to help you make them. Good Idea for no baking!

    So the chicken Marsala was  a no go according to DH and the boys.  Home made chicken tenders, mashed potatoes and gravy with corn.  No wonder I am gaining weight.  I need to start eating salads for lunch.  It is my only hope in these winter months.

    I'm joining in with the enchilada movement.  Went out to lunch today to celebrate Fat Tuesday.  We got beads, drank margaritas and ate stacked green chili/chicken enchiladas (New Mexico style).  Then the owner decided we had to at least taste his 'hurricanes' and brought over free drinks for the table.  No dinner here tonight.

    man - enchiladas sound SOOOO good - alas, we are having re-heated meatloaf.  It's GOOD meatloaf, but still - enchiladas sound oh so much better!!!  :)

    The enchiladas craze is catching!  I could use some advice/info/recipes.  Do you make your own sauce?  Use a bottled or canned sauce?  Any particular brand?  Do you use Mexican cheese?  I've been checking out recipes and the dish seems very simple to make, whether beef, chicken, or cheese enchiladas.

    No dinner for me tonight.  I spent the day "hanging out" with 7-yr-old great niece Nova.  She chose to eat lunch at Buffalo Wild Wings and I had a big hamburger with fries.  It was so-o-o good.  Blue cheese dressing on the side.  There's nothing better than a good burger.  And I ate the fries!  They were good, too, dipped in blue cheese dressing.  Maybe I should skip eating tomorrow, too.

    Today was fun but I SO admire you moms who spend all those hours with children.  Laurie comes to mind!

    The great thing about these is, you decide how many of the components you buy ready to assemble, and how many you create from scratch.

    Tonight, I made the leftover chicken/onion mixture into a plate of enchiladas for him, and tortilla soup for me. Rather perfect, I must say. Rest of the chicken stock is slipping into the freezer.

    Carole- I honestly don't know how I do it.  Some days are good and some are hell.  Yesterday I made them have quiet time for 45 minutes in their rooms alone.  I needed a break from the word " Mommy".  I sat in the chair in my room and literally just looked out the window and breathed.But in 2 years they will both be in school full time and I will have been an at home mom for 7.  Wow.

    OK, I will go to Whole Foods and buy The Chicken Who Lived The Worlds Best Life (the 5+) for about a million dollars a pound.  I crave Susan's enchiladas and still remember how chicken tastes, I think.  I must have it.  This will be interesting having not had chicken in many years.

    Laurie, I would eat those pretzels in a hot second and have no problem taking candy from babies.

    I'm thinking frozen fish tonight with brussle sprouts.  I really should broil/ grill the brussle sprouts like my friend's husband did, but I can't remember how to do it. They were pretty dark brown. 

    I'll make enough for dinner and lunch tomorrow

    I was named one of the employees of the week today in a national company. Special me!  LOL

    Going to do some arm exercises with weights.

    Michelle, I hope tummy issues are getting better.

    Enchiladas do sound good! Another thing on my list to try making. Burger and fries sound good too, it's been a very long time since i had that. We had mahi mahi burgers for dinner with pineapple habanero sauce. They were yummy. Had a salad and brown rice with them. Also DH stopped at the bakery and picked up some kind of chocolate expresso cupcake that we shared. I think it was some kind of Fat Tuesday cake. I know it was good.



    Laurie, your chocolate covered pretzels look so good. Chocolate covered pretzels are actually my favorite food in the whole world.



    Hope everyone enjoys the rest of their day. My last day on line until Sunday. I am giving it up for lent again. I will be thinking of all of you. As Moon says much love to all. Eric, I hope you're home. Debbie, I am thinking of you especially. (((((Hugs)))))

    bedo, forget the chicken.... this is delicious with any firm white fish. Bread and lightly fry before putting in the tortillas. I think a queso fresco would be the right cheese. So good, like a fish taco.

    Just by coincidence I'm ordering level one Latin American Spanish from Rosetta Stone this week so that I can learn Spanish. It means "fresh cheese?" maybe??? I know no Spanish other than "Please remove your pants and underwear and sit on the table" and "How much are the rice and beans?"
