    Tonight was the go to meat in the usual cooking device.....Chicken cooked in the dutch oven, broccoli, and a salad.



    I am tired tonight....last night was one of those vivid dream sleepless nights....

    Yikes, Eric, I wonder if you have been hanging around us for too long. Your last night's sleep sounds alarmingly like some of us gals on Tamoxifen! Hope tonight goes better for you.

    @LeeA, looking at those ramen bowls it seems inevitable that somebody's phone will eventually end up in the soup.

    I don't notice the taste of eggs in baked things like cakes or muffins, and don't mind them in desserts like weet custards, but my experience of savory egg-based dishes of that sort is that I just don't like the taste. Maybe the sweetness of the dessert dishes counteracts the eggy taste. Just my weirdness.

    Well since I was grounded I couldn't get on the computer for 2 days LMBO!! I agree Kay, Bedo is a meanie haha!

    Seaside- OMG we would all have a blast out together then we could all go humping with Carrie haha!

    Bedo- You crack me up DH is sleeping and I had to put my hand over my mouth for fear of waking him.  I bet you did a great job on the violin wished I could hear you play. Oh and so glad you wanted the goat for goat cheese, had me a little worried there, thought you were getting lonely hahaha! Just kidding of course.

    Michelle- Glad you had a great time, we left and came back about the same time too I think. Love the picture of you and specialK such a cute picture. Hope you got through your test OK!

    Lacey-Yes, you are right it was such a shock to get off the little puddle jumper we had to walk from there to the terminal, it was freezing rain and ice. I have a great tan and can't even show it off! ha!

    Laurie- So sorry about your mom thinking of you and know how hard the anniversarys and Birthdays can be. (((( hugs))) My DD had the tubes put in her ears when she was younger she always had terrible earaches. Like Kays DD Once they were removed she didn't have them hardley any more.

    Sorry for all those I missed, it took me a couple of hours to catch up. Hope all of you who are sick feel better soon, seems its hitting your neck of the woods alot.

    Our trip back was kind of scarey to say the least, since we took the red eye back we had to fly into Seattle first it went Ok was a little bumpy and Iam the worst flyer ever. My DH arms get brusied from me holding on so tight on take off and landing. The fog was really bad when we were flying into Seattle and just when he was ready to land the jet it went straight up in the air, everyone kind of gasped, after about 10 minutes the flight attendant came on and said it wasn't weather related, said it was a maintanince problem. WTF! I looked at DH like ok this is it, we are all going to die right here I actually started to cry a little and when I looked at the other passengers you could see in there eyes they were scared. Im pretty sure it was the landing gear but they never even told us, we just circled for about 15-20 minutes and with out telling us he decides to land. It was a perfect landing but I was scared as hell and never prayed so hard. LOL! Then we had to take a little puddle jumper from there to Portland, that was not fun either. But we got home safe and since neither one of us slept at all on the planes or hardly on our vacation, once we got home last night we took a long nap and slept most of the day today so now I can't sleep it is 3:30 in the morning. I actually started this at 230 but like Nancy I lost my post too. Arghh!

    On the trip over they served a meal that was so delicious and I made it for breakfast this morning they called it a Hawaiian breakfast. Take some porteguese sausage and cut up in bite size pieces ( or any other sausage you can find) and cook them in a large sauted pan, then I beat 6 eggs and poured them in with the sausage and scramble them, then added some already cooked white rice, diced up pinapple, coconut flakes and some chopped green onion. It was heavenly. Great breakfast or anytime. For those of you who don't like eggs ( curveball) you could leave them out.

    Ps- I didn't have fresh pineapple so used canned, and didn't have portuguese sausage so used itialian.

    PPS Deb- Your tart looks delicious too.

    PPPS Eric- Yes you are the only man here and we love having you around :-)))

    Sorry for the long post I had a lot of catching up to do. But wanted to say that I have a lot of pictures to show but don't want some people on my FB to know we went to Hawaii I will try to put thme on here tomorrow maybe with my new phone I will have better luck. I guess I could also put them on FB and restrict who can see them and someone could put some on here for me. I will see how it goes tomorrow/today.

    Made Turkey soup last night, guess what's for suppa tonight??

    Also, sliced a chuck roast thinly and made more gravy for hot roast beef sandwiches.  That should last a while.

    DH had a root canal today.  Our dinner is my "go-to" dish, easy for him to chew.  Linguine with marinara sauce w/Italian sausage.  Salad is tomatoes, cucumber and avocado.

    Though I have some lovely German sausages that I picked up at Carl's Sausage Kitchen, tonight we had a simple pasta with garlic and oil. My sauerkraut had turned.  :-(

    I'm back to cash only for awhile. My bank called and asked if I'd been shopping at Walmart in Texas....Not me....but my credit card was there...... So I'm waiting on a new card.....

    Oh Eric, what a pain....but I'm always glad for those folks who watch for purchase anomalies with our cards. Fortunately, the companies are usually pretty good about sending a new card out quickly. Good luck, and enjoy the 1950's for a bit!



    Susan, sorry about your sauerkraut turning.

    Deb, you sound set for several days!



    Tonight we had the chicken chili that I love to make, and love to eat lately, (may even enter it into a local contest)and sent a container to my young next door neighbor boy whose parents are in FL during this severe cold spell while he treks off (like we all did!) to his new job each morning, and comes home to his parents' house with no prepared food. I told his mom I'd ship some meals over to him while they were basking in the sun. He has been grateful for each meal.



    It is so, very cold here....actually went out to do some errands today, and was stunned about how bitter it was....guess we have been getting used to moderate winters!



    I am really annoyed at my body....have no idea why, but I have been having systemic allergic reactions to what, I am not sure. But it is scary when it happens, and while it is ultimately calmed down with two benedryl within an hour, (I learned to do that from the allergist's nurse)I am not supposed to be taking benedryl since it makes tamoxifen ineffective. This is so damn frustrating! But as my doc said, breathing trumps cancer.....I guess.



    DH and I are heading to Western MA on Friday where he has a board meeting and I just enjoy dinners and a lovely estate home in which we stay overlooking pastures and mountains. But I keep worrying about getting this allergic reaction since I have no idea what people are putting in the meals we will have. What a pain! I hate to suggest I stay home, since this is one of the rare times I have gone, since my old work schedule almost always precluded my attending. Maybe by Friday I won't feel like I'm on this constant threshold of having another episode.



    This is such small potatoes, tho, compared to what you are dealing with Michelle. Just read your blog and I am so sorry that the mets are still around. ((((((HUGS)))))

    Lacey- So sweet of you to bring food to your young neighbor boy.  Made me smile.  The allergic reaction sounds scary, no idea whats causing it?  I can join you at being annoyed at my body but as you said, small potatoes compared to what others are dealing with.

    Michelle- Huge hugs to you.  I read your blog as well and can not imagine how you feel at the moment.  Just remember how strong you are and allow yourself a moment if possible.  We had Shepard's pie/Chinese pie for dinner tonight too, glad you enjoyed yours.

    Carol- My mouth watered at the thought of avocado, I need to pick some up this week.  Hope your DH's mouth is doing ok.

    Eric- What a PITA with the bank stuff, but good for them for catching it!

    This thread was so quiet today.  I was going to post but had nothing good to say.  Today just sucked, cabin fever and half sick kids who fought and complained the whole day.  I had the cat scan for my sinuses this morning, I was there and back in half an hour.  With the mood in this house I would have rather it have taken half the day.  I honestly have nothing good to say about today.  I guess I should focus on the positive.  Even though temps were in the single digits our wood stove kept the temp indoors in the 80's with almost no effort.  There- I found something nice.

    Cheers.  At least wine makes me think it's the alcohol and not my ears that make the room tipsy.

    Thanks everyone for your encouragement.  I will remain optimistic until someone tells me otherwise.  And in the interest of forward thinking, I booked a hotel in Hilton Head for after the  next three week cycle.  We'll plan on driving there and staying for a week, then drive home.   I'm going to keep on living until I can't. 

    Hubby made Chinese Pie for supper tonight.  Quite impressive - it was really good and something I can enjoy eating.   And now I'm going to have a little chocolate ice cream!

    OK ladies, I have to learn what Chinese Pie is...

    Here is my very long, but really pretty easy, recipe for

    Amelia's Chicken Pastina Soup

     Part I - To boil the chicken and make broth for the soup:

    2 whole chicken breasts with bone in                                  

    6-8 cups water                                                                                     

    Dash of salt                                                                                          

    A few whole peppercorns                                                                      

    2 bay leaves

    1 sprig parsley or 1 Tblspn dried parsley flakes

    1 med onion, whole

    1 carrot peeled cut in two pieces

    1 stalk celery if you like…cut in two pieces

    Steps: Place all together in large enough pot and bring to boil. Simmer for 30- 45 mins.

    Take chicken out and cool it…dice how much you want for soup, all or half, and use rest for chicken salad.

    Pour broth through a strainer and reserve for soup. Discard or find another use for cooked veggies.

    Part II  - Use these ingredients:

    2-4 cups chicken stock or bouillon or the new, Organic, Better than Bouillon chicken base

    Reserved, strained broth (if you chilled it you can easily skim off the fat)

    1 med to large onion diced small

    2 carrots diced

    1 stalk celery, diced (in truth, I never use celery due to an allergy I have to it, but most chicken soups have it)

    ½ cup dry pastina or soup mac (more if you prefer a thick soup)

    Fresh ground pepper to taste

    Cooked chicken breast meat cut in small pieces

    Fresh cut diced or dried crumpled parsley

    Optional ingredients I often use some of these (Amelia never did):

    1 clove garlic minced

    2 cups chopped kale or spinach

    1 Tbspn Fresh mint leaves chopped

    1 cup diced zucchini or yellow squash

    Steps:

    In a larger pot, add 2-4 cups chicken stock, bouillon or base to strained broth you made

    Add diced onion

    Add diced carrots

    Add celery if you aren’t allergic! J

    Bring to boil and cook on high simmer until vegetables are soft

    Add  ½ cup pastina or soup mac.

    …more if you want it to be thicker with the tiny pasta. Cook 20 minutes longer.

    If you want to add rice instead of small pasta, cook at a higher heat for several minutes longer until it softens.

    Add fresh ground pepper (unless your family prefers it without)

    Add the small pieces of cooked chicken and heat through.

    Add fresh or dried parsley, to taste.                                                       Serves four to six

    Serve with crusty bread.

    Note: You can actually make this soup really quickly if you have some cut up chicken on hand, by just using canned chicken stock and/or bouillon and the diced vegetables, and pastina and parsley. I always feel it is better when made from scratch. But kids (and some grown ups) hardly notice the difference!

    Susan, I'm assuming that was kraut that you made? I only attempted that once long ago. Let's just say the result was less than satisfactory.

    Michelle, I keep thinking of three words:  you're a fighter (in a good, strong way).  I also keep thinking about that funny pumpkin picture on your blog - so you have a sense of humor and you're a fighter.  And you're a mover, i.e. Florida/Hilton Head/Kauai, etc.    

    Laurie, I hope tomorrow is better all the way around.  

    Eric, we had something similar happen a couple of years ago.  The fraud was traced back to a Pizza Hut wings place in an unfamiliar neighborhood that I stopped at a few weeks prior.  Really annoying but so glad our credit card company was keeping track.  We use them for the airline miles (lots of good travel out out of them) and pay them off monthly so that part of it is all good but the fraud stuff is really scary.

    Eric, had it happen to me twice. BOTH times was just AFTER I activated my updated card I had received in the mail to replace my outdated one. Think there a connection? They caught it so fast, but it already had 5,000$ on it. stupid people.

    Laurie, tomorrows coming. Things change. Is it bad I went out for breakfast, and couldn't decide between breakfast and lunch. So I decided to order breakfast, and take home the jerk chicken salad with pineapple for dinner? It sounded so good to me. I did just that. Turns out inform four meals out of it. Half an omelettes, with hashbrowns. Half an inlet for tomorrow with the pancakes. I only ate half the salad, they packed it so nice with the dressing on the side and the jerk chicken separately, so it stayed nice and fresh. When I'm by myself. Buying all the ingredients for all of that means I waste so much, this actually saves me money. just only about $4.00 a meal. So not bad.

    Kathy - I have been to Beaufort, probably to a restaurant on one of our trips. 

    OK, Chinese Pie (and there's nothing Chinese about it except that it was used to feed Chinese rail workers in Canada.)

    Brown 1 1/2 lbs ground beef with some chopped onion.  Season with salt and pepper and put it on the bottom of a casserole dish about 9 x 9. Add a bag of frozen corn (no need to thaw) along with a couple pats of butter and salt and pepper.  Top the casserole with mashed potatoes.  Hubby used store bought ones, he warmed them up and stirred in some cheddar cheese then spread the mix over the entire casserole.  Sprinkle a little more cheese on the top then bake for about 30 minutes at 350 or until heated through and bubbly.  It's perfect comfort food.

    And here's the story about why it's called Chinese Pie even though it's a French Canadian dish:

    Lacey, Thanks for the soup recipe!! I love soup any time of year but with the ridiculously cold weather we've been having it will taste especially good... Will be making it soon!



    Michelle, I'm glad that despite not feeling well that you were able to visit with Joyce and enjoy Marco Island. The Atlantic coast is nice but, oh, that Gulf Coast is something else altogether!



    I'm sure coming home to the MRI/treatment and results less than hoped for was not on your list of 'Crap I want to deal with' but hoping that the next plan of attack is the right one!



    I hope you enjoy Hilton Head. We've talked about trying there or Kiawah but thus far haven't gone. We vacation every summer just south of Beaufort on Topsail Island, NC and just love it!



    Lol Moon!! We have a diner in town that we go to quite a bit and my family laughs at me because I agonise over what to get as if it's the last time we will ever be there!! Maybe next time, I'll follow your lead! Ps.... DH and I were just talking about food prices and how, depending on the place, it's cheaper than cooking for just 1 or 2!

    Thanks everyone for your support with my "bad" day yesterday.  Today was better.  I am hoping everyone is healthy enough for the boys to go visit their grandparents tomorrow.  I need to grocery shop and clean and have some quiet time.

    Dinner tonight is left overs- whatever is in the fridge.  There is still a ton in there and I have little to make a dinner with.  I am out of chicken, which seems to be what we eat the most and don't want to have red meat again tonight.  So no cooking for me- but I have to be honest.  I HATE leftovers.

    For lunch, I had a combination of two leftovers - both Asian. 

    Egg drop soup with a little bit of rice mixed in (our local Chinese restaurant) with sauteed vegetables from Panda (fast but healthy Chinese fast food) on top.  The other night they had barely cooked the vegetables so my DH sauteed them in ginger and I saved them for a rainy day (literally) and it was quite good. 

    I'm not so crazy about my own leftovers (unless it's pasta or eggplant parmesan).

    I am going to be a pain Susan, or someone who copied your minestrone soup recipe can you re post please?  I think I want to make it tomorrow.

    I think it was Nancy's recipe and it is back on page 352 (or do a search on her user name and minestrone)... The only reason I know is that I tracked it down for someone else...lol!



    Here was my post.... We really loved it!



    "If you're looking for a really good soup that's got tons of vegetables and beans are OK for you, Nancy (AuntieNance) posted an excellent recipe for Minestrone back on page 352. I have made it a few times and, while I didn't use the crockpot, I can't see why that wouldn't work out just fine... I did use more of each vegetable and added a little but of cooked sausage that I wanted to use up but, it would have been just as good without...



    If you do make it, Nancy's suggestion a couple posts after the recipe to boil the pasta separately and add to individual bowls at serving time was a good one if you won't be eating it all in one night. Otherwise the pasta sucks up all the liquid... "

    Unfortunately search only works if I can remember who the heck posted it, which half the time I can't....lol! So frustrating when you know someone posted something you really wanted to try and you just can't find it....
