Last night I made home made chicken & rice soup from the bones of the chicken I cooked a couple of days ago....wish I could have sent some off to those who need it.... :-)

Laurie, what a nice snow day! Your sandwich sounded so yummy!
It also snowed here, and DH had an early meeting, so I went out and shoveled the heavy dense stuff to make a pathway for the builder. Turns out he needs to get special molding sizes (to accommodate my wish not to have our whole complicated shaped kitchen re-wallpapered, since it is pretty new) which involves his trekking to a distributor in the city, (poor guy, the traffic has been a nightmare here today)so he will return on Friday to finish up. It will be nice to get this done....tho despite the mess, our guy is pretty considerate of our living space while he works, which I appreciate....it's just finding that insidious plaster dust everywhere! Next is lining up the painter, which could have been avoided if DH or I had any talent for doing a good job with that.
I have a lot of produce in the fridge, so will probably wipe away the plaster dust and do something with my eggplants and butternut squash....not all in the same dish!
Debbie, I think I need an interpreter for your last message! LOL -
gardengumby - can you give me the recipe for your pot pie crust? I am gluten-free (most of the time) and need some help with learning how to substitute other types of flour.

Omg I woke up and remembered I posted here after drinking way to much, after reading the first line I couldn't read no more and had to delete them lol! I hate when I do that!
Don't know if I said this in one of those posts but I bought 2 leis and put them in the ocean one for Apple and one for my aunt (dads sister) who passed away from bc on Sunday .

I'll just make a copy of it and see what the heck it looks like in the AM... Most of them never see the light of day because they have even me scratching my head going, huh?? the next day...lol

I am ready for spring. Just yucky, cold rain here in MD.
The grill cheese sandwich talk has really made me want one. May have to tomorrow.
Tonight: Italian sausage, pasta and sauce. Oh, garlic bread too.
For me Nitrate free chicken italian sausage, eggplant, mushrooms, red pepper and sauce. I do miss the pasta. May have to sneak a piece of garlic bread. LOL

debbie - I too was entertained by your posts - no need to apologize! Who hasn't been there, right? You are among friends who understand.
Tonight is an old classic from my late mother's recipe file - you can use stew beef but I used a pot roast. Line a tall sided casserole dish with foil, put the meat in, sprinkle with an envelope of Lipton's Onion Soup mix and smear an undiluted can of Campbell's Cream of Mushroon soup over the top. I added chopped onion and large pieces of chopped carrot on the sides. Not a gourmet meal, but it is easy (the recipe title is Busy Day Stew) it makes the house smell great, warms the tummy and my heart because it tastes like childhood!

Debbie- Count me in as another who got a laugh out of your posts- don't ever feel silly or that you should delete stuff like that. I am right there with you sometimes! My emotional post the other night was fueld by wine and I woke up int he morning and thought....crap- did I post that? I'm not as smart as Seaside who saves her posts for the light and clarity of morning!
Lacey- I hope your kitchen project ends smoothly- hate doing stuff like that but so exciteing to watch it happen and enjoy it afterward!
Special K- Your dinner sounds good! I may have to try that, sounds like my DH would love it.
I just got off the phone with Dh and he has requested pork chops and gravy for dinner. So I need to thaw some chops out. I might take the boys outside for one more round of sledding before he gets home. My youngest took a great nap this afternoon and I joined him for about 45 minutes. I love doing it as he won't be little forever but now I will stay up too late tonight!!

I forgot to add - the dish is a low and slow type - perfect for the crockpot. I have it in the oven at 300 F. and it will cook for 4 hours. The recipe says 250 F. for 6 hours, but this recipe is so old is pre-dates crockpots! If you use a non-fatty cut of meat it becomes very tender and the soups combine to make a gravy all by themselves - kids like it too! There is no need to add any seasoning, definitely not any salt, but you could add pepper. I usually just put pepper on when it is done.

Special K - Sounds like my mother's cooking and lots of those fund raising cookbooks. I just love those kinds of recipes. Warm the soul kind of cooking and I can smell it from here. Yum.
I have some cooked pork loin roast I need to use up. I like it but DH never seems to eat it for leftovers. (and I have another uncooked one in the freezer). Do you think I can slice it really thin or even small chunky and put in a Chinese stir fry? I can marinate it now and add it just at the last. It is just barely at the done state. DH I think thought it was a little underdone but meat therm. said perfect. I have snow peas in produce and can (I know not the best for us) of Chinese vegies. Roast is seasoned with garlic/onion powder/salt only so really is pretty plain inside. Have soy sauce and probably could dig out some stir fry sauce. Also have bottled sweet/sour sauce for eggrolls. Do you think it will work? Make some rice and I'm done. My New Years resolution is to NOT waste food because I know how much I spend at the grocery. OMG for just 2 of us but he does take lunch to work.
Debbie - I know the same feeling. I don't drink much but finished off the remains of some bubbly last night. Trying to explain something to DD that DH was saying and could not get it out right. Finally just handed him the phone and said here you s'plain it to her. And I think the idea of some just "me" time would be great for your last days. We went on a cruise years ago courtesy of DH's job and as the ship pulled out of Key West I stood on the bow and watched as it pulled away. DH was napping b4 dinner and declined to join me but it was special time to me and even after 20 years I can still remember that.

luvmygoats - I don't see why you couldn't do a pork stir-fry. I make a sweet and sour sauce that I sometimes use for just this kind of situation - I do it if I have a can of sliced or chunk pineapple. I like to do green pepper, onion, and the leftover meat or chicken. Drain the pineapple, saving the juice. Mix the juice with a couple teaspoons of cornstarch, a little salt, worchestershire, 1/4 c. vinegar, 1.4 c. brown sugar, and 1.3 c. ketchup. When the vegetables are cooked put the sauce in and the pineapple. Stir together until the sauce is thickened (just a couple of minutes) and serve over rice. Maybe do the snowpeas, the chinese veggies, a little soy and the sweet and sour with the pork over rice - sounds good to me!
Not long after my mom passed away we took a trip to Bermuda - the day before we left I was down at the private beach that was part of our hotel. It was late in the afternoon, perfect temperature, and I was sitting in a low beach chair right at the edge of the water - the waves were coming up to my ankles. It had been a long few months and I felt such a sense of peace come over me that I didn't want it to end - I recalled that moment many times during my BC treatment when I needed an instant de-stress!

Lol Laurie... Wish I could claim that I always wait but, I've had the occasional morning when I'm reading the posts and glance over to see who wrote the post and it was me.....lol.....
Also sometimes wish there was a way to apply that same filter to real life situations... at the very least a real-life delete button....

I sure don't see why you couldn't use the pork in a stir fry..... I have used leftover eye of round sliced thin in beef and broccoli and it was great!
DH and I took a cruise this past November and my favorite time of the day was sipping my coffee out on our balcony as we pulled in to port in the early morning. Seemed like most of the world was asleep and the moment was just for me....lol Soooo peacefull! -
Seaside, that was the best part of our last cruise too. I watched the sunrise every morning with a pot of coffee and my "first breakfast" bagel. Then around 9:30 we would go to the dining room for "second breakfast". Loved it.
Debbie, I must say it was a bit of a challenge reading your posts before finishing my first cup of coffee, but very entertaining lol!
Even though I feel worse today then ever (what's up with that?), I ventured out with a friend on a Costco run. I picked up a rotisserie chicken which I will use the carcass for some chicken and homemade noodles. But tonight is comfort food, meatloaf, mashed potatoes and gravy and baby peas. I'm glad I made it ahead of time because by the time I got home, I was wiped out.
Luv, I've also used leftover thin pieces of roasts of various kinds in a sort of "faux" pho. The meat just warms up in the hot broth and doesn't have to cook at all. -

I think pork stir fry sounds delicious
. So does beef stew, grilled cheese and meat loaf. I'll eat anything if someone wants to cook it for me. DH made tortellini, Brussel sprouts and a salad for dinner. He made a sauce with white wine, chicken broth, lemon juice and a few other things. I liked the sauce, but didn't really think it was right for tortellini. We're going to have the rest of it with shrimp and linguini soon

Heading in to see my RO in the AM.....hopefully to say farewell.
I ended up making my favorite lentil soup.......with onions, leeks, ginger, anise, fennel and butternut squash in it. Also baked whole chicken breasts for tonights dinner, and boiled some chicken breasts and thighs for future soup and chicken chili.
Better get some shuteye since the appt is early. -

Love the stories on the cruise ships that's one thing I have never done. I can see how calming and nice it would be early in the morning out on the lani/balcony with some coffee.
Everyone's dinners sound good we had prime rib sandwiches with fruit and the best guava cake I have ever had in my life it was so very yummy. After dinner we went down stairs to the ice cream shop here at the Sheraton (31 flavors) then came back to our room and watched tv all night.

Nancy- did you go to the dr yet? I hear there is a nasty flu going around. -

Debbie, I won't go to the doc with this unless it turns into pneumonia or bronchitis or something. There is lots of flu here but I don't have those symptoms, such as fever. It's just a very nasty head cold. I broke down and took Nyquil (nasty stuff!) last night so did manage to get some sleep finally but I still had to sleep with a tissue stuck up my nose because of the constant drip. What a picture that must have been lol!

I kind of did a clean out the cupboards and fridge soup last night with the chicken and canned tomatos, spinach, beans, celery onion and some little dried leftover in the box basil pesto raviolis (tiny) Basically threw in anything that I had just partial bags or peices of. Then my DH had requested a grilled BLT to go with it...used fresh spinach instead of the lettuce, it was yummy.

Well - I did a version of sweet and sour with the leftover pork. I had some Ponzu sauce (Kikkoman product) lime flavored never used, kinda vinegar/soy based. Added that and to balance added some fig salad dressing from Stonewall kitchen. Cleaned out produce/leftovers: celery, getting soft red pepper, 3/4 onion, handfulf of snow peas, few cooked brusssel sprouts sliced in half, some baby Portabella mushrooms. It was edible over rice. Thickened it with a corntarch slurry. Turned out the can of chinese vegies was way out of date. I desperately need to clean out canned stuff. Slowly trying to use it up. The last 5 years when I was working I cooked not so much but continued buying stuff. Don't even want to dig in the back of cabinet but fear I must soon.
Lacey - 2nd the yah for the last RO appt. Hope your window project is turning out as you wanted. My RO turned me loose 2 weeks after I finished unless I thought I had problems. Get to go on Monday for mammo. I've had one on leftie in July but this is both. Not anticipating any problems but mine was found on mammo. And yes it will be about $500 out of pocket. Nice way to start on deduc. in January. Not sure why they are billing diagnostic for both unless since I've had it on one side they will look closer at other side. I made sure to book on the day the radiologist is there this time. Love the place but my BS never got a copy of the July report but I sat with radiologist and looked at the films so had "it from the horse's mouth" that it was neg. Also have had at least 2 reminders from them for January appt.
Nancy and Susan - Hope you both are feeling better. Nyquil does the trick for me with colds.

On Tuesday Michelle posted on Facebook that she is loving Marco Island Beach. She did say just before she left that it would probably be tough to post while she was away. Hope you're having a great time Michelle.

Making a ham steak and cheese and rice for dinner tonight. Today was kind of a boring day. I never came up with anything fun to do and got sucked into the random boredom of everyday life
At least the boys did not nap which means early bed time tonight= more me time. -

No worries everyone. We are having a good time - spent 3 days with JoyceK and her DH, then moved over to Marco Island and spent 3 glorious days on the beach, then drove to Lutz, Fl and are visiting our friends from Milton. DH told me I was spending too much time online so I have cut back for now. We actually spent 6 hours on the beach one day (a record for my DH).ha
We've had perfect weather until today, where it's been rainy and cool all day. Ann and I met up with my blogger friend from my diabetes board and with SpecialK for lunch. It was great and there is a picture that I need to get my hands on. Weather will be better tomorrow but still too cool for swimming so we may head to the casino in Tampa. We'll drive back to Fort Myers on the 19th and stay in a hotel. Our flight leaves Sunday morning.
