fredntan love it .... at least you only bought the mini donuts, a kilo of large donuts and a kilo of mini donuts arnt the same in the tummy., the mini only take up a little bit of room!!

Linda, you go girl! Congrats on breaking the plateau! 160 is my goal weight, too. I got up to 200 lbs (from eating whatever tasted good during chemo) and had an OMG moment.
Lost 20 lbs of chemo weight in about a year, then I was down to the "old fat." It took another year to lose 10 lbs then I plateaued at 170 and have been hovering there ever since, maybe six months.
Going wheat-free is a good solution for me. 168.4 this morning!
My DH brought home some fried cod from Friday night fish fry (a Wisconsin tradition) but I haven't eaten it because the batter contains flour. I'm going to peel off the coating and use the fish for supper tonight, with roasted veggies. Recipe is from this morning's Sunday paper, but this fish is already cooked so I'll just adapt a bit.

It's been a struggle and I'm up a bit from last post but just a half-pound.
Here's a yummy recipe to share:
Beet and Pear Salad with Walnuts and Goat Cheese
This is a beautiful beet and pear salad recipe. The deeply colored, sliced beets are topped with sweet pears, goat cheese and a simple walnut vinaigrette. (note: I use Newman’s Own Light Cranberry-Walnut dressing.)
This salad can be served as a first course, or doubled in size for a main course.
Makes 4 Beet and Pear Salads with Walnuts and Goat CheesePrep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes
Ingredients:
- 2 large red beets, stems trimmed, washed
- 1 ripe pear, cored, sliced thin
- 1/2 cup toasted walnut halves
- 2 tbsp sherry vinegar
- 2 tbsp olive oil
- 2 tbsp walnut oil
- salt and fresh ground black pepper to taste
- 2 cups baby arugula leaves
- 4 oz goat cheese (either firm-style aged, or softer fresh goat cheese)
Preparation:
Preheat oven to 375 degrees F.
Wrap the beets in foil, place in a small baking dish, and bake for 1 hour, or until tender (test with a small knife). Allow to cool completely. When cool, scrape off the skin with a knife, and slice the beets as thin as possible; reserve.
Fan the beet slices on four chilled salad plates. Top with the sliced pear and walnuts. In a small bowl whisk together the vinegar, olive oil, and walnut oil. Season with salt and fresh ground black pepper to taste.
Toss the arugula with a couple tablespoons of the dressing, and divide on top of each salad. Top each plate with the goat cheese (grate fine if using firm, aged goat cheese, or simply crumble if using soft goat cheese).
Drizzle each beet and pear salad with more of the dressing, serving an extra on the side. Serve immediately.(note: while the pre-arranged salad is pretty, I keep the ingredients separate: one bowl with the beet & pear slices, one with lettuce, one with walnuts, and one with soft goat cheese We usually don't eat it all in one meal, so the ingred. keep better this way.)

Hi ladies. I just wanted to tell you how much I appreciate all the good info here. I gained about 30-35 lbs since my diagnosis. I finally finished chemo and I am now doing radiation. I am trying to eat healthier and move more but it has been a struggle. I lost 5lbs and my radiation therapist told me I wasnt suppose to be dieting during radiation. I explained that I wasnt dieting just eating more vegetables and fruit and trying to start exercising. I am on neurontin and percocet for pain which is a combination of chemo side effects. (damage to my bones) and te pain and lymphedema. I am in such bad shape that it is hard to get up from the floor. lol. I hope to slowly build a healthier life. Thanks for being here.

hi melmcbee and welcome. I started slowly too, with a walk around the block. Now I walk every day and keep track of my mileage with a $5 pedometer. It clips onto the waistband of my pants and it's so inconspicuous, I usually forget I'm wearing it.
If you do get one, wear it for a day and see how many steps you take. Steps = distance. You may be surprised at how far you go in a day without even thinking about it. It's great to take exercise credit for something you're already doing.
So ladies, my beverage of choice tonight is Earl Green tea. You know how green tea is supposed to be so good for you? Well I just don't like it. So I put two teabags in a big cup- one Earl Grey (decaf) and one green tea - and call it Earl Green. I need a splash of (organic skim) milk but no sweetener as I enjoy the flavor of bergamot.

up a pound since Jan. 6 - stress at work and haven't been exercising like I should.
New strategy- changing into jeans instead of sweatpants when I get home from work.
Still comfy but without the sweats' stretchy waistband that makes it easier to overeat.
Bookwork this weekend so sitting a lot. Maybe the jeans will keep me from snacking?

hey misswim, seems this thread has gone dormant. I'd like to invite you and anyone who needs support and encouragement around healthy diet to join us on the E-LAB thread in the Fitness forum. I hope that this thread will continue. Supporting each other with regard to healthy eating seems crucial to quality of life.
I was the kind of person that was lazy about this medically until my diagnosis with triple negative breast cancer in October 2012.
I'm still having chemo but my 2nd cocktail has allowed me fewer SEs than the first so I am starting to educate myself about nutrition and healthy but taste good recipes.
Where else. Besides here in the discussion boards should I look for this kind of information?
In any case I hope we can resurrect this topic!

I have started to eat much more healthfully with fruits and vegetables of all colors fitting half of each plate and for snacks too. I realize I am still eating too many calories but for now this is the best I can do.
