Sweetbean's Roasted Cauliflower and Cilantro White Bean Spread on Collard Green Wrap
(I made this recipe up myself!)
1 head of cauliflower, cut up
1 can of cannelini beans, drained, but reserve 1/4 cup of the liquid
2 cloves of garlic, diced
1 tsp of turmeric
1/8 tsp black pepper
1 tsp curry
1/2 tsp of salt (or more, if you are a fan of salt)
1/2 tsp of cumin
juice from half a lime
1/4 cup of cilantro, chopped
1 collard green leaf
Heat the oven to 375 and roast the cauliflower until golden brown. Remove from oven and try to not eat (roasted cauliflower is delicious!) Place cauliflower in a food processer with the remaining ingredients, process until smooth. If it isn't smooth enough, add the reserved liquid and continue to process until you have reached the desired consistency. Spread cauliflower mixture on collard green leaf and roll like a wrap. Eat. Pat yourself on the back for getting a cruciferous vegetable, curry, turmeric, black pepper, and a legume all in the same recipe.
(Side note: the stem of the collard green is kind of problematic and not very delicious, so I am going to try destemming the collard green tomorrow, thereby creating two smaller leaves for two halves of the sandwich. I'll let you know how it goes!)

Hello Ladies, LOVELY receipes above, cant wait to copy some!! Im wondering if anyone has heard of SOURSOP? and where can it be bought? Is it really an anticancer fruit, I hear raving things about it but wonder, if it really is anticancer then why isnt it used? Also, where can I find Quinoa?

B....with the popularity of quinoa it is getting easier to locate. Our grocery store & walmart have it in either the grains aisle or the organic section. If you have a Whole foods or Trader Joe's they carry It too. Just made home made granola with it mixed with oats. Almonds. Sunflowercseeds cashews & apples-partially "dried" in the oven. Cannot post recipes from my kindle but check out skinnytaste.com for their pumpkin granola recipe.

I was making zucchini "lasagna" last week & wanted a meat substitute for the filling. No exact measurements....but made this up on my own. Very quick and easy.
Make quinoa to equal 1 cup.
Chopped leek (or small onion) & garlic softened in skillet with evoo - add cubed eggplant (medium size was used) and cover to cook. I stir & check softness of eggplant. When eggplant softens add 1 can of crushed/diced tomatoes. I had a really good can of whole tomatoes & hand crushed them. Cook until eggplant is thoroughly cooked. Add quinoa. Cumin to taste. I also threw in some fresh Basil from my garden. And a. Dash of salt n pepper.
I ate this alone too. But with the zucchini and a single layer of ricotta mixed with fresh parm n a little mozzerella- was like ratatouile casserole. -
Thank you Sandpiper, does it have any side effects (stomach problems) after you have it? I notice that Flax does that sometimes if I have too much. Not sure if it is in the same group? I do have both Whole Foods and Traders so I will definatley check it out!! I take it that Soursop is hard to find?

B I haven't had any gastric issues with quinoa. I know what you mean about the flax. I'll look for soursop next time I'm at wholefoods. Have to return because they were out of chia seeds last time I was there.

Thanks Sandpiper, please let me know what/if you find it. What does the chai seeds do for you? I will be looking as well. I know you can order online but how do we know what is pure and real?

Chia seeds can be added much like flax to foods smoothies etc. Good source of omega 3, fiber & antioxidant. I am not a vegetarian but eat meat & fish sparingly. In fact I haven't eaten any animal products for the last month other than Greek yogurt, ricotta, a few eggs & a little bit of cheese. So I am trying to find good natural food sources for protein and nutrients other than meat products. I will be starting Tamoxifen at months end & also trying to shed a few pounds prior to my start date. Don't wanna be a fanatic but really trying to Tweek my diet for over all health. Love these recipes. I am going to make the soya sauce today too! I do feel better. Good energy return since surgery 3 months ago & down almost 10 #.

Caponata (great as a Thanksgiving apetizer)or just a healthy snack at my house.
olive oi,one lg onion chopped,one stalk cellery chopped 2 small or one lg eggplant peeled and chopped,1cup of cherry tomatoes or chopped lg ones,1/2 cup of both black and green olives chopped.1/2 cup of tomato sauce,sugar to taste if needed,1/4 cup of balsamic or redwine vinegar.Splash of red wine if you have it.Sand p to taste.(capers) optional
Brown first 4 ingredients then add the rest and cook on low simmer for 20 min.Can be served warm or cold with fresh bread or whole grain crackers.

Ty mumito! Somehow my Kindle autocorrected your username as munition. Lol. B123 I could not find soursops at Wholefoods. However, There is one closer to my home that I will stop in. I stopped at the one near my workplace today& doncha know......no chia seeds either. Nor did this one have my Greekgods yogurt. Really striking out except they had avocados & limes for a good price. Going to have to dig up the avocado/ cilantro dressing recipe out & share.
Solt. I do the same as you with the simple pasta topping. I often use spaghetti squash as a pasta substitute. -

Anyone have receipes to help not gain weight?? I have been the same weight for years and now, in one month I have gained 3 pounds and have been on the Arimidex for one month! What is going to happen next month? Nothing will fit me anymore???

I found when I was on AIs it made me crave foods and I ate more... Eat more veggies, keep up protein - beans, eggs etc.. and walk at least 30 minutes a day - That is what my Onc Nutritionist told me.. Problem is I'm still not walking enough.. I hear what you are saying B123, I have managed to lose since I started looking at my portions and eating lots of coleslaw
. I'm hoping others will chime in so I get more ideas!

GMAFoley, this is crazy?! I am hungry more often and have binged a bit but not enough to gain that much in one month. I am so shocked! I walk all day at work but I guess your right, I will have to look at more protein foods, vegis/fruits and portions. I almost want to skip my AI a few days and see what happens, but that scares me too! Thanks! Glad to hear you were able to lose some and keep it undercontrol!!

B123 Unfortunately, I'm not the one to talk about the SE's of Arimidex.. My SEs were so bad the ONC took me off of it within 2 weeks of starting.. I told him I would at least like to TRY it for a month.. he said no.. I tried Arimidex twice.. both times off by the 2nd week per Oncs orders.. At this point, I have to do anti cance/estrogen foods to keep the estrogen away.. But through all this I want to clarify something... it isn't SEs CAUSED by the Arimidex... my SEs were the lack of estrogen.. I just need my estrogen I think.. or at least a little of it.. you take it all away and I get very sick..

GMAFOLEY, that is a tuff situation, so are you on anything now? Have you tried Fareston? It is a great alternative, it is expensive but is so worth it! I loved it, felt great (the only one I felt good on) but I worry of the End cancer SE so I let it go and went on Arimidex.. tolerable but still would rather go back. Thanks for the advice!

For a Steel Cut Oatmeal cooking tip.
To expedite it for the mornings, do the steps at night by boiling the water and stir in the oatmeal. Then turn off the heat altogether and cover overnight.
In the morning, simply heat it up and you're ready to go.

I am on tamoxifen and I have gained a bunch of weight ... Some is caused by bad behaviour but not all. I am hungry all the time. I am tempted to take a tamoxifen vacation and see what happens. It is so frustrating.

I have been on Tamox for over 3 years did not gain weight on it but had to really watch and reduce my calorie intake.I exercise every second day and eat alot of veggies,whole grains,and small amounts of chicken and fish.Almost no red meat.I have lost 14 lbs since I started tamox but it takes alot of self control.I still indulge in a nice glass of red wine but not as often as I used to.I also cut white food like sugar and anything with wht flour.So no deserts except fresh fruit.My indulgence foodis a good cheese.Just do not eat too much.My MO said that I am doing really well because most woman gain average 20lbson tamox.

Mum into ... You are right about the weight because I would guess 20 pounds is tamoxifen. How good is your memory? When we were at lunch we talked about a recipe .. Maybe a quinoa one. Can you repost here if you can remember. Also thanks for the tips about eating... I need a good swift kick somewhere to get me moving.

Vegan Sloppy Joes
2 Tbsp olive oil
1 1/2 cups coarsely chopped crimini mushrooms
1/2 cup chopped onions
1/2 cup diced celery
2 garlic cloves, minced
1 cup cooked French green lentils
2 cups crushed tomatoes or chunky tomato sauce
2 Tbsp tamari
2 tsp vegan Worcestershire sauce
1 tsp balsamic vinegar
1/2 tsp Dijon mustard
1/4 tsp chipotle powder (or regular chili powder)
1/8 tsp ground cinnamon
4 sandwich buns
In a large skillet over medium heat, heat olive oil, mushrooms, onions, and celery. Saute for 8 minutes, add garlic, and cook for 2 minutes longer.
Fold in the lentils, tomatoes, tamari, Worcestershire sauce, vinegar, mustard, chipotle powder, and cinnamon. Reduce heat to low-medium, cover and simmer for 25 minutes. Serve 1/2 cup of filling on a sandwich bun.
Sweetbean's note: If you are avoiding bread, this is so good that it works as a stew as well.

I am not sure where to ask this question but I will ask it here. What is a good alternative to cheese? I am slowly changing mine and my 5 yr old daughters diet. We already eat pretty healthy, but there are a few things we need to improve on and cheese is one of them. So what would be a good alternative? TIA!
