Today my good food choice was...

sagina,
Yes, if you mix the flaxseed oil in well with the cottage cheese (as per Budwig plan), you can't really taste it. I like cottage cheese anyway and when 1/4 cup is mixed with fruit it isn't like you are eating much of it anyway. I have been on the diet for 4 mo and lost about 30 lbs and feel great. An added benefit is everyone tells me I look great. (Most don't know I have BC) The only thing I do that is against the program is that I did start taking Arimidex but figured it couldn't hurt to stay on the diet.
-
I sure hope fructose processes/absorbs differently than regular refined sugar because I had a big fresh fruit salad for dinner. Cantaloupe, mango, strawberry, blueberry, and banana with a piece of rye/oat crispbread with peanut butter.
-
WHOA 30 pounds that's awesome, just from changing your breakfast? I'm not eating animal products except for fish - which i added back into the diet looking for a high protien low carb option. I used to LOVE cottage cheese, but I thought it was high in fat? I'm really confused and overwhelmed with the thought process that goes in my meal planning now.....lifestyle changes really. I put on my FB the other day, "I use to be consumed by what I ate, now I'm consumed with what I am going to eat." This thread has really been helping me.
We are getting a Trader Joes soon here. I can't wait I've heard so much about it on the boards here.
Last night we went to our new favorite restaurant. I had the magic salad - grilled asparagus, grilled portabella mushrooms, grilled tomatoes, over field greens. well worth the $12.
-
Yay!-Elder DD coming into town today. Making a bake of golden beets and brussel sprouts with minced onion and fresh herbs, brown rice and carrot "fries."
-
Egg whites with turmeric, black pepper on multigrain tortilla, red pepper paste instead of cheese, sprinkled with jalapenos. Melon on the side.
-
Making a pizza today with a home-made 100% whole-wheat crust. The topping will be 2T of plain tomato sauce (no sugar) thinly sliced tomatoes, sweet onions, fresh spinach, garlic, black olives, feta cheese and also Parmesean cheese.
-
That sounds delicious!
-
Thanks Selena, it is good. I have been making it about once a week. Just google "Close to perfection Whole Wheat Pizza Dough" to get the recipe on the Real Foodie website. You have to start the crust a day ahead but it is worth it. It is the only 100% whole wheat crust that tastes right to me.
-
Whole Foods makes a multigrain crust that isn't bad (for those of us who don't cook as well.) NNBBFL I am going to try it with plain tomato sauce to reduce the sugar (have been using organic classico.)
-
Hi ladies, sorry for my brief escape to reality.....DH dx with diabetes - not being a very good patient and trying mine!!!!!!!!
I bought the book, the Engine 2 diet. I think it might be what I have been searching for - a low fat vegan diet. Surprising I'm a few steps ahead already....not sure if I am going to boot all the fish out of my diet, but I have to tell you when I stopped eating animal products I did feel better...not sluggish in the afternoon etc. I also started taking a garlic pill as I read thought he Anti-cancer book. Do yall know if the garlic pill is just as good as the cloves of fresh garlic?
Went out to eat yesterday had the Magic Salad again! Grilled asparagus, tomatoes, and portabella over field greens, drizzled with olive oil.
-
I made a big pitcher of filtered water with cucumber slices, and lemon and mint from my garden. I chilled it for a couple of hours and it's very nice and refreshing.
Today I'm trying out a recipe for vegan and sugar free banana bread. I'll let you know how it comes out!
Sagina, sorry to hear about your DH. I've been slowly loosening up on sugar a bit (I love my kashi granola bars,) but your post reminds me to be cautious.
-
beets, beets, beets, I can't get enough of them. wonder what my body is telling me?
-
Well Gina, beets are said to have an anti-aging effect (and circulatory benefits) so go for it! So you feel peppy and young? Have you tried the golden beets? Our favorite.
If you like fruit breads, this one was pretty good, vegan and sugar free too. I had to make some substitutions because I didn't have all the ingredients:
2 tbsp flax seed powder, mixed with 6 tablespoons of water. Set aside.
Mix together:
2 cups whole wheat flour
2 cups mashed banana (I used 1 1/2 cup plus 1/2 cup of applesauce)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 teaspoon cinnamon
1/4 cup each of golden raisins and dried/minced apricots (or dates, dried cherries, etc.)
1/4 cup slivered almonds (optional. walnuts would be yummy too)
add flax and water mixture and mix well.
Dough will be pretty hard, but don't add more water. Fold into a loaf pan and sprinkle the top with sesame seeds.
Bake at 350 until toothpick comes out clean...about 50 minutes.
This is not a sweet loaf, it is more of a bread. If you cut off a nice 1" slice it will be a very filling 226 calories, and thought there are 45 grams of carbs the fat content is only 4! There is no added sugar, sweetness comes from fruit.
-
SAB your fruit bread sounds good and I like that it is all WW and no sugar.
My good food choice today was oatmeal with half a banana and honey. Also a half cup of plain organic greek yogurt with a tablespoon of cacao nibs.
-
Oh, I forgot some basics (sorry) spray loaf pan first...loaf will pop right out if you do.
NNBBFL I used Trader Joe's white whole wheat and it was good, but I think the darker would be even better.
Grilled veggies for dinner.
-
Yesterday was mock chicken salad sandwich from whole foods. Tonight meeting a friend at Vegeria - the vegan place! Can't wait for the posole - not carb free but too bad! it's sooo good.
thank you for the recipe.
I borrowed a cook book from a friend from Louisiana. It has some wonderfully sounding veggie recipes. Can't wait to try.
-
Cottage cheese/flax mixture with fresh mango and a tsp of honey for breakfast.
Smoothie with banana/organic milk/frozen berries for lunch.
Salad greens with cucumber and tomato and CC/flax mixture for supper.
Apple and almonds for snacks.
-
I tried Lentil chips today (The Mediterranean Company.) Some potato starch in them, but first ingredients are lentils and adzuki beans. Great taste for those days when I miss crunchy snacks. 110 calories for 22 chips, 3 grams fat, 0 grams sugar.
Multigrain pasta with leftover grilled veggies on top for dinner.
My best choice today was putting together a platter of sweets for a school function potluck and not tasting one bite.
-
Had a veggie sanchwhich from McAllister's Deli and a cup of veggie chili. The chili was ok, but leaving off the three cheeses from the sandwich left cucumbers and onions pretty much....scratch that one off the list. lol
-
Tomato season has started down here, and Greece really has good tomatoes. So my latest thing is to keep the fridge stocked with tomatoes. For one of my meals, I cut up tomato and onion, add a little garlic, lemon juice, good olive oil and eat it with some ww bread. I found a low-fat goat feta at the bio-store, so sometimes I crumple a spoonful of that over the top. It is very satisfying, quick and easy. I measured it out and one medium tomato is a cup's worth, so two tomatoes equal 4 servings of veggie.
-
Want to recommend my latest roasted veggie mix: quartered onions, lots of whole garlic cloves, chunks of sweet potato, halved or quartered beets, whole baby roma tomatoes (just a handful), salt, pepper, olive oil, roast for 30 minutes or so turning once or twice. Veggies should be cooked through and browned a little here and there.
I crumbled a little goat cheese over the top and it made a really good lunch.
-
Dinner last night - I have a lot of zucchinis from the market and okra and onion. So I got brave - a little olive oil in the pan, added the onion, garlic, cut up okra, golden zucchini a little "No Chicken Stock" and a can of rotel. Threw in some quinoa for filler and protein.
Not bad, a little spicy, but not bad.
-
Leftover rice and tomato sauce, so I'm making veggie stuffed cabbage for dinner today. Leftover grilled corn and chicken breast too, so I'm making a Southwest salad for lunch, dressed with lime juice and a touch of olive oil.
-
Last night dinner was Smart ground crumbles with a little barbque sauce on a whole wheat bun with onion and pickles - vegan sloppy joes!
-
Organic blue corn chips with a salsa made from cut up sweet onion, roma tomatoes, mango, and avacado mixed together wih fresh lime juice. Mix up the salsa ahead and allow to chill in the fridge for awhile.
-
Reading a new book "the engine 2 diet" low fat vegan diet - great suggestion for guacamole - use a cucumber deseeded and dice really small. Then you can use less avacado if you are looking for low fat.
Last night made vegan "chopped barbq" with steam veggies - farmers market green beans, squash, mushrooms, and onions.
-
i'm doing the engine 2 diet too! love that they have recipes on pinterest!
-
Spent just 10 min reading all these goodies, so inspired. Momine, I have all but the sweet potatoes for your lastest, will try it w new potatoes this time.
Just made vaggie soup w cabbage, potatoes, beans, carrots, corn off cob, some organic stewed tomatoes from a can and turnips, but it is too sweet. Added a beef base but did not want to. Don't know what to add to save it except going for a few cans of tomato somthing. Vinegar? Just kidding.
My favorite meal is summer tomato slices with crispy cold toast that has cream cheese spread on. A little Celtic sea salt. now we are in raw organic dairy herd, I am making own ricotta, cottage cheese, yogurt, and kefir, so learning to make cream cheese from kefir.
-
Essa, Greeks often pour a little vinegar over plates of lentil or bean soups. It has to be wine vinegar, but it works. Another thing they eat with soups like that are slightly hot, pickled peppers. Jalapenos from a jar would work nicely probably.
-
Tonight we had a chickpea and squash curry (minus the hot chili). I made it in a slowcooker yesterday (so I wouldn't have to cook after chemo today) and it was so easy to just plug it in to warm a couple of hours before supper.
