I like to use my crockpot, but need some new ideas.  Hopefully some of you have some good recipes you will share?

Here is what we are doing tonight.  

Salsa Chicken

Spread some salsa in the bottom of the Crockpot.  Put in chicken breasts and then pour more salsa over top.  Cook on low for 8-10 hours.  Right before serving, stir in some sour cream.  (I'm also making rice to serve with this, some salad and have a loaf of bread in the bread machine.)

Anybody else have any dinner ideas?

    THAT sounds easy and good!  I just did a pot roast in mine yesterday.  Brown the meat on all sides, throw in onion, potatoes (didn't even peel them, just scrubbed 'em), carrots and celery (got the kind already cut up at the store and just broke them in half), 2 jars of mushrooms on top, a little water, and walk away!  :)

    Love my crockpot! Here is my family's favorite!



    One can of your favorite cream soup (we use Campbell's cream of celery)

    Four or five boneless, skinless chicken breast

    One box of Stove Top stuffing



    Mix soup according to directions, pour half in bottom of crockpot

    Place chicken breast on top of soup, pour rest of soup over chicken

    Mix stuffing according to directions, spoon uncooked stuffing over chicken

    Cook on low setting for six hours.



    Then serrve with cranberry sauce, carrots, etc.... My Boys love this! So easy!

    I left instructions with stepson to make crockpot carnitas tonight:

    2 lb country style pork ribs (boneless)

    1 t each Mexican Oregano, Salt, black pepper

    1 T Cumin

    1 heaping T minced garlic

    Juice of 1 lime

    Mix all the ingredients.  Put in a crockpot.  Top with 1 onion, quartered.  Cook on low for 6 hours.  Shred the meat with a fork.  Serve on tortillas with salsa, cheese, avocado.

    Here's another very easy one;



    One whole chicken, rinsed, salt and pepper inside and out

    One lemon, prick all over with fork

    One half cup honey

    One half cup Ora ge juice



    Roll, press lemon, then prick all over with a fork

    Place lemon in the cavity of the chicken

    Place chicken in crockpot

    Pour 1/2 cup orange juice into a measuring cup,

    Pour 1/2 cup honey into same measuring cup (pour honey 2nd so it doesn't stick in measuring cup)

    Mix OJ and honey, pour over chicken, cover, and cook on low for 6-7 hours.



    Chicken will literally fall apart when done. Serve over rice or buttered noodles.
