    Wow! I have not canned for years but had always used the boiling bath unless it was something on the alkaline side then I used a pressure cooker.



    But this applesauce is something I sure am going t try!

    So very awesome..made some soup for lunch out of leftovers..needed some tweaking but forgot how easy the vita mix was to make soup. Jane basically did what you did used some leftover steamed veggies added some extra veggies was good accept for I put in a half a piece of chicken breast thought I had read back that someone else did that and I didn't care for the texture difference..my DS liked it! Lol



    Scuttlers those are awesome and so easy sounding. Im gonna look that dehydrator up..I had a simple one from theBX that just never quit worked right. I so wish it was farmers market season. Would be nice to have really fresh veggies.

    I was thinking of adding some leftover chicken, but if i used some milk in it DH would not eat it because of the nonkosher aspect.



    So I added a cup of skim milk, some slices of white cheddar cheese and half cup of veggie broth.



    It is fabulous--creamy and thick, and now my question is how to finish it off. I may try a little lemon and mustard--little bit of each, taste and adjust.



    I do love to fool around with the finishing and spicing of receipes--change a few spices and you have a whole new recipe!

    OMG - so there we were at Costco yesterday, and they had all these greasy, salty appetizers at the sample tables....and then.......the VitaMix demo area!!!

    We sampled a tasty "green" drink that was full of veggies but very sweet (due to apples, I think) and refreshing, thanks to the half a lemon he put in there...unpeeled, unseeded, half a lemon!

    We also had some veggie sorbet which was delicious, and some tortilla soup.

    The fascinating thing about the soup, was that it was essentially RAW veggies! Puree stuff long enough in the VitaMix and it heats up...duh!

    That was enough for us....we threw one in the cart and paid $394 for it.

    Now I understand that in addition to the "Whole Foods Recipes" cookbook that came with our package, there is a new cookbook they have called "Live Fresh Recipes"  for $59.

    This is the description:

    I called and talked to someone in Customer Service to ask about duplications in this book, and she said that there were 57 recipes in "Live Fresh" that were also listed in the "Whole Foods" cookbook.

    Can't wait to get started!

    Blessings, I use mine everyday! Keep it on the counter, ready yo go. Making soup for dinner, open the fridge - in goes tomatoes, celery, carrots, rutabagas, onions, potatoes, mushrooms, peppers - whatever I can find. Into the soup pot. Baked glut in free rolls. Spinach salad. Mmmmm.

    Ice, margarita - blend. Better than ativan for an evening relaxation. (can be virgin).



    Lemon, (no need to seed or peel, can use lime or quamquats), water, mint leaves, and the surprise cucumbers!, ice, a liitle sweetener. Mmmmmm...

    scuttlers - thanks for mentioning that.

    On the phone today, I told the CS person at VitaMix about the demonstration we watched and the drinks we sampled, yet everywhere in the cookbook it says to peel and seed all citrus. Her response was 1) The demonstrators make up their own recipes, and 2) You put in the VitaMix blender fruits and veggies the way you would eat them. If you don't usually eat the peel, don't put it in. If you don't usually eat the seed, don't put it in.

    I thought that was kind of a dumb answer....after all, I wouldn't throw a whole, unpeeled, unseeded avocado in there! But that lemon...sure was refreshing! I asked her if putting in unpeeled, unseeded lemon would somehow void our warranty while all we were doing was following what our demonstrator did, and she just repeated the above answer.....Yell

    We plan on putting the food processor and the blender away, and keeping the VitaMix out!

    I purchased the Vita Mix on line and it came with a very nice cookbook..Whole Food Recipes...it's called.  I have been using my juicer for a long time, so I'm looking forward to making some smoothies in this new mixer and some soups.

    Rocktobermom:  The ice cream sounds absolutely delicious...can't wait to try it.  Where did you find the recipe?  What a great way to get kids to eat their veggies!

    I used to keep my counters clean, but after being dx with bc and dramatically changing our diets, I have it all out on the counter now.  My DS says it looks like a tool shed!  Oh well, at least it's being used!

    My food processor and blender are in the garage sale boxes for spring! LOVE the Vitamix!

    Another convert here.  I got the Costco Vitamix last week.  It's great for my kale-banana-frozen blueberry smoothies.  They are no longer chewy!  On to soups.

    OK...I made my first smoothie today.  Whatever you do, DON'T use the lemon rind, unless you like really bitter lemon taste...I don't.  I had to add some stevia to cut the bitter taste, even after adding two apples.  Next time I will just leave out the lemon and it will be great.  I used herbs & lettuce, cucumber, yellow pepper, celery, apple, ginger, pineapple and of course a small piece of lemon w/rind.  I got mine down with the sugar, but my boyfriend wouldn't drink it.  I have quite a bit left and hate to waste it..any ideas on how to fix?

    All that said, it's really easy to do and everything mixes up great...couldn't believe my eyes with all the chopped stuff I put in.  The recipe book is full of great smoothies made with fruit, but I'm not supposed to have too much sugar, even the natural kind so I'm going to look for some green drinks similar to the ones I juice.

    I prefer the blendtec, I was making raw meat dog food and the vitamix kept over heating, also one of the blenders separated from the blade also, also a tamper got chewed I forget how...the blendtec does not utilize a tamper...thanks for this forum, i wrote before i read it so hope i dont disappoint by this post!

    I see there are new posts....I had not been on the forum for a long long time!

    One show had just frozen banana, seems like ice cream....

     I like to do sorbet for company, just rice or almond milk and frozen fruit.

     They say frozen fruit is picked at best time...so it's a lot easier to just buy bags of frozen fruit or freeze your peeled bananas in a bag..and use as needed. They really seem to make a smoothie good...that frozen banana and it's so easy! 8-)

    I had forgotten you can throw whole lemon or lime in, it was okay for me.

    On tv jack lalane juiced a potato, I read that that is NOT good. Never do a raw potato...

    DH and I are having fun experimenting with fruit and veggie smoothies.

    Tonight we made the Tortilla Soup, only somehow the texture came out more like really thick split pea soup. ( I used 3 cups of water but may have put in extra veggies...) It was still really good.

    The only thing is that I used two cloves of garlic, and now I don't think either of us can go out in public again for at least a week!!!! Embarassed

    I made a butternut squash soup in mine yesterday that was to die for.  I bought some already cut up squash at Costco's and roasted it in the oven with some ollive oil.  I sauteed onions, celery, garlic some cumin and a little salt, added a carton of chicken broth, and then added the roasted squash.  I heated the mixture to almost boiling, then added it to my blender and blended until smooth.  At the end I blended in 3 oz of cubed cream cheese for a thicker consistency.  I had it cold today, and it's just as good!

    Next I'm going to try and recreate an avocado soup that we had at a gourmet mexican restaurant several years ago.  It was made with avocado, lemon juice, sour cream and cilantro.  It's served cold.

    I asked DH what he had for lunch today, and he said he took lettuce, cottage cheese, half a pear, some spinach and ice cubes and made himself a smoothie. Creative guy!

    It's a beautiful day in S. Florida and I'm packing all of my leftover veggies into a pot to simmer, and then into the blender to make fahita soup.  Add some black beans and avocado as a topping.  It's my own recipe...I don't follow recipes very well, so we'll see how this turns out.  If it's good I'lll post it.

    Several people asked me to post the recipe for the above soup so here goes:

    Take a couple of handfuls of baby carrots, 2 stalks celery, garlic cloves (4), 2 onions, yellow squash, zuccini, chop all and sautee until onions are sweating.  Add cumin, chili powder, garlic salt to taste.  Add 2 cups of chicken broth and simmer until carrots are just tender.

    Put in blender and run on high until smooth.  Add more broth to desired consistency, and more seasoning to taste.  Can be served with black beans, avocado, salsa.

    It was very good!

    Is the VitaMix the best juicer out there? Is it normally sold at Costco, or only when they are demo'ing it?

    MaryNY - the VitaMix really isn't a juicer...it's a blender with the speed of a jet engine (or so the demonstrater told us! Smile)

    Whatever you put into it - peel, seeds, core, etc. - gets completely pulverized, retaining all the fiber.

    I see that Costco has them for sale online - this one comes with a whole bunch of added containers, blades, cookbooks....and a knife.

    I don't know about them always being in the warehouses. We certainly didn't pay this much; ours was $394 when we bought it after the demonstration. However, ours just contained the blender, a DVD, and a cookbook.

    Just got mine today. Tested it out with a "kitchen sink" smoothie--odds and sods from the fridge: ice, celery, frozen stir-fry mix, tangerines, a pear, frozen blueberries, chia seed, and rice protein powder. Sounds nasty, but was delicious!

    I think you can do almost anything with this Vita Mix.  I have't made a recipe yet that we didn't enjoy!  It's so easy.  I'm inviting friends over for dinner on Saturday (I know they are suspicious because we are on this new no starch diet, and wondering what they will get to eat) so I am going to make my butternut squash soup to serve as a first course, a nice green salad, then do a smoothie with fruit and yogurt for dessert.

    Haven't decided what the main course will be, but probably something conventional so they will return for another meal:)  My friend is a gourmet cook, and I have never been able to duplicate anything she makes...it is all so complicated to me, but I think this soup is as gourmet as it gets!
