So...whats for dinner?

Carol- here is the chicken dish you asked about:
BELGUIAN CHICKEN <font>Belgian home cooks make many hearty one-dish meals using beer as the cooking liquid. Use Belgian beer if it is available in your area, otherwise use a full-flavored beer of your choice.
Belgian Chicken Braised in Beer (Kip en Bier, Poulet a la Biere)
4 to 5 lbs (1.8 - 2 Kg) chicken pieces
Salt and freshly ground pepper to taste
1 Tbs (15 ml) vegetable oil
1 Tbs (15 ml) butter
8 whole shallots, peeled
12 - 18 large mushrooms, trimmed and quartered
3 cloves garlic, finely minced
1 tsp (5 ml) sugar
4 carrots, cut into 1 inch (2 cm) pieces
2 Tbs (30 ml) all-purpose flour
1 - 12 oz (340 ml) bottle Belgian beer
1 cup (250 ml) beef stock
1 tsp (5 ml) dried thyme
2 bay (laurel) leaves
Finely chopped fresh parsley for garnish
Season the chicken pieces generously with salt and pepper. Heat the oil and butter in a large, heavy pot over moderate heat, and brown the chicken pieces on all sides. Set the chicken pieces aside, and to the same pot add the shallots and mushrooms. Saute for about 5 minutes, until lightly browned, and add the garlic and sugar. Cook for 1 minute, stirring constantly. Add the carrots, and sprinkle the flour over the vegetables. Stir to incorporate the flour with the butter, making sure there are no lumps. Add the beer and the stock, stirring to dissolve the flour and to scrape the bottom of the pan. Add the chicken pieces, thyme, and bay leaves, and simmer covered over low heat for 30 to 40 minutes, until the chicken is tender. Remove the cover for the last 10 minutes, allowing the sauce to reduce by about one third. Serve sprinkled with chopped parsley. Serves 4 to 6. -
michelle- Hope you get some good sleep tonight, you must be starting to wear a bit thin by now, but you are so strong you amaze me! Do you have 10 tx left?
Kay- I think the only reason why im not crazy about indan food is, i never did like curry i have tried to use it in some dishes but couldnt aquire a taste for it, i finally threw the spice out. They say it is good for you though.
-
I had a really good friend growing up that was Indian. When she asked me to sleep over I always asked my mom to drop me off AFTER dinner. Sometimes it couldn't be avoided and I would have to do dinner at her house and I ate and smiled and said thank you it's great. But peeeyew! I was young and it was stinky and the whole thing I think has stuck with me. I can't stand curry.
-
Laurie- LOL! funny!
-
Today : Ne england clam Chowder Soup in Sourdough Bowls!! no crackers.....easy peasy and YUMMM...I'm on a seafood Kick! Need to boost my protein intake and lower my fat.
I don't eat much of the bread, just the soft innards that I can scrape out with the spoon when the soup is gone.
-
Debbie - yes, 5 full treatments and 5 to my scar line. I slept very well last night and actually slept in until 8:30 this morning! So maybe it's catching up to me a bit or maybe it was the drugs I took
-
You're getting there Michelle! After today, you'll be in the single digits. I didn't have any boosts, but I think I hear that your skin begins to heal while doing them. I was also shocked how quickly my skin got back to normal. I finished 11/11 and it is as back to normal as it is going to get now I think. Just a slightly different shade than the other breast and I hear that will always be the case. Hope you get through without any more difficulties.
That is funny about your Indian friend Laurie. I was such a picky eater as a kid. My mother cooked very plainly, and I didn't like anything much outside of what she cooked. I remember eating over my friend's once and they had meatloaf. My mother made it with tomato sauce on top, but her mother made it with a brown sauce. I tried, but I kept gagging every time I put a forkfull in my mouth. And my friend was Italian, should have gone on spaghetti night!
When do you leave for Hawaii Debbie? It's coming up, isn't it?
-
shechirple that sounds so yummy...we have a restaurant here, its actually a castle, and they serve a clam-corn chowder in a bread bowl like that, and its to die for. I get itevery time I go there.
Laurie funny story. I do love curry though in small doses. Love curry sprinkled on my fried eggs.
I am not into the meal planning either, if someone would just tell me what they want, it would be so much easier. Love it when I cook something and my DH comes home and says "oh, I had that for lunch" When the kids were little i usually just catered to what they wanted. Now if I dont feel like cooking I just dont!
went out to bar/restaurant for hump night, they have a steak special every Wed and it was terrible. All the meals (10 of us) came out sporadically and I didnt get my steamed broccoli until my dinner was gone. Very disappointing.
-
I'm making a beef wellington for friends for tomorrow.. and will probably have chicken breasts tonite with some sauce or other and plain rice.. my kids are not eating as much salad.. and i seem to have leftover salad for lunch everday.. get a clue and make less salad? it's hard to teach an old dog new tricks.

Debbie, thanks so much for the Belgian Chicken recipe. I will put it in my recipes notebook and try it. It sounds delicious. A bit similar to southern "smothered" chicken but with some additions like the beer. What is a Belgian beer brand?
Laurie, I did make the pizza dough, and it was so easy. You mix flour, packet of pizza yeast, honey, olive oil, salt, warm water. I don't have a Kitchen Aid mixer, so I mixed by hand with a wooden spoon in a bowl. A minute or two of hand kneading on floured surface. Chop the dough in two pieces. Pat it out into circle on a piece of parchment paper on a wooden peel. You're ready for toppings!
DH and I each did a half (about a 12 in. circle). I spread garlicky olive oil over the whole dough. Italian sausage cooked and broken up ahead of time. Tomato sauce on his half. Sliced fresh tomato, minus seeds, on mine. Sliced black olives over all. Shredded mozzarella over all. Into the oven, 450 degrees, onto preheated stone. Ten min. later. Voila! Beautiful pizza with browned edges and browned bottom. It was delicious. We had the little bowl of garlic and olive oil on the table and dipped the bare crust around the edge in the oil. On a bought pizza this crust is tossed in the garbage.
The whole process of making the pizza was no more than 30 min. I have a leftover ball of dough in the refrigerator and leftover sausage. Plus a couple of leftover slices from last night. We each ate two slices. WW would have recommended one slice!
The best part is weighing this morning and not being heavier on the scales. Bought pizza is salty and causes me to retain fluid. I put no extra salt on my half. Just fresh ground black pepper.
Dh loves curry. I wish we had a good Indian restaurant. I've never eaten at one. I'm sure there is one or more in New Orleans. I should do some research. Is the food hot with pepper? I have a recipe for chicken salad with some curry spice and it is good. But not exotic.
The clam chowder in a bread bowl sounds delicious. One thing we love about visiting New England is eating delicious clam chowder.
I must go walk my 3 miles. It's sunny outside. Later today I'll take my mom for her hair apptment and buy her groceries. Hope everyone has a great day.

We started to make our own pizza several years ago, and it really is much better. We usually make it with fresh tomato. I slice it thinly and chuck it in a bowl with olive oil, salt, pepper and garlic. When topping the pizza I fish out the tomato slices, leaving behind the seeds and juice.
Another topping we like is spinach and clumps of goat cheese, maybe with some sundried tomatoes or sliced portobellos thrown in.
Lastly, for a total carb bomb, there is Roman potato pizza. Simply top the dough with olive oil, and then very thinly sliced potatoes (I use the food processor) that have been tossed with olive oil, garlic, salt, pepper and rosemary. You can add thinly sliced onion as well.
-
Momine, those are some great ideas for toppings. Do you pre-cook any of the veggies? Our pizza cooked in 10 min. on the pre-heated stone. I recently bought one of those pizza pans with the little holes. You cook the pizza longer when you use those pans. I especially like the spinach and goat cheese suggestion. I have eaten bought veggie pizzas with artichoke hearts. I also want to try asparagus, sauted ahead of time. The potato pizza sounds yummy.
-
I am drooling over here.... I am eating a sandwich and reading about pizza. The sandwich is not cutting it. Love a pesto pizza too. Pesto with spinach, fresh tomato and Gorgonzola.....mmmmmmmm.
Ladies you may have inspired me to make my own pizza next week
Carol can you post measurements for the dough please?
-
Carole, yes, if I use spinach I wilt (or thaw, depending) it first and squeeze out the water. The potatoes will need more than 10 minutes to cook, but not much. The trick is to have them sliced very thinly. The same goes for the portobellos. If you slice them thinly, they will cook ok.
-
Laurie, for dough, I take a teaspoon of dry yeast, dissolve it in 1.5 cups of warm water, let it stand about 5 minutes for bubbles to form, beat in some flour, a splash of olive oil and about a teaspoon of salt. Then I knead in more flour until I have a soft, but non-stick, elastic dough. You can use it straight away, but if you make it in the AM and let it rise in the fridge all day, it gets chewier. Just punch it down well before using.
-
Momine thanks for the dough recipe, I have such a hard time finding premade dough in the stores that I like. i am going to try this recipe.
Making chicken parm tonight with spaghetti.
-
thanks Momine- do I get the dry yeast in the baking isle at the store?
Pork chops and gravy tonight with mashed potatoes and zucchini.
Carrie- Love chicken parm, enjoy!
Apple- I am sure you know the salad trick, but just in case...did you know if you wet a paper towel and lay it on top of your salad in a sealed container it keeps is fresh for much longer? When I worked out of the home I would make a huge salad on Sunday and do that and eat off the salad all week when I packed my lunch.
-
Tonight is Pasta Carbonara, my husband's fave, made by my husband, which is my fave...lol! Not healthy at all but oh so good!
Still had leftover rib roast and diced that up and froze it along with the bones... Will make beef barley soup sometime later in the month when I can enjoy it again....
Love a good home-made pizza whether in the oven or on the grill..... The rosemary, potato combo is out of this world but definitely a once in awhile one.... A real favorite in our house is pesto, chopped artichoke hearts and sliced, black olives... Sprinkle with shredded mozarella and, OMG... heaven.... The best part of making it at home even if you buy the dough (which I do) is everyone gets the toppings they want!
Going to make the Belgian Chicken this week!! -
Has anyone tried those Bourbon Beef Tips? They are sooo good with Rice Pilaf.

Mmmm....all these pizza creations sound yummy!
Another bit of a wait for rads treatment this afternoon. I'll be glad to get back to the 5:40 timeslot next week! Glad I have just four full ones to go, my chest is looking pretty nasty. I won't be wearing any plunging necklines for New Year's Eve...LOL!
-
Michelle- Glad you made it back safely, yuck on the skin though
I hope you get some relief with your creams and cortisone tonight again.
Deb- Happy Birthday to your DD!!
Pizza- here is something to make you all laugh. When I was pregnant with my first son I wanted pizza all the time for a few months. And I mean ALL THE TIME. DH complained about it, "pizza again??" I recorded a special on the food channel talking and showing pizzas and the different kinds, deep dish, thin crust, Chicago etc. I would put it on for when my DH would get home from work and ignore the tv and just be doing something else. Within 15 minutes he would say, ooooh, pizza looks good for tonight, what do you think? Worked like a charm
-
deboreye, those pictures are so sweet. doesn't it make you smile to look at them?
luvrving keep going, you're doing great! 1 month post and looking pretty good That aquaphor or what you're using will do wonders for your feet if you put it on before socks at night. So save it, soon you will want pretty toes.
Im sorry for those who I missed, there is so much to read! I hope everyone who I missed is doing well
For dinner, nothing! It's my birthday so I did laundry at the laundromat, cried because my benefits ran out last week and I didn't realize it, stepped in dog shi$, got my free car wash for my birthday, told my bff and daughter that I was too upset about my financial situation to go to dinner, then at 7.00 pm got a firm job offer! The director called me and told me he was instructed to call ASAP because I might get another job!!! So, Im having a beer and greek yogurt for dinner, I know, weird me. So its a good birthday! :O
-
Happy Birthday Bedo and so happy to hear of the job offer!
A celebratory beer and a greek yogurt sounds just fine to me...lol! -
Happy Birthday Bedo! Glad you had an excellent end to your day!!! I don't know how people sleep with socks on...lol! My feet get hot and then my whole body is hot! I use the Moisturel or Beautiful body cream and it works pretty well. I'm planning to go to Florida in February and I'll get a pedicure before I go.
-
Michelle,
Glad to hear you are getting to the end... Sounds like one tomorrow then the weekend to hopefully heal a bit and then 3 more... So hopefully things won't get much worse...
I was one who got pretty burned during rads. Started with the prickly rash around week 3 and by the end of the regular appts my skin had begun to resemble the look of cooked bacon... yuck! However, I found the boosts to be not nearly as hard on my skin and saw noticeable improvement during that week! Ironically, the worst areas were not even in the actual field they were radiating but, were due to radiation 'scatter'... I found that my skin healed amazingly quickly afterward and today, other than having a slight tan, you would never know...
Hope the remainder of your appointments go smoothly and that you aren't too uncomfortable! -
Bedo- Happy Birthday! Congrats on your job offer and ending it all in a great way. So sorry you had a rough patch in the middle, but it all came around
So happy for you, 2012 will be great!
-
So many post to keep up with and remember, busy, busy!
Bedo- Happy birthday, sorry about the dog $hit! LOL!
Kay-We leave on the 7th to drive to portland(2 hours) and stay in a hotel there then fly out at 630 am on the 8th will arrive in hawaii about 1130 in the afternoon. woohoo!
Carol- I think the belgian beer taste more like an ale, i couldnt find that one so bought a germain one ( I think) and i believe laurie used bud light? So any beer would do but it does give it great taste and depth.
Michelle-Im glad you slept in, i know you needed it.
I cant remember what everyone else posted on the previous page now, sorry if i missed you.
Im drooling too all this talk about pizza- I like to buy pizza dough and roll it out and cut it in squares then put about 12 slices of pepperoni and some mozzerella on one side then roll up( i dont miss the sauce in this at all) I put an egg wash on the dough and bake until brown. So easy and fast and my DH loves these.
I thought of one indian spice i do like and that is tumeric i put it on my cottage cheese with lots of pepper, suppose to be healthy for you and i do like it.
-
Deb- You look so cute pregnant.
-
Deborye,
Was thinking the same thing! You look so young and happy!
PS... We had almost an identical chair in my house.....
