    Had Lasagna for dinner, now I'm full.

    Easy drive to and from Boston tonight, plus dinner at a great restaurant in Chinatown.  Had sauteed lobster with ginger and scallions, and a beef with peppers, onions and pineapple that had a most delicious sauce.  They are moving my times up to closer to 6 p.m.  DH thinks we'll hit more traffic, he's not sure he likes this time slot.  We'll give it a try and see how it goes.

    Haven't made beef stroganoff in a long time, that sounds yummy, apple!

    Luckily I don't have a copay for rads, at least not this year.  It does all add up, for sure.

    Glad you had a good dinner and are back home! I'm sure days off will feel really nice....



    When I had my rads done my insurance was an 80 (them)/ 20(us) split until we reached an out of pocket max for the year after which all of those types of expenses were covered in full. By the time I had rads we had met our out of pocket max so it was covered in full.



    Last year our coverage changed to a co-pay for both rads visits (25 or 45 depending on which plan you chose) as well as chemo.... Seems to be the general direction that insurance plans are going....

    Ladies:  I need to report on my Thanksgiving cruise from Galveston to Key West to Nassau & Freeport, Bahamas.  It was a "lets blow the budget" trip since my BMX & exchange surgeries are done and my girl friend wanted to escape the anniversary of her daughter's death last year.  This fits with a food thread because we ate continuously for 7 days.  We got to laughing if we hadn't eaten for 2 hours & had to at least go find an ice cream cone.  I expected to gain 10 lbs, but was fortunate to hold it to 5.  With a few exceptions, everything was very good.  The best prime rib I've had in a long time.  Great filets & lobster.  Sumptuous desserts.  I seldom make desserts since I live alone.  Wonderful not to plan & shop & cook and just have a menu presented for my choices or a buffet spread ready.

    One different thing was the lasagne.  It was made with beef like a pot roast or shredded roast.  There was only 1 noodle on top & 1 on a 2nd layer with a bit of spinach.  No ricotta to speak of & a thin sprinkling of cheddar on top.  The 4x4x3 piece had enough meat to feed a family of 6.  We always made lasagne with ground beef or vegetarian, but maybe this is authentic Italian?  Any thoughts?

    I love reading this thread.  Thanks for all your ideas.  I have at least 4 friends who now make Laurie's Salsa Chicken regularly.  Or with pork, or olives or whatever is in the fridge.

    That cruise sounds soooo wonderful and how great that you could enjoy it with a friend!



    My husband and I, although we were so young and not yet married (although don't tell my Mom) took a cruise (so like 100 years ago...lol).... We didn't have much money at all and I think we stayed in the cabin level just above 'having to row the boat'... lol but, we had such a great time!!! The food was beyond delicious and sooooo beautifully presented that we took pictures!



    I am hoping that, now that our kids are older that, we can do another cruise soon!



    Haven't heard of that twist on lasagna but, sure sounds intriguing!

    Minus Two- Wow!  I am flattered!!!  Though I still have to give credit to my friend Maire Lee-  I got it from her :D  I have never heard of lasagna being done that way- was it good?  I love all inclusive trips-  just eat eat eat.  We plan on taking a trip in Sept. for our tenth anniversary.  All I want to do is eat, sleep, read and lay in the sun.   ahhhhhhhhhh.  Glad you had a great time.

    Michelle- It sounds as though with the dinner stops on the way home you will be eating like a queen for a month!  I hope it makes the long drives and the zaps tolerable. 

    Carrie- I could feel your frustration through your post- it sucks (((hugs))))

    Deb I guess it's a lasagna night!  Mine came out great and I ate a ton!  Still have enough for another dinner early next week.

    Tomorrow I have to go pick up a friend from the hospital and take care of her for the day while my DH takes the boys to a train show in Mass without me.  I am planning on doing pulled pork in the crock pot so we will have dinner by the end of the day without me cooking.  The gearing up for Sundays birthday celebration for my soon to be 2 year old, his actual birthday is Wednesday, but he is SOOOO excited.  It makes me excited.

    Happy Birthday to your little guy!! Their excitement for everything at that age is contagious!!



    We do a summer week at the beach most summers and, I agree.... It's eat, sleep, read and sun but going to add a few 'adult' beverages to the mix!! We have started to add some smaller trips to the mix, mostly day trips, but I so look forward to that week at the ocean!

    Seaside- Did I forget to mention drinks?  YES,  drinks. :D  Our new favorite at the end of summer was fresh squeezed lemon-aid with blueberry stoli- super yummmmmm.

    apple- I have to add, every time you talk about the bread you make I am drooling.  I went to my dads and borrowed my grandmothers china for Thanksgiving and saw a bread maker.  It KIND OF makes me want to try.  But you don't use a bread maker do you?

    minustwo-Sorry about your DF's daughter. Sounds like you had a wonderful time, and the food was up my alley all the foods i love, did they have poker machines on the ship?

    Carrie- Ejoy that beer you deserve it!

    Laurie- Hope your friend is ok. blueberry stoli with lemon aide sounds pretty good, tonight I didnt have my usual margaritta's DH had a rough day he had to fire 3 people, he really hates to do that but it had to be done, I knew he was in the mood to drink and knew i would have to drive so i had 2 bailey's and coffee. oh well at least i will feel good in the morning LOL!

    Tomorrow im making a pork roast- marinated it tonight with a rub (butche's smack your lips) and garlic and dijon mustard then will cook on low for  about 8 hours, its soooo good.

    I forgot to get an engagement card for DD and Nick, I will buy one today.  Any suggestions on what to send as a gift?  I am so out of the loop on edicate things to do I should be ashamed of myself.

    Hey Ladies...............sorry I went from to insurance on the Whats for Dinner thread, and to be honest I don't know how I did, but I'm sure someone else also mentioned the cost of Rads..................well anyway it does get expensive.

    Also Kay you can "rant" as much as you want, and your right sometimes people with insurance have to pay more then people without, because if you don't have insurance, you can go to the "welfare" office in some states and get it.................now that is "no insurance", not sure about people with "bad insurance".................

    but like I siad the other day .........I can go to BJ's and buy a bottle of frigging tylenol for (and a name brand) for $7.00.....................a hospital will charge $2.00 for the same pill...........wonder why its so high............

    This is also crazy...............going over my Explanation of Benefits the other day on my pharmacy paperwork, I realized that one of my prescriptions, I pay a co-pay of $5.99 for a 30 day supply,,,,,,,,,,,,,,,,,and the insurance company pays .00, that is what it said..........now how is that for a kick 'in the ass.

    Minus2, glad you had such a good time on your cruise! 5 lbs is nothing to gain on one of those. The delicious smells alone can do that. We went on a family cruise several years ago. It was wonderful, they had an ice skating rink, a climbing wall, a miniature golf course and other things to keep everyone busy and happy. Would love to go on one more geared to couples some time. What cruise line did you go on Minus2?



    Our sink is leaking badly. The water just comes right out the trap. I hope the plumber calls back soon to fix it. It has been like this dice Thursday night, so last night we went to this small breakfast place that just started serving Mexican dinners on Thursday and Friday nights. We got there a little after six and were the only ones there. The food was good and so were the prices, so I hope business picks up for them. I am going to check with some friends of ours to see if they want to go next Friday. I had vegetarian quesidilla, it had spinach and cheese and onions and tomatoes and black beans and was really good. DH had tamales made with shrimp and liked that a lot too. I could probably make that quesidilla myself too, I will have to give it a try.

    Hauntie, are you done making your holiday cookies? I baked Duncan Hines cupcakes the other day for my sister's birthday, and that's the first thing I have baked in months. Trying to get some motivation to make some Christmas cookies.

    Deborey, sorry, I am not in the know on engagement gifts. I do think with the costs of weddings nowadays, a lot of the old etiquette rules aren't followed anymore, but that is as much as I know.

    I have a wonderful recipe for garlic & sage crusted pork tenderloin.

    2 garlic cloves finely chopped (about 1tb)

    1 tb finely chopped fresh sage

    1 1/4 ts pepper

    1 tb EVOO

    1 pork tenderloin (about 1 1/4 lb) tied with ketchen twine

    1 tb veg oil

    Preheat oven to 400 deg. Stirir together the garlic, sage, salt, pepper and EVOO in a small bowl. Rub mixture all over the pork.

    Heat a lg heavy saute pan, I just use my cast iron one, over med-high heat.  Add veg oil. Add pork and brown on all sides, about 4 min.

    Transfer pan to oven. Roast pork, turning occasionally until the instant read thermometer inserted into the thickest part registers 145 to 150, about 20 min.  Transfer port to a cutting board; ten with foil and let rest 10 min before slicing.

    Let's not abandon the insurance rant quite yet. I received a bill for $293 for a splint. My insurance only covered $43 of it because they considered it "durable medical equipment" and there is a $250 deductable for such items. This was not a custom made splint. The was an over the counter cloth/velcro item. I got nowhere with the insurance company, when I argued with them for considering an over the counter splint durable medical equipment.

    I found the exact same splint on line for less than $30.00. The hospital is charging  a 1000% mark up. No wonder why health care costs are out of sight.  My surgeon was appalled when he found out. I ended up losing the damn thing. When I went in to get another the PA just handed me a couple and said "I never saw you here today."

    This is still bugging me and I haven't paid the bill yet. So today I wrote a letter to the CEO of the hospital. I told her that since her's was the desk where "the buck stops here" that I thought she should be the one I made aware of the situation. I don't know that it will do any good, but it made me feel a little better. If I could, I'd walk into the billing office with $250 worth of pennies. Not a feasible option, but they will be receiving their payment in very small installments.

    i don't use a bread maker.. but why not.? I am into the 'process' of bread making.  I like to knead and experiment.  I don't particularly like the shape of the loaves that come from bread makers.  The sour dough starter I use creates an almost too crusty crust.. The yeast bread is too soft.  I need to get back to basics and follow a real recipe.

    Kay - Not quite done baking yet.  I  have a batch of triple ginger cookie dough chilling in the fridge right now. These are ginger cookies for ginger lovers only. I checked on line to see how to chop the candied ginger, since last time the food processor turned it into mush. I followed their advice and sprayed my knife and cutting board with cooking spray. It worked like a charm. I also found out how to make ginger sugar by putting the candied ginger in the food processor with regular sugar and pulverizing the hell out of it. I'm going to roll the balls of dough in it before I bake them. Then wrap and freeze until I need them. See if you can interest your daughter in helping you bake cookies. You could also make and freeze the dough, then bake them later. That way it's not such an overwhelming project.

    Thanks, Deb!  I'll be there with JoyceK in tow Wink  And my daughter is meeting us there to pick up my grandson, he's spending the night tonight.  He's had quite the day - blueberry pancakes at Cracker Barrel with grandpa, the 3d movie Hugo with both of us, and Chuck E. Cheese afterwards.  Now he's watching a few minutes of tv before we get him off to bed.  He ate a whole bag of movie theater candy and 3 pieces of pizza, I hope he doesn't get a tummyache!  And I hope he sleeps in past 6 a.m.!!!

    Michelle- It sounds like you had a great day.  I bet he will fall asleep in less then a minute tonight!  Have fun tomorrow, I wish I would have been able to join all of you, but things are just too hectic here right now  Next time.

    Thank you everyone for my sons birthday wishes.  His actual birthday is Wednesday but tomorrow is his party so it's the big "hurrah" tomorrow.  But we are keeping it small, just family and we are just doing pizza and salad.  But I picked up his cake today and WOW!  I know a girl who does amazing cakes for next to nothing cost wise.  He has a double layer tractor cake and he is going to flip!  I'll post a picture of it tomorrow.  I am super excited to give it to him.

    Today was just kind of a nutty day.  I got to the hospital for my friend my 8:30 and brought her home when she got released around 10 and stayed with her until after 5 when her step mother came to sit with her.  She had had an abnormal pap, then a biopsy and then they went in to remove the abnormal cells and she bled too much and emotionally just kind of broke down.  She is feeling very traumatized by it, I don't completely "get it"  but I think I have been numbed by all the BC stuff. (does anyone know what I mean?) She slept all day but was afraid to be alone, so I stayed and cleaned her house and read a little. 

    Lots to do to get ready tomorrow, I just finished wrapping his presents.  FUN!!

    More cruise details: Seaside - we're both semi retired so we treated ourselves to a balcony room on the Lido deck (10) by the front of the ship.  Laurie - there was WAY too much beef in the lasagna, but that's probably just me.  Have a fun party tomorrow.  Kay - we went on the new Carnival "Magic".  4600 passengers on this cruise.  Probably great for families but not so much for couples or adults.  Getting in elevators was problematic due to strollers & wheelchairs.  Hope your sink is fixedl.  Debbie - yes, they had a casino.  The last time I pulled a "one armed bandit" was in 1965 with real money & a real "arm".  My, my things have changed.  I'm not much of a gambler but enjoyed watching the blackjack.

    Dinner out tonight before a concert of the Messiah.  Grilled rainbow trout, French green lentils, wilted spinach w/pecans.  My SIL had salmon plank.

    laurie- Had to be a rough day for you! (hugs) yes, i understand what you are saying, but you were wonderful to be there for her like that, I hope she was for you when you were going through your stuff!

    minustwo- Must of been a huge ship, When i lived in hawaii they ahd the big ships come into Aloha tower and they were monsterous, sounds like you had a great time!

    Did some christmas shopping today had lunch at a japeneese restraurant called Momiji the food is outstanding,Had  cone sushi, its not seaweed.I could eat a dozen of these things yummm!

    Laurie - (((hugs)))  you are a good friend!  Grandson is up early this morning, DH is still snoozing.  The little one is half watching Looney Tunes, half playing video games on his iTouch.

    I've been on two cruises - Celebrity to Alaska, which was fantastic, and NCL to the western Caribbean, which we didn't really like.  We had balconies both times but the weather was so nasty on the NCL cruise that we never used it.

    you ARE super sweet.

    Just an aside.  I have this son #2.  He is a massive boy - mostly muscle and bone but plenty of chubby who decided to go out for wrestling.  He never does his homework.  I am always getting these F emails from his teachers, but less and less of them since the season started 4 or 5 weeks ago.

    All of a sudden his room is NEAT.. books put away, clothes folded, the bed made and I can tell he is trying in school.

    He had his first tournament yesterday. I couldn't go. but he won 5 of 5.  Of course he just said he did ok and wanted to eat.  Later his coach called and basically said.. "OMG - your son is such a champ.  He doesn't even have wrestling shoes, is fat and not only did he win every match but beat the senior state heavyweight champ in the back room.  I saw it.   The state champ apparently wanted to beat his butt and teach him a lesson. 

     I have no idea how Gene learned to wrestle.  When he was born, his breast plate stood up, one side over the other.  The doctor said he probably would grow into himself and it would straighten out and probably it was an indication of a large upper body later on.  He is 14 and growing out of his size 14 shoes.  Why do i have to have this freakin cancer.. I really love my kids.

    Apple, that is wonderful! I love sports, but always think school should come first. It is so wonderful when sports actually helps give motivation for academics. You so deserve to be proud of him! Good luck in his next match!

    Apple - Loved your wrestling story. DB#4 used to wrestle and now coaches his younger son's team. You'll find me screaming my head off, yelling instructions, at all of the big tournaments. DN infromed me at the state games, "Auntie, I can't even hear you when I'm on the mat. I'm in my "zone' and can't hear anything ." He won silver. I still like to think that my screaming encouragament, at the top of my lungs, somehow helps. He's 14 and weighs all of 86 pounds.  That's the great thing about wrestling. You don't have to be the biggest or the strongest.Your opponent is in your same weight class and while strength is important, technique is the key. Any kid can find a place in the sport. The first big tourney of the season is in a couple of weeks and I'll be front and center cheering him on.

    I couldn't agree more with you about this "freakin" disease. It's so unfair. I sometimes wonder why childless me is still here, while my friend, with 2 teenage boys who need her so much, isn't.

    Apple  Love your story...our kids give us such great pleasure and make us so proud in so many ways. Sports can give kids such great self esteem. Hang in there, you are his best role model.  and by the way....my son is 6'5 and wears a size 15 shoe, we have to special order all his shoes. 

    Laurie   you are a good friend. So many of my girlfriends are "wimpy" as well, complain about every hangnail, and I think to myself "I pray that they dont get cancer or any other life altering disease because they would fall apart" We are a tough bunch of women!

    Gonna try the spagh carbonara tonight, with salad.  should be an easy quick meal.

    2 invites for dinner today ...............Good italian with my daughter............or good roast beef with my son.......of course he tempted me by saying ........Roast Beef dinner tonight..if you would like to join us..............Roast Beef and Babies.......his  twin grandaughters.....which are my twin great-grandaughters will be there......................tempting, but since my daughter got her phone call in first...........I had to tell my son "no", but said I would stop by when I was finished at my daughter's house.........I had something for the babies anyway........bought them a Baby's 1st. Christmas tree ornament................they are 8 months old....................it should be a real nice day.....looking forward to it..............................have a great day everyone.
