    Laurie- I can't remember which one it was, you have already ate by now im sure but here are a few recipes that it may be- One is just chicken breast or cutlets breaded and fried (take out and keep warm) then in same pan that you cooked the chicken in add. white wine, lemon juice, capers, chopped parsley.tomatoes and kalamata olives if desired. Cook until reduced by half and pour over chicken. The other one is a bacon wrapped chicken that has a lemon pepper on it, i have had several Pm'S from some of the ladies on here saying they tried it and loved this dish.

    Chicken with wrapped bacon-

    • 4 skinless, boneless chicken breast halves
    • 3/4 cup honey
    • 1/2 cup prepared mustard or dijon mustard ( I combine both)
    • lemon pepper to taste
    • 8 slices bacon, 
    • 1 cup shredded mozzarella cheese or any cheese you like, I use Jack sometimes

    Directions

    1. Preheat oven to 375 degrees F (190 degrees C).
    2. Season chx breast with salt and pepper, then wrap each chicken breast with two peices of the bacon put in baking dish and drizzle with the honey mustard glaze
    3. Bake chicken 40 minutes in the preheated oven. then top with the cheese bake until melted and bacon is crisp.

    Jo- Those muffins sound terrific, I will give them a try, thanks!

    Kay- I love veggie burgers, I make them for my dad when he comes to visit, I try not to buy the store bought ones as they are so high in sodium but will if im in a hurry otherwise I make them from scratch.

    Michelle- Georgous tree!

    Deb- I made somthing  about a year ago not sure what they called them but it was ground turkey seasoned and mixed with egg yolks and onion that i had sauted first, then made balls out of them (easier to bread)  then dipped in egg wash, fresh bread crumbs or panko or itialian bread crumbs, then flatten to your thickness and fry in some evoo or what ever oil you use. Not sure if this is what you were looking for, but I remember they were good.

    I spent the day pulling weeds and then did some spring cleaning,! Felt good to get it done!!

    that is an awesome tree LuvRVing.. I am such a nonplayer in the Christmas decoration category.. Maybe I'll get on it today.

    I must say one of the funniest moments in my life happened at a Christmas party.  I was newly dating my soon to be husband and he took me over to his sister's.  The house was gorgeous.. so nicely decked out.  I walked into her living room (I still hadn't formally met Beth) and burst into laughter.  The tree had been cut right smack dab in the middle and the bottom half filled the living room like a big bowl.  Her son had trimmed it.

    gah.. those teenage boys.

    Debbie  How do you make a veggie burger from scratch,  I do not like the store bought ones at all?  My favorite simple chicken is to just sautee in sm amt of olive oil, coated generously on each side with lemon pepper. Sautee on low till carmelized on each side.

    Carrie - LOL!  Years ago I got her magazine, and I've watched her show a few times.  Most of her stuff is way too labor-intensive.  But she does have some good ideas.  It took me a good seven hours to decorate the tree.  DH got it in the stand and he did help with the very top because I couldn't reach it, even with my stepstool.  Then he gets out of the way and it's all mine!  Hope you are feeling better today and woohoo! on getting the port out. 

    Apple - what a hoot!  That had to be the funniest tree ever!

    I am making turkey something for dinner.  My daughter gave me the legs and thighs (they like the white meat) from her 27 pounder and I had it in the freezer.  I am thinking I'll start out with onions, carrots and celery, stick the meat in the pot with some stock, and then figure out if I want soup or fricasee or who knows...LOL!  It's gonna be an adventure.  I didn't get my fill last week, so I'm looking forward to this.  I guess I'd better get moving, though!

    I had my rads simulation today and will start treatments tomorrow at 7 p.m. Yep, that time will avoid almost all the traffic and lets DH have his workday mostly uninterrupted.  They may move up the time a little bit, but it will probably always be after 6 p.m. It is really gonna mess with dinnertime, though. We'll have to eat before we leave.

     Carrie- here is my version of a veggie patty you can change it up with almost anything you want to add if you like it spicier add more jalapenos too,

     
    Black Bean Cakes with Salsa
     
    2 cans of Black beans, rinsed and drain and mashed up somewhat (15 oz size) or 1 can black beans and 1 can of chickpeas, rinsed and drained then mashed with fork or put in food proccesor
    1/2 cup prepared salsa drained
    1/2 onion  finely chopped
    3 Tbsp red bell pepper finely chopped
    1 jalapeno pepper, finely chopped
    dash Salt and pepper
    1 8oz pkg corn muffin mix
    1 Tblsp chili powder
    1/2 teasp cumin
    Saute the onion and bellpepper until soft let cool
     
     
    Mix all of the above make [patties and chill until firm about 30 min or so, fry in hot oil Cook about 3 or 4 minutes on each side.
    Makes about 8 cakes or more.
    I like jack cheese, avacodo and, tomatoes on mine- Sometimes i add cooked lentils to the mix.

    well.. i want to have mashed potatoes.  .. my super comfort food.  I was thinking of slo-baking pork steaks with gorgeous Indian spices... maybe that would go with mashed potatoes.. or I could make them the unhealthy delicious way my mom did.. sauteed, drained and then poached.. (those are rather hi-fallutin words for braised chops)... but they'd go with the mashed potatoes.  Maybe I'll save the 'Indian' for another day.

    Michelle- wow it took you 7 hours to do the tree?!  We had 45 minutes of chaos here, no wonder yours looks so much better than mine!  I hope your time slot ends up working for you guys, it sounds better than smack in the middle of the day where you lose the whole day to rads.  I'll be thinking of you every day.

    Debbie- the vegi burgers sound good, I think I may try them this week if DH agrees, he's a big meat fan...I used to work at a restaurant years ago that had the best homemade vegi burgers.  I wish I had the recipe.

    Apple- I am with you on the mashed potatoes.  Tonight is meatloaf, gravy,squash and potatoes- don't forget the cheese!  I am all turkeyed out- I ate the last of it for lunch today.  I still have the carcass that I said I would boil down to make broth but I don't know....

    The tree is beautiful Michelle! We have an artificial tree. By the rme I've put it together, I just want to be done, and it never looks that good. Although I will be changing the position of ornaments to try to get it perfect for days afterward.

    I never even thought about making my own veggie burgers. Thanks for the recipe, I will try it. I would think you could make extras and freeze them as well? I can't wait to try it.

    We had spaghetti and meatballs for dinner with a salad and some Italian bread. DD just had the past with olive oil and parmesan cheese. Her loss!

    Apple, just my opinion, but mashed potatoes go with everything!

    Laurie - it took me 1 1/2 hours to deal with the lights...checking all the strands, swapping out the dead bulbs, finding a strand with a dead fuse, etc.  I like these older style lights with twinkling C7 bulbs - the kind we had as kids (before the aluminum tree with rotating light...lol).  I had to pace myself a bit - it was a lot of up and down a stepstool, much to the dismay of my arthritic knees!  My daughter's tree went up on Saturday but she hasn't shown us pictures yet because hers was decorated with the help of 5 kids ages 8 and below.  She said it needed some more "love"  Laughing

    My turkey 'n gravy came out good, considering I had no gravy to start with.   I cooked some egg noodles and we had squash and cranberry sauce.  It smelled like Thanksgiving in here!  I do miss it when I don't cook the big dinner.

    Glad to hear everyone had a good Thanksgiving!! I have lots of catching up to do!! Trying to get caught up here after being away for 4 days plus my daughter's college graduation (out of town) is this coming weekend, so trying to get the details of a brunch after the ceremony put together....



    Trying to get a head count and trying to find a place there that A) Is open on Sunday and B) Will accept a reservation has been a challenge! Maybe I'll make a bunch of food and we'll tailgate in the parking lot...lol!

    Kay- Yes they do freeze well, makes them firmer if you want to grill them too,

    Seaside-  Congrats on your DD's gradiation, sounds like you will have a houseful this weekend, hope its not to stressful and you have lots of fun, smart thinking on going out for brunch rather than cooking it at home! makes it somewhat easier!

    Joyce- Glad your dad is ok!

    Laurie- Have you tried grilling portabello mushrooms they are meaty and taste good on a hamburger bun with all the fixins, cant really tell they are not meat

    Debbie, thanks for the recipe  I am going to try those.  my Dh will not go for those at all, but he can always open some chef-boy-ar-dee.  Yummm to portabello mushrooms...marinate and grill..make gret little sliders.

    Seaside.  de-portation...very good!  It went well, could really hear the DR. digging around to get it out, but did not feel a thing.  she said scar tissue forms around it (the body defense against a foreign object) and she had to "release" it to get it out.  I have dissolvable sutures and can shower today.  A little sore sleeping last night, but otherwise good.  I drove myself and went shopping afterwards.  Congrats on your daughters graduation!

    so on the mashed potatoes.. I peeled about 8 big russets and 5 medium golden potatoes.  They are essentially gone!

    Tonite my husband has requested Mexican casserole with chips.. yuk yuk yuk. 

    beans, meat, corn, onion, cilantro, salsa, sour cream and avacados?  i suppose it will be easy to fix.  (not to eat tho.. i like my Mexican super fresh with fresh and hot corn tortillas, tomatoes, cilantro, avacados and salt.. that's all.  I used to eat hot peppers by the quart or peck.

    which my family does not like.. "Mom.. why didn't you fry these?"

    Carrie - my port was surrounded by scar tissue also!  And the surgeon had a tough time getting it out.  I actually had to take Tylenol that night which I didn't even need after surgery to remove my TEs. 

    I met with the genetic counselor today and got tested for the BRCA gene.  There's only a very small possibility that I would have a positive result as there is almost no cancer in my family.  But my daughters asked me to get tested, so I did.  Now I have to hope that insurance covers it.  One of my grandmother's six sisters had breast cancer, we think, but she also lived to be 101.  I suspect I am a random victim.

    Apple - I am not a huge lover of Mexican food, although I liked the dish I had at the restaurant we went to for DH's birthday.  Food smothered in greasy yellow cheese and refried beans are giant yucks for me.  I do like a good guacamole, though.

    Meals for the next 30 weeknights are going to be interesting, with radiation scheduled for 7 p.m. and a 1.5 hour drive in to Boston. We may be eating sandwiches in the car quite often and have our "bigger" meal at noon.

    Michelle, it is great that you are so versatile. Nothing seems to bother you. That is a great idea to switch up dinner with lunch, and probably healthier too. Good luck with your rads appointment tonight.



    Apple, I love taco dip with chips, but mine is just cold, no beans or meat, just cream cheese, salsa, tomatoes, peppers, onion and Mexican cheese. But it is just an appetizer, not a dinner. Hope you are able to enjoy yours tonight.

    Carrie- Congrats on the de-portation, I was put under general anst whe they removed mine, were you awake during yours? Maybe my surgeon knew what a whimp i was and decided to do it while under sedation.

    Apple- You could fry you up some tacos for your self while DH's is in the oven- 

    I love mexican food, like tacos and enchalads, my all time favorite! Dont care for cilantro though!

    Michelle- If you have more than one members in your family that had breast cancer, the insurance will pay for it, at least thats what was the case for me, you could make up a name or too if you had to so you will be covered, like say 2 cousins or somthing. I was tested for free and they had me send the kit to my daughter so she could be tested which was also free, we both tested as being a variant of an uncertain significance"  basically means they dont know what it is we have.

    I had the BRAC test done but before it was done I made sure that the insurance paid for it.  The test is around 3000.00

    It was negative.  My Mom died of BC when she was 64 that was 15 yrs ago and maybe one of my Aunts on my Dads side died also but I'm not sure as I have not seen my Cousins in years they were never really close.

    I'm taking Friday off work I have an onc appnt.  I will get the results from my bloodwork and my bone density test, I also wrote down a list of complaints.  I have been waking up every 2 hours and not really feeling like I'm getting enough sleep.  I think its the Arimidex.  I can't wait til July 26 when I can stop taking it.  I was doing pretty good on this AL until about 6 months ago.

    I'm home already from treatment, we made record time to and from Boston, arrived 20 minutes early and they took me right away.  We were parked for less than 30 minutes, which saves big time on parking.  There was no traffic in either direction, so this seems to be a really good time to be doing this.  They did ask me if I could come in at 6 on Friday because their last patient before me is at 5:30 and I said yes, which set off a bit of a spat between DH and me about being "flexible."  Methinks his patience with this whole thing might be wearing a bit thin.  I'm going to round up the kids and schedule two or three days a week where they are driving rather than him.  Truthfully, I could probably drive myself at this point. 

    Deb - good luck with your onco appt on Friday.  I haven't slept more than 2 hours at a time without a sleeping aid since menopause, which was at least 15 years ago.  I'm taking a sleeping pill once every two or three nights to help compensate.  My PCP gave them to me 18 months ago and it has been a huge help.

    Debbie - I was awake when my surgeon removed my port, she did it in her office and just numbed the area.  I didn't feel any pain while she was doing it, and I couldn't see what she was doing.

    Glad the first tx went well Michelle. I am surprised that they make you pay for parking. I have been going into the city for all appts. and txs. They validate your parking for chemo and rads, otherwise you have to pay. I was really pleased with the parking validation because someone I worked with had to pay to park and a $25 copay for every tx of rads. That really adds up. I hope you don't have to pay a copayment too. Wish I were closer, I would love to meet you and give you a ride.

    Thanks, Kay!  No copayment but 4 gallons of gas and $5 - $8 for parking times 30.  Not sure how they'll handle billing as we cross the calendar year.  I met my out of pocket max back in April. 

    You're in Philadelphia - we've been known to take a road trip to Atlantic City, so we may yet meet in person!

    Glad to hear that Day 1 is behind you.... If it is anything like where I went, they are truly a model of efficiency! My appointment was 10:15 am... I arrived at 10:10, had my treatment and was leaving the parking lot by 10:30....



    You will find your stride and time will pass by far more quickly than you can imagine....

    forget the mixican casserole... i made curried lentil soup and the best dam bread ever... 1/2 sour dough, 1/2 yeast with a local flour and milk and butter in the dough. It had a very crunchy crust, a dense, kind of moist middle.. and the flavor..

    and of course, butter.

    omg

    could I recreate it? probably not but I'm going to try. It'll be interesting to see what it will taste like tomorrow.  the soup was less than stellar.. very interesting spices tho.

    Thanks, Seaside!  I was a little worried about having the last appointment of the day, with the potential for getting behind all day long.  But they do seem to have a great system and a desire to get you in and out as efficiently as possible.

    Michelle- My Dh was great through my tx's like yours, but he also got a little shall we say, crabby! LOL! 

    Hmmm, surprised to hear that the port removel was easier than I thought, wonder why she put me out rather than do it in her office, maybe because she got more money??

    Finished off my turkey pot pie, tonight, ( finally)  I threw out the rest of the dressing and yams just couldnt take it anymore!!

    One more thing kind of popped into my head and, please forgive me if it's already been discussed, but have you talked with your RO about what they may suggest as far as lotions or sauves that they may recommend?



    The one my RO recommended was Aquaphor but I know each Dr has their own favorite..... The only reason that I bring this up now is that my RO nurse recommended that I start with the Aquaphor right from day 1 rather than waiting for a problem and then starting....
