So...whats for dinner?

we actually had a very nice dinner last nite with two kid guests.. One, my eldest son's absolutely beautiful, super smart, adorable girl friend, and another, my other son's old best friend. The girlfriend and my son were lying on his futon.. door open.. (they are both pretty conservative kids)... and I here this sweet voice floating down the hallway... I went to 'inspect (spy) and she was reading Voltaire aloud to him.. How can you scold them for being prone?
Anyway, we had bought some Mexican steaks.. they are probably made of chuck or shoulder.. VERY thinly sliced. Son #2 grilled them with sprinkled on seasonings, I made sourdough bread (with butter and milk to soften the crumb), baked potatoes fries and a salad with the last of the oregano from outside.
Here's my secret recipe for potato fries.
I cut large slices (like steak fries maybe) of both sweet and white potatoes, mince 3 or 4 cloves of garlic and toss these ingredients with olive oil and brown gravy mix.. Yes, brown gravy mix ( the powdered kind.. the thickeners in the gravy mix kind of become a crusty crunch on the potatoes .. i bake in a pretty hot oven (over 400) for about 40 minutes.. you just have to test them.. they are good when some of them are browned.. I buy my gravy mix in big jars at Sam's but i imagine a packet would be the right amount to sprinkle on 4 or 5 larger potatoes. Can be made with sweet potatoes only.

What a sweet story apple, that is so cute.
I have a lot of potatoes to get rid of, so def going to make those potatoes tonight somthing different so will give them a try
-
Here is a picture of my daughter as a jellyfish. I am still waiting for her to get me a picture of the whole group. She got a lot of candy!
-
Kay - that's a cute idea. Your daughter is adorable!
Apple - it sounds like you have some wonderful kids!
-
Had a good dinner tonight, had crab cakes, baked potato, broccoli, spinach and tomato and walnut salad and some fresh bread. Very good.
I finally found something to do with leftover roast chicken my daughter will eat! I can put it in with some chicken broth and noodles for chicken soup, and she loves it! Yahoo!
-
Thanks Michelle!
-
Seems like my DH likes a lot of red meat, so I am finding myself cooking two different meals quite often. He is having ribs tonight and I am having salmon...like your DH, Carrie, mine won't eat salmon.
-
Kay- That is sooooo cute- Your daughter is darling.
-
Kay,
What an awesome costume!!! Would love to see a picture of the whole group!!
Apple,
I am definitely trying that potato recipe! Lol... on the inpect/spy.... I do the same thing when my son and his girlfriend are here... Funny how many perfectly plausible reasons I can find to walk past where they are!
Debbie,
We had your pumpkin french toast for a late breakfast today and Wow.... It was soooo good!!!!
Even though I used a non-stick griddle, I did find you really couldn't skip the butter but, that's not really a bad thing...lol! Also, I did have to thin the pumpkin mixture with a bit of water because mine turned out on the thick side.... But really yummy!!! -
Went over to a high school friends house, got there around 1 o'clock next thing I know it was time to leave. We could have talked for hours. Lost a lot of classmates since 1969.
She made a delicious Mac and Cheese cassorole and veggie dip also crackers with 2 types of cheese. I could not stay for the Smore's had to get back to the trick or treaters which was a waste of time cuz I only had 5. -
Welcome stage1...
I, too, am guilty of the preparing our main meal and then an alternate for my kids even though I swore I would never do that... I am lucky in that my husband will eat just about anything but, turns out, vowing that I will not cave in to my kids was faaaaaar easier before I actually HAD the kids....lol
What I try now (but my kids are older now) is to make a big meal of something that we all like early in the week.... Then make other things during the week that may or may not appeal to everyone.... That way if someone doesn't like what we're having, they can go to the leftovers...
Maybe you could do the same with your husband... Cook up something with the red meat early in the week and then cook something you would like after... -
I opted to turn off the light and skip the trick or treating tonight. My neighbor said we might get 50 kids, DH is on his way to Salt Lake City, and I would have to go up and down the stairs every time the doorbell rang. After minding the three grandkids all weekend, I'm actually just a little tired! I'm eating popcorn for supper. And I don't have to share it with anyone!!!
-
Welcome stage I!
Apple your fries sound great- I'll have to try them too. The gravy packet is a funny thing, but it's the weird things that make it work sometimes.
Seaside-great idea on the leftovers. We have all taken turns having the left over spaghetti and meatballs the past few days with a busy schedule.
Michelle- I hope you enjoy your quiet time while your DH is gone. It will be weird I bet! I always enjoy my alone moments though, like you said- you get the remote!!
Kay- I love your daughters costume, thanks for posting the picture
So- I think both of my boys have croup, WTH? One is barking like a seal, the other can't seem to breathe well. Both have had slight colds for a couple of days that transformed into whatever this is today. I called the Dr concerned for my oldest and the breathing thing and he said it sounded like croup. A new one for me. My oldest actually said he needed to go to bed at 6:30, DH and I just stared at each other, this is the kid who never wants to go to bed. So a quite few days are in store for us.
Because the boys weren't feeling well I made them cheeseburgers and fries at their request- which they did not eat. DH had left over spaghetti and meatballs and I had a little of each- basically what the others didn't eat. Pathetic huh?

deborye,
My best friend is someone I have known since Junior High.... Even though we had fallen out of contact for several years, once she found out about my diagnosis, she was the one person who called every week during my treatment.... Even though we hadn't talked in awhile, once we reconnected, it was like no time had passed whatsoever...
Her Mom has since gone through and passed away from Ovarian cancer and I know I tried to be there for her just as she was for me...
Something about those friendships that go waaaay back that are so special..... We always joke thst we know eeeeeeverything that there is to know about each other, and we like each other anyway! -
Laurie,
Croup can be really rough.... Delsym cough syrup was a life saver.... Lasts for 12 hours... One thing that you may try if it gets bad is to get a shower started as hot as it will go... then have your son ( i always sat in there too) sit in the bathroom, NOT in the hot water... But just to breathe the steam.... Funny enough but, the doctor also said going suddenly out into the cold outdoor air may help as well...
Here's a link to something that may help: http://pediatrics.about.com/cs/commoninfections/a/croup_2.htm
Hope the boys feel better soon! -
thanks Seaside. Earlier we ran the shower and steamed up the bathroom and then drew the boys a hot bath. My younger son is doing better than the older. He asked to go to bed at 6:30 and has woken up twice with a belly ache. (?) I don't get it. He says he doesn't have to throw up, it just hurts a lot. He cries and writhes around for 20 minutes or so then passes back out and now he just did it again. As a young mother- without a mother- I have no freaking clue at times! I truly appreciate the help.
-
Thanks for the warm welcome, ladies. Yes, that is a good idea about the leftovers, and that's exactly what we did tonight. DH had leftover spagetti with sausage and I had my salmon...both happy! A little bitter chocolate, 85% coaco...after dinner...
-
Laurie,
I know there is a pretty wicked stomach bug going around that lasts for several days (far more than the usual 24 hours).... Is it possible that your little guy isn't over the bug he had?
It's so hard when they are sick and so young.... I wouldn't hesitate, if they aren't turning around by tomorrow to get them in to see the doctor and see what he/she has to say....
Sending you hugs and the knowledge that we all know that feeling of having a sick child and that feeling of not really knowing what to do.... -
Welcome stage1- Seems so many DH dont like salmon must be a guy thing LOL!
Seaside- I was hoping if you tried it you would like it, I put lots of butter and maple surup on mine. I agree, it does get thick and I also have to thin it down.
Laurie- I hope your little guys starts feeling better. I was going to give you some tips, but you already did those. Is it hurting on one side more than the other?
Deb- What fun, I would of stayed for the SMORES LOL!
Michelle- I had forgotton they put the trick or treating on hold because of the storm. Hope you are resting and turned off your porch light!
-
Linguini with sun dried tomato sauce and crawdad legs....a little garlic toast bread sticks and nice Pinot noir
-
Almost forgot to mention, I had the french fries tonight ( I only had white potatoes) On half I put the gravy mix on and the other half i made it the way i normally do. They actually were very good, and my DH liked them too.
I made filet mignon with sauted mushrooms and onion also made a broccoli/ cauliflower medly of veggies. to go with the FF's. Also roasted some garlic heads in the oven and ;put on french bread.
Shechirple- Your linguini with sun dried tomatoes sounds delishous.
-
I am going to try the french fries with gravy mix.Sounds interesting. My neighbor invited me over for dinner. She had a pot roast and potatoes and carrots. So good! Pecan frozen yogurt for dessert. It is nice to have someone else do the cooking
Everyone have a great week.I enjoy reading all the different recipes.
-
Good morning, ladies! I guess I went to sleep early last night and missed lots of posts.
First, Laurie, I raised four kids through ear infections, croup, bronchitis, etc. Heck, I occasionally get croup and bronchitis! You can call me ANY TIME! I can't replace your mom, but I can surely offer some advice on dealing with these sometimes alarming "sick child" situations. You can be sure I saw them all sometime along the route of childrearing! You did the right thing with the shower/bath combo. That usually provided some immediate relief. You might pick up a vaporizer for their bedroom as moisture is important. Drinking hot liquids also helps, so if they like warm apple cider or chicken soup, it's a good way to help get extra liquids in them and loosen things up. Hot chocolate is not so good because milk thickens the mucous. I think they sell kiddie mucinex, and that can help, too.
Has anyone else noticed turkey prices in the last few days? My Shaw's has nice big ones for 49 cents a pound...what a good deal! I don't think I've seen such low prices in many years. Maybe it's just a local thing. I'm going to have to buy one if I can figure out how to get it in my freezer. It's getting to be time to start sharing favorite Thanksgiving recipes. It's my favorite meal of the year, for sure!!!
SheChirple - welcome! Crawdad legs? How interesting! When I was a child, we lived in Texas and my brothers would catch crawdads in the ditches. I'm sure we never thought about eating them.
Debbie - your dinner sounds delish! Do you grill your filets or pan roast them? I'm not much for outdoor grilling in the dead of winter and will use my cast iron griddle more frequently. And yes, I turned out the light, made popcorn, watched a little football then went up to bed. DH called from Denver (on his way to Salt Lake City) about 9:30 and then it was "lights out" for me. Of course, I was awake a little too early this morning. It'll take me a couple of days to adjust to standard time.
-
Thanks Michelle
I really appreciate that. We just got back from the dr's and my older son has pneumonia and the younger has croup. So we are going to be spending the week inside playing with toys, play doh, paints, watching movies.... I hope I keep my sanity! Because both boys don't feel well they are fighting like crazy and both super sensitive. Nobody slept in our house last night. My younger son was in bed with me coughing up a storm and my husband slept with our older son while he was up all night with belly pain and having trouble breathing. Did you know belly pain is a sign of pneumonia? I didn't.
I haven't noticed on the price of turkey, I haven't seen any on sale around here yet. I love roasting a turkey breast in the crock pot. I just put it in the crock pot, no water at all, just some butter and seasonings. It actually browns it up like it would in the oven and then roasts it in it's juices. Yum...I wish I had one to make for dinner.
Debbie your dinner sounded really good, I'm glad to hear the fries turned out well.
Shechirpl- Welcome to the thread! I have to ask did you eat just the legs or the whole crawdad?
-
take care of yourself Laurie.. you don't need any stinking diseases or infections.
-
Michelle- That was the sweetest stuff you wrote to Laurie I must be emotional today because it got me choked up LOL! I cooked the filet's on my cast iron skillet with the ridges so it looks like its been grilled outdoors, I season with salt and pepper and use spam to spray but pretty much dry cook it. cut up in bite size peices and put the mushrooms and onions over top it was very tender.
Thats really cheap for a turkey, I hadnt checked our prices out yet but this year i will only buy the breast we dont really care for the rest of the turkey and it will be just me and DH.
Laurie- Ohhhh that is terrible the boys being that sick, poor things and you must be exhausted. Keep yourself well too. Did not know that stomach pain was a sign of pnemonia, thats good to know i learn somthing new on this site everyday.
And another thing i never thought of was roasting the turkey in the crock pot didnt know it would actually brown up- since that is all im buying is a breast i will try it this year- How long would you cook it for and any liquid?
-
Laurie - I have to say I didn't know that belly pain was a sign of pneumonia. We had lots of bronchitis and ear infections but we were spared from pneumonia (probably the only thing we escaped!). My grandson had it a couple weeks ago, I'll have to tell my daughter about that little tip! From your Facebook post about the dish soap, they must be feeling a little feisty...lol. And did your washer suffer from suds overflow? I had a vision of bubbles billowing from the machine
Once again I mindlessly shared my yogurt spoon with my granddaughter on Saturday. Saturday night she was coughing. I'm just waiting for the germ infiltration...LOL! Kids really are petrie dishes.
Turkey breast in the crockpot is an interesting idea...how long does it take? I have a crockpot and I just never use it. Time to change that!
Debbie - I have that grill pan! I'll have to dig it out.
-
Our Monday, Tuesday cook at the Senior Center quit so I had to do lunch today. I made the upside down pizza . I forget who posted the recipe but thank you very much. It was a big hit. I used 4 1/2 lbs of hamburger and scaled the recipe accordingly. I did add some pepperoni but otherwise stuck to the recipe. No one had ever heard of an upside down pizza before but they all really liked it.
-
Laurie,
The belly pain is a new one on me and my son had pneumonia (although it was walking or 'atypical' pneumonia).... I had no idea what pneumonia would be like but, I guess I thought it would come with a really juicy, harsh cough... Since my son's cough was a dry cough I never suspected pneumonia....
A round of antibiotics and a re-check later, he was fine....
Hope tonight finds the boys feeling a little better and that everyone gets some sleep tonight! -
Laurie, so sorry the boys aren't feeling well. I didn't know about the stomach pain and pneumonia either. But none of my kids ever had pneumonia. Poor guys, I hope they feel better soon.
Chabba, that is great that the seniors likes the upside down pizza. I can't wait to try it!
