Hi Victoria, I'm a new vegan too, since March. Learning my way through and spend way too much money at Whole Foods....getting the hang of it though.
I gave up sugar (for the most part - trying on to buy foods with sugar in them like spaghetti sauce), white pasta (oh so my fav), meats, processed foods, dairy, eggs (for the most part, that's a hard one sometimes). I get the whole "whole" foods concept now! lol.

I made up for my bad behavior by making stuffed peppers (with rice, lentils, mushrooms and kale) for dinner! I dunno bout you, but I have not found a good dairy subsitute--I've tried soy, hemp, oat milk and they are dreadful!

My kids like almond best. I'm back on the food wagon, and even though a quick whole wheat pasta is not optimum it is a start back to better eating. Company coming for 10 days tomorrow, so I'll be pulling out all the recipes from my posts and yours. She's an old eating buddy, so I have to be extra strict!

We like almond milk too. The marketing ads are correct--it really does taste better with ceral. Horrible in coffee...great with kashi vanilla islands ceral.
Today had a cup of pumpkin bisque soup and a 1/2 white bean veggie wrap. I too fell off of the wagon yesterday. Had 3 mini chocolate bars from my daughters halloween party goodie bag--1 trix, 1 3 mustketeers and 1 kit kat. Haven't had any of these in years. YEARS! and it totally broke me yesterday. Don't know what the deal is. Don't have my period and I can't blame it on anything but just being weak.

Ah, Halloween is tough...candies and treats everywhere. Walking through the market is like walking through a mine field with all those fun size goodies!
My daughter volunteered to bake for the school's haunted house...brownie mix coming into my kitchen tonight. Maybe I should plan on having a Ghiardelli dark chocolate square ready for emergencies
Kashi puffed grains with banana for breakfast. Tomato soup with whole grain crackers for lunch. NOT brownies for dinner.

Carrot curry soup today...followed by a pumpkin cookie.
But I ran 3 miles today...hoping that the good choice + exercise offsets the bad choice.

I bought 4 sweet potatoes and one yam - or maybe it was 4 yams and 1 sweet potato. The 4 were lighter orange, the one was a dark deep red. Couldn't figure out which was which. I baked them in the oven for a long time till soft and put in the refrigerator. Took one out and ate it (cold and plain) for lunch. Delicious. Luckily I'm easy to please - I don't need a lot of complicated foods, just something reasonably healthy to keep me from being hungry.
I would like to find some ways to really USE the sweet potatos (or yams,...haha, whatever they are) rather than just eating one plain. My husband will NOT go for that for his meals!

Amy, cube the yams or sweet potatoes bake with pineapple and cranberries, or cinnamon and sugar.
I discovered butternut squash this month! love it! cube it, baked it with red potatoes, golden beets, carrots, celery, shallots, - a little olive oil, garlic, and seasoning in the bottom of the pan and YUM!
I also made a veggie wrap - cooked golden zucchini and asparagus in a pan. Took some flat bread, broke the vegan rule - put Tzatziki (spelling?) on it, put in the hot veggies, rolled it up, and double yum! The dill in the cucumber sauce was a nice surprise for the veggies.

Sagina--that looks delish. I think I am going to copy you and have a veggie wrap today for lunch.
Good choices today include 1 cup of green tea and a whole wheat bran muffin with dates, cranberries and raisins. I usually don't eat breakfast, but I started running in the early morning (5:30am) and was feeling lightheaded about 25 min into the run. So, my SIL/running partner made me these delish muffins to eat before a run to help keep my energy up. It worked!

I've started having my cup of green tea every morning!
breakfast is still the toughest for me....I never really liked it anyway....but as a vegan....it's even worse. Any ideas anyone?

Steel cut oatmeal with berries? Ezikeil bread with almond butter? Fruit smoothies with almond milk? I will see if I can dig up a vegan muffin recipe. Otherwise--a good ole' fashioned banana and green tea works.

Good food choices today: 2 cups of green tea, and stir fried veggies and brown rice. Tonight I am going out with friends to a mexican place and I think I will have their mixed mushroom tacos.

Mercadito. Have you been there? I haven't but was looking at their menu online to get an idea of what I could/should eat. Mushroom tacos seem to be the most appealing to me. I love chilli rellanos, but at $22...I can wait.

Last night's dinner didn't go as planned. Since we were with a large group we shared meal option. Guac, tacos, plantains and desserts. I had some guac, fish tacos and plantains. Also 2 bites of flan.
Today I had 2 cups of green tea and Ezikeil bread. I think I will have a 2 omega-3/organic egg scramble with green peppers for lunch. Tonight will be brown rice and veggie stir fry using whatever veggies are in the fridge.
Tomorrow is another 5K race in the morning! Wish me luck!

glad I found this thread. I'm done with treatment, triple negative and using diet and exercise as my 'prescription' to keep cancer away if I can help it. Love the ideas in this thread.
Sagina---I eat A1 on my baked potatoes too. Love that. Tastes great. It isn't strictly a vegan food though. It has worchestershire in it, which contains anchovies, but it is soooooo good.
My healthy choice is breakfast. I make up a pot of plain quinoa and keep it in the frig. All week long I take some out, warm it up and have it for breakfast with almond milk, ground flax seed, a few crushed walnuts and either cinnamon or fruit. So good, so filling and keeps me filled all morning long.

I'm cooking the quinoa too and storing it. I am drinking Almond milk too, that sounds good. Corrine gonna try your breakfast too. The steel cut oats seems a little harder to cook than instant?
The A1 is my vice.....I gave up sugar too, and it's full of that too!

I'm working toward vegan, eventually. Cheese will be my downfall when I get that far. I unfortunately love cheese. For now, I'm just taking babysteps to better health. Beef and pork are gone. Chicken is probably a couple times a month. Fish maybe once a week. I eat lots of quinoa. Sometimes I crave 'comfort foods' and when I want that I cook a pot of lentils, plain, drain them and then stir in a can of Manwich. Yes, it's processed sauce, but it makes meatless vegan sloppy joes and sometimes you just want to taste something familiar that isn't bad for you.
steel cut oats are great but do take a long time to cook. Sometimes I just put them in my crockpot and cook them slowly overnight. You wake up to yummy, hot, steel cut oats.

Gina---you can also find almond milk or coconut milk yogurt at Whole Foods for breakfast. It's on the expensive side and, truthfully, I think it tastes awful, but that might just be me. You might enjoy it.
But who says breakfast has to mean breakfast type foods. Eat what appeals to you, that will kick start your metabolism for the day. If it's a slice of leftover veggie pizza with vegan cheese, so be it. The idea is just to get some food into you to fuel your morning so as long as it tastes good to you, eat it. I've been known to have roasted red pepper soup, sipped from a coffee mug for breakfast.

Hi ladies. Just back from a weekend get-away to Los Angeles to see my brother and friend. Did OK until tonight when I came home and met DH for dinner. Tempura and asparagus rolled in paper thin beef. Yummy but oh so bad and oh so not worth it. Well, tomorrow is another day, and I am home with my own pantry.

Yesterday good food choices were brown rice shiitake mushroom sushi and a caesar salad for dinner.
Today I had a whole bran muffin and plan on having soup for lunch and a veggie sub for dinner.
Someone want to help me understand why I am eating better, exercising more but not really losing weight? Things are shifting-flatter, firmer, toner kind of shifting, but I am not really losing weight. WTH?

I received brussel sprouts in my Fresh Picks box. Anyone have a yummy recipe? Would it be weird to chop them up and add them to veggie soup?

I just like them roasted with a little olive oil, s&p. The leftovers I put in a glass dish and keep them in the fridge. Its a great little salty snack. I have read (never tried) making them with cranberries and walnuts. Here is the recipe:
