     Made a Tamale pie for dinner tonight it was really good. 

    FILLING

    • 1 1/2 lbs. ground beef
    • 1 small onion, chopped
    • 2 cloves garlic, finely chopped
    • 2 cups (16 oz) enchilada sauce
    • 1 cup whole kernel corn
    • 1 can (2 1/4 oz) sliced black olives, drained
    • 1 cup of cheddar cheese (grated)
    • salt and pepper to taste

    CRUST

    • 2 1/4 cups albers corn meal ( yellow)
    • 2 cups water
    • 1 can (12 fl oz) evaporated milk
    • 1 tsp. salt
    • 1 can (4 oz) diced green chiles
    • 1 to 2 cups of cheddar cheese (shredded)
    • Sliced jalapeños (optional)

    FOR FILLING:
    COOK beef, onion and garlic in large skillet until beef is browned; drain. Stir in enchilada sauce, corn, olives and salt.and cheese

    FOR CRUST:
    PREHEAT oven to 425°F. Grease 12x8-inch baking dish.

    COMBINE corn meal, water, evaporated milk and salt in medium saucepan. Cook over medium-high heat, stirring frequently, for 5 to 7 minutes or until thickened. Stir in chiles and cheese. Reserve 2 cups corn meal mixture; cover with plastic wrap. Spread remaining corn meal mixture on bottom and up sides of prepared baking dish.

    BAKE for 10 minutes. Cool in dish on wire rack. Spoon beef filling into corn meal crust. Spread reserved corn meal mixture over beef filling.

    BAKE for 15 to 20 minutes. Sprinkle with additional cheese. Bake for additional 5 to 10 minutes or until cheese is melted. Garnish with jalapeños.

    Deborye - I hear you about organizing group events, it is a lot of work.  I read some of the discussion about the Las Vegas trip and it definitely sounded like there was lots of fun involved in that trip.  I might be up for something like that next year.  I LOVE Vegas and when I was working, I made several trips out there because my company was the local telephone service provider for the Vegas area.  I always stayed on the strip because the hotels were cheaper than the standard "corporate" hotels, so my evenings were fun and the dining options were endless!  One of my favorite restaurants is the French cafe with sidewalk seating at the Paris and across from the Bellagio fountains.  And the view at the top of the Eiffel Tower, at night, is spectacular.  One of the guys that worked for me had to go out there for business for a few days.  His girlfriend was going to join him for the weekend, and he intended to propose while he was out there.  He asked my opinion on where he should do it, and I suggested the top of the Tower.  I didn't know it then, but she had been to Paris, can't remember why, so it turned out to be the perfect suggestion.  They are now married and expecting their first child in December.  He is one of my favorite employees/co-workers ever!

    Laurie - hope you and DH have a beautiful anniversary/date!  So long as he doesn't make any plans that get in the way of you joining in with us on Sunday.  And I suggest you make it a progressive dinner.  Margaritas and appetizers at your favorite place, then on to entrees at the "best food" place, followed by dessert and coffee at the place with your favorite pastries.  You've got all night, right???  By the way, we gave this to our DD and SIL one year for Christmas - a personal chef will come to your house, cook and serve a full dinner for you that includes your favorite appetizers, entrees and dessert.  This guy is in MA, but I suspect he may travel north a bit.  Something to think about for the future!  You could farm out the kids, or have the meal served after the kiddies go to bed.  In the meantime, they are entertained by the goings-on in the kitchen.

    This time tomorrow I'll be getting ready for my LAST chemo!!! Six months ago I couldn't even imagine getting past the first session!

    Michelle  i also had a day with my parents yesterday, they are 79 and 77.  they go to the gym every morning for a "workout" and my dad was showing me their new ipods that they like to use while on the treadmill or bike. LOL I dont even have an ipod! then they go to the senior center for lunch, and when I ask my mom how she likes it there, she says "its ok, but theres a lot of old people there" ha ha

    Debbie love the sounds of that tamale pie, a good Sunday afternoon football dish! 

    Laurie   Happy Anniversary!  I always said, it didnt matter if my husband just took me around the block, if the kids were gone for the night, it was a date for me.

    Tonight I will do a pork roast on the grill, and going to make some home made applesauce. Will have to have summer squash as i went to get some corn on the cob and it was gone....just wanted it one more time.

    Carrie - that is so awesome that your parents are enjoying iPods and going to the gym every day!  I wish my mom could use one.  We tried giving her a netbook about 3 years ago, and "dumbed it down" as much as possible.  She couldn't even figure out how to turn it on so that was a bust.  Alzheimer's sucks as much as breast cancer!  She is in perfect health, otherwise, so it's even more frustrating.

    Michelle, my mother has Alzheimers too.  She will be 85 on Saturday.  She is also in perfect health otherwise, but she is wheel chair bound because she fell and broke her shoulder a year and a half ago and couldn't balance to walk.  Wasn't able to learn to walk again because she couldn't actively participate in physical therapy.  They tried, but she just couldn't follow directions.  I think it sucks even more than BC.  When I saw how it affected my mother, I wished I would never get Alzheimers.  I thought of that wish the minute I was dxed with BC.  I have to be careful what I wish for.  LOL

    Laurie, sorry I forgot to wish you a Happy Anniversary.  Happy Anniversary!

    That tamale pie sounds good.  I am going to try that one too.  I have to get out of this rut of just cooking the same things all the time.  I think it's because I'm just not confident in my cooking abilities.  i think it comes from being Irish (not known as great chefs) and from my mother.  We always loved her cooking, but she used to say she'd know something was done when the smoke alarm went off.  Everything was cooked well done in our house.  I am trying to break that habit.

    Carrie, I wish your parents had access to a senior center like ours.  Our sign says Everybody Welcome and our regulars include people of all ages.  We even have highchairs!  A couple of our members bring their grandchildren in at least once a week and every one lights up when they come.

    I am not in the mood to eat or cook, but do so almost daily.. Sometimes, I'll take a day off and tell everyone to eat leftovers.  I made Chicago deep dish pizza last nite.. kind of like the recipe here.. it is so good and I've streamlined it so I can make it from start to finish, including the dough in about 90 minutes.,,. with plenty of time in the middle to do laundry and such.

    This is really a good recipe.. i use ALL olive oil.  The sequence of cheese, 'sauce' and toppings is important as the cheese keeps the crust crusty and not soggy.

    Hi ladies:  I'm new to the site and the recipes sound terrific.  I'm always looking for something new to cook.  We just returned from a 10 day cruise so we'll be eating "slim" for a few weeks until we're back on track.

     Tonight I'm having salmon and a nice broccoli slaw that I found packaged in the produce area, complete with cranberry bits, nuts and a nice dressing.  Just toss it up and serve with the salmon and you have a healthy meal.  Could add some brown rice if you want carbs.

    I also made a big pot of chicken vegetable soup.  Take a rotissary chicken from the store and take off the skin, cut it up in chunks and set aside.  Saute garlic, onion, celery, red & yellow peppers and carrots in a little olive oil, add a can of tomato bits & chicken broth, and bring to a boil.  Add the chicken and simmer for about an hour, then I cut up and add summer squash and zuccini about the last half hour of cooking so it doesn't get too overcooked.  You can also add potatoes, but I don't.   Add seasonings to taste and serve with a salad.  It's even better the next day.  Sometimes I have it for breakfast!

    Welcome, Kaara!  Your chicken soup recipe sounds like one I've made with the rotisserie chickens.  I actually leave it on the bones and simmer for an hour with carrots, onion and celery, and covered with water (or you could use chicken stock) to get a bit more "richness" into the broth.  I will eat chicken soup for breakfast, too, especially in the winter when I have a cold.

    Hi kaara- Your soup sounds really good, so does the already to go brocc slaw, dont think we have that in our store here, i will have to check it out.

    Michelle- Congrats on your last chemo tomorrow, hope SE are minimal and fingers crossed your counts are good and wont need the shot ((((((hugs))))))) BTW- You do look 10 years younger in that color of wig it looks fabulous on you.

    Everyone talking about there elder parents i wanted to share that my friend george who is 92 or 94? Plays golf every day, works out everyday and is still going strong, hope when my dad reaches that age he will still be this active We have much to learn from them, ;-)))

    Roasting 2 cornish hens and potatoes, carrots and onions, I perferr to roast the veggies in an iron frying pan w/EVOO they seem to brown up better.

    Thanks, everyone!  I'm so looking forward to putting chemo behind me! 

    Regarding my picture...isn't that a hoot!  I've never, in my entire life, had hair that dark.  And that is a $25 costume wig I ordered from Amazon!!!  Geez, I've spent my "hair styling" money in the wrong places all these years...lol!   I don't know if I have the guts to try anything that dark when my hair returns!  It might only work if I wear the 70s outfit with all its bright colors!!!

     Debbie - hooray for your friend, George!  My SIL's grandmother is getting close to 90, still lives alone in Florida and is an almost scratch golfer (at least that's how the story goes!)  In any case, she's also sharp as a tack, gets on the internet and does email, etc.  She's one amazing woman!

    Well I had said I wouldn't color my hair when it came back (and it will be mostly grey) but I'm definitely going to have to reconsider based on all this!!!  If I am going to have a better body from the boobs down than when I was in my mid-20's, I'm going to need the hair to match!

    It was in 2008 I met up in Vegas with with the chat room gals not the vegas gals on the discussion boards, althoug they sound like a lot of fun, too.  I didn't organize the vegas trip, just the community boards Papa Razzi get together, I have a pic on FB somewhere.  Cornish hens are almost done.  DH is drooling.

    I was on FB and my veggies got pretty dark, DH like them that way, PHEW!  Picked some Rosemary from my garden and stuffed it inside the hens.  The smell was awesome.

    I have never ever had a cornish hen, with all the chx i have eaten i just couldnt get myself to eat one, dont know why but have heard they are tasty, never eaten, squirrel,capons,rabbit, turtle, snake frog legs, escargo, now i have served all these thing while working in a fine dining restaurant but could not bring myself to eat it

    Michelle- So what does your Dh think about the new hairdew? Tell him we all love it on you. Who knew it was a 70's wig looks great Again, good luck tomorrow for last chemo

    Debbie - that 'do was supposed to be nothing more than a costume look, meant to be fun for my son's party,  My daughters said that I was totally pulling off the look, I think DH thought it was just funny and never took it seriously.  But now I'm going to be hard-pressed to ignore it.  Someone tells me it makes me took ten years younger then I must listen!!!  He is chuckling over the whole thing.  I actually checked out really dark longer wigs last night...might have to buy a "real" one that fits my scalp a little better.  My daughter thinks a red one would be good, too.  Maybe auburn???

     Up and having my coffee, then it will be time to get ready.  I have to be at the chemo center at 9:00.  My daughter arrived last night and made three surreptitious trips to the fridge and up to the spare bedroom.  I think she's got a party in the works!  I charged my camera batteries.

    Michelle   put that wig on and your best sexy outfit and then see what your DH has to say about it!  Ha Ha   they are such simple creatures.

    Any way back on track.....cornish hens are the best, my mom would make them all the time with stuffing, just like a mini thanksgiving.  I dont think to make them, but now they will be on my mind.

    Tonight is hump night and weather is iffy so the back-up plan is to go to our favorite bar/rest.  they have a 10$ steak with vege and potato...usually pretty good.

    Do the tats hurt? Do they burn them on, or use a needle, sounds a little scary. I am meeting with the radiologist today, just to talk about the upcoming rads, so I can ask there as well, I just like talking with my girlfriends on here , who has been through all of this Smile

    zumba, my tats for rads were just 5 little pin pricks.  Compared to a lot of what we go through hardly noticeable.

    Love cornish hens..perfect dinner for two!  In western NC they are hard to come by.  I asked for them once by name and I got a blank stare, then finally the guy said "oh..you mean them little chickens, they don't fry up so good".

    I'll have to wait until I return to Fl to make that dish.

    I was worried about the tattoos, too... Mine are just 3 very tiny dots (smaller than the head of a pin).... I have 1 on each side of my torso right around the bra-line and 1 on the inner side of the opposite breast near my sternum....



    Barely noticeable and I really don't remember it hurting at all...

    wow this thread has been busy!  Welcome back Seaside, so glad to see you posting here again.  Michelle- I hope your last round goes well today and is gentle on you.  I'll be thinking of you.

    Dinner out last night was great.  We had two appetizers that were amazing.  Stuffed portabellos and some fried calamari with an incredible dipping sauce.  By the time my baked stuffed eggplant came I couldn't even eat much of it.  But it will reheat nicely I'm sure. 

    My stupid cold is making a reappearance it seems.  I'm hoping both boys nap for me today so I can lay down for a bit too.  I'm bulking up on the vitamin C big time.  I have no time to not feel well!

    Dinner tonight is going to be a roast chicken.  I've done this recipe a couple of times and it is so easy and comes out awesome.

    Enjoying a French continental breakfast/brunch at chemo - exotic cheeses, bread, variety offruit, dark chocolate, variety of olives, sparking cider, and chocolate covered pistachios.  We have generated lots of smiles!

    That sounds good Michelle.  Congrats on being done chemo, and you did it in style too!

    Zumbagirl, I think we're in the October rads thread together.  I just got 5 tattoos last Monday.  They didn't hurt much, just a pinch and a slight burning sensation.  Took a second each.  I actually haven't found all of them.  I've only found 1.  It is a very small black dot.  Kind of looks like a mark from a pencil point.  It's not like I've searched for them, but they're definitely not obvious.

    I just got back from getting Herceptin.  NP told me I definitely have lymphedema.  I only see very small amount of swelling, but next Thursday off to a lymphedema specialist to get wrapped and learn how to wrap.  Oh joy.

    Tonight is a Jewish holiday, going to MIL's for dinner.  I'm sure it will be delicious.  We're bringing the cheeses: a cheddar, brie and a roquefort.  What I'm really looking forward to is dessert.  I hope she made her chocolate chip cake.
