I just got home from visiting my Dad tonight so I am not going to cook at this hour!!!

DH decided we were going out...so I had a burger and he had steak tips. Was just OK, but we chatted with some nice people at the next table.
Laurie - you've never eaten a rib???? OK, now my "Kansas City" is coming out! I can't even imagine anyone never having eaten a rib! I cooked them often when we were camping. The pork country-style ribs are yummy!

I've had those cryovac ribs that are pre-cooked. Pretty good, really.
Does anyone know which local store chain might carry Mexican chorizo? I struck out at my local Shaw's. DH likes it in my chili, and I was always able to find it in KC. Maybe I need to go check out an Hispanic grocery store.

I'd try a locally owned store in any area with a sizable Mexican population.

chabba- I chuckled when I just read your post. We're in NH, from what I have seenin my corner of the state, there is no sizable Mexican population!

Laurie - didn't realize I had fallen victim to the news media, I'm usually too cynical. With Washington's huge agricultural industry the media here would have you believe that "undocumented aliens" are everywhere in the country.

Laurie- That is so funny you never had ribs before- As Michelle said the pork ones are the best, you really have to try them with your favorite bq sauce.

Definitely lots of French Canadian, starting with my family - my grandmother and her 8 siblings were all born in Canada. I remember being in high school (that is when we returned to Nashua) and having kids that were completely bi-lingual. They always had the advantage in French class!!!
I'm sitting here with my costume for tonight's 70's party and DH is shaking his head. I started with the wig because my head was cold and I figured it could use a little gravity to help the style. I may wash it with my wig shampoo to see if it makes it a bit more manageable. I make him model his wig and he said he isnt't going to wear it, so I played the cancer card and he said he'll wear it until it gets too hot. I told him he'll wear it until he does the Sonny & Cher karaoke with me...lol. Then he can take it off! His needs to be washed and restyled, too. So you know what I'll be doing today!!! I need to get some false eyelashes, mine are gone and my glasse are too contemporary so I'll wear my contacts. I've never, ever applied eyelashes, this should be a hoot!
I made a double match of Chex Party Mix - the old, old recipe from the 50's and 60's. No bagel chips, we used Mr. Salty Pretzels which are no longer available. I actually checked all the pretzel bags to find the ones with the most sodium...lol. There is nothing "healthy" about this snack, but then it's not as bad as half the crap that will be at the party tonight.

going on the lake today to watch the hydro boat races, my DH informed that he invited lots of people to go along. Off to the store I go to get some finger foods to entertain everyone. think I will also make a huge bowl of popcorn, been craving some lately
I have never put chorizo in my chili...what kind of flavor do you get from it? is it hot?

i am so excited.. i have some oxtails and a beef bone or 5. I am going to make oxtail soup with extra stock for later. I just love it. I will add whole small potatoes a can of tomato paste and vegetable reluctantly.. i love veggies but i also love an intense uncompromised beef stock. I'll probably add garlic and onion and celery but add frozen mixed right before serving.. maybe at the table to cool the soup down.
I don't have time to make bread today, but wish I did. The temp. will peek at 70 degrees around 4.
chorizo (definitely Mexican not Spanish or Portugeuse) really makes chili excellent. I love HOT, but can't tolerate now with my mouth compromised by drugs. I do like authentic and rarely find it too hot to handle. good luck Carrie. Goya sauce/marinade and lime is really good in chili too. I like a lot of complex flavors, particularly sour-ish.

With all this talk about ribs, it reminded me that I have a boat load of ribs in our freezer in the garage. It came from that cow I bought with two co-workers. No one esle wanted the ribs. They didn't ask me, they just gave them to me. I know pork ribs are supposed to be better, but can anyone tell what to do with these ribs? My mother will be 85 on Oct. 1 and my sister is having a party at her house. Hopefully weather will cooperate. I'm already slated to make meatballs, but it would be a good opportuntiny to get rid of, I mean share these ribs. Can anyone give me an easy, full proof recipe? If not, I guess it's off to google I go.

Carrie - I always do mine on the grill, but I know many people cook them in the oven and they turn out just fine. If they are racks of ribs there is a membrane on the bone side that you should remove. Cut them up into about 3 rib piece, it will make cooking and serving much easier. Do a google search for a rub that has flavors you like. There are so many, and everyone's tastes are different. You can add liquid smoke if you want that smoky flavor. Right now the smokiness is a bit of a turnoff for me. They don't take a real long time to cook, and you want the meat to be tender, but still have a slight "pull" as it comes off the bone. Have some bbq beans and sauce on the side for dipping. Some people coat the ribs with sauce, but others (purists) feel that you want the flavor of the meat and rub to shine through, and people can add their own sauce. Cooking time will depend on the kind of ribs and their sizes.

Feeling really rough after chemo 6 (and last
) but have been making healthy meals all week. Last night in a little extra virgin olive oil, I sauteed yellow, red,, and orange sweet peppers, artichoke hearts, and black olives, and tossed in a little whole wheat penne pasta. It was flavorful , and very tastey .

Going with with forum and reading has made me hungry. I like a bowl of cereal with banana's or strawaberries. Always 3 boxes on the refrigreator. Husband does most of the shopping and cooking so we preplan what's for dinner. I like steak - proteins. Beans, rice, and salsa sounds so good. And I just had a big breakfast!

I used to get a lot of beef ribs for my family - cut off of the prime rib at a restaurant i cheffed at.
They really are good in the oven.. slow cooked 3 - 4 hours at 250.. quite a low temperature.. I like lots of sauce but it is important to be able to drain off the fat (i think). one can spoon the fat off the top of the sauce.. time consuming but no difficult if you tilt the pan. I covered the pan with foil. a long, slow cooking makes them melt in the mouth delish. They are good tho, quickly cooked... just mucho chewier.

NH Ladies- A wrench has been thrown into October 2nd and my plans to meet you ladies. Our cousins sent un an evite for a birthday party for the 2nd from 12-2. I got it this morning. BUT with that being said, I am going to see if my husband will go solo with the boys and that I can still join you! It's race weekend and my DH has been at the race all day so I'll talk to him whenhe gets home and see what he thinks. I'm pretty sure he'll be fine with it, he thought it was great that I was going to go in the first place. So I'll keep you posted!
Apple- in ox tail soup do you really use an ox tail? I have strange visions in my head...hmmmmm.
Ribs...I was a vegetarian for years and still don't care to eat meat that is on a bone or that I have to "pick" through. DH said they weren't that good as far as ribs go and not to judge them on what I had. I didn't think they were all that good. I'll need to try some another time.
I have no idea if my DH will be home for dinner or not so I threw a roast in the oven. If he's home late I can make pepper steaks from the meat and we can have the left overs another night with gravy and mashed potatoes. I usually do this the other way around but I figure this way my bases are covered.
Also, lol at the Canadian heritage! When I was growing up the adults spoke french more than they spoke english. My mother was from the West side of Manchester and my dad from Suncook. Both VERY french areas. When I was going to marry my DH my father told him " You know you're a lucky man. Your marrying a french girl. That means you'll always have great food on the table and money in the bank. Now you just have to learn to smile and nod, because they talk a lot too- but it's worth it." How funny is that??

Carrie- Chorizo is also good cooked with eggs it does have a spicy flavor and is a little greasy but very tasty.
Kay- You can put your fav spice on the ribs wrap in foil and cook in the oven or on the grill then about 1 hour before its done i slather it with bq sauce and uncover
Im going to chinook winds casino today they are having Wheel of fortune try outs my Dh said there is already about 2,000 people there, this ought to be interresting, but cook if i got to be a contestant, who knows with my dazzling smile.....

Made a couscous salad yesterday I always make it the day before so they flavors can marry- It is so yummy and healthy- will be having that with baked cod tonight for dinner
Ingredients;
- 1 box flavored couscous (garlic or Parmesan), cooked
- 1 can chickpeas
- 1 red bell pepper, finely chopped
- 1/2 Vidalia onion, chopped
- 1 English cucumber, peeled, seeded, and finely chopped
- 1 tomato, chopped
- 1/4 cup fresh parsley leaves, chopped
- 1/2 cup crumbled feta cheese
- Salt and freshly ground black pepper
- 1/4 cup olive oil
- 2 to 3 limes, juiced or can add some itialian dressing to it
- some fresh parmesan for extra flavor
Directions
In a large bowl, toss all the ingredients with the olive oil and lime juice, to taste.

So I am a go for the get together on the second! Once again my DH proved why I love him so much. He got home tonight and as he cooked me pepper steaks from the roast I had cooked I told him about the evite we got for the birthday party. To quote him "Aren't you supposed to go meet those ladies from that cancer thing that day?" I said yes. " Ok, I'll take the boys, not a big deal." I didn't even have to ask.

Awwe so sweet laurie- Sometimes our DH surprise us and do things that are unexpected which makes it even more special/
So bored tonight, i dont feel like cleaning, (drank to much last night) LOL! never even got out of my pj;s. DH works til midnight, and nothing on tv, decided wheel of fortune will have to wait till tomorrow.
