    Today? Coconut crusted french toast made with Ezekiel bread and a sliced ripe banana on top. Green tea to drink.

    Okay you are providing lots of great ideas for future meals.

    I just purchased my first loaf of Ezekiel bread last week and its in the freezer.  I haven't tried it yet.  Can you use it directly from the freezer and toast?  Or is it better defrosted.  I was going to have a no soy veggie burger with tomato tonight.  Thinking I should try this on the Ezekiel bread instead of a bun.

    Also plan on having this with roasted beets with goat cheese and walnuts.

    Lettuce tomato and sweetcorn salad. Bo-o-o--RING!!! So we also had ovenbaked falafel which is basically just flavoured chickpea flour, and a dish of pine-nuts and cranberries. With ketchup as well as mayo, I need some calories!

    So that's four of my five a day and all vegetarian. Banana on toast for breakfast makes my five Innocent

    Keep up with all the good work and don't despair over one bad day.

    Jumping back onto the health wagon now.  I had a small pc of wild caught trout, quinoa with shittake mushrooms and greenbean last night for dinner.  For lunch today, I had organic grapes, baby carrots, green tea and a small scoop of turkey salad (from Monday's dinner) with veganisse, walnuts, cranberries, curry and tumeric powder.

    Tonight I am going out for dinner with the family, and plan on getting veggie fajitas.  I won't have the chips or guac and try to stay away from the refried beans and rice.  I will pass on dessert and have a fruit smoothie when we get home if I have a sweet tooth. 

    My family loves Mexican and guac/chips and dessert of either flan or tres leches cake always is a must-have.  I have pulled myself away from the margaritas, and dessert is next.

    Corinne, you are really being good.  I have been having a lot of pizza lately.  After Uni MX and DIEP on 8/17, can't really cook.  I hope pizza's not too bad.  Did have an organic peach yesterday and today as well as salad yesterday.  Going down the shore this afternoon for a few days, will be as good as I can.  You will be my inspiration to stay as good as possible.

    It's the quorn brand. Got it from Whole Foods. Made with mycroprotiens (sp?) which sounded like a mix of fungus like mushrooms etc. Really tasty. I have the Trader Joe brand and the hubs picked up an Indian brand (will check the freezer tonight) that was all veggie and no soy.

    Birdlady, I just had blueberries topped with Greek yogurt, and both my hubby and I agreed that they were not that great - edible, but not really that tasty or sweet.  

    Anyway that's my healthy food - fresh blueberries and Greek yogurt.  We have yogurt and fruit almost every evening as an after-dinner snack.

    Banana/strawberry/blueberry smoothies with a splash of coconut milk and a handful of ice cubes have become my "sweet tooth" treat.  I have had a few of these this week.

    And Birdlady, I am not the biggest WholeFoods fan...their prices make me cringe at times.For example--$10 for their guac?  Whatinthe?!?  

    *But* considering that I am not eating red meat or pork anymore, I feel as if I can swallow the cost per lb on their organic chicken and wild caught fish especially when you aren't eating meat everyday.  Also, I go to the krazycouponlady.com and she has great tips on how to save at WholeFoods (printable coupons+the WF calendar coupons).

    Kamucha Synergy tea, my beloved Kambucha tea. It was banished as an anit-oxident for so long and I just finished treatment today. Went and bought all they had at the local health food store LOL

    CHUG-A-LUG! I can feel it cursing through my veins and my body screaming "THANK YOU!"

    I have never had or heard of Kamucha tea.  What are its benefits?  I drink a lot of green tea...is it supposed to be better than green tea? I would like to find out more about it and try it.

    My good food choices today were:  banana strawberry smoothie for breakfast. Green tea and a NuGO10 cranberry energy bar as a snack.  1/2 a black bean/spinach wrap with wheatberries and fresh fruit as side.

    I was out of town for the weekend and ate more sweets than I should have, a slice of peach/blueberry pie and a handful of chocolate chip cookies.  My mom is a great baker and I *had* to try out the sweets of her labor! :) 

    While they tasted great, I can literally feel the difference in my body the day after I eat these things.  I feel heavier, I was sluggish.  Back on track today.  My exchange surgery is this Friday!

    Good choices today include 2 cups of green tea before noon, and plan on having stir fried veggies with brown rice for lunch.

    good choices today included 2 cups of green tea and organic egg salad with curry and tumeric.  On toasted wheat with slices of home-grown tomatoes.  Yummmmmy!

    For tonight, a roasting pan full of olive oil tossed root veggies-carrots,parsnip,golden beets (I never tried them before) and turnips with fresh herbs over brown rice with almonds. Lightly grilled bananas with agave and blueberry drizzled on for dessert.  I have company this weekend, and she is used to me making a nice big roast beef or chicken.  Surprise!

    Homemade organic hummus on an ezekial wrap with red pepper, baby spinach, red onion, broccoli sprouts, and avocado.  Delicious!  I had a smoothie this morning with organic blueberries, organic soy milk, 1 scoop of chocolate vegan protein powder.  Also yummy!

    Nob Hill has the quorn brand too.  My daughter swears by the "turkey" burgers.

    Had a glass of the "green machine" from Naked.  Looks like sludge, tastes great.  I purchased a big ole' bottle of this and really like it.

    Last night I had (and I should do this more often) take out from a vegan, buddist, korean place that is only a few blocks away from me.  No oils, no salts..just super tasty steam/stir fried veggies in a variety of different sauces with brown rice.  Sounds boring right?  Swear its really good stuff.  I see lots of cancer surviors in here, along with cute families with little kids (which is amazing considering McDs is less than 1 block away) and believe it or not, bikers.

    SAB--that sounds wonderful! How did your guests take to the change?  I am like you.  We would make large roasts, mashed potatoes with loads of butter, rich desserts, cheese platters etc.  

    Thanksgiving and Christmas are going to be a little different this year.  I will make most of the things as we did before, but there will be brussel sprouts (replacement for green bean casserole), baked sweet potatoes (white mashed will also be there), quinoa with cranberrys and mint (along wtih stuffing) and Ezekiel bread (good-bye pillsbury rolls).

    I found a farmer that sells organic turkeys and we have an order in already.

    Corrine, my kids were both way ahead of the curve.  They have both been vegetarians for 3-5 years (each since they were 13) and so I would make veggie stuff and then (stupid mom) make some meat thing for DH and I.   

    Anyway, the root veggies were great, I made them "Naked Chef" style and tucked mint under the carrots, thyme with the parsnip, marjoram with the golden beets and rosemary with the potatoes (OK, I know potatoes are cheating.)  I tucked red onions in between the sections of veggies, and it was very pretty.  We ended up eating it with a spring green and spinach salad.  Would definitely do it again. Especially since it was easy, easy, easy.

    About to start on a quinoa pilaf for today, with the classic spinach and walnut salad, with dried cranberries and red onions.

    I hadn't thought about Thanksgiving until you mentioned it!  We usually have Turkey for the family and Tofurkey for the kids, but I think you're right--it's time to rethink all those ewwy, gooey sides.

    Good food choices today were strawberry/banana/blueberry smoothie, 2 cups of green tea and went to an Indian buffet for lunch today.  Had the veggie entrees, skipped the sweets and meat dishes, but probably overdid the naan and basmati rice.

    But I am still full, so I am considering this my one meal of the day.  What I like to call "Linner" (lunch+ dinner) if you will, or "brunner" (breakfast+lunch+dinner)

    Good food choice today are 2 cups of green tea and shiitake mushroom sushi for lunch.

    Tonight will be veggie burger and tomato slices on whole wheat buns.  Don't know what (if anything) will have on the side.

    Nice to find this thread!  I'm new to this site and in the process of being diagnosed, but whatever happens, it is a wake up call to eat a healthier diet.  We have started cutting out everything white..white potatoes, rice, pasta, bread, desserts (anything high in glucose).  I serve only veggies and salads with our protein dishes, and try to keep the meat dishes to a minimum.  My friend completely cured her auto immuine disease by going vegan...something to think about.

    Dr. Oz mentioned a great sounding drink on his show the other day....green tea mixed with tangerine juice and mint.  Sounded yummy.

    This has been such an adjustment for me, but it's going better than expected.  About to fix lunch today--a nice whole wheat tortilla filled with greens and home made white bean hummus, and lots of veggies. (I bought a great mix at Trader Joes-diced cabbage, jicama, carrots, radish, celery peppers and brocolli.)   Have also started drinking their jasmine green tea and the scent of jasmine has helped to cut that grassy taste that I have so much trouble getting past.

     Good luck Kaara, hope it's a false alarm for you. I couldn't give up pasta and rice so I'm in the process of trying whole grain pastas/breads and brown rice. Love the sound of the Dr. Oz drink.

    Hi Birdlady-I don't know about regular fresh beets I have only tried them canned in the past and HATED them.  Nobody at the table liked beets, but we all enjoyed the yellow beets.  I think that probably fresh roasted red beets are better than the canned, but have not tried them yet.  I might substitute yams or squash next time.

    Where is everyone? I need your ideas for dinner !  Yesterday I used up all the veggies in the drawer with a pot of veggie, barley and bean soup, made a sweet potato mash with Omega 3 butter substitute and almonds on top, sauteed spinach and brown & wild rice. Who's cooking healthy out there?
