So...whats for dinner?

Laurie, that is absolutely terrifying. It is amazing that you were able to stay calm and think clearly. You are in my thoughts. I echo what the others have said. I hope you are somewhere comfortable. I was just thinking just before school starts too, but your boys are still too young for school? Keep us updated and know we are thinking of you.
I love breakfast for dinner too. Going to be having a bowl of raisin bran in a few minutes, but it will be for breakfast this time. And chocolate cake is even better, but I'm trying to be an adult now. Blah! What BC will do to us! Had some more of the eggplant parm my sister gave me yesterday with some broccoli that DH made. He tried it a different way. He blanched the broccoli and then mixed it with a quarter cup of oil that he had boiled with garlic, red pepper and salt. It was good. I think he overdid the red pepper a little though. He tends to have a heavy hand with the "hot" stuff. I have grown used to it though and started to like things pretty spicey as well.

It's funny how many people like breakfast for dinner. I'd rather have lunch or dinner for breakfast! I love having a BLT (which is a little of both, I suppose) and I'll often eat leftover waldorf salad for breakfast. I'm not a big fan of most breakfast foods because they tend to be high carb and most of the time, I try to keep to a lower carb diet. I've become a big fan of plain Greek yogurt with berries, or apple slices with cheddar. Sometimes I'll eat my leftover restaurant dinner for breakfast - it's usually meat and veggies so it works well for me. But, if I really want a cheat, I'll eat half a bagel wth cream cheese or the blueberry muffin I'm going to have for "second breakfast" in about an hour, after which I am going to get off the couch and try to do a little laundry and cleaning. We are hosting our grandson's birthday party here on Sunday, weather permitting.
Kay - I like spicy things, too, and I can make really good grilled Buffalo chicken legs. But I can't eat any of that stuff at the moment - just too painful going down. DH is learning to back off the seasonings when he's grilling my meat. I actually threw away a bottle of spicy hot Montreal Seasonings after he doused my steak with it, once again!!!

I am better today, Sunday I slept all day, weather was cold and nasty, so took advantage and stayed home and rested. i dont usually have this response to herceptin, but I think I was just way overtired from all the summer activities. Only 3 more to go!
Laurie so glad you and the kids are ok. the clean up must be a nightmare though.....maybe collect all those bricks and use it for edging on a new garden...you can call it the lightning garden.
I worked the nightshift for 10 years and breakfast was always in the middle of the day and dinner was at 7am glad i'm not doing that crazy mixed up schedule aymore. tonight will be simple BLT's

Funny but I can always tell how sick I am by whether or not I want to cook dinner. Not eat.I'm one of those peole that always has an appetite. Well, I had my exchange this past Friday and I didn't cook a thing till last night. I made Mussels Fra Diablio with linguine and a salad. My energy didn't last too long as Hubby grilled steaks today and I did nothing!!

Debbie no I didnt, was out mowing the lawn, but my daughter in NYC felt it and was evacuated from her building. My DH also says he felt it at work about 20 min from our house. Scary for those in the city as they never know what is going on, or whether its another attack.
I am in "redecorate mode" Trying to do my sons bedrm a little differently, just scored a depression double bed frame from the local junk man...he has barns full of stuff but is getting older and doesnt display it outside anymore...I dont think he knows what is in his barns anymore, but he found a bed for me, I was gonna just get an old bed and paint it black but this one has fabulous wood, so will just keep as is. Anyway the whole point to this story is that I am done in for the day...so guess we will just do tomato sandwiches for dinner.
-
OH an Debbie that sounds like a great trip...did you move recently after treatment? Would love to see pics of your hair...how far out from chemo are you?
-
Debbie - I've been to Paducah, and to the Evansville casino! We wandered away quite a bit when we lived in the KC area! And I am feeling pretty good, I think I finally got the worst of the heartburn under control. I went to the grocery store and the drug store today - not too tired after. And I agree with Carberry - we need to see the pictures!
Carberry - great score on the bed! It's so fun to find treasures like that!
DocBabs - your mussels dish sounds like something I'd normally love to eat. Can't go with the spicy marinara right now. At least I can eat my own homemade meat sauce - lots of garlic, onion and basil but no heat.
Michelle
-
By the way, Barbara, congrats on getting through the exchange! I caved today and made 3 appointments for the rest of my fills. The chances of me having DIEP are so slim, but I'll fnd out more on 9/13 when I have my next appt with the Plastic Surgeon. If he thinks I have a prayer of having DIEP, I'll have him give me a referral. Otherwise, I'm going to fill up these TE's and get on with it.
Fearless_One - hope you're getting your energy back.

I have a computer again! Yaaaay! Things are looking hopeful around here. We have been staying in the house the whole time. We had water most of the time except for a couple of days and half of the electric was working, now most of it is. Today was another busy day. My husband took the day off to help me out with all the contractors etc. Today we had the cable company, Ins. company, plumber, electrician, contractor, water purification guy, (we had radon issues and it filters all our water and had exploded)mason, pool company and servepro come visit us, Insane huh? But we are on our way to fixing things. Michelle, you are right, what a mess! It is going to take me months to go through all the contents of the basement and figure out what we lost. When the cable guy was here he just kept telling us what was fried. We had a tv, wireless modem, a computer, our phones- all junk. My dryer needs to be looked at too as it is no longer really drying.
But I am happy we are all ok and in the end we finally got the basement cleaned out, not the way we would have wanted but, ohwell. The insurance company has been WONDERFUL not questioning anything and just ready to pay which feels like a miracle. We have to actually have our whole roof replaced due to damage.
We are going camping this weekend as planned on a lake which should be fun and it will be nice to get away from the house and the stress of it all. I need to get back inthe swing of things. We have been so busy trying to fix things we have been eating whatever is easy. The kids have loved that! Personally I am sick of pizza, we've had it three times since Friday, usually we have it not even once a month.
Thank you for all of you thinking of me and saying prayers. Perhaps that is what has given me the strength to keep sorting through things when I just want to sit down and stop. Despite everything so far I am just thankful for everything. My neighbors, family and all of these people and companies who have been so helpful, coming right out to help us. Our pool is fixed, water is fixed and electric half done and it;s only Tuesday! Hurray!!
I hope everyone is feeling well and had a great day
-
I am sooo glad that things are getting better for everyone. Yay! Good news I am thinking of you all
And for those of you that things are not so well, hoping for a change tomorrow
Tonight's dinner:
1/2 a watermelon
Seasalt and olive oil almonds (whole can)
Errrr I'm beginning to think I'm not very good at this
Spiced with bit of an attitude after rads planning
-
Laurie you have a wonderful outlook. It will get you through this. It sounds like you are already a good way towards normal. Keep us updated and your family will remain in my thoughts and prayers.
carberry great find on the bed! Wish I had some place like that here.
Michelle sorry to hear about the diep. I think I actually would have chosen implants, but they were not an option due to needing rads. I got one of the four drains out today though. Yay!! I think I'll be getting two or maybe all three of the rest out on Thursday. We were actually in the car on the way home from hospital where drain was removed when we felt the earthquake. It apparently registered 5.8 here. Being in the car, we felt the car shake, we bjth thought it was some kind of rough idling or something with the car. The building we had just left got evacuAted for about 30 minutes. It seems like thAt was pretty much the story in Philadelphia.
Debbie your trip sounds like lots of fun. Enjoy it and then tell us all about it.
Pizza for dinner tonight. My oldest friend came over with it. -
Laurie- So happy to hear from you and know you are hanging in there- Wonderful news on your insurance co, they can be jerks when they want (which is usually most of the time) happy to hear they are taking care of you. It sounds more like an earthquake went through your house, didnt realize lightning can do so much damage, so scary! Glad you are going camping hope you have a great time, you deserve it!!
Kay-I guess carberry felt it too, i cant belive how much damage it did to some buildings, so weird and scary that it was felt in different areas, colorado had one yesterday too, from a different fault line!!
I made a grilled turkery sandwich for dinner tonight, i layered roasted turkey, bacon, tomatoes jack cheese on sourdough bread and grilled it, delicious, i could of ate 2 but didnt-
-
wow Laurie.. you are lucky that YOU are ok. 'stuck' by lightning.. that is adorable.
Anyway, about my Ozark friend... I used to play pool (or billiards) and for some reason I got really good at it. (actually I stopped by my friend's pool hall and practiced in the quiet afternoons on these huge tables between my morning and evening waitressing jobs).
I somehow got on the pool circuit where you travelled from bar to bar and competed in tournaments. Some of the tournaments were in the Ozarks and you had to be aware (no drinking) and stay for hours in a bar. Anyway I met a woman named Karen and stayed with her when I went down to Bagnell Dam or beyond. She owned a little shop that sold the smoked meats that she smoked from her pigs.... Anyway, dinner, breakfast or lunch always featured her produce garden.
One meal was Nothing but zuccini..like 12 zuccini dishes and nothing else. One was zuccini, saltines and milk baked in a pan.. not the best dish... the bacon and tomato stuffed zuccini was pretty good tho. I was always grateful for her cooking as I was always hungry back then, being a cyclest as well as a waitress, cook or manager.
Some of her dishes were awesome... combinations of peas, sweetcorn and carrots rolled in lettuces and baked... i kid you not.
-
Laurie glad everything is getting back to normal for you, a lot of work I am sure. Enjoy your camping trip.
Kay it sounds like you are rocking this surgery! I had mine done back on mar 31, and I am pretty much back to my old self, will need stage 2, maybe in Nov, but am happy with what i have for now. Those pesky drains were the worst.
Debbie that sandwich sounds awesome, would never think to put it on the grill. Did you brush with oil or butter so as to not stick?
Apple those meals of produce only sound healthy and inventive. I think bacon in or on anything is well worth trying. I need to raid the farmers market as my fridge is empty.
-
Debbie - lots of Debbie McPherson's on Facebook. Can you try to find me (Michelle Hall Blue Springs, MO)? You should recognize my profile picture. Do you have a digital camera? If so, you should be able to connect it right to the computer or take out the SD card and insert it into the little slot on the side of the computer (I'm assuming you have a laptop). I can talk you through it, in any case.
Laurie - welcome back to the interwebs!!! I can't believe you were staying in the house with all the inconveniences. I'd have headed for the nearest Residence Inn, and I am sure the insurance company would have paid for that. Maybe it would have been too hard with little kids, they need their stuff! Anyways, glad that your contractors are making so much progress and so quickly. We had hail damage last September and were under construction for two months. Yup-new roof, new ceilings, floors sanded and refinished. To some extent, it was a godsend as insurance paid for some things that we felt needed to be done in order to update the house. But oh what a mess! And it was just DH and I! Are you going to have to worry about mold in the basement? Or is it going to dry out OK? That could be a bigger long-term problem. And I hate to say it, but the forecast for Sunday is heavy rain! Apparently Irene is heading in our direction and I can just see the camping situation disintegrating in a real hurry. We were supposed to host our grandson's birthday party on Sunday but my daughter has changed it to her house because of the forecast. We couldn't possibly have everyone inside without a major traffic jam, and it seems highly likely that the weather will be dreadful. We're going to have to figure out how to batten down the hatches - tons of patio furniture and no "indoor" place to store it. We may need to get tarps and bunjee cords!
Kay - I'm surprised you couldn't have had implants - I'm having radiation after chemo and my tissue expanders won't be a problem. Glad you are healing well and the drains are coming out. Those things are a serious pain in the butt! I had just two after my MX and I think the second one (left BC side) was in for 17 days.
Apple - interesting story about being a pool shark! Interesting veggie dishes. Have you ever shredded zucchini and used it like spaghetti? It works great, you just add it into the dish with the marinara and everything else at the very last minute, it cooks in an instant. Very nice low carb option! Aramark used to offer it at the pasta station in the Sprint campus cafeteria.
If anyone else does Facebook, just send me a Friend invitation. I think my profile picture will make it easy to find me.

Anyone have a good salmon recipe?
-
Michelle- Cant understand why facebook is so hard to find people these days, I searched for you and there are so many i looked forever- I changed my profile to Debbie louise Mcpherson and put my city, lincoln city oregon in so it is easier to find me now, try it and let me know if that helps, no i dont have a digital camera, i have skype and took a picture of myself and cant seem to d/l that pic on to any thing else. I cant even d/l outlook, im wondering if its because i have firefox, but i tryed it on ie and it still wont work,! I used to know what i was doing LOL!
Apple- The veggies baked in lettuce sounds up my dads alley (hes vegetarian) I will try to make that and see if its somthing he might like. Wow, you have done a lot of neat things I havnt played pool in years. would like to again,
Carberry- I cook like you would a grilled cheese, sometimes i use mayo instead of butter and it works great!
Laurie- Dont know how you are cooking it, grill? baked? sauted? I have a good salmon recipe that is fancy and uses burre blanc sauce- not sure you want that but if you do let me know. if you are grilling i season with s&p and rub some brown sugar on it wrap in foil and grill- Or if im pan frying n a little butte, I like lemonpepper seasoning and a little lemon juice then add capers at last few minutes and parlsley- in a 350 oven in a dish i like to add herbs like dill, lemonpepper a little butter and wine if you have and cook for about 12 minutes- If this is for camping the foil one works great.
-
Debbie - I found you, that was much easier! Do you have a camera in your cell phone? Sometimes I forget that there's a camera right there! Debbie, you are one hot mama! And your sis and daughter are gorgeous, too!
I have used the mayo trick to make a grilled sandwich, especially if the butter is cold. I will also spray the bread with Pam.
I am making Chinese Pie (sort of like shepherd's pie, layered with ground beef, corn, mashed potatoes and cheese) for dinner tonight. DH will be thrilled. My daughter Allison is here, but she wants a hotdog...lol. Easy enough!
Michelle
-
Michelle- I wish i still looked like that, but sadly 12 years later and wrinkles and weight, and chemo changed it all LOL! Not feeling very sexy these days, but thank-you! I do have a camera on my cell phone but how do i d/l in to my computer?
Your pie sounds really good, I make somthing like that only using a cooked cormean with cheese in it and top it off with that, but next time i will make it with the potatoes YUMM!
-
Debbie - take the picture then email it to yourself. Then you can download it from your email. You should also be able to connect your phone to your PC with a USB cable and then transfer the picture. I usually do the email - it's the easiest, I think. I think we all look different after 12 years. I have a lot more wrinkles, but about 40 less pounds! Aged like fine wine...lol!
Michelle
-
Laurie,
Not sure what kind of salmon dish you would like but, this one caught my eye in the grocery store.... http://www.mccormick.com/Recipes/Main-Dish/Recipe-Inspirations-Asian-Sesame-Salmon.aspx. It was on package of McCormick seasoning that had the exact spices to make it all pre-measured.... Looked easy and good..... -
Michelle- Dh is golfing right now when he gets home i will have him find the port ( i have never done this before but watched him do it) I took a picture and it is kind of blurry i will take it on his phone which is a lot nicer mine is a cheapie his is a good one (of coruse)
Seaside- that salmon dish sounds good! Good to see you back here
I wonder where sherrill has been??
Here is a ginger chicken i marinated last night and cooked today, it was so good, i added more ginger than it called for. You could also skip the sugar if your diet wont allow and put in honey or those unsweetend packets? I made a brown rice to go with it and fresh green beans
Shoyu chicken
- 1 cup soy sauce
- 1 cup brown sugar
- 1 cup water
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 tablespoon grated fresh ginger root (or more i like a lot)
- 1 tablespoon ground black pepper
- 1 tablespoon dried oregano
- 1 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon ground cayenne pepper (optional)
- 1 teaspoon ground paprika (optional)
- 5 pounds skinless chicken thighs ( i use chx breast too)
Directions
- Whisk together the soy sauce, brown sugar, water, garlic, onion, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika in a large glass or ceramic bowl. Add the chicken thighs, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate the chicken in the refrigerator for at least 1 hour.( i let mine marinate overnight)
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Remove the chicken from the marinade. Discard the remaining marinade. Grill the chicken thighs on the preheated grill until cooked through, about 15 minutes per side. Can also cook in oven as well.
-
Michelle and Debbie those are great recipes! Thanks to everyone ideas on the salmon. I found one on line for a cucumber salsa topped salmon that was pan seared. It had honey in the salsa, actually pretty darn good. I had never cooked or eaten salmon before but am trying to branch out for fishtastic Wednesday's. My husband was THRILLED as he loves salmon and in 14 years I have never cooked it,let alone eaten it.
Right now he is setting up a tv in the bedroom. Ours was blown with the whole lightning thing and he is so excited! I set up the less than exciting phones which were fried too. So we are on our way and I got a gold star for dinner! (not from the kids- but they ate it to get cookies so mission accomplished, it couldn't have been too bad right?)
-
Did someone mention Pickity Place? I have been going there 2 to 3 times a year since they opened. Love the place. On FB I have a ton of pics.
-
here is a link to the salmon recipe.
-
I saw these recipes in the Boston Globe Magazine and I thought you all, especially the veggie lovers, would really like these.
http://www.boston.com/lifestyle/food/articles/2011/08/14/white_beans_replace_lettuce_in_salads/
I am going to make the White Bean and Grilled Vegetable Salad - looks like a good way to use some zucchini and fresh herbs
Michelle
-
Laurie and michelle- both of those recipes looked great- I love salmon i will try this one but leaving the cilantro out and the white bean salad sounded really good too.
-
Deborye- I think that was Michelle and maybe kay who talked about that place
