Laurie- Those eggplant recipes look good, The lunch yesterday was good, and today im changing it up with some smoked salmon, capers, and cream cheese
Tonight I am making coconut shrimp with a orange marmalade sauce that i spice up with pepper flakes and some rice pilaf and left over green beans. I just love summer fresh veggies, I cant get enough.

Glad everyone is doing well and hopefully resting. got turned down for my herceptin today due to heart...gonna go for another echo tomorrow and then if ok, infusion.
Funny story.....my daughter is a fashion major and lives in NYC, has loved fashion and clothes since born, and works for a design company....ok....well she sent me a text that she was watching a cooking challenge show, so I asked her if she was learning how to cook ( she doesnt have a clue in the kitchen) anyway her reply was.." yeah right, I just figured out I have been wearing my shirt backwards all day and you think I can cook?" Guess we have to take her back to kindergarten and start over. That was my giggle for the day.
Made macn cheese for dinner cause thought I would be infused today and dinner would be all set when I got home...oh well...will throw some veggie next to it and call it a day.

Joyce - I sat out and read for a while. We are going to have dinner outside, then off for a little boat cruise! Dinner is pork loin with bbq sauce, potatoes on the grill with dill, chives, parsley and rosemary, and waldorf salad. Rick is cooking the pork right now.
Lena - you got your cottage cheese!!!
Carberry - hope the echo turns out OK, that has to be a little worrisome. Funny story about your daughter...maybe she is starting a new fashion trend!
Debbie - I haven't had coconut shrimp in forever. Sounds yummy! And yes to the summer veggies, we had BLT's for lunch. I have figured out that my dislike for tomatoes only applies to those anemic things you get in the store or on your restaurant salad in the dead of winter.
Laurie - woohoo on the potty training. It's like getting a pay raise when you don't have to buy pullups any longer!

Damn right I got the cottage cheese, Michelle and debbie! LOL! I even bought two containers of it. It goes really well (IMO) with canteloupe. And I can eat the cottage cheese straight out of the container, so no extra dish to wash, only the spoon. ;-)

My friend just dropped off two lg boxes of tomatoes and peppers from her garden. tomorrow I will make salsa and can it.

carberry- Yum! Your own salsa!
Debbie- How did you make your lemon caper cod?

Laurie- I will give you the two versions i make the second i make if i dont want to add wine or flour.
4-6 Cod fillets
flour for dusting
2 tbls each of capers, parlsely and butter
14 cup of white wine
3 tbls lemon juice
salt and pepper
Season cod with salt and pepper lightly dust cod with flour, shake off excess flour- pan fry in a little evoo, about 4-5 minutes per side. remove cod, keep warm- add wine, scraping up bits and reducing wine to half, add parsley and capers, take off heat and add butter and lemon juice- pour over cod

4-6 cod fillets, salt and pepper both sides cook in a little butter (You can also bake these in the oven at 350% for 7-10 minutes (remove and keep warm)
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons capers
- 1 tablespoon butter
- 2 tablespoons chopped parsley
DIRECTIONS
Put broth and garlic in skillet and bring to a boil, reduce heat and simmer 1-2 minutes til garlic is tender.Stir in lemon juice and capers.remove from heat, add butter and parsley- pour over cod -
Dont know why the second recipe came out weird looking? I also blacken them with chef pauls blackening seasoning in a pan with evoo and some lemon pepper I love them spicy!

We're going out for prime rib tonight - to a restaurant we used to go to 20 years ago. DH is all excited...lol. I am tired, just spent the day with my mom, took her to the doctor and they are putting her back on Aricept (a good thing). And we have to move her next week into her own studio apt in the same facility. The whole roommate thing has turned into a big bust. Big giant ugh!
Those cod fillet recipes look familiar, except I do it with chicken breasts, add some artichoke hearts and sun-dried tomatoes, a few Greek olives and call it Chicken Carciofi. One of our favorite little Italian restaurants in Missouri had this on the menu and it was my favorite dish. Sometimes I'd add in a can of cannelini beans and that made it a complete meal.

Michelle- Your chicken sounds yummy- I have been on a greek olive kick lately, at safeway in the olive bar i get the greek olives mixed with feta cheese, and then top it with there marinated articokes i then will put that in my chicken and add some asperagus, some times i add a little cream to it. Have a great dinner out!
Joyce- I hope you have a great weekend off and a fun lunch with michelle tomorrow!
Its our friday night out too as usual. im not feeling like going out, Its 3pm and i still have not got dressed yet! LOL! But DH always needs his drink by friday after working hard all week so i guess i will muster up the energy to get in the shower.

Ooohhh!!! I am blushing again! Joyce - you and Bob are the answer to my prayers! We have tons of family here, and friends in Milton but we needed friends right here! Oh by the way, I was in St. Joseph's today at the Dionne Sr Center with my mom, but I couldn't really call you. She has another appointment in six weeks and we'll plan to visit you after her doctor visit.
And now, let me tell you about the Glenview...it was like stepping back into a 20 year time warp! The place is exactly the same - the same stuff on the walls, the same booths, the same everything! And get this - the prime rib special is $11.99 (it was $8.99 way back when). I swear it was 14 ounces along with one side, cooked a perfect medium rare. We both ordered it, and we got one salad and one baked potato - just perfect. Well, more meat than I could eat but DH had no problem polishing his off. Two dinners with tip for $30...seriously!!! I'm not sure how you beat that bargain.
And now we are home, I'm going to try and stay awake until 10 so I don't wake up at "oh dawn thirty" like I did this morning. Going to watch the Red Sox have their way with the lowly KC Royals.

Before I tell you all what I had for dinner tonight, I should tell you that I am NOT PREGNANT. That said: a bowl of leftover split pea and ham soup from yesterday, with a peanut butter and jelly sandwich and a glass of pink grapefruit juice. Maybe some of those rads are somehow getting into my brain?

Had fun tonight but Dh had hurt his wrist all of a sudden he whined how bad it was all night long (try pushing a 5 pound baby out) Jk of course, and im thinking geeso, quit whining, but kept babying him, then our friend sang "Get on board the train, soul train" And i got every one in the place to get behind me and holding on to each others hips dancing though the whole place, like a caboose, thinking i looked cute cool and sexy ( At least in my mind) then, i twisted my ankle and went down it hurt so bad, what a kill joy i was, LOL so i hobbled back to my chair and whined how bad my ankle was, what a pair 'DH and i were tonight LOL!

Lena - that is quite a combination you enjoyed last night! I haven't had split pea soup in a long time...another month or so and soup weather will be here.
Debbie - I can just picture the whole place hopping, with everyone behind you! Too bad you went down, what a bummer! Hope that ankle is OK this morning. RICE it if it still hurts (good excuse for DH to pamper you today).

Hi everyone! I am doing well. Surgery went smoothly am supposed to get released tomorrow. Feeling pretty good, I am sure in the next couple of days will be feeling a lot better. As far as what's foe dinner - hospital food blah! Maybe dh will pick something up for me tonight instead, but I'm not that hungry any way and vegetable lasagna might actually be good. Sounds like everyone is eating well and having fun. Enjoy the weekend. It's still raining here, already the rainiest month in history.

Hey Lena.. check with your meds to see if they interact with grapefruit or grapefruit juice.. (two of my absolutely favorite things)...

Michelle, your "soup season" is my soup season. I'm just starting sooner because it's really easy to get a nice hot meal by dumping half a can of soup in a bowl and microwaving it...no pots and pans to wash, only the bowl and spoon. Easy is always good of course, but on rads it's even better (chemo too -- my eating pattern on rads is almost identical to what it was on chemo). Well, I guess eating all that weird food yesterday is maybe why I'm not hungry yet for today; all I've had so far is my two cups of morning coffee (and my medication). I do have more easy food (including the other tub of cottage cheese!) left; I'll have to check in later when something appeals to me. I know, let's hope it's not TOO gross. LOL
ETA: Apple, I know about the grapefruit juice thing because the 13 years I was on anti-migraine meds I couldn't have grapefruit or grapefruit juice for exactly that reason. None of the medicines I take now have that restriction, thank goodness, because I really LOVE pink grapefruit juice!!!!! I still used to drink one 8 oz bottle a year on my birthday on the old meds. Nothing happened, but I guess it's because I only did it once a year and when I did it, it was basically only one glass worth.

Joyce and I had a very nice time at lunch today, and we talked all the way there and all the way back! It was fun and we'll do it again. The food was lovely and I ate my first ever edible flower...lol!
Kay - so glad to hear from you, hope you are healing well and get sprung from the hospital very soon! And good for hubby, to bring you some good food! Hospital food always leaves lots to be desired!
I love grapefruit and grapefruit juice, too. Might be time to bring home a couple of them!

Speaking of soup,
I made the most accidentally delicious soup for dinner. I had saved the liquid from a pot roast in the freezer and used it for the broth, cut up a cheap piece of thin beef that I was going to use for stir fry. Anyway, the accident happened when I thought I was adding some frozen diced carrots. Turned out they were diced sweet potatoes from my box of Angelfood. I also didn't have any canned diced tomatoes that I usually add, so I added about a cup of mild salsa. It really worked out great! Other ingredients included some frozen lima beans, green beans, onions, 2 cloves of garlic and pearl barley.

I wanted to drop a note and let you know I might not be around for a few days. My house was hit by lightning as was I. Very scary but I'm ok. When I get to a real computer I will fill you in. I'll check in via cell but it is tough to write much! Things are a mess but it could have been much worse.
