    Sherril- Thanks for checking in to say hi, I always wonder where you are when i dont see you for awhile!Laughing

    Apple- Do you stuff your loin after you pound it? Sounds good!

    Liz- You wont be disappointed with the cheesy potatoes they are the bomb!

    Michelle- Queen Michelle LOL!  So cute!  Sometimes our hubbys do deserve to be pampered!

    So, I baked the lasagna cupcakes tonight so they will be done for tomorrow, of course me and DH had to try them, OMG!  They are better than i thought they would be, you guys have to make them- So easy to make and assemble between putting them togerther and cooking a total of ablout 35 minutes- I made 1 batch with cheese only since my dad is vegetarian and another batch with sausage. both super good, i will not make the noodle lasagna again!  YUMMY!!

    Oh I am going to have to make lasagna cupcakes!  DH loves lasagna and I like the idea of reducing the carbs.  Way too many good reviews to ignore!

    Labs this morning then taking my mom out for Chinese food.  Then I'll come back home and enjoy the sunshine.

    Oh and I have to share this recipe idea...one of the guys on our diabetic blog posted a recipe for Lebanese Kafta Meshwi - they are meatball kabobs and it looks like a great way to use up a big bunch of parsley.

    I was not aware of this company and will go check them out.. (may be just a warehouse).  I have some of the Lebanese powder and used to know many of the high profile Lebanese in my community.  this company has to be strongly associated with this store I frequent.. a lot of the same wonderful ingredients.  The have saffron and argon oil

    We have some marvelous mediterranean markets here.  That website has some excellent recipes btw.. I will definitely try some out.   The Lebanese meatballs I used to make had cracked wheat in them as well;.... not too much.

    thank you Debbie for the cheesy potato recipe. My daughter is the potato queen in this family, so  I will make for her when she comes  home in a couple of weeks, if I can tie her down long enough to feed her.

    We are having a big carribean party on the 27th and i need to come up with a salad to bring with carribean flair.  Any ideas?

     Had a fun long day, tomorrow its off to watch the sandcastles being built on the beach its a huge turnout. should be fun

    Carberry- Here is a great chicken salad that is carribean style, its very good!

    Ingredients

    • 1/4 cup lime juice
    • 1 tablespoon red wine vinegar
    • 1 clove garlic, minced
    • 2 tablespoons honey
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 cup olive oil
    • 1 pound skinless, boneless chicken breast halves
    • 1 ripe mango, peeled, pitted and diced
    • 1 (15.5 ounce) can black beans, drained and rinsed
    • 1 red bell pepper, seeded and cut into thin strips
    • 1/2 jicama, sliced into matchsticks
    • 1/2 head green leaf lettuce, rinsed and torn

    Directions

    1. Whisk together lime juice, red wine vinegar, garlic, honey, salt, and pepper until blended. Slowly whisk in olive oil until incorporated. Mix half of this dressing with the chicken breasts, cover, and refrigerate for 1 hour. Refrigerate the remaining dressing for later use.
    2. Heat an outdoor grill for medium-high heat.
    3. Grill chicken breasts until no longer pink, about 6 minutes per side. Set aside and allow to cool while proceeding with recipe. Toss together mango, black beans, bell pepper, and jicama in a large bowl with reserved dressing. Slice chicken into bite-sized pieces and toss with salad.
    4. To serve, line a serving bowl with the green leaf lettuce and mound the chicken salad into the middle.

    Debbie - the chicken salad recipe looks really good! 

    We went out for Lebanese food last night and it was excellent.  I am now a fan of kafta, and I had the best baba ghanoush.  I don't normally care for eggplant, but this was really good - had a nice smoky flavor.  DH had never tasted it before and he loved it, too.

    Good Morning!  Where is everyone?  I hope you are all off having a fun weekend!  I am feeling much more energetic this morning and just whipped up a bacon fritatta for breakfast.  It should be ready in just a few minutes.  Here is the recipe that I followed, and I added some chopped tomato and spinach:

    Also, I didn't have green onion so I added some chopped vidalia onion with the potatoes, then added some chopped chives with the basil.   It's smelling really good!

    We had quite a treat this morning...two hot air balloons passed over the lake right in front of us!  You just never know what the early morning will bring around here!

    i was thinking of making a breakfast concoction with bacon for the fam.  I only have frozen hash browns and really don't want to go to the store... this recipe otherwise looks perfect.

    Apple - I think you could easily make this with frozen hash browns, just cook them in the bacon fat.  And if they are the preformed "patties" just break them up! 

    So a couple of things after eating this, I cooked it in a cast iron pan and it started to burn before the cooking time.  Next time I would cook it on low instead of medium low, and I'd start to look at about 12 minutes.  Also, I would change the cheese...maybe swiss or cheddar.  It needed that extra moisture and I think the different cheese would do the trick.

    I am here....busy weekend with friends visiting and birthday party yesterday for my Dad who turned 79. Saw a band last night that was amazing and we danced the night away till 2am, so moving a little slow this morning.  My DH expects an omelet every Sun morning ( kinda our quiet time together) but we have cut out the bacon, and only have it now and then.  Anyway...when I cant seem to pull off the omelet I just mix it all together..kind of like your frittata....so easy.

    Today we are attending art exhibit at a local winery, a very good friend did some paintings that will be displayed. dont know what the dinner plan will be, I may marinate some chicken to put on the grill.  Happy Sunday everyone!

    I'm here too.  Michelle your breakfast sounds really good! I wonder where the hot air balloons came from? We were supposed to be at our friends cottage on Half Moon lake for the weekend, but they had some sort of algae problem and banned swimming so everyone ended up at our house and we turned it into a pool day followed by a sleepover.  We had about 15 people here.  We had a very busy fun day and since lobsters were on sale so we ended up doing lobster and steamers for dinner.  It's a great group of people and everyone chips in with the cooking/kids/clean up.  We cooked 8 pounds of steamers and 17 lobsters, 4 chicken breasts for the non lobster people, zucchini, squash, cucumbers and tomatoes, corn on the cob, garlic bread!

    Some of the people spent the night and we set up the camper for them and once all the kids were asleep we all sat around the fire.  It was a lot of fun and we were good and went to bed at 11, we were all exhausted from the day.

    Today is a very lazy day- I have no idea what I am going to make for dinner but I am going to go make some grilled cheeses for lunch now.  Hope everyone is enjoying the weekend!

    Yummmmmm.....eggplant...... 

    But it looks like all I'm eating -- all meals, not just dinner -- until I finish rads is breakfast cereal, yogurt, various kinds of fruit, peanut butter and jelly sandwiches, ham and cheese sandwiches, instant oatmeal, microwaved canned soup and grinders from the pizza place sometimes when I'm with my Pack Rat. Notice how this is no cooking at all and very few dishes to wash (can do them every 2-3 nights instead of every night) cause most of it can be eaten on paper plates?

    I'm just too wiped out from the rads to really cook and eat. Except for the fact that what I eat TASTES good, the way I'm eating now is really beginning to remind me of how I ate when I was on chemo and couldn't be bothered to cook or wash dishes.

    WOW laurie all that lobster.....yum!  So much fun to have friends so close and enjoy a day like that.  Sometimes the unplanned, impromtu parties are the best.

    Hang in there Lena and enjoy the non-cooking, there is plenty of time to catch up later when our weather turns and we are stuck inside more.  My energy has somewhat returned post rads, still have some days where a nap is required...dont know how thats gonna go over when i return to work in a few weeks...they kinda frown on sleeping on the job, LOL

    Had a blast at the art festival at the winery....bought a painting of a quaint little church that was done by my girlfriend.  the church is located in our community and my brother was married there. My  friend did an awesome job...gorgeous watercolor... and she cried when I bought it.

    Carberry - that is really cool that you could buy a painting done by your girlfriend that had such personal meaning to you!  Sounds like you had a lovely day!

    Lena - looks like you've got a handle on the "easy" food!  But perhaps you could add a few fruits or raw veggies to your mix (sorry, it's the diabetic in me!).  I'm finding very juicy fruits taste really good right now, especially watermelon, cherries, grapes and blueberries.  And they help insure proper hydration at a time when some of my favorite beverages (like diet soft drinks) are not going down so well.  And you might even try some of the frozen entrees - extremely convenient and there may be a few that would appeal to you.  Just nuke and eat!

    It's a rainy, gloomy day here today, and meat loaf is sounding like just the thing for dinner.  DH has to go out for a meeting and he is going to pick up the ground beef and tomato sauce, along with a whole watermelon (on sale at one of our local chain grocery stores).  I'e eaten my weight in watermelon this summer! 

    And my energy level seems to have returned quite a bit.  We ended up going to my daughter's yesterday and going out to lunch with her and the grandkids, then on to my mom's to deliver a chair and set up a display shelf for some of her pictures, then on to my other daughter's to hang out and watch the PGA Championship (that was for DH).  Got home around 9 and managed to stay awake until 11:00!  Much better!  We'll see how I feel after doing a little cleaning today. I like to get it done before chemo on Wednesday. I'll just take my time, this place isn't that big Tongue out

    Yeah I said various kinds of fruit, Michelle! I'm not diabetic but I LOVE fresh fruit, and it falls in the "easy food" category too! I have oranges, canteloupe, grapes, nectarines and plums now (recently ate up all the apples, cherries and blueberries) -- will pick up more apples and probably pears or maybe bananas when I'm close to eating up what I have here now. Fruit is good as either snacks or dessert. I just love it.

    Salad is easy too and normally I'm a salad (and other veggies especially broccoli) fiend, but somehow I'm just not in the mood for it of late. The same thing happened when I was on chemo -- I ate fruit but not salads...so I suppose I'll swing around eventually. 

    carberry I hope your energy comes back in time for you to go back to work.

    Oops, sorry Lena!  I totally missed the fresh fruit comment.  That will teach me not to try and be the food police...LOL!  It's funny, I am usually big into meats; but lately, the veggies, salads and fruits have been more appealing.  I'm hoping tonight's meatloaf strikes a chord.  My recent labs have shown that I am anemic and have low protein levels, so I don't want to cut back on the meats.  But I am starting to understand my 81-year-old mom's feeling that a big plate of food is an instant turn-off.  Last night's pizza at my daughter's didn't appeal to me at all, so I microwaved an ear of corn that we had in the car from a veggie stand run, and ate that while everyone enjoyed the pizza.  When I got home I had a nectarine and a mini ice cream sandwich.  Hardly a "normal" meal for me, but it was what I could stomach.  No nausea, just no desire.  So I understand where you are right now.

    I had 14 12 year olds over last nite for a dinner/birthday party for my daughter and have 10 hamburgers left over.  I quickly refrigerated them and will have taco salad unless someone can think of a better use for that grilled ground meat.  I guess I could make some sort of rice or pasta dish.. (kind of sick of pasta tho.)

    Michelle- I'm going to make meatloaf for dinner tonight too!  I have a craving for it with the cool temps today and all the rain.

    Carberry- The painting sounds wonderful and it sounds as if the whole day was great, so glad you enjoyed yourself!

    Lena, I hope you're feeling better.  To me it sounds as if what you're eating is just fine!  Most of it actually sounded good to me :)  Eat what your body asks for.

    Michelle, I totally LOVE meatloaf but even that's "too much" cooking for me now. That's OK you missed my original mention that I eat plenty of fresh fruit. I still have holes in my head and I finished chemo 2 years ago!

    Laurie, thanks but nope, I don't feel better, but at least I don't feel WORSE (yet! LOL). And yeah I'll keep eating what I'm eating, which isn't much but I guess since I do eat SOMETHING every day and MOST of it is "healthy," I could be doing a lot worse. I had a bowl of raisin bran and a strawberry yogurt for breakfast this morning before going out for rads (21/33 today) so I'm not hungry yet. But I took the canteloupe out of the fridge so I know I'll be having some of THAT at some point today. I like my fruit room temp so I generally take some out of the fridge and put it in the table fruit bowl the night before. Ohgarsh I know what I want -- and don't have....

    COTTAGE CHEESE!

    But I'm not going back out in that downpour again. I'll pick some up on the way home from rads tomorrow.

    Ah, cottage cheese.  One of those foods that I wish I liked.  I don't know what it is about it, maybe it's too much like milk, which I absolutely detest.  I have tried it every way, plain, sweet, savory, and it's just a no-go for me.  It's such a good low-carb high protein staple and would be perfect for a diabetic.  Oh well...  And it's still raining here, too...it's been an all-day event!  Ick!

    Apple - if you can crumble that meat enough, you could make stuffed peppers, sloppy joes, or chili (well that idea is almost like your taco meat).  You could make hamburger stroganoff or "beef" burgundy.  I guess basically any idea that uses beef, just toss it in the pan and add all the other stuff, adjusting the cooking time because the meat is already cooked.

    Laurie- What a great get together you had, all that lobster and clams, yum,  I would say that would be the best pot luck i had ever been too!

    Michelle- Glad your starting to feel a little betteer

    I had such a great time this week-end, but im pooped! Friday we went to lunch at the golf course, then went to the casino, gambled, then had the buffet there, then went to a night club where our friend sings- Saturday went to the beach and watched them build sandcastles and had a picnic with some of the food I made, our other friend who sings, sang on the pier there- Went to the  casino at  3 pm and didnt leave until 10 pm I won over  400.00 and my dad won almost 5ooo- We all went to the beach yesterday again and watched these giagantic kites being flown. Still have a bunch of left overs from all that food I made, I  have been eating it all day, Will have to freeze the rest.DH is on a directors getaway so it is nice to finally have the house to myself and have some peace and quiet (Yay)!!

    Wow, Debbie!  Now that is a good casino trip, especially for your dad!  Did he win that on slots?  Sounds like you had quite a weekend, and now you can sit back and relax!

    Laurie - that is quite the shindig you pulled off!  You do know how to party!!!

     Tonight's meatloaf recipe was compliments of Ina Garten.  It was really good, I made just one substitution:  where she called for chicken stock, I used tomato sauce.  DH loved it and the recipe made enough for another whole meal plus leftovers.

    i love cottage cheese.. I pulled some out of the fridge tonite to protein supplement the leftover burgers from my daughter's party..  which we ate as the hamburgers they were.

    debbie6122,, buy a lobster with some of that 400 dollars.. No one will ever know.

    Michelle- Can you share the recipe?  I do the old fashioned, as I call it diner meatloaf.  ie- brown gravy.  We had it tonight for the first time in months and it was good.  I cooked mashed potatoes and steamed some zucchini to go with it.

    Apple- Enjoy your foot soak, it sounds pretty darn relaxing!

    I think I am going to head to bed early tonight and curl up with a book.  The rain is continuing to come down and it sounds nice outside the window, might as well make the best of it!

    I am so mad, I just lost a really long post.  Any way, Lena, sorry you're experiencing fatigue with the rads.  I am starting them in about 6 weeks.  From what I read, everyone experiences that.  I hope you're feeling a little better at least.  I think what you're eating sounds just fine.  I like all those things and hate clean up so it is a win/win. 

    Michelle, I was anemic on AC too, but bounced back with taxol/taxotere.  I went to below 9 on AC and was up to 11 on taxol/taxotere.  Hope you will feel better on the T as well.  I know the anemia takes everything out of you.  You have some great ideas on the hamburger.  I have some in the freezer I will try some of those on. 

    Hope you enjoyed the party Apple!  And your foot soak too.

    Debbie, congrats on your casino trip!  I've never done any where near that well on a casino trip, I guess that's why I don't enjoy casinos.  I certainly would if I won $400!  Good for you!

    Michelle, I hope you enjoy your book.  I just started The Help and it is really good.

    Did a lot of cooking today.  Made ratitouie (spelling?) to use up a lot of the veggies we have from the CSA.  It was really good!  Also cooked up a huge pot of meatballs and sauce to have and to freeze.  Surgery is scheduled for Wed, so want to get some food in the freezer before that.  Planning to make the lasagna cupcakes tomorrow.  Not sure if there is anything else that I can make and freeze.  A lot of what I usually cook doesn't seem to freeze and then reheat well.  But DH is off for 12 days after my surgery and he likes to cook when he has time, so we shouldn't be getting take out too often. 

    We're getting all that rain here too.  I can't believe how much.  I think we got 4.5 inches here yesterday, not too far away, they got over 7 though.  Yikes!

    I substituted a small can of tomato sauce for the chicken stock, and I didn't use quite as much onion as the recipe states.  And we used 93% lean ground beef.  I wondered whether or not it would actually cook in the specified time, normally I would use a higher oven temperature.  But the meat thermometer headed right to 160 and it was perfectly done. 

    Lena - hang in there!  You're 2/3 of the way to the rads finish line!

    Wow, I actually had lunch (2 PM and a snack (8:15 PM). Finished the second half of yesterday's can of Chunky NE Clam Chowder and had a quarter of a canteloupe for dessert.  Snack: Peanut butter and jelly and most of the rest of my fresh grapes. I DEFINITELY have to remember to buy cottage cheese tomorrow!

    Laurie, did you make meatloaf? I think I could eat and enjoy a small piece, if someone else would cook it. LOL!

    Just read your post and took a peak at your other posts (no, not a stalker, but couldn't remember if you had posted here about your surgery)!



    Just wanted to wish you well on your DIEP on Wednesday and to let you know that I will be thinking of you!!! Please post when you feel able to let us know how you are doing!



    We have been having some pretty dreary weather here as well but, don't think we have had quite THAT much rain!! Hope that hasn't led to flooding in your area!

    Oh Kay, I didn't realize you were having DIEP on Wednesday!  Sending you love and healing thoughts!  You'll probably be away for at least a few days.  And then you'll be able to tell us all about it.

    It's not raining this morning.  I think we must have gotten 3-4 inches yesterday.  Everything is just soggy!  Some sun would sure be nice now.
