Does anyone have any good vegetarian recipes that do not involve tofu (I am really not a fan). I am trying to switch over from being a meat eater to more of a vegetarian diet. My family is on board with the idea but they really don't like tofu either. I have a few recipes that involve potatoes and onions or zucchini and cheese, things like that. If you could give me a source to go to for this type of recipe that would be great. I have a few vegetarian cookbooks but I am having trouble finding recipes we could all enjoy. Thanks for any ideas!

Oh hello! I was just thinking about fixing tostadas for supper tonight.
Here's how I do it: Lightly saute corn tortilllas in a little canola oil and pat dry. Place on large cookie sheet and spread with refried black beans mixed with a little salsa.
Top with chopped sweet onion and sliced pimiento olives. Sprinkle lightly with a mixture of chihuahua and cheddar cheeses.
Toast under the broiler.
If you like you can garnish with shredded greens and chopped tomatoes.
Though this isn't from it, the Moosewood Cookbook is one of my favorite go-to cookbooks for vegetarian recipes.

One of my favorite fast things to do is to start with brown rice (I buy it pre-cooked and frozen at Trader Joe's), to which I add a can of black beans (drain & rinse), tomatoes (fresh or canned, but if you use fresh, you'll need to also add some tomato sauce or broth), lots of sauteed chopped veggies (zucchini, onion and corn are good), and a can or two of chopped green chilies. The mixture should be moist, but not soupy. I layer that all in a casserole with a good amount of shredded colby or mild cheddar cheese, and bake for about 30 mins.
I also sometimes do a make your own tacos or taco salad bar. I might include rotisserie chicken or a little lean ground beef for those who want to add meat, but I stick to the veggies (chopped tomatoes, onions, green chilies, black olives), lots of sliced avocado or guacamole, and a little cheese. And I do make your own quesadillas much the same way -- choice of fillings and corn or flour tortillas. Deanna

mom2one ~ Another idea that works great when you're in that transition from meat eaters to a more vegetarian diet is stir fry. I do one with broccoli, mushrooms, onion (I use sweet onions in everything), water chestnuts and bean sprouts... sauteed in sesame oil... add teriyaki sauce and sprinkle with sesame seeds. You can throw some pre-cooked chicken in it for the meat eaters -- just skip it yourself, and you'll still be weaning them off larger servings of meat. Serve over brown rice or rice noodles. Teriyaki sauce is easy to throw together and something you can get kids involved in making.
One more idea is quiche. I used to make it with bacon, but now just use lots of onions and swiss or gruyere, and some parmesan, but you could add broccoli or spinach or asparagus, etc. Deanna

Here is an easy one if you eat eggs. it's based on the yiddish Latke a potato omelette/pancake-style thing.
One potato, bathsoap size, one carrot. (the original recipe had potato and onions, Im sure any veg will do) Peel them both and grate them and rinse them. If you don't rinse the potato, all the bits stick together it's not nice. Mix it up and zap in the microwave to soften a bit, llike half-cooked but not falling apart. In a separate bowl, whisk up two eggs with a tiny bit of salt and then add about a large spoonful about 20-30ml of plain flour so it goes thicker like mayonnaise or thick custard but not as stiff as toothpaste. then combine this mix with the halfcooked veg. It needs to pour a bit, should not be able to make biscuits from it! Heat a frying pan with a little oil or non-stick spray and spoon large dollops of the mix, one at a time, onto the pan; fry on medium heat for a few minutes each side so that the eggmix sets and the veg cooks a little more. These quantities give four or six latkes, right for two people. I jazzed it up yesterday by adding a stock cube to the eggmix for extra flavour.

Im glad to see this. I NEED new veggie meals. My son who is 12 has been a veggie for a little over a year now. It was a blessing because we always had trouble with keeping his weight up. He came home one day and said..I dont want to eat me and hasnt eaten it since. But the first month he gained 15lbs. Come to find out his body could not process meat like others bodys. If it hadnt been for him not wanting to hurt animals we would still be on the hunt to find out what was going on with him.
