    I would love to find some vegetarian recipes that use simple ingredients, preferably not tofu or anything like that (I am just starting to go without meat).  I have a few that involve zucchini and cheese things like that.  Anybody have any ideas or a cookbook that uses just vegetables, rice, etc?

    Hello ladies, great idea, I love recipes !!  Here is one of my favourites, very healthy. I add curry to everything :)

    Spiced lentil and vegetable soup

    Ingredients (serves 4)

    • 2 teaspoons olive oil
    • 1 red onion, chopped
    • 2 garlic cloves, crushed
    • 2 celery stalks, chopped
    • 1 tablespoon mild Indian curry powder
    • 400g can diced tomatoes
    • 1 litre vegetable stock
    • 1/2 cup dried green lentils, washed, drained
    • 2 red capsicums, chopped
    • 2 (230g) small eggplants, chopped
    • plain yoghurt and coriander leaves, to serve

    Method

    1. Heat oil in a large saucepan over high heat. Add onion, garlic and celery. Cook, stirring, for 5 minutes or until onion is soft. Add curry powder. Cook, stirring, for 1 minute or until fragrant.

    2. Add tomato, stock, 2 cups cold water and lentils. Cover. Bring to the boil. Reduce heat to low. Simmer for 45 minutes. Add capsicum and eggplant. Simmer, covered, for 40 minutes or until vegetables and lentils are tender. Season with pepper. Serve soup with yoghurt and coriander.

    I'm a huge fan of tabouli.... make it all the time.

    here is a basic recipe.  I add all sorts of vegetables to mine sometimes like a grated beet and some grated carrots for color.. or hot peppers.. yum.

    Looove pesto and taboule ! Wow, that,s quite a find Susan, Thanks ! Have been wondering about heavy metals and bc. my problem is finding the fresh herbs, forget supermarkets. will have to start growing them, i guess. did u see on the dr oz thread the wooden plant grower. it,s pretty neat, but it,s for outside, one needs a backyard.

    I think I'll add the cilantro to the rosemary and basil, which I love !, to my mix of Herbes de Provence.  I wonder how dry herbs fare ?

    Ladies, let me share my favourite breakfast recipe with you.  Pancakes !!!

    2 eggs

    Buttermilk

    Coconut milk

    Buckwheat or rice flour

    Oat flakes

    Mix of sweet spices, i.e. cinnamon, cloves, allspice, ginger, cardamon, anise and fennel

    Cook in coconut oil

    Serve with fruits, my favourites are pineapple, kiwi and berries

    Topped with yogurt and powdered black chocolate

    Enjoyed with steaming hot coffee

    Good to go for hours !!!!!

    Susan, for sure fresh is better, but for lack of, and I'm sure herbs found in health food stores are better than grocery stores.  The brand I buy from is organic and comes in small packages grown here in qc, Clé des champs

    I can't do breakfast UNTIL I've had my coffee.

    I have a few recipes in my cooking blog...I just went back to work so my blog is slow going these days.....I hope to pick up the pace again in a few weeks while I am off after surgery again.

    I am checking in to get some new ideas.  However, I do admit, that my wonderful dh does ALL the cooking here.  We eat a ton of steamed and raw veggies, salmon and soups.  I am so spoiled!

    I'm spoiled too pip.  DH doesn't really like to cook, but, he goes to a lot of trouble to keep good organic fresh fruit and veggies of all kinds in the house for me. I had someone ask at Christmas time if he got me diamonds, I said no, but he always makes sure I have fresh asparagus, and berries in the house. They didn't get it.  To me, him caring enough to keep all that good food in the house is worth more than diamonds.  All he asks is that I don't expect he eats asparagus or brussel sprouts

    What is it with men and brussels sprouts, my son REFUSES to eat them  :((

    Well, my stomach is growling, heading for that vege juice !

    In a blender, fresh parsley, sweet green peppers, chicory, green onions, spinach, bok choy. Added an apple, grapes, some lemon juice, curry powder, loads of black pepper, some horseradish, capers, ginger, garlic, apple cider vinegar for zing zing and cheated with a little V-8 (can't be perfect...), water and it was DELICIOUS, could feel my blood humming !

    My dh used to hate any veggies other than corn.  It has taken over 30 years but he now eats brussel sprouts and broccoli 5x a week!  We have become healthier eaters together which is great.  

    It all started when he wanted to give up the corporate life and work from home.  When he said that he would do all the cooking...well, I was sold! Gone were the prepared foods that I would throw in the oven when I got home from work. Back then we thought a salad with dinner was healthy eating.  Gradually, our diet changed as dh took over the kitchen.   He is an amazing cook and really enjoys it. Luck me!!!

    Here's one I love

    Throw one pack of organic baby carrots in the food processor. Add 1/2 orange juice, and 1/4 lime juice. Process until it looks like coarse apple sauce. Yum!

    Luan, those pancakes sound easy and Delicious. I love love love rosemary biscuits. I grow rosemary in the garden and there is nothing like it fresh.

    Here is an egg recipe that I love

    2 eggs scrambled

    1 corn tortilla cut into small squares

    Fresh hot pepper dice tiny

    Fresh Cilantro chopped tiny

    Fresh chives chopped tiny

    Using a good oil ( I like grape seed) brown the chips

    reduce heat and add the remaining ingredients stirring until cooked

    This is a good stand alone egg or you  can top with salsa or pico de gio (chopped tomato, onion cilantro and pepper)

    Merilee, your recipes sound delicious, what a neat way to ingest carrots, one needs the heavy duty food processor though which I haven't got yet....wonder if the Bullet would do it or if you need to cook the carrots.  Pip, you're our expert on the Bullet ! Smile

    Speaking of the bullet, I use it to blend AmazingGrass brand Orange Dreamsicle powder along with frozen fruit and rice or soy milk for a quick, cold soothing drink.



    AG's chocolate meal is good, too.



    While I prefer whole foods, these quality items will do nicely, nutritionally and taste wise, when desired.

    My dh puts dices or sliced carrot in organic, unsalted chicken broth and  pops it in the mircowave for a couple of minutes.  He does find making carrot soup the most difficult.
