    I love to cook, but the combo of LE and a brachial plexus neuropathy made it harder.  For the first few months, my husband or kids would act as my sous chef/assistants, but that got old for all of us. There are still a few things I won't do (taking a grease-spattering chicken out of the oven) and I wear examination gloves when I deal with raw chicken, but I have found some workarounds.  I bought a stand mixer (actually I got a really nice one as a Mother's Day present) and a battery powered can opener. Where I used to hand-chop most things, I now pull out the food processor most of the time.  I use a bread maker to knead bread, but bake the bread in the oven (better crust!).  I wear an oven mitt to stir hot things.  Where I used to scoff at people who bought pre-pealed garlic, deboned chicken breast, pealed carrots, washed lettuce and frozen veggies, now I am a complete convert.  KS1

    But anyone who loves chocolate and loves to eat belongs on this thread. I need some chocolate now.

    When i saw "brownies" and "mood" in the original post, i assumed you were referring to a certain secret ingredient.

    I haven't tried these recipes but my son went to preschool with the cook's kids and I've tried other things she's cooked -- yummy!

    Lago, chosen twice, I am rolling on the floor laughing!!  What can I say?

    I do make Syrian haroset which will knock your socks off!

    I lb. pited dates, chopped

    1 cup water

    1/2 cup Peasch wine

    I cup finely chopped walnuts

    Put the dates, water/wine in a saucepan and soak for an hour.  Bring to boil over high heat.  Lower heat and simmer for 60 minutes.  Stir and mash often to form a paste.

    Let paste cool and adjuist flavor with more wine and/or 1/2 tsp, cinnamon.

    Fabulous mortar to the bricks!!!  Add some nice bitter arrugala on matzas, and you will love it!

    OneBadBoob You're not going to belive this but I'm surfing through the TV chanels about 1/2 hour ago and stop on HBOfamily. Not only is Fidler on The Roof on but it's right at the moment when Tevye says "once in awhile, can't You choose someone else?"

    And it IS a full moon tonight even if you can't see it.

    I'm making my coconut chocolate meringue cookies tomorrow.

    Beacon Hill Cookies
    ----------------------------

    Ingredients
    • 1 cup (6 oz) semi sweet chocolate chips
    • 2 egg whites room temperature
    • 1/8 tsp. salt
    • 1/2 cup sugar (regular granulated white stuff)
    • 1/2 tsp. vanilla extract
    • 1/4 tsp almond extract
    • 1/2 tsp white vinegar
    • 3/4 cup of coconut flakes (or sliced almonds)

    Directions
    1. Melt chocolate chips in microwave for approximately 2 minutes on high. Set aside.
    2. Beat egg whites with salt until very foamy
    3. Gradually add sugar while beating. Beat until very stiff and peaks form. (Very important).
    4. Beat in vanilla, almond extract and vinegar
    5. Fold in melted chocolate chips and coconut flakes ( or sliced almonds)
    6. Drop teaspoon full (no more) on greased cookie sheet.
    7. Bake at 350° oven for 10 minutes.

    Makes around 35-40 cookies

    Oops knew something was missing. Recipe has been edited. I made those last night and my peanut butter, chocolate chip, banana oatmeal cookies today. Dropped them off for the staff at my PS's office. (Had to make the Beacon Hill ones because one of the gals is Jewish and keeps Passover).

    I came home to the smell of cookies and the flowers my husband bought me the other day. Talk about feeling like you are in a dream… then I woke up and realized I need to clean house and work out. Tongue out

    BTW I don't make coffee. Never had more than a sip. Don't like it.

    I made Leah's brownies for our slightly delayed gluten free seder, and they're so good!!

    My daughter had made this fussy cake and we all agreed the brownies were better: off to stock up on potato starch before Passover is over.
