Recipe for Garlic Scape-Kale pesto

I'm a huge fan of Diana Dyer.  If you aren't familiar with her, she's a registered dietician and multiple-time cancer survivor, and she writes common sense diet advice back by research.  Anyway, on the blog site, she's posted a recipe for Garlic Scape-Kale Pesto that I can't wait to try.  Just thought I'd point y'all in that direction if, like me, this blog is new to you, and if you like kale!

    Anybody have any ideas on any healthy 'spinach recipes' ?

    Want to try and eat more healthier. (finished chemo in February and radiation in March)

    I like spinach but don't eat much because it (and most greens) leaves a funny taste in my mouth unless it's combined with dairy -- and dairy is one of the things I'm trying to cut out for the most part.  However, a few quick ideas:

    Throw some in a stir-fry with whatever else you're cooking.  Also good lightly sauteed with garlic and tomatoes and served on pasta.

    I do add spinach and other greens to bean- and lentil-based soups.

    I do get a craving for spinach salad... my version is a lemon juice and olive oil dressing, drizzled over fresh spinach with lots of orange slices and some slivered almonds or walnuts.  Sometimes with sliced fennel.  Sometimes I add a little goat cheese.

    Steam some spinach, thorw in some garlic, drizzle with toasted sesame oil (a very small amount goes a long way) and add sesame seeds for a good side dish.

    Vegan and Indian cookbooks and cooking sites are a good source for (usually) low-fat, healthy recipes.  Also, epicurious.com has a great database of recipes with an advanced search feature that allows you to omit or select certain details.  If I think of anything else, I'll post!
