Carollynn79 -- Strawberries make it "officially summer", she said. Well mine started last week, but yehhhhh! Didn't it feel like a gift from the gods when it went down your throat? I'm clipping some today to add to bananas. The tomatoes and peppers have flowers, and the basil is up.
Apple -- We had a few mushrooms in the garden after the heavy rains this Spring but I left them to the dog landscaping that Napo and Stella do for us (one more year of puppy digging, etc.). I found some flowers of zucchini and got hungry to stuff them with cheese. Then I read Viva's post of last year and thought I'd add some rice to that.

We have a million soon to ripen raspberries.
I'm going to make jam for the first time. Today, I am digging a last minute peppers and tomatoes garden.. just enough time to get those late plants in. I have to dig out the 2 foot tall weeds first.
I'm 1/8th of the way done... maybe 1/12th if you count all the other stuff i need to do.

Apple -- What a great way to get your exercise don't you think? I always feel so much better after I work in the garden...not only my body but my mind too. Even when during my treatments when I felt 1/10 of the strength of today, the garden was my sanctuary and exercise. And when I use the food we grow for the table, I always appreciate it so much more.
We got the call from the hospital for DH admission. So the night before I picked all of the strawberries from the plants and sliced them with bananas for dessert. I roasted a leg of pork with potatoes and carrots. I really really like roasted potatoes but they aren't so good for the pain of arthritis....so I add more carrots with them. DH like the meal and that was important too.
Last night I came home from the hospital about the time to cook dinner. DH did food shopping earlier that day. I cooked the liver in a saute of crispy panchetta (bacon) cubes, fresh tomatoes & onions, and a with a splash of Merlot wine. It was so very very yummy....and healthy.
The puppy barked at me when I sat to the table to eat. I think she wanted to know where DH was. It's their routine to wait for us to sit to the table before they settle down on their pillows. She wanted to know where #2 was so she could get comfortable. DH jokes that the dogs need cell phones too.

My DH knows me so well. He knew I'd be running low on energy in these days and shopped for what he thought would prop me up. Liver was a good choice. This is just one of the many many reasons I love him so much. You'll remember from his last admission that the food at the hospital is very good. Last night he had frittata (scrambled eggs essentially) with zucchini, a bean soup and an apple for dessert.
Today's another day.

Marilyn, hope your DH is doing well. We have been enjoying fresh lettuce and asparagus form the garden too. i know what you mean about the garden. My roses are beginning to open and smell so wondeful! Will try to post some pictures this weekend. Planning on going to the local farmer market tomorrow if it is not raining, will see whay goodies are there. Ate poorly today, grilled hot dogs, potato salad and cookies at a picnic at work pretty good will ahve to eat more veggies and hopefully berries this weekend!!!

Apple, you are funny..."a cat in our house". You'd be surprised to find our life about as exciting as watching grass grow. I learned that saying when I rode Dressage years ago.....consistent training with a light hand in balance....that's our life.
Carollynn79, did you find your berries? Apple was onto berries too I think. My eating habits were sporadic this week too. Most of the time the food stayed in my stomach like a rock such as the lean ground meat and mushrooms....or the pork patty and baked potatoes. I switched to salad and fruit and did much better. However, I bought extra dark chocolate bars to eat with my strawberries that I take off the plants.
Today a Sardinian friend came to the house with ricotta cheese made by his wife today along with the eggs laid by their hens. They are the best people in more ways than one. DH comes home tomorrow then returns in another month for more evaluation.....extensive and thorough. It happens that my follow up appointment with my breast surgeon is tomorrow too at the same hospital. Now ain't that romantic?!
So what to have for dinner tomorrow night? We'll keep it simple. Probably frittata with mushrooms and tomatoes followed with dessert of ricotta cheese with pears. Or maybe I'll have a little of that tonight too.

We have had strawberries almost everday for a week. Strawberries and vanilla ice cream, cherrios, yogurt, fresh lettuce strawberies, fresh baby beets with a yogurt ranch dressing yumm yumm. We will have peas this weekend, been snacking should have enough for a dish of fresh peas by Saturday. Love spring and summer all the garden goodies!! Roses are blooming so nicely too!!

I've been lurking and picking up some great food tips. I'll pass on the organ meat, but love the idea of fresh ricotta, frittatas, and the yummy-sounding salads. Tonight I just diced some cucumber, added feta, kalamata olives, and tossed in garlic-infused olive oil with oregano. That, plus some cantelope, was good enough for me as I watched World Cup with DS (taped). I laughed to myself, tho, as I never could stand cucumber as a kid. It was spending a year in the Soviet Union with few veggie choices that changed my mind. I've got a garden started, but our growing season is long, and we had a snow in June this year that made me start over.
Love hearing the news from Italy. Best wishes to your DH, Marilyn. Dressage has some similarities to competitive dog obedience, which is what I do.

Retrievermom...lurk no more and welcome. That's a mighty fine puppy in your picture. My dogs are leftovers .... a litter found behind a supermarket or left to find their own way, near frozen, at the tender age of 6 weeks. What a treat they both are. I'd really enjoy to have obedience trained ... for the most part they are ... I'm just such a push over some times. But about food....
Yes we enjoy eggplant often. Grilled and drizzled with oil and garnished with parsley or baked with layers of fresh tomatoes and mozerella sprinkled with oregano. The problem with eggplant is that it is not a good for the joints ... inflammatory I was told....as are potatoes.
Tonight I made stuffed zucchini flowers. I couldn't find nutrition info on these...hummm?
I filled them with rice, mozerella and a sprinkle of parmesan cheese. I steamed some thin asparagus, sliced the tops and added the rest of the stalk in the food processor. I added the blended paste of asparagus to the rice mixture for the flowers and baked them all for 20 min. I served the topped asparagus on the side drizzled with EVO and lemon.
This is the only information I could find on nutrition of the zucchini flowers. "If the flower is not picked from the plant, the zucchini grows from the center of the flower if it is a female flower that has been pollinated. If it is a male flower, it provides pollen for the insects to fertilize the female flowers with. The flowers wither and die quickly, within a day." Nothing on the actual nutrition.
The flavor was very mild but the nutrition was wonderful.
DH is coming along....welcome to the 70's. We return to the hospital within a month (after labs are returned) for additional test of confirmation. in our spare time, we play with the idea to move to another house. Can you imagine!? I asked him to wait until we are through with the hospital issues. He liked cena tonight.
Carollyn79 ... so how do you cook the peas? I like mine plain with some butter. Or, with bacon slices (I know...fat). Or in soup but it's too hot for soup. Do you dry them for winter?

Marilyn: Your stuffed zucchini flowers sounds like something from heaven. I can't find the flowers here, but I will use your idea for the "stuffing mix" to fill something else. You are a natural with great ideas on how to combine flavours.

i'm glad to catch up on this thread and will re read tomorrow.
i made raspberry jam!!! it was awesome.. it's already gone, but i'll make a big batch maybe Saturday.
tonite we are having tabouli, hummus, tsatsiki sauce, chicken breast, pita.. our favorite summer meal for the awesome leftovers.
the best peas i had were very fresh and lightly sauteed in a little butter with both sugar and salt. i was skeptical but they were sooooooooo good.

Apple raspberry jam is sooo good!! Our raspberries will not be ready for a few weeks but looking forward to them. Marilyn I like to lighty cook my peas and serve with butter salt and pepper and sometimes garlic!! I have not cooked any yet i am too busy eating them fresh and raw!!! We grow two kinds the shelled ones and the snap peas. I have never grown enough to dry usually just to eat fresh but they are loaded. The kholarabi will be ready soon too gotta love all those fresh veggies!!

the zuccini flowers are delicate and really, growing them yourself is easy. i've never seen them at the market or store. they seem to flower quite a bit before setting 'fruit'.. at least around the midwest... one seed and little dirt. (do they need other plants to cross pollinate?)

I cross-pollinated zuchs with pumpkins once and got the weirdest results.

Retrievermom--now there's a vision! zuchini/pumpkin cross! How did it taste? What did it look like? There seem so many variaties of squash...they need to start somewhere.
I'm having morning cappuccino and DH is having his tea. So I sat to catch up on emails. Now I'm hungry for apple rasberry jam! Boy that sounds tasty. We're having an unusually windy day. I hope it doesn't disturb the cherry tree too much.
Last night we had a simple meal but one of our favorites....filetto (filet mignon) covered in a saute of mushrooms with carrot slivers, and parsley. I felt feisty and wanted to experiment so I added some balsamico and cocao powder to the saute. It was soooo good. We had romaine tossed with cherry tomatoes, and fresh bread. This we served with (Montefiasconi) Vincenzo's home made red. It was red meat night.
edited for dessert: I forgot to say that we had banana slices with strawberries sprinkled lightly w/sugar and covered with squeezed fresh lemon juice.....oh, yes and dark chocolate (72%) small blocks on the side.

Marilynn sounds good!! We had a great dinner today. Yesterday we picked strawberries, stemmed them froze some and sprinkled some with sugar to set overnight for shortcake. This morning after church we picked peas and beets. We prepped them put a little spice rub on some ribeye steaks cooked the beets and peas, made shortcake. I made some simple syrup added lemon zest, juice of one lemon and crushed a few strawbwrries let set, and strained. Added rhubarb wine sliced strawberries added a little ginger ale and served with a sprig of mint and ice. I made some herb butter using minced green garlic, dill weed and fresh tyme leaves. We put the steaks on the grill, put herb butter on peas, salt pepper and butter on the fresh beets and topped it off with strawberry shortcake, it was a truly wonderful meal. I prepped the steaks a little differently and they were the best we've made. Using a brush I brushed olive oil on the steaks, then added the spice rub let set for 45 minutes, added a littel bit more rub and placed on 550 degree grill.

Hello All. I've been busy again this week but with the dog this time. Napo, our 2.5 yr. old was a handful when Stella came home from the vet after sterilization. Napo wanted to help in the worst way...urging her to play, to eat. I needed to keep them relatively separated until she got her strength back...within three or so days. Then the problem was convincing her that it wasn't the best idea to run after Napo. When Napo got too pushy, she showed her pearly whites and snapped at him. I empathized.
I had to laugh at myself when I fixed her dish. I was thinking how funny it would be to tell you all about it. So here it is. The first two days she ate rice with eggs, shared a pear with me, and got absolutely insistent about sharing the hazelnuts. She can't eat chocolate poor thing...so that's all for me. Eventually, she was back to her own diet of dog food. I've been drizzling olive oil on both their dishes in these days.
She removed her own bandage and was tending to the wound. She asked us to 'PLEASE LEAVE ME ALONE' when we tried to help. Her skin was sensitive to the tape. She's a bit red from licking and the doc gave her antibiotic shots. I remembered how uncomfortable a wound healing felt. So I used what the docs told me to use for my incisions after they closed...sweet almond oil. I added just a few drops of lavender. I gave her an anti-inflammatory too.
So not much cooking going on here. Giancarlo is the chef most of the time anyway. Our summer lunch is moving in the direction of caprese or a host of variations on salad. It's just too hot. I made a pizza today but I really didn't want to turn on the oven.
Friends are arriving on the 9th of July for the weekend and a BBQ. I plan to make that wonderful water mellon salad from this thread. The menu isn't completely planned yet.
Carollynn79! Can I come to your house for dinner? I could taste your meals from here! Mouth watering. I have little green tomatoes on the vine and small peppers. The basil is doing well as are the herbs. I'm trimming them to dry for winter as we go along. Strawberries have stopped. I don't know why. The weather has been weird. Some cold and windy days that confused our plants. Hope that the Orange trees are OK. The cherry tree is almost ready to pick.

My friends arrive soon so my radar is up for what to serve at the bbq. We are looking for gluten free, carbs low and yummy. I saw this in the NY Times and thought it was a great list of foods for the grill. Maybe you all'd like to peruse the link?

Healthy, tasty, easy ..... that's a combination that is hard to beat.
I saved the clippings from the trees in the spring and that's what I'll use for the fire....rosemary, lemon, orange, laurel ... they are now bundled, dried and ready.

excellent article.. i just love fruit on the grill and have a favorite dish of pears (peeled and served with cardamom whipped cream with a bit of just about any liquer in it).. it's kind of fancy but unbelievably delish.

Marilyn come on over any time! Liked the grill ideas, Apple I started grilling some fruits last year, peaches and nectarines with a little balsamic vinegar. The pear dish sounds good, do you grill the pears plain or baste with anything?

I just made my absolute FAVORITE dish of all time.
wild rice (a grain from the northern plains), cooked for about 40 minutes, tossed with toasted coarsely chopped nuts (I prefer pecans), parsley and fruit. I usually use a couple mangoes and strawberries.. but it is absolutely delish with grapefruit. i make a dressing of a squeezed lemon, a couple tblsp. of mayo, a little salt and sugar.
this is what I would take to a desert island.. (if the island were in the extreme north or south, I'd take black bean soup).
the dressing is not so important.. I have used vanilla yogurt, poppy seed dressing and a light oil and vinegar with a little sugar... just something very light

First I drool over the broccoli (?) and fresh berries .... then the recipe for the rice dish -- I will definitely try this one.
Our BBQ fizzled to only four of us. It is so hot that people are staying put. But it was breezy on our terrace and we had a four-hour lunch.
It started with shrimp on the balcony. I bought them the day before...steamed in old bay seasoning, shelled, devained and into the frig. While we were eating our appetizers, I put the salmon on the grill in the foil.
I sliced the salmon down the middle and put parsley, lemon and white wine into the belly...wrapped it in foil and into the frig until grill time.
When we moved to the terrace, I checked on the salmon then put the sword fish on the grill. The sword fish I sprinkled with hot pepper and rosemary and into the frig earlier.
DH made a tossed salad to go with this. We finished up with gelatto and our cherries on top.
The best part of the meal was the conversations with good friends and lots of laughing. We had a such a good time that they are coming back tonight. We haven't seen each other since Christmas so there is much to catch up on. We are also making plans to go to the sea together this week.
I took pictures earlier so share with you. I'll need to look again for the pics of the tomatoes...Carolynn79 inspired me. The gardenia plant is already turning in the heat but I have a few pics of the new blooms.

The tomato and basil plants are in the back to the right. Hanging on the poll is my desert mermaid that I bought in New Mexico and brought with me to guard my garden. Just behind her is another tomato plant that I put with a rose bush...they both like coffee grounds.

Marilyn sounds like a wonderful dinner and visit. I agree that the food is good but the time spent with friends and family is so precious. We had DH's aunt over for dinner today and we just sat and talked for 2 hours it was really nice. Garden is going gang busters. Canned pickled beets, raspberry jam and gooseberry/raspberry jam. We enjoyed coleslaw with fresh cabbage, broccoli, zuccin, and fresh lake fish. The green beans are starting and we should be picking in a day or two.

other that a spring greens garden and herbs, i don't have one. The bulldozer graded our property for drainage and dug out a front square that could be a beautiful flower showcase. here's a picture of the newly sunny slope. I think i will terrace it and make it a vegetable gardern. I'll have to really work on the dirt and probably buy some.
