Really Yummy Carrot Soup
Cook 2 chopped onions in a little butter until soft.
Add 4 cups chopped carrots, 2 chopped peeled apples, 1 tsp ground ginger or ginger root (or more to taste)
Add 4 cups vege or chicken stock.
Bring to boil, then simmer 20 min. (until carrots are soft)
Puree, then add 1/2 milk. Enjoy!

Heres another one I have been meaning to post - a healthy version of Meat Loaf.....
Turkey Meat Loaf
Combine - 500g ground turkey (or chicken), 1 chopped onion, I box thawed frozen spinach, 1/2 cup fresh breadcrumbs, 2 Tbsp Dijon, 2 eggs, and whatever seasonings you like.
Pat into loaf pan, top with ketchup if you want. Bake 200C, 45 min.

I made a vegetable soup last weekend with low sodium v8 as the liquid base.
sauteed onion and garlic, added celery, carrots, zuchini, mushrooms and white beans and then swiss chard and V8.
easy and healthy!

I made Potato and Leek soup for dinner tonight, it was delicious
4-5 yukon gold potatoes (I used regular potatoes) - cut into 1/2 inch pieces
4 large leeks chopped (using only the white and pale green parts)
1 onion chopped
1 tsp fresh garlic
6 cups low sodium chicken broth
1/2 tsp pepper
3/4 cup chopped (small) ham - optional
Clean leeks by cutting off the end and tops, slice lengthwise and soak in bowl for a few minutes.
Put all of the above in a pot, bring to a boil and simmer for 25 minutes. Then transfer to blender (in batches) and puree.
We added the ham to the soup after it was pureed, then simmered on the stove for another 10 minutes and found it added a little more flavor.

microwave omelettes (QUICK)
throw some cut up veggies (asparagus, mushroom and scallion today) in a bowl - whisk 2 eggs and add to veggies and stir in some salt, pepper, etc. MICROWAVE 2 mins. DONE!

Barilla whole grain pasta
steamed veggies
Toss with EVOO, turmeric, curry powder, black pepper, and salt.
Delicious!

Let me preface this by saying that I never really learned how to cook (wasn't cool when I was growing up)....but the following website has actually got reading recipes and excited about cooking.
The World's Healthiest Foods website is a godsend to me....I LOVE, LOVE' LOVE IT! Everything is quick and generally involves around 5 ingredients (find with chemo brain, that I really can't handle much more than that yet!)......you can sign up for a daily recipe or else just enter a food and a few recipes come out....and you can learn a lot from the different nutrition info included...

Earlier I put a recipe up for potato and leek soup. I wanted to add that I made it again for my oldest daughter -she is a vegetarian. I substituted the chicken broth for vegetable broth (not tomato based) and added 1 tsp of garlic and used 1 1/2 tsp of himalayn salt in place of regular salt. It came out wonderful!!!!! Thought I'd share for anyone who is a vegetarian or cutting down on meat products. It tasted just as good as when I made it with chicken broth.
